Another great recipe-very close to Mimi's. If anything it's better.

I substituted chicken broth for the water and used 1/2 of low fat milk and the other 1/2 and 1/2. My family loved this soup.

We have found a new comfort food! Fabulous Chowder, Just like the restaurant version.

I substituted 2 cups of low sodium chicken broth for 1/2 of the required water, added one more potato and decided to forgo the bay leaf. I served it with warm honey wheat rolls. Yum!

I love Mimi's and this recipe really is a great clone for their corn chowder. I would suggest that you skip the parsley and spend the money on a baguette and you're good to go.
