Casino magnate Steve Wynn teamed up with Steven Spielberg, Jeffrey Katzenberg, and the Levy Brothers for the second Dive! restaurant which opened in Las Vegas in March of 1995. Like the first restaurant which opened the year before in Los Angeles, the Vegas Dive! features Spielbergian special effects designed by Hollywood set builders, such as bubbling potholes, spinning gauges, working periscopes, steaming pipes, and a simulated dive run by a computer every hour. Diving down the Vegas "strip" you can't miss the giant nose of a submarine crashing through a 30-foot wall of water, which pumps 100 gallons of water per foot per minute down thick glass window panes. A pool below explodes with synchronized depth charges that splash passersby at random intervals. Back inside, if you look carefully, you can see the partner's initials stenciled on torpedoes hanging high over the heads of diners.

The Dive! concept was built around submarine sandwiches and the Sicilian Sub Rosa is its signature traditional Italian submarine sandwich. It's said to be co-founder Steven Spielberg's favorite. Since the Dive! has taken a dive, you have to make this Dive! Sicilian Sub Rosa recipe to recapture that signature flavor. Vinaigrette
  • 1/4 cup light olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon lemon juice
  • Pinch ground black pepper
  • Pinch salt
  • Pinch garlic powder
_main
  • 1 handful of thinly sliced and separated red onion rings (about 1/8 onion)
  • 1 7-inch baguette
  • 1 leaf green leaf lettuce
  • 1 ounce deli-sliced prosciutto
  • 1 ounce deli-sliced capocollo
  • 1 ounce deli-sliced mortadlla
  • 1 ounce deli-sliced Genoa salami
  • 1 ounce deli-sliced provolone cheese
  • 1 ounce roasted red peppers (canned or homemade, see "Tidbits")
  • 4 to 5 small fresh basil leaves
  • 3 tomato slices
Do This

1. Mix the vinaigrette ingredients together in a small bowl and add the sliced and separated red onion rings to the bowl. Let the onions marinate for at least a couple hours. Overnight is even better.

2. When the onions are ready, slice open the baguette, without cutting all of the way through. Brush a generous amount of the vinaigrette (without the onions) on the faces of the baguette.

3. Spread the leaf of lettuce on the baguette.

4. Arrange the prosciutto over the lettuce.

5. Next, stack the capocollo.

6. On the capocollo goes the mortadellla.

7. Then the Genoa salami.

8. Next is the provolone.

9. Arrange the roasted red pepper on the provolone cheese.

10. Spread the fresh basil leaves on the sandwich next.

11. Arrange the sliced tomatoes on the basil leaves.

12. Remove the red onions from vinaigrette and spread them on top of the tomatoes.

13. Close the sandwich and use toothpicks to keep it that way to serve it cold.

14. If you want the sandwich hot, leave off the lettuce leaf and place it open faced in a preheated 450 F oven for 4 minutes and then broil it for 2 minutes. The cheese should melt slightly and the bread will become slightly browned. Slice the sandwich in half before serving.

Tidbits: Canned roasted peppers are usually pretty good, but if you want to make great roasted pepper yourself, put a whole red pepper directly on the burner of a gas stove set to medium heat or on a pan in an oven set to broil. Turn the pepper often with tongs until most of the skin of the pepper is charred black. Immediately drop the pepper into a bowl of ice water and carefully peel the skin away. Remove the seeds, chop the remaining pepper into slices for your sandwich and store the leftovers in a sealed container in the refrigerator.

    HoneyBaked Ham Glaze

    By sneaking around to the back of a HoneyBaked Ham store, I witnessed the glazing process through an open door. The hams are delivered to each of the 300 HoneyBaked outlets already smoked, but without the glaze. It is only when the ham gets to your local HoneyBaked store that a special machine thin-slices the tender meat in a spiral fashion around the bone. Then, one at a time, each ham is then coated with the glaze—a blend that is similar to what might be used to make pumpkin pie. This sweet coating is then caramelized with a blowtorch by hand until the glaze bubbles and melts, turning golden brown. If needed, more of the coating is added to the HoneyBaked Glazed Ham, and the blowtorch is fired up until the glaze is just right. It's this careful process that turns the same size ham that costs 20 dollars in a supermarket into one that customers gladly shell out 3 to 4 times as much to share during the holiday season.

    For my HoneyBaked Ham glaze copycat recipe, we will re-create the glaze that you can apply to a smoked/cooked bone-in ham of your choice. Look for a ham that is pre-sliced. Otherwise, you'll have to slice it yourself with a sharp knife, then the glaze will be applied. To get the coating just right, you must use a blowtorch. Get the kind that is used for crème brûlée from almost any kitchen supply store. They're usually pretty cheap. And don't worry—I didn't leave out an ingredient. No honey is necessary to re-create this flavorful glaze.

    Long John Silver's Batter-Dipped Fish

    Jerrico, Inc., the parent company for Long John Silver's Seafood Shoppes, got its start in 1929 as a six-stool hamburger stand called the White Tavern Shoppe. Jerrico was started by a man named Jerome Lederer, who watched Long John Silver's thirteen units dwindle in the shadow of World War II to just three units. Then, with determination, he began rebuilding. In 1946 Jerome launched a new restaurant called Jerry's and it was a booming success, with growth across the country. Then he took a chance on what would be his most successful venture in 1969, with the opening of the first Long John Silver's Fish 'n Chips. The name was inspired by Robert Louis Stevenson's Treasure Island. In 1991 there were 1,450 Long John Silver Seafood Shoppes in thirty-seven states, Canada, and Singapore, with annual sales of more than $781 million. That means the company holds about 65 percent of the $1.2 billion quick-service seafood business.

