White Castle Cheeseburgers Reduced-Fat

Some call them "whitey one-bite." They're also known as "sliders," gut busters," and "belly bombers." The cooking technique is unique to the chain, because it involves steaming the ground beef patties. Minced onions are placed on the grill, with a beef patty on top. The steam from the grilling onions rises up through the five holes in each thin patty so that the beef is thoroughly cooked without having to flip it over.

Now you can use the same method, but with reduced-fat ingredients, to cook a lower-fat version of one of the country's first chain burgers.

  • 1 pound super-lean ground beef (7% fat)
  • 16 small hamburger patties or 16 dinner rolls
  • 1/2 small onion, minced
  • Salt
  • Ground black pepper
  • 16 slices fat-free American cheese
Do This

1. Prepare the patties by separating the ground beef into 16 1-ounce portions. On a sheet of wax paper, form the portions into square, very thin, 2 1/2-inch patties. Using a small, circular object, such as a straw or the tip of a clean pen cap, create five holes in each patty. Make one hole in the center of the patty, and four holes surrounding the first one, with each about half an inch in from each corner. Freeze these patties, still on the wax paper, until firm.

2. Toast the faces of the buns or dinner rolls, either in a hot saute pan over medium heat.

3. In a hot frying pan or skillet preheated over medium heat, arrange tablespoon-size piles of onions, 3 inches apart. Salt and pepper each pile of onions.

4. Spread the onions flat, and then place a frozen beef patty on each pile of onions. Salt each patty.

5. Cook each burger for 4 to 6 minutes. If you made the patties thin enough, steam from the onions will rise around the meat and through the holes in the patty, cooking the meat thoroughly without having to flip it.

6. To build each burger, turn the bottom half of a bun over onto a patty, then hold it down as you scoop a spatula under the meat and onions, and turn the sandwich over onto a plate.

7. Cut a slice of American cheese into 2-inch square portions and place a square onto the onions on the beef patty.

8. Complete the burger with the top half of the roll. Repeat with the remaining burgers, and serve hot.

    White Castle Burgers

    Nicknamed "Sliders" and "Gut Bombers," these famous tiny burgers were one of the earliest fast-food creations. It all started in 1921 when E.W. Ingram borrowed $700 to open a hamburger stand in Wichita, Kansas. Ingram chose the name White Castle because "white" signified purity and cleanliness, while "castle" represented strength. permanence, and stability. White Castle lived up to its name, maintaining that permanence and stability by growing steadily over the years to a total of 380 restaurants.

    Ingram's inspiration was the development of steam-grilling, a unique process that helped the burgers retain moisture. The secret is grilling the meat over a small pile of onions that give off steam as they cook. Five holes in each mini-burger help to ensure that the meat is completely cooked without having to flip the patties. Today customers can buy these burgers "by the sack" at the outlets, or pick them up in the freezer section of most grocery stores, but hey, it's fun to use my White Castle burger copycat recipe to make them at home.

    KFC Grilled Chicken

    It took chefs several years to develop what would eventually become KFC's most clucked about new product launch in the chain's 57-year history. With between 70 to 180 calories and four to nine grams of fat, depending on the piece, the new un-fried chicken is being called "KFC's second secret recipe," and "a defining moment in our brand's storied history" in a company press release. The secret recipe for the new grilled chicken is now stored on an encrypted computer flash drive next to the Colonel's handwritten original fried chicken recipe in an electronic safe at KFC company headquarters. Oprah Winfrey featured the chicken on her talk show and gave away so many coupons for free grilled chicken meals that some customers waited in lines for over an hour and half, and several stores ran out and had to offer rain checks. Company spokesperson Laurie Schalow told the Associated Press that KFC has never seen such a huge response to any promotion. "It's unprecedented in our more than 50 years," she said. "It beats anything we've ever done."

    When I heard about all the commotion over this new secret recipe, I immediately locked myself up in the underground lab with a 12-piece bucket of the new grilled chicken, plus a sample I obtained of the proprietary seasoning blend, and got right to work. After days of nibbling through what amounts to a small flock of hens, I'm happy to bring you this amazing cloned version of this fast food phenomenon so that you can now reproduce it in your own kitchen. 

