Einstein Bros. Cream Cheese Shmear

The Einstein/Noah Bagel Corporation sold around 300 million bagels in 1997—around 6 million bagels a week. And on top of those bagels, customers will smear (or Shmear) more than 8 million pounds of the flavored cream cheeses created by the company. That's 11 tons of the stuff each day! The bagels themselves are reasonably low in fat—coming in at 1 to 3 grams each. But when you add just an ounce of cream cheese Shmear, you're quadrupling the fat, at the very least.

With fat-free cream cheese and a variety of different flavorings and ingredients, we can easily re-create Einstein Bros. Shmear, while reducing the fat to zero. These spreads are very easy to make, and if you would like yours to firm up more after mixing in the ingredients, just pop the finished spread (in a microwavesafe bowl) for a minute of two, stir, cover, and chill completely. Use these spreads with bagels of your choice.

Roasted Garlic
  • 1 1/2 teaspoons Lawry's garlic spread concentrate
  • 1/4 teaspoon dried parsley flakes
  • 1/8 teaspoon salt
  • 2 drops yellow food coloring
Strawberry
  • 3 tablespoons granulated sugar
  • 3/4 teaspoon strawberry extract
  • 1 drop red food coloring
Jalapeno Salsa
  • 1/4 cup Pace medium picante salsa
  • 1 teaspoon minced jalapeno (nacho slices)
  • Pinch salt
Maple Walnut Raisin
  • 1 8-ounce tub Philadelphia fat-free cream cheese, softened
  • 2 teasponns chopped walnuts
  • 2 teaspoons raisins
  • 1 teaspoon water
  • 3 1/2 tablespoons dark brown sugar, packed
  • 1/8 teaspoon maple flavoring
  • Pinch ground cinnamon

      Roasted Garlic
      1. Whip the cream cheese until smooth.

      2. Add the remaining ingredients and stir to combine. Cover and chill to firm.

      Makes 1 cup.

      1. Whip the cream cheese until smooth.

      2. Add the remaining ingredients and stir to combine. Let the mixture sit for about 5 minutes, then stir again. Cover and chill to firm.

      Makes 1 cup.

      Jalapeno Salsa
      1. Whip the cream cheese until smooth.

      2. Add the remaining ingredients and mix to combine.

      3. Heat the mixture in the microwave for 3 minutes in 1-minute intervals on full power, stirring after each minutes. This will help the cream cheese to set up.

      Makes approximately 1 1/4 cups.

      Maple Walnut Raisin
      1. Whip the cream cheese until smooth.

      2. Grind the walnuts into coarse pieces in a food processor. Remove and set aside.

      3. Add the raisins and water to the food processor and chop on high speed until the raisins are chopped into much smaller pieces.

      4. Combine 1 teaspoon of the ground walnuts and 1 teaspoon of the chopped raisins to the cream cheese. Add the remaining ingredients and mix well. Cover and chill until firm.

      Makes 1 cup.