    Dickey's Barbecue Pit Cabbage Slaw

    Here’s an easy secret recipe for a great coleslaw that’s as good, if not better, than the world-famous cole slaw from KFC (which I hacked here). And making a home copy with my exclusive original secret formula is about as easy as it gets.

    To make my Dickie’s Barbecue Pit coleslaw recipe, you won’t have to mince the cabbage as fine as you would for some of the other clones. For this hack, thin-slice the cabbage first, then give those slices a medium chop, and you're good to go. A medium head of cabbage will give you around 8 cups chopped—the perfect amount for this recipe.

    After you mix in the dressing, let the finished slaw sit in your refrigerator for at least an hour so that the flavor develops and improves, and be sure to give it a good stir before you serve it. Your patience will be rewarded.

    Chipotle Guacamole

    In April 2020, restaurant chains in the U.S. closed their dining rooms due to the Covid-19 pandemic and needed a way to stay connected with their customers. Chipotle’s solution was to have corporate chef Chad Brauze “reveal” the chain’s secret recipe for the guacamole on the corporate Instagram account, which was picked up by the news and then re-posted on the Today Show website.

    Chains have shared versions of their secret recipes on news shows in the past, but I’m usually skeptical of the recipes since I’ve rarely found that any of those formulas are the actual restaurant versions. More often than not, one or more ingredients are eliminated or substituted so that your final product is close but not exact. And that's precisely what Chipotle did.

    Chef Chad's Instagram cooking video from his home kitchen is a good guacamole recipe, but it’s not Chipotle’s guacamole recipe. The formula includes most of the ingredients you would need for a perfect hack—but it’s missing one: lemon juice. According to Chipotle’s website and cooks at the restaurant, Chipotle adds lemon juice in addition to lime juice to its famous guacamole.

    With this information and a heaping sample of the authentic guac, I tweaked Chef Chad’s formula to make my Chipotle Guacamole copycat recipe more like the real one, which is made fresh several times a day at the restaurant. Even with the additional acid (lemon juice) in the mix to preserve the color, this guacamole is best if eaten within several hours of making it while it’s still bright green.

    Chipotle Garlic Guajillo Steak

    In the Fall of 2022, Chipotle debuted Garlic Guajillo Steak, a variation of the chain’s classic steak made with a new secret seasoning starring the fruity and slightly smokey flavor of dry guajillo peppers, and, surprisingly, prepared using a gourmet French slow-cooking technique.

    After an outbreak of E. coli bacteria at Chipotle infected 53 people in nine states, the chain changed the way it cooks steak. Rather than cooking the beef entirely on a Plancha, or flat griddle, Chipotle now pre-cooks the steaks with the sous vide method wherein vacuum-packed seasoned beef is cooked slowly in swirling, heated water. This cooking technique not only eliminates any potentially harmful bacteria before the beef is grilled, but it will also speed up the seasoning process and help tenderize tougher cuts.

    But you shouldn't worry if you don’t have a sous vide setup. My Chipotle Garlic Guajillo Steak recipe will also work by simply chilling the seasoned steak overnight in a zip-top bag and later cooking it off in a heavy pan or on a hot griddle. After slicing the cooked steak, toss it with some freshly squeezed lime juice and fresh cilantro, and use it as you see fit for tacos, burritos, bowls, and salads.

    Lucille’s Smokehouse Bar-B-Que Cracked Out Deviled Eggs

    The West Coast barbecue chain introduced these creative deviled eggs with the eye-catching name as a limited-time-only offer, but sales were so good that Lucille’s Cracked Out Deviled Eggs is now a permanent fixture on the menu.

    For this dish, the deviled egg yolks are combined with a blend of bacon, green onion, red bell pepper, and the chain’s delicious barbecue blend, then arranged on crispy onion straws with seasoned chicken cracklings poked down into the top of each egg. These tasty deviled eggs are unlike any you've had before and all the secrets you need to make a perfect copy at home are "cracked" for you here, including my newly hacked recipe for the delicious onion straws.

    Two chicken thighs will provide enough skin for you to make plenty of the cracklings, and I’ll give you all the prep details in the recipe below, along with a couple of good ways to hard cook your eggs. If you make your eggs as described, and if they’re fresh, you’ll have no ugly green ring around the yolk and the shells will practically fall off.

    Burger King French Toast Sticks

    Many fast food chains have offered French toast sticks over the years, including McDonald’s, Wendy’s, Sonic, Roy Rogers, and Jack in the Box, but Burger King was first to introduce the morning finger food way back in 1985, and if staying power is any indication of preference, then BK is most deserving of this new top secret recipe.

    Burger King French Toast Sticks are a perfect fast food item, since they come pre-battered and par-fried, and workers just need to toss a few frozen sticks into the fryer next to the French fries for 3 or 4 minutes, and they’re ready to go, along with a handy dipper pack of maple-flavored syrup.

    But no deep-frying is necessary here for my French toast sticks copycat recipe. Instead, you’ll cook your quartered and battered white bread slices in a combination of butter and oil in a sauté pan for a couple of minutes per side, or until the sticks are nicely browned. Serve them with a side of warm maple syrup, and you can even add a dusting of powdered sugar on top if you want to get fancy about it.

    Chili's Secret Sauce Burger

    In 2021, Chili’s added a new burger to its menu lineup of Big Mouth Burgers, and this one comes with a big saucy secret.

    Chili's Secret Sauce Burger is simple in construction with a soft brioche bun, a huge ½-pound patty, sliced lettuce, and American cheese. It’s also got sautéed onion piled on it, which sets this burger recipe apart from typical fast food fare, but it’s the secret sauce that makes this big burger rock.