    Find the smallest chicken you can for my KFC grilled chicken copycat recipe, since KFC uses young hens. Or better yet save some dough by finding a small whole chicken and cut it up yourself. The secret preparation process requires that you marinate (brine) your chicken for a couple of hours in a salt and MSG solution. This will make the chicken moist all the way through and give it great flavor. After the chicken has brined, it's brushed with liquid smoke-flavored oil that will not only make the seasoning stick to the chicken, but will also ensure that the chicken doesn't stick to the pan. The liquid smoke in the oil gives the chicken a smoky flavor as if it had been cooked on an open flame barbecue grill.

    The grilled chicken at KFC is probably cooked on ribbed metal plates in specially designed convection ovens to get those grill marks. I duplicated that process using an oven-safe grill pan, searing the chicken first on the stove top to add the grill marks, then cooking the chicken through in the oven. If you don't have a grill pan or a grill plate, you can just sear the chicken in any large oven safe sauté pan. If you have a convection function on your oven, you should definitely use it, but the recipe will still work in a standard oven with the temperature set just a little bit higher. After baking the chicken for 20 minutes on each side, you're ready to dive into your own 8-piece bucket of delicious indoor grilled chicken that's as tasty as the fried stuff, but without all the fat.

    Ruby Tuesday Thai Phoon Shrimp

    Menu Description: "Tender, crispy shrimp with a sweet and spicy chili sauce that's got just the right kick."

    This was another job for the micro-screen sieve. Rinsing away the mayo from a spoonful of this delicious chili sauce reveals just what I expected: sambal chunks. The minced chili peppers that sat there, now naked, in the bottom of the sieve, looked just like the type of red pepper used in sambal oelek chili sauce. And since there were bits of garlic in there too, it was clear that the bright red chili garlic sauce you find near the Asian foods in your market is the perfect secret ingredient for the fiery mixture that's used on this popular dish from Ruby Tuesday's appetizer menu. Once you make the sauce, whip up some of the secret breading for the shrimp and get on with the frying. You can use shortening or oil here, but I think shortening works best, and it doesn't stink up the house. The no trans-fat stuff is da bomb. Once all of your shrimps are fried to a nice golden brown, carefully coat the little suckers with about half of the sauce, and then serve the rest of the sauce on the side for dipping, just like they do at the restaurant.

    A Sabrett push cart hot dog isn't complete until it's slathered with the tangy orange/red onion sauce. For a buck or two you can grab a hot dog with the works on the fly from these popular umbrella-covered food carts in many major cities and at special events. You see hundreds of 'em in New York City, especially around Central Park. In fact, that's where the sample for this re-creation was obtained. While most of the Sabrett toppings are standard hot dog fare—ketchup, mustard, sauerkraut—the onion sauce makes these hot dogs special.

    Carrabba's Chicken Marsala

    Menu Description: "Fire-roasted chicken breast topped with mushrooms, prosciutto and our Florio Marsala wine sauce."

    To create my Carrabba's Chicken Marsala recipe, I ordered the dish to go, with the sauce on the side, so that I could separately analyze each component. After some trial and error in the underground lab, I found that re-creating the secret sauce from scratch is easy enough with a couple small cans of sliced mushrooms, a bit of prosciutto, some Marsala wine, shallots, garlic and a few other good things. 

    Cooking the chicken requires a very hot grill. The restaurant chain grills chicken breasts over a blazing real wood fire, so crank your grill up high enough to get the flames nipping at your cluckers (not a euphemism). If your grill has a lid, keep it open, so you can watch for nasty flare-ups.

    Skyline Chili

    There's no chocolate in it. Or coffee. Or Coca-Cola. The ingredient rumors for the Skyline Chili secret recipe are plentiful on the Internet, but anyone can purchase cans of Skyline chili from the company and find the ingredients listed right on the label: beef, water, tomato paste, dried torula yeast, salt, spices, cornstarch, and natural flavors. You can trust that if chocolate were included in the secret recipe, the label would reflect it—important information for people with a chocolate allergy. 

    Use my Skyline Chili recipe to re-create that unique flavor with a special blend of easy-to-find spices plus beef broth and a few other not-so-unusual ingredients. Let the chili simmer for an hour or so, then serve it up on its own or in one of the traditional Cincinnati-style serving suggestions (the "ways" they call 'em) with the chili poured over spaghetti noodles, topped with grated Cheddar cheese and other good stuff:

         3-Way: Pour chili over cooked spaghetti noodles and top with grated Cheddar cheese.
         4-Way: Add a couple teaspoons of grated onion before adding the cheese.
         5-Way: Add cooked red beans over the onions before adding the cheese.

    P.F. Chang's Chang's Spicy Chicken (General Chu's)

    Menu Description: "Lightly-dusted, stir-fried in a sweet Szechwan sauce." (Our version of General Chu's.)

