I had roasted several loose cloves of garlic (not packed in the head of garlic) last night. Instead of using minced garlic, I threw about 8 of these cloves and the oil from the dish into the food processor. I also added a splash of soy sauce. No cumin or sage in the house, but plenty of smoked paprika.
Will easily make this again. Thank you.

1. This is DELICIOUS!!! I had something very similar in Italy, with just a drizzle of either red wine or balsamic vinegar over the top, in addition to the tomato relish!! 2. For the fluffiest hummus, with the food processor running, throw in (1 at a time) 4-5 ice cubes. They will NOT make your hummus runny, but you will not believe the difference in texture! That's a trick I picked up from a Greek friend who's a restaurateur! :) LOVELY recipe!!!

I had trouble finding the sesame tahini in the grocery store, but I did find it in a health food store.