    The sauce used on this burger is the same sauce the chain initially created for Chili’s Big Mouth Chicken Sandwich—a formula that appears to be inspired by the popular chicken sandwich sauce made famous at Chick-fil-A. You can make my Chili's Secret Sauce recipe revealed here in just a couple of minutes with a simple combination of mayonnaise, ketchup, barbecue sauce, honey, and mustard, plus a little turmeric to add a golden tint.

    As for the burger patties, get ground chuck that has a fat content of at least 20%, or grind your own. As the burgers cook, press down on them with a spatula to release the melting fat like they do in the restaurant. This will trigger the Maillard reaction that browns the meat and adds a flavorful crust to your burgers, so your homemade Chili's Secret Sauce Burgers will taste just as good as the original.

    P.F. Chang's Fire-Braised Short Ribs

    Good short ribs should practically melt in your mouth, and my P.F. Chang’s Fire-Braised Short Ribs recipe below will produce flavor-pumped short ribs that will do just that. Just as in the restaurant, these sliced boneless short ribs sit on a bed of pineapple fried rice and come with a side of the sweet-and-savory Asian braising sauce to pour over the top. If you dig short ribs, you're going to love this dish.

    To craft the 30-dollar entrée at home (but for much less) the short ribs are braised for 3 hours in a secret liquid made with Chinese cooking wine, garlic, soy sauce, hoisin sauce, oyster sauce, and a few other key ingredients. The cooked short ribs are then chilled, sliced, and seared while being doused with the robust braising liquid for a perfect burst of flavor.

    When you arrange the sliced short ribs on the pineapple fried rice made with the Top Secret Recipe I’m including below, and sprinkle the plate with some micro sprouts, you’ll have created a dish that looks and tastes just like the fabulous original restaurant version, but at a mere fraction of the cost.

    Marie Callender's Chocolate Satin Pie

    Like the French Silk Pie that won first prize at the 1951 Pillsbury Bake-Off contest, Marie Callender’s Chocolate Satin Pie features a creamy chocolate mousse in an Oreo cookie crust and is one of the most requested pies on the restaurant chain’s menu. This pie is so popular that a frozen version is available in most supermarkets, but I found that particular version smaller and less delicious than the pies served at the restaurant, so it's the fresh Marie Callender's Chocolate Satin Pie that I'm replicating with this recipe.

    To prepare the chocolate cookie crust for your clone, scrape the filling from 24 Oreo cookies and grind or crush them into fine crumbs. After mixing in butter and baking it, allow the crust to cool before filling it with the rich chocolate mousse made from real dark chocolate, cream, and eggs, just like the original. Then chill until firm.

    Once the filling has set in your refrigerator, top your taste-alike pie with homemade whipped cream (that recipe is here, too) and chocolate sprinkles, and no one will ever suspect it’s not the real deal.

    Cheesecake Factory Bruléed French Toast

    On weekends, hungry patrons at The Cheesecake Factory are treated to a special menu of brunch selections where this thick-sliced, caramelized French toast is a stand-out. A plate comes with four battered bread slices, each browned on one side, then dusted with powdered sugar, and served with warm maple-butter syrup.

    I obtained virtually no helpful prep tips from the servers in the restaurant, so I was left to deduce my copycat recipe from a simple inspection of the real thing once I got my take-out order home. I eventually settled on a batter that combines the same ingredients you'd find in crème brûlée: eggs, cream (in the half-and-half), sugar, and vanilla.

    After lightly browning one battered side of each thick bread slice, the other side is battered and then sprinkled with a light coating of sugar. When the sugared bread is turned over onto the hot pan, the sugar cooks until browned, re-creating the taste experience of a traditional torched crème brûlée dessert.

    Chick-fil-A Frosted Lemonade

    Chick-fil-A’s popular Frosted Lemonade is a delicious, blended combination of lemonade and the chain’s trademarked Icedream soft serve product. Just like Dairy Queen’s famous soft serve, Icedream looks and tastes like ice cream, but it contains considerably less butterfat since it’s made with milk, rather than cream.

    For my Chick-fil-A Frosted Lemonade copycat recipe, cream-less ice cream is not a necessity. Regular ice cream works just fine here, although light ice cream, which is usually made with a milk base (Blue Bell Vanilla Light Ice Cream is one example), also makes a great clone.

    Give the fresh lemonade you make here a little time to chill in your freezer before adding it to your blender with the other ingredients. In a matter of seconds, when all the ice is crushed, you’ll have two frosty 16-ounce drinks that taste just like the real deal, but at a mere fraction of the cost.

    Panda Express SweetFire Chicken Breast

    It’s not a regular menu item at Panda Express, so if the chain’s great chicken dish isn’t available at a restaurant near you, you can use my Panda Express SweetFire Chicken Breast recipe below to get your fix. 

    I've worked up a simple hack here for the sweet-and-spicy sauce that gets poured over the crispy chicken chunks, and I’m also including a breading technique for perfect bite-size portions of crispy chicken. Add some onions, red bell pepper, and pineapple chunks, and you’ve just made a spot-on copy of the popular limited dish.

    Chipotle Pollo Asado

    In 2022, for the first time in its 29-year history, Chipotle debuted a new style of grilled chicken, and it became an instant hit. At least it was at the Chipotle near me, where the Pollo Asado was ordered more than any other protein, according to servers there. But the new flavor is for a limited-time-only, and when it’s gone, my exclusive Chipotle Pollo Asado recipe may be the only way to satisfy your deep desire.

    It appears that Chipotle’s new chicken is marinated in a vacuum meat tumbler similar to the way the Mexican chicken chain El Pollo Loco does it. I sure wish I had one of those awesome tumblers because they speed up and improve the marinating process, producing moist chicken packed with flavor all the way through. But those tumblers are expensive and bulky, and I have absolutely zero space left in my kitchen to store one. So, an overnight marinade, along with a bit of patience, must suffice. 