    The delicious sweet-and-spicy secret sauce is what makes this dish one of P. F. Chang's top picks. Once the sauce is finished, all you have to do is sauté your chicken and combine. His idea was to create an efficient outlet that could serve freshly made cinnamon rolls in shopping malls throughout the country.     P.F. Chang's Mongolian Beef

    Menu Description: "Quickly-cooked steak with scallions and garlic."

    Beef lovers go crazy over this one at P.F. Chang's. Flank steak is cut into bite-sized chunks against the grain, then it's lightly dusted with potato starch, flash-fried in oil, and doused with an amazing sweet soy garlic sauce. The beef comes out tender as can be, and the simple sauce sings to your taste buds. 

    I designed my P.F. Chang's Mongolian Beef recipe using a wok, but if you don't have one, a sauté pan will suffice. You may need to add more oil to the pan to cover the beef in the flash-frying step. 

    P. F. Chang's secret sauce is what makes this dish so good, and it's versatile. If you don't dig beef, you can substitute with chicken. Or you can brush it on grilled salmon.

    Cliff and Buster Coconut Macaroons

    While passing these out to each giddy audience member on her 2003 "Favorite Things" show, Oprah gushed, "Isn't that the best macaroon you've ever had?" The recipe for these delicious yet easy-to-clone coconut macaroons was passed down to Cliff Barsevich years ago from his grandmother, and they were served at the events serviced by Cliff and partner Ron Strles' catering business. When customers continued to rave about the cookies, the duo began selling the macaroons by the box in high-end stores such as Neiman Marcus. With a lot of help from The Oprah Winfrey Show, the cookies have become a huge success. 

    Still, at 15 bucks a dozen, it's nice to have a clone that will satisfy your macaroon munchies at a fraction of the cost.     Popeyes Famous Fried Chicken and Biscuits has become the third-largest quick-service chicken chain in the world in the twenty-two years since its first store opened in New Orleans in 1972. (KFC has the number-one slot, followed by Church's Chicken). Since then, the chain has grown to 813 units, with many of them overseas in Germany, Japan, Jamaica, Honduras, Guam, and Korea.

    Long John Silver's Batter-Dipped Fish

    Jerrico, Inc., the parent company for Long John Silver's Seafood Shoppes, got its start in 1929 as a six-stool hamburger stand called the White Tavern Shoppe. Jerrico was started by a man named Jerome Lederer, who watched Long John Silver's thirteen units dwindle in the shadow of World War II to just three units. Then, with determination, he began rebuilding. In 1946 Jerome launched a new restaurant called Jerry's and it was a booming success, with growth across the country. Then he took a chance on what would be his most successful venture in 1969, with the opening of the first Long John Silver's Fish 'n Chips. The name was inspired by Robert Louis Stevenson's Treasure Island. In 1991 there were 1,450 Long John Silver Seafood Shoppes in thirty-seven states, Canada, and Singapore, with annual sales of more than $781 million. That means the company holds about 65 percent of the $1.2 billion quick-service seafood business.

    Cheeseburger in Paradise BBQ Jerk Ribs

    Menu Description: "Slow-cooked marinated domestic pork ribs lightly seasoned with Jerk spices and basted with BBQ sauce."

    An island taste in the secret jerk paste formula permeates the ribs as they slow cook in low heat. Halfway through cooking the ribs are wrapped in foil to begin a braising process that tenderizes the meat. And for a big finish, the racks are tossed on the grill just before serving then basted with a delicious scratch sauce. Follow the grilling instructions here and you won't lose any meat from your ribs sticking to the barbecue grate. Start by grilling the ribs bony-side-down so that some of the fat from the ribs melts onto your grill. Now when you flip the racks over onto the meaty side the grill is well-lubricated, giving you beautiful grill marks on the good part, and no sticking. And don't freak out about that whole habanero pepper included in the jerk paste. Sure, it may be one of the world's hottest peppers, but the paste goes a long way, and you should only detect a hint of heat on the finished product.     Sabra Classic Hummus

    Every brand of hummus I've tried over the years has been just so-so in taste and texture, until I discovered Sabra. Now this ultra-smooth hummus—which has been rated number one in a blind taste test—is the only hummus in my fridge, unless I've made this clone. Hummus is an awesome snack as a dip for vegetables or pita chips, since it's rich in protein, soluble fiber, potassium, and Vitamin E. The secret to duplicating Sabra's smooth and creamy quality is to let your food processor work the stuff over for a solid 10 minutes. Also, when getting your Sabra hummus ingredients ready, don't use all of the liquid from the can of garbanzo beans or the hummus will end up too runny. Strain off the liquid first, then measure only 1/2 cup back into the food processor. Sabra uses canola and/or soybean oil, but you may think olive oil tastes better. Look for a jar of sesame tahini in the aisle where all the international foods are parked, and while you're there find the citric acid, which may also go by the name "sour salt." The clone below will not have the proper acidic bite without this secret ingredient, and citric acid also works as a preservative to help the leftover hummus stay fresh and tasty.

