Olive Garden's take on the Italian melted cheese dip includes smoked mozzarella combined with grated Parmesan, Romano, and provolone cheese, and lots of thyme. When making your clone, be sure to slice the waxy rind off the smoked mozzarella before you grate it. That part does not taste good. After slowly melting the mozzarella, Parmesan, and Romano in a small saucepan with half-and-half, pour the creamy mixture into a shallow dish, top it with a slice of provolone, and pop it under the broiler until light brown. Serve your hot fonduta with baguette slices, bagel chips, or crackers.

  • 1 1/2 cups shredded smoked mozzarella cheese
  • 1 1/2 tablespoons grated Parmesan cheese
  • 1 1/2 tablespoons grated Romano cheese
  • 1/3 cup half-and-half
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon crushed red pepper flakes
  • 1 slice provolone cheese
  • 1 tablespoon diced tomato
  • 1 or 2 pinches minced parsley

      1. Preheat oven to high broil.

      2. Combine mozzarella, Parmesan, Romano, half-and-half, thyme, and pepper flakes in a small saucepan over low heat. Stir constantly as cheese melts for 8 to 10 minutes or until the mixture is smooth. Pour the cheese mixture into a shallow oven-safe bowl, ramekin or creme brulee dish, and top it with a slice of provolone cheese.

      3. Broil for 2 to 3 minutes or until the provolone is light brown. Spoon diced tomato onto the center of the fonduta, sprinkle with minced parsley, and serve it up with sliced bread, crackers or chips on the side.

      Serves 2 as an appetizer.

Since OG just changed this dish to 4 different cheeses, none of them smoked, I was so glad to find this recipe. It is spot on. My daughter's fav app, made last night and it tastes like the real deal, thanks, Todd.

I am a cook at Olive Garden and I make the sauces and soups daily as well. I hate to say it, but these recipes are not the same at all. Not saying they are not good. But this one for example, the copycat recipe is using totally different cheeses than what we use in our smoked mozz funduta. I might give some of these a try to see how they come out though. Not a bad guess as to what goes in each recipe.