    The next day, grill your marinated chicken, chop it up, toss it with the secret citrusy sauce hacked here, add some fresh cilantro and lime juice, then use it as you see fit on burritos, tacos, salads, and bowls.

    Outback Steakhouse Twisted Ribs

    Creative chefs at Outback Steakhouse have transformed the chain’s fall-off-the-bone baby back ribs into a fantastic appetizer by adding crispy Bloomin’ Onion breading, sweet barbecue sauce, and a drizzle of Bloomin’ Onion dipping sauce. I reverse-engineered the Outback Twisted Ribs recipe thanks to a kind server who let me take some home with sauces on the side, and now you can copy every twisted bit of it yourself with this exclusive hack.

    Outback’s ribs are smoked, but we’ll replicate the taste without a smoker by using a liquid smoke brine. This marinade will not only enhance the flavor of the ribs but will also help keep the meat moist and juicy when cooked twice.     Cheesecake Factory Chicken Piccata

    A great chicken piccata doesn’t have to be complicated, and this fantastic take on the lemony dish from the Cheesecake Factory epitomizes that.

    Since the sauce is the key to the great taste of this entrée, I made sure to get a sample on the side for later analysis when I requested my to-go order from the restaurant. While waiting, I asked the server what was in the sauce and she listed some obvious ingredients—lemon, wine, butter, cream—and then she mentioned garlic and shallots. When I got home, I rinsed the sauce through a mesh strainer to discover how much garlic and shallot were in the sauce, but there was no physical evidence of either solid ingredient left behind in the strainer.

    I made a batch of the sauce without garlic and shallot, and it tasted flat. So on the next batch, I added the garlic and shallot back in, then strained out the solid ingredients after they contributed their goodness to the sauce. The result was noticeably better.

    After adding mushrooms and capers to the new lemon sauce, I spooned it over sautéed chicken cutlets and was rewarded with a fantastic homemade version of this amazing dish, which you can now copy at home using my Cheesecake Factory Chicken Piccata recipe below.

    Melting Pot Cheddar Cheese Fondue

    This 140-unit chain is America's go-to restaurant for great fondue since 1975. The four-course menu includes a salad, a broth fondue entrée with a variety of meats and vegetables, and a selection of chocolate fondues for dessert.

    But the dining experience starts with a delicious cheese fondue served with various sliced breads, apples, and vegetables for dipping. The most popular of the cheese fondues is this one made with medium cheddar and just a little Emmentaler Swiss cheese melted into beer and combined with garlic and spices. Talking with a manager at my local Melting Pot, I learned that the chain uses Milwaukee's Best or Colt 45 in the fondue, so make sure you use a mild (and cheap) lager beer. He told me that the mild flavor of these beers doesn't overpower the cheese. Use a traditional fondue pot intended for cheese/chocolate fondue.

    McDonald's Strawberry and Creme Pie

    Tiny apple pies have been a signature dessert on the McDonald’s menu for decades, but the chain recently upped its pie game with a tasty new treat featuring a duo of fillings encased in a flaky, lightly-iced crust. And no one has designed a good copy...until now.

    To recreate these personal McDonald's Strawberry and Crème Pies at home, I’ve developed a new crust formula and filled it with thickened, puréed frozen strawberries alongside a sweetened cream cheese filling. You'll find everything you need to duplicate the pies at home in my copycat hack recipe below. 

    Squeeze the fillings onto the dough, seal up the pies, brush them with light icing, and pop them in the oven. This recipe makes ten pies, which is a good thing because everyone will want one.

    Chickie’s & Pete’s Famous Crabfries

    Waiting for a plane in Philadelphia isn’t so bad if your gate is near the airport location of this 20-unit crab house and sports bar chain where weather delay frustrations melt away over a cold beer, a Philly cheesesteak, and a bucket of Chickie’s & Pete’s Famous Crabfries.

    Crabfries, despite the name, do not have any crab on them. When the first Chickie’s & Pete’s opened its doors in Philadelphia, Pennsylvania in 1977, the restaurant served crab only in the summer. While brainstorming off-season uses for the seafood seasoning, founder Pete Ciarrocchi sprinkled some over crinkle-cut fries, served them with a side of secret cheese dipping sauce, and the most popular dish at his crab house was born.

    The beauty of this Chickie’s & Pete’s Crabfries recipe is its simplicity since you’ll need to prepare only two things, and they’re both easy: the secret crab seasoning and the secret cheese sauce. Since the chain’s cheese sauce is also used on their cheesesteak sandwiches, I surmised that a combination of the two easy-melting cheeses most commonly used on Philly cheesesteaks—white American and Cheez Whiz—would make a sauce with the taste and color of the restaurant version. This smooth sauce goes great with the fries, and it also puts the "Philly" into your next homemade cheesesteak.

    Once your cheese sauce is done and your seasoning is mixed, cook up a bag of crinkle-cut fries following the directions on the package, toss them with the seasoning, and serve immediately with the warm cheese sauce on the side.

    IHOP Chocolate Chocolate Chip Pancakes

    A scoop of cocoa powder and a handful of chocolate chips are mixed into the chain’s famous buttermilk batter for a bold stack that is a chocoholic’s dream come true. And making a picture-perfect home hack with my IHOP Chocolate Chip Pancake recipe is about as easy as cooking can get.

    Just before you serve up each stack, drizzle it with chocolate syrup and add more chips. Finish it up with a pile of whipped cream on top, and some warmed maple syrup on the side.

    Wolfgang Puck Chinois Chicken Salad

    This iconic Chinese chicken salad, born at Wolfgang Puck’s Chinois restaurant in Santa Monica, California, can also be found on menus at other Puck dining rooms, including Wolfgang Puck Bar & Grill and Wolfgang Puck Player’s Locker, both in Las Vegas.

