I've been fortunate to have McDonald's fish filet sandwich overseas in Germany and their fish patty is bigger and cooked to order. I agree the bun should be steamed instead of toasted and the closest I've found is a Sarah Lee's potato buns and the closest cheese is Borden's sliced Sharp American cheese.
Except the real thing comes with steamed buns, not grilled. For that I have to knock you down on rating, since that was the selling point of a McD's Filet-O-Fish.
I only used 1tsp of relish with the 2tablespoons of Mayo. I added a teaspoon of course mustard. I liked it.

Try using Todd's recipe for Luby's tartar sauce. It puts this sandwich over the top.

Tartar sauce is nothing like McDonalds, way to sweet and no zing! Sorry
Just followed the recipe it makes a good lunch

Todd you still need to tweek the tartar sauce
and its hard sometimes to find those square patties that taste like the original
I wish i knew who makes the patties for them?
