My favorite omelette from IHOP. Thanks for the recipe. I have a suggestion for anyone though, and it's to add a little bit of salsa on the side with the sour cream. YUM.

IHOP puts a small amount of buttermilk pancake batter into their omelettes to fluff them up a little. I think a tablespoon or two would do it for a 3 egg omelette.

I work at IHOP and we do put some pancake batter into our omlettes. They are so stinkin good!!!

Last time I was at IHOP the menu stated that they put pancake mix into their omlettes and thats what makes them so fluffy (and filling!)