    It's a decades-old secret recipe that is often imitated but never duplicated, since no knockoff I've found includes all the ingredients necessary to create the signature taste. In my underground lab, I sat down with my “to-go” salad (dressing on the side, of course) and meticulously deconstructed it by separating all the ingredients into small bowls. After working for about 45 minutes with the tweezers, I had separate piles of napa cabbage, various greens including frisée, radicchio, shredded carrot, and another shredded root vegetable that I have yet to see anyone include in their so-called “hack”: daikon radish.

    Popeyes Homestyle Mac & Cheese

    In late 2021, Popeyes debuted a new macaroni and cheese recipe made with cheddar, cream, and butter, and browned nicely on top like it was just pulled out of Mom’s home oven. After analyzing the real thing from Popeyes in my kitchen lab and experimenting with multiple batches, I was eventually able to reproduce the dish so the same great mac & cheese taste can now come out of your OWN home oven. And the best part: it's super easy to make. You'll like that.

    I created my Popeyes Mac & Cheese copycat recipe using the same ingredients used by the chain: cheddar cheese, whole milk, heavy cream, unsalted butter—all wholesome foods without any weird stuff. We'll make a quick roux for the cheese sauce using a little flour, and I’m also adding easy-melting American cheese into the mix for its keen ability to keep the sauce from becoming grainy, as cheddar-based sauces tend to do.

    Combine the sauce with the pasta, brown the top under a broiler, and you just home-styled your way to a delicious mac & cheese masterpiece.

    Rao's Traditional Meatballs

    Tweaking a classic recipe with a few special prep tricks leaked to me by a server was the key to developing this spot-on hack for the famous meatballs from the iconic 125-year-old Italian dining room. With just two locations in the U.S. (Los Angeles and New York), sinking your fork into a fresh meatball at the restaurant requires quite a trip for most people, but my Rao's Traditional Meatballs recipe, refined through multiple batches, will make you a meatball master in your own kitchen, producing ten 5½-ounce meatballs that look and taste like the real thing.

    Fortunately, I could squeeze in a reservation at the Las Vegas Rao’s location a few weeks before it closed its doors forever at Caesar’s Palace in late November 2021. While there, I made sure to ask my server for any information about the recipe, and was informed about the secret two-step process described in this hack to create giant meatballs that are cooked through, but so moist that they practically crumble when cut with a fork.

    Rao’s has shared a meatball recipe in the past, but don’t be fooled. That recipe produces decent meatballs, but they are not the same as what’s served in the restaurant. If you want to make meatballs that taste like the classic original, use my Rao's meatballs recipe below.

    Applebee's Spinach & Artichoke Dip

    When I saw the results of a recent Mashed.com poll indicating that most people chose the chain’s spinach and artichoke dip as their favorite appetizer from the Applebee’s menu, I suddenly realized I hadn’t yet cracked the recipe and immediately got to work.

    I've hacked several spinach and artichoke dips over the years, but no other dip features so many different types of Italian cheese. Thankfully, many grocery stores have bags of pre-blended shredded Italian cheese that work great for my Applebee's Spinach & Artichoke Dip copycat recipe. With that cheese blend, plus additional Asiago and Parmesan, we can produce a spot-on replica of Applebee's ultra-popular dip without too much shopping.

    And there’s no need to defrost the frozen spinach ahead of time—that will be taken care of when it steams in your microwave. Add the cooked spinach to the cheese and other ingredients in a saucepan, along with the trimmed artichoke hearts. When it’s hot, sprinkle on some more Parm, brown it under your broiler, and bust out the chips.

    Wendy's Seasoned Potatoes

    Reviewers of Wendy’s tasty seasoned potatoes point out that the skin-on slices stay crispy even when cool. That tells us the breading is most likely made with a non-wheat flour blend, an assumption confirmed by the website ingredients list for the potatoes where nary a gram of wheat flour is included. Yep, these seasoned potatoes are gluten-free.

    Wendy’s uses a blend of food starches plus rice flour for the breading on their version, but my tests confirmed that cornstarch is all you’ll need for a great clone of Wendy's seasoned potatoes. The secret process starts by coating the potato slices with the dry breading mix, which contains salt. The salt in the blend will draw water out of the potatoes, magically transforming the dry breading into a wet batter in about 20 minutes.

    When all the breading is wet, the potatoes go into the oil for partial frying. After resting a bit, they get dropped in again until golden brown and crispy. And, thanks to the cornstarch, these potatoes will stay crispy, even when they’re completely cool. Pretty cool right? Give my Wendy's seasoned potatoes copycat recipe a try.

    Brothers Dave and Larry Raymond came up with a top secret recipe for barbecue sauce that was so good they entered it in Chicago’s Rib Fest barbecue competition in the late ‘80s.     Cracker Barrel Buttermilk Biscuits

    A great buttermilk biscuit isn’t hard to make. This is good news if you're serving hundreds each day as they do at this popular Southern kitchen chain. But a simple recipe such as this one is also a blessing when you need to whip up a modest batch at home for your hungry gang of biscuit fanatics, and it's an added bonus if they taste as good as the famous biscuits from Cracker Barrel. 

    The secret to tender, flakey biscuits like you get at the restaurant chain is using a lower-gluten self-rising flour such as White Lily; a staple for Southern biscuit recipes. A bit of shortening in the mix will help tenderize the finished product, as will a light mixing hand. Overmixing the dough may toughen your biscuits, so mix the dough gently and only as much as you have to.

    If you don’t use White Lily flour and go with a heavier self-rising flour such as Gold Medal, take note that you may have to add a couple of tablespoons more buttermilk to the dough to loosen it up. Good biscuit dough should be soft, but not sticky.

    Applebee's Riblets

    To begin hacking this popular dish from the national chain, I needed an answer to my first question: “What the heck are Riblets?”

