    Marie Callender's Chocolate Satin Pie

    Like the French Silk Pie that took first prize at the 1951 Pillsbury Bake-Off contest, Marie Callender’s Chocolate Satin Pie features a creamy chocolate mouse in an Oreo cookie crust and it's one of the most requested pies on the menu. The pie has become so popular that a frozen version is available in most supermarkets, but I found that version to be smaller and less delicious than the pies you get from the restaurant, so it's the fresh Marie Callender's Chocolate Satin Pie that I'm cloning here with this recipe.

    For the chocolate cookie crust, you'll just need to scrape the filling from 24 Oreo cookies, then grind or pound them down to fine crumbs. After adding butter and baking it, the crust is cooled and then loaded up with the smooth chocolate mousse filling, made with real dark chocolate, cream, and eggs, just like the original. After that, just chill until firm.

    When the filling has set in your refrigerator, top your taste-alike Marie Callender's Chocolate Satin Pie with homemade whipped cream (that recipe is here too), and some chocolate sprinkles, and no one will ever suspect it’s not the real deal.

    Marie Callender's Double Cream Blueberry Pie

    Vanilla custard and whipped cream make up the delicious “double cream” that tops this ultra-popular blueberry pie from the West Coast chain that is most famous for its homestyle pies. Finally, I got the chance to give this great dessert the hack it deserves—from what I've seen, no other "copycat" recipe even comes close.

    For my Marie Callender’s Double Cream Blueberry Pie recipe, it was important that the custard be creamy but not too runny, so in addition to cornstarch, I’ve included just enough gelatin in the mix to stabilize the filling, but not so much that it becomes rubbery. The blueberry filling, made with frozen blueberries, needs only cornstarch to thicken it because there is also apple in the filling which contributes pectin, a natural thickening gel. Just be sure to dice your apple very small before cooking it so that the pieces will soften and work well with the frozen blueberries.

    There’s no need to make the crust from scratch when you can use an unbaked 9-inch pie shell in the frozen food aisle—preferably the one made by Marie Callender’s—but any brand will do.

    Then, to finish your pie, the gelatin steps up again, stabilizing the whipped cream topping so that it holds its shape for as long as it takes to eat the whole pie. Which probably won't be long at all.

    Marie Callender's Pumpkin Pie

    Menu Description: "Our famous pumpkin pie has just the right amount of spice."

    The vittles from Marie Callender's have made an impression beyond the chain's West Coast roots with home-style packaged entrées and side dishes available in frozen food sections of supermarkets across the country. Pie making is where the chain excels. A fresh slice of a Marie Callender's pie is as close as you'll get to homemade heaven this side of Grandma's porch window. Creating a recipe for Marie Callender's Pumpkin Pie is an obvious selection, since the restaurant sells more pumpkin pies than any other, even in non-holiday months. 

    Creating my Marie Callender's Pumpkin Pie copycat recipe was a perfect opportunity to improve on icky pumpkin pie recipes (like those found on cans of canned pumpkin, for example) in many ways. For one thing, there's no need to use canned evaporated milk when fresh whole milk and cream is so much better. And three eggs, versus two found in many recipes, will add to the richness and firmness of the cooked filling. After mixing the filling, we'll let it sit for a bit while waiting for the oven to preheat. This way it can come closer to room temperature, and the pie filling will bake more evenly. My recipe included here for the crust uses a chilled combination of butter and shortening for the perfect mix of flavor and flakiness. If you find your crust getting too dark on top during baking, use a pie crust shield or mold some foil around the top of the crust to prevent it from over-browning.

    Marie Callender's Chicken Pot Pie

    Menu Description: "Tender chunks of chicken with seasonings and vegetables."

    All the Marie Callender's restaurants try to maintain a homestyle ambiance, kind of like being at Grandma's house for dinner. The wallcoverings reflect styles of the thirties and forties and are complemented by dark mahogany-stained, wood-paneled walls and brass fixtures. You'll also find old-fashioned furnishings, many of them throwbacks to the forties, the time of this restaurant chain's founding fifty years ago.

    The menu, which features meatloaf, pot roast, and country fried steak, reflects a satisfying homestyle cuisine that today is all too rare. If you wondered whether a company that is known for its great dessert pies could make a great pot pie...it can.

    For my Marie Callender's Chicken Pot Pie copycat recipe, try to use small 16-ounce casserole dishes that measure 4 or 5 inches across at the top. Any casserole dishes that come close to this size will probably work; the yield will vary depending on what size dishes you decide to use.

    Marie Callender's Famous Golden Cornbread

    The American restaurant business has been shaped by many entrepreneurs, so determined to realize their dreams of owning a hot dog cart or starting a restaurant, that they sell everything they own to raise cash. Food lore is littered with these stories, and this one is no exception. This time the family car was sold to pay for one month's rent on a converted World War II army tent, an oven, refrigerator, rolling pin, and some hand tools. It was 1948, and that's all Marie Callender and her family needed to make enough pies to start delivering to restaurants in Long Beach, California.

    It was the pies that started the company, but soon the bakeries became restaurants and they started serving meals. One of my favorites is the Famous Golden Cornbread and whipped honey butter that comes with many of the entrées. What makes this cornbread so scrumptious is its cake-like quality. My Marie Callender's cornbread copycat recipe below requires more flour than traditional cornbread recipes, making the finished product soft and spongy, just like Marie's.

    Marie Callender's Banana Cream Pie

    Menu Description: "Fresh ripe bananas in our rich vanilla cream, topped with fresh whipped cream or fluffy meringue."

    Bakers get to work by 5 a.m. at Marie Callender's to begin baking over 30 varieties of pies. Huge pies. Pies that weigh nearly three pounds apiece. The fresh, creamy, flaky delicious pies that have made Marie Callender's famous in the food biz. On those mornings about 250 pies will be made at each of the 147 restaurants. Modest, I suppose, when compared with Thanksgiving Day when the stores can make up to 3,500 pies each.

    For now though, we'll start with just one—banana cream pie with flaky crust, whipped cream, and slivered almonds on top. My Marie Callender's banana cream pie recipe requires that you bake the crust unfilled, so you will have to use a pie weight or other oven-safe object to keep the crust from puffing up. Large pie weights are sold in many stores, or you can use small metal or ceramic weights (sold in packages). Or place dried beans on the crust which has first been lined with aluminum foil or parchment paper.

    Marie Callender's Lemon Cream Cheese Pie

    Menu Description: "Our melt-in-your-mouth cream cheese pie with a tangy lemon topping."

    Here's a great double-layered pie with lemon topping covering a creamy cheesecake filling. It's two great pies in one dessert. This creation has been a huge seller for Marie Callender's, and I've heard nothing but raves from anyone who's tried it. Make the crust from scratch like the pros using my Marie Callender's lemon cream cheese pie copycat recipe here, or take the easy route with a pre-made graham cracker crust found in the baking aisle. Either way, it's pie heaven.