    I soon discovered that “Riblets" is Applebee’s branded name for button ribs or rib tips, which is a flat cut trimmed from the back end of pork spareribs. This particular cut is packed with lots of connective tissue, and that's a good thing because it breaks down after 3 to 4 hours of braising, producing fork-tender meat that slips off the bone. Of the cooking methods I tried, including steaming, slow-roasting, and smoking, braising resulted in the most tender and flavorful ribs—even before adding the sauce. 

    For the braising liquid formula, I discovered that chicken broth infused with liquid smoke produces tender ribs that taste like they came out of a smoker. Finish off the braised ribs on your grill and baste them with my original hack for Applebee’s honey barbecue sauce or your favorite bottled sauce. Your Riblets, your choice.

    P.F. Chang's Kung Pao Brussels Sprouts

    Use my copycat hack of P.F. Chang’s great kung pao sauce and toss it with fried Brussels sprouts, peanuts, and Thai chilies, and you'll have re-created one of the Chinese bistro’s most popular new sides. This recipe makes a half cup of the secret sauce, which will be enough for one pound of Brussels sprouts in two batches.

    Baking the Brussels sprouts in the oven, as recommended by other "hackers," will not duplicate the crispy texture of the original. To create a perfect clone of P.F. Chang’s Kung Pao Brussels Sprouts side dish, deep-frying is essential. You’ll be frying 8 ounces of Brussels sprouts at a time, so it's best to use a wide-mouthed pan, such as a large saucepot, Dutch oven, or deep fryer, to avoid crowding the sprouts. They will splatter wildly for about 30 seconds when they first hit the oil, so a lid or a splatter screen will definitely be helpful.

    Once the oil is hot and the sauce is made, it takes just 5 minutes to get this delish dish on the table.

    Pei Wei Pad Thai

    When ranking Pad Thai served at U.S. chains, Pei Wei’s tasty take on the dish comes in at the top. The secret sauce is perfectly balanced with sweetness, sourness, saltiness, and a hint of spice, while the chicken is moist, tender, and packed with great flavor.

    For Pei Wei Pad Thai copycat recipe, you'll start by brining the chicken to prevent it from drying out, as white meat tends to do. The secret marinade includes fish sauce, Thailand's MSG. Soaking the chicken in this salty sauce allows the natural aminos to contribute fantastic umami goodness, and cooking it with moist heat, as detailed in the steps below, will result in fork-tender, juicy chicken.

    The noodles at Pei Wei are thin, so select the thinnest rice noodles available on the shelf. Prepare them for stir-frying by soaking them in a bowl of hot water rather than boiling water on the stovetop, as suggested on the package. Once they are ready, rinse the noodles under cold water and they will keep until you need them.

    This hack will make two large meal-sized entrées, just like what you get at the restaurant, which can easily be divided into four more modest servings.

    Panda Express Chow Mein

    I’m sure it’s frustrating to be standing in line at Panda Express and they run out of chow mein when it’s your turn. For me, though, that scenario is a blessing, and it’s how this dish was hacked. From the line, I watched a cook whip up a new batch of chow mein in the giant wok in the clearly visible kitchen and took plenty of mental notes. The dish was done in just a few minutes, and before I knew it, I was out the door with a hot serving of fresh chow mein and great intel to help hack a perfect clone. 

    Like the real Panda Express Chow Mein, the beauty of my re-creation lies in its simplicity. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also known as Chinese stir fry noodles), which are easy to find and inexpensive, along with dark soy sauce for its deep caramel color. If you don’t have a wok to prepare your faux Panda, a large skillet with sloped sides for tossing will work nicely.

    Carl’s Jr./Hardee’s Hand-Breaded Chicken & Waffle Sandwich

    Amid the chicken sandwich wars of 2019-2021, Carl’s Jr. (Hardee’s) debuted a simple chicken and waffle sandwich that is remarkably good. Crispy chicken breast is doused with maple butter sauce and sandwiched between two Belgian waffle buns for a sweet-and-savory handful of fab.     

    To clone the sandwich at home, the chicken gets brined for great flavor and juiciness like the real thing, and then it’s cooked until perfectly golden brown and crispy. The maple butter sauce is easy to hack with just three ingredients and a mixer.

    The biggest secret I reveal is how to make Belgian waffles with one flat side just like the real sandwich using a standard waffle iron and a piece of folded aluminum foil.     Five Guys Cajun Fries

    When I first attempted to make this Five Guys Cajun Fries copycat recipe using large, unpeeled russet potatoes I had just picked up at the grocery store, the fries emerged from the oil looking miserably discolored and had an unpleasant, soggy texture. They were dark brown and soft, rather than light brown and crispy like the amazing fries from Five Guys. I made sure to properly prep the fries by soaking them in water to wash away excess starch, then par-frying them at a low temperature, allowing them to cool before frying them again at a higher temperature. However, my initial results were a failure, and then I got distracted.

    Over the next two weeks, I got busy with other recipes and neglected my unused potatoes. When I went back to the potatoes, I noticed they had become much softer and looked like they were about to sprout. Not wanting to let them go to waste, I cut the potatoes and fried them, and I was shocked to see how different they looked from my earlier batch. Rather than soggy and limp, these fries came out golden brown and crispy from tip to tip. Do old potatoes make better fries?

    I remembered that Five Guys stacks bags of potatoes used for the fries in the dining area of the restaurant, and I wondered if I could see dates on those bags. I dashed back over to the restaurant, and sure enough, the potatoes were dated. The bags at one end of the stack were just one day old, while the bags closest to the kitchen were eight days old. I later discovered that Five Guys uses specific Idaho potatoes because they are denser than other russets. I couldn't get those special potatoes, but I found that I could still make crispy, more flavorful fries like Five Guys if I simply let ordinary russet potatoes sit out for a week or so before slicing and frying them.

    Just like the restaurant, the potatoes in my Five Guys Cajun Fries copycat recipe are fried twice and then sprinkled with Cajun seasoning as soon as they come out of the oil. At Five Guys, they salt the fries first and then add Cajun seasoning, but I’ve included all the salt you’ll need in the secret seasoning mix below to eliminate that extra salting step.

    Kobe Ichiban Japanese Steakhouse Shrimp (Yum Yum) Sauce

    For years, I’ve been hearing about a delicious seafood dipping sauce at Japanese steakhouses called "shrimp sauce" or "yum yum sauce." Research revealed many independent Japanese steakhouses with "the best sauce," but it was the name of an 11-unit chain called Kobe Ichiban in Central Florida that came up most often.

    When I next found myself in Orlando, Florida presenting some cooking demos at a home show, I dropped in on Kobe Ichiban for dinner and there it was: the light orange creamy dipping "yummy" sauce that everyone was raving about. It was sweet and sour and salty and creamy, and it tasted amazing on the shrimp—as well as on everything else.

    I poured some into some small plastic storage bags I had with me (always come prepared!), then popped them into a cooler for the long trip back to Las Vegas. Back in the underground lab, I developed my Kobe shrimp yum yum sauce copycat recipe below. Now, you can enjoy this much-requested delicious dipping sauce anytime.

    Olive Garden Chicken and Shrimp Carbonara

    Menu Description: “Sauteed seasoned chicken, shrimp, and spaghetti tossed in a creamy sauce with bacon and roasted red peppers.”

    Re-creating this top entrée from Olive Garden allowed me to come up with an easy way to assemble a delicious carbonara from scratch. Traditional carbonara sauce in Italy is usually made with guanciale and sometimes pancetta. But in America and other English-speaking countries carbonara is typically made with bacon, as is this one served at Olive Garden, so that’s what we’ll do for our clone.

    Many traditional carbonara recipes also call for egg, but Olive Garden makes the carbonara sauce for this dish in a different, and much simpler, way: they combine bits of bacon with their classic Alfredo sauce which I cloned long ago. In this tweaked version of that sauce, the bacon flavors the sauce while it simmers, resulting in a perfect match.

    The red pepper gets roasted in your oven, and the chicken and shrimp are sautéed on the stove top. Put it all together, and you've got four generous servings of Olive Garden Chicken and Shrimp Carbonara with that fabulous sauce, and an impressive dinner for your hungry carbonara cravers.

    Domino's Crispy Bacon & Tomato Specialty Chicken

    I imagine a chef at Domino's in the middle of the development kitchen, surrounded by all the toppings they use on pizza, experimenting with new combinations of these ingredients, trying to come up with something delicious that isn't pizza. And then this dish happens: crispy chicken topped with garlic-Parmesan sauce, Cheddar-mozzarella cheese, bacon, tomato, and baked until gooey.  

    Use my Domino's Crispy Bacon & Tomato Specialty Chicken copycat recipe below to make your own killer appetizer at home. To make it simple, you'll start with crispy chicken strips or popcorn chicken from the freezer section.

    All the assembly instructions are here, including an original, and simple, hack for the garlic-Parmesan sauce that gets drizzled over the chicken before adding all the other good stuff.

    Build your dish on a strip of parchment paper, just like the restaurant does, and bake it until the cheese is bubbly. Now you have a cool new thing to make with frozen crispy chicken strips.

    Jack Link's Original Beef Jerky

    Jack Link created his first kippered beef sticks in Wisconsin in 1986, using his grandfather's old sausage and smoked meats recipes, and they quickly became a popular snack throughout the state. But that wasn’t enough for Jack, so he invested in a packaging machine and expanded into other markets. Eventually, with the help of a successful Sasquatch-themed marketing campaign, Jack Link’s became the #1 jerky brand in the U.S.

    Beef jerky is usually made in a dehydrator designed to circulate air around the food at a low temperature. The optimal temperature for drying beef jerky in a dehydrator is typically 130 to 140 degrees, which is a lower temperature than can be reached with a conventional home oven. But that doesn’t mean we can’t use our home oven to make a perfectly acceptable beef jerky hack that tastes like Jack’s. And while Jack uses a smoker for his beef jerky, this recipe uses liquid smoke to create smoky beef jerky without a smoker.

    The pineapple juice in the marinade is a crucial component of the flavor, but its primary contribution is a unique enzyme that helps break down the proteins in the tough cut of meat, thereby tenderizing it. Soy sauce and beef bouillon contribute to the umami savoriness of the jerky, and liquid hickory smoke is used in my Jack Link's Original Beef Jerky copycat recipe as a quick way to add the smoke flavor.

    The marinating takes 24 hours, and the oven drying takes between 6 and 8 hours. So, get the sliced beef into the bath in the morning, and you should be munching on copycat Jack Link's beef jerky by dinnertime the next day.

    Starbucks Double Chocolate Brownie

    If you worship chocolate, Starbucks' famous fudgy brownie is a blessing. The brownie is made with a double dose of chocolate—unsweetened cocoa and milk chocolate—and the top is sprinkled with chunks of dark chocolate.  The result is a moist, chewy brownie made with a perfect blend of chocolate. And it tastes like heaven.

    For my Starbucks Double Chocolate Brownie copycat recipe, you'll want to prep your pan with a sling made from parchment paper. Slice the parchment long so that it fits into the bottom of the pan, with each of the ends hanging over the top of the pan. I use two small binder clips to hold the paper in place so that it doesn’t fold into the pan during baking. When the brownies have cooled, remove the clips, grab the overhanging paper, and lift the brownies cleanly out of the pan to be sliced.

    Panda Express Firecracker Chicken Breast

    It’s not always on the menu at the huge Chinese take-out chain, but when this spicy special offering makes a limited-time-only appearance, I’m there. When it’s not on the menu, no problem, you can use my Panda Express Firecracker Chicken copycat recipe and make it at home in no time. 

    This dish owes its great flavor to black bean paste, which is full of umami savoriness, just like soy sauce, so it enhances the taste of everything around it. You'll have a good laugh when you notice most recipes attempt to hack this dish with canned black beans. That's ridiculous, since black bean paste is a traditional Asian flavoring ingredient made with fermented soybeans, not with black beans like the kind you get in your burrito at Chipotle.

    Plan ahead to brine your chicken breast for a couple of hours so that it's moist and flavorful. This is an important step for a spot-on hack.

    Chick-fil-A Avocado Lime Ranch Dressing

    This huge chicken chain offers seven delicious dressings to top three salad choices, and this is my current favorite of the bunch. The Avocado Lime Ranch Dressing is best on a Southwestern-style salad like the one on Chick-fil-A’s menu with mixed greens, black beans, corn, spicy chicken, and tortilla strips on top. But it’ll work on just about any mixed greens salad or burrito bowl you come up with at home, or use it as a dip for chicken fingers, taquitos, and Southwestern eggrolls.

    For a good home clone, be sure to smash the avocado until no chunks remain and let the dressing sit for at least an hour before you use it so the dried herbs, onion, and garlic can rehydrate, and the flavors can bloom.

    Chipotle Queso Blanco

    Social media shredded Chipotle’s first queso dip which debuted in 2017, calling it “gritty,” “bland,” “watered-down,” and “a crime against cheese.” Chipotle was in desperate need of a re-do.

    In early 2020, after months and months of test-marketing an improved cheesy dip recipe in Dallas, Detroit, and San Diego, the Mexican chain introduced Queso Blanco to the entire U.S., and this time the reviews were much better.

    Chipotle claims their new formula contains exactly 13 ingredients, including 2 kinds of cheese and 3 different chile peppers. With cornstarch as the thickening agent, the preparation starts by making a white sauce with milk and cream. When the cheese is fully melted and smooth, the veggies go in, and in about 10 minutes it’s ready to serve.

    Chipotle Carne Asada

    Chipotle’s popular limited offering is a good example of how straightforward and flavorful carne asada can be. It’s not overly mysterious since Chipotle is transparent about the ingredients used for the restaurant's entire menu—53 ingredients in all—but identifying which of those is used here is only the beginning of the process. There was still plenty of work to do in establishing ratios and settling on an ideal preparation method.

    Carne asada is almost always made with flank steak or skirt steak. A server at Chipotle told me they use skirt steak, which is surprising since that is the tougher of the two cuts. Perhaps she was wrong about that? Flank steak also has a better flavor than skirt steak, so I'm recommending flank here. Just be sure not to marinate it for more than 2 days or the acid in the marinade may toughen your steak and you certainly don't want that.

    After you grill it, slice the meat across the grain and use it in burritos, tacos, bowls, or as a Southwest-style salad topper.

    Original Pancake House Buttermilk Pancakes

    They may not be as unique as the German Pancakes, 49’er Flap Jacks, or the other specialty hotcakes at Original Pancake House, but the plain buttermilk pancakes here rank among the best I’ve had. If a restaurant's pancake skills are best judged by how well they craft a stack of old-fashioned buttermilks, then this chain deserves a ribbon. 

    The first step in creating the perfect clone of these delicious flapjacks is to use clarified butter on your skillet or flat grill to prevent the pancakes from sticking. This method enhances the flavor of your pancakes more than oil, and it’s the technique used by the Original Pancake House. Therefore, we’ll do the same in my Original Pancake House Buttermilk Pancakes copycat recipe below.

    When you’ve got your clarified butter ready, the rest is a cinch. Mix the batter, and measure 1/3-cup portions onto a hot pan or griddle greased with the butter. Cook the pancakes until golden brown on both sides, then serve up a stack with whipped butter and warm maple syrup on the side.

    Panda Express Fried Rice

    A popular staple of any Chinese chain is fried rice, so it better be good, and the version served at Panda Express most certainly is. Here's my easy Panda Express Fried Rice recipe for when you need a stress-free, low-cost side for your entrées. But I do suggest that you cook the white rice several hours or even a day or two before you plan to make the finished dish. I found that the cooked rice called for in this recipe works best when it's cold. 

    As for a shortcut, bagged frozen peas and carrots will save you from the hassle of petite-dicing carrots since the carrots in those bags are the perfect size to produce an identical clone. And they're already cooked.

    Olive Garden Five Cheese Ziti al Forno

    Menu Description: “A baked blend of Italian cheeses, pasta, and our signature five-cheese marinara.”

    Creating a copycat version of Olive Garden’s famous baked ziti wouldn't be possible without a perfect replica of the chain’s popular five-cheese marinara sauce. Luckily, I had previously replicated Olive Garden’s plain marinara for Olive Garden’s Chicken Parmigiana, so I adjusted that recipe to suit this hack by adding five types of Italian cheese and heavy cream.  

    It can be challenging to accurately identify which types of cheese are in a prepared sauce without some insider assistance. So, before cooking, I concentrated on persuading a server to ask the chef for the list of five cheeses, and I got it! The cheese blend used in this sauce comes directly from the kitchen of my local Olive Garden. When you taste it, you’ll know the intel was legit.

    After the sauce is added to the pasta, it’s topped with a mix of cheese and breadcrumbs known as “ziti topping.” Then, it’s browned in a salamander at the restaurant or under your broiler at home. The result is a beautiful dish with excellent sauce and a cheesy topping that should satisfy even the pickiest baked ziti enthusiasts.