    Bonefish Grill Saucy Shrimp

    Menu Description: "Wild gulf shrimp sauteed in a Lime Tomato Garlic sauce with Kalamata olives and Feta cheese."

    Restaurateurs Tim Curci and Chris Parker opened the first Bonefish Grill in St. Petersburg, Florida in 2000, and, with at least eight species of fresh oak-grilled fish to choose from on any given day, the chain has since exploded to over 100 units in 24 states. Yes, the fish is very good, and the oak grill is a nice touch, but you should also know that this is a restaurant that likes to have fun with sauces. This appetizer clone is a good example of that. The tartness of the lime works beautifully with the sweetness of the sundried tomato to create a scampi sauce unlike any you may have tasted before. Lay this simple dish on the troops before your main course and you will be tonight's kitchen hero.

    Bonefish Grill Bang Bang Shrimp

    Menu Description: "Tender, crispy wild gulf shrimp tossed in a creamy, spicy sauce."

    Bonefish Grill proudly refers to this appetizer as the "house specialty." And why not, it's an attractive dish with bang-up flavor, especially if you like your food on the spicy side. The heat in my Bonefish Grill Bang Bang Shrimp copycat recipe comes from the secret sauce blend that's flavored with chili garlic sauce, also known as sambal. You can find this bright red sauce where the Asian foods are in your market—and while you're there, pick up some rice vinegar. 

    Once the sauce is made, you coat the shrimp in a simple seasoned breading, fry them to a nice golden brown, toss them gently in the sauce, and then serve them up on a bed of mixed greens to hungry folks who, hopefully, have a cool drink nearby to mellow the sting.

    Buffalo Wild Wings Buffalo Wings and Sauces

    Menu Description: "Here they are in all their lip-smacking, award-winning glory: Buffalo, New York-style chicken wings spun in your favorite signature sauce."

    Since Buffalo, New York was too far away, Jim Disbrow and Scott Lowery satisfied their overwhelming craving in 1981 by opening a spicy chicken wing restaurant close to home in Kent, Ohio. With signature sauces and a festive atmosphere, the chain has now evolved from a college campus sports bar with wings to a family restaurant with over 300 units. 

    While frying chicken wings is no real secret—simply drop them in hot shortening for about 10 minutes—the delicious spicy sauces are what make the wings special. There are 12 varieties of sauce available to coat your crispy chicken parts at the chain, and I'm presenting clones for the more traditional flavors. These sauces are very thick, almost like dressing or dip, so we'll use an emulsifying technique that will ensure a creamy final product where the oil won't separate from the other ingredients. 

    In my Buffalo Wild Wings copycat recipe below you'll find the cooking and coating technique for the wings, followed by copycat recipes for the most popular sauces: Spicy Garlic, Medium and Hot. The sauce recipes might look the same at first, but each has slight variations to make your sauce hotter or milder by adjusting the level of cayenne pepper. You can find Frank's pepper sauce by the other hot sauces in your market. If you can't find that brand, you can also use Crystal Louisiana hot sauce.

    Tootsie Roll Midgees

    Even though this clone recipe duplicates the tiny bite-size versions of the candy, you're free to make yours any size you like. The technique here is a tweaking of the previous secret formula that was featured in Low-Fat Top Secret Recipes, and it includes several upgrades. I found that more cocoa, plus the addition of salt and butter to the mix improved the flavor. I also found that bringing your sweet bubbling mixture to the firm ball stage 250 degrees F (you do have a candy thermometer, right?), and then stretching and pulling the candy like taffy (fun!) as it cools, will give you a finished product more like the real deal.

    Maid-Rite Loose Meat Sandwich

    It's been an Iowa tradition since 1926, and today this sandwich has a huge cult following. It's similar to a traditional hamburger, but the ground beef is not formed into a patty. Instead, the lightly seasoned meat lies uncompressed on a white bun, dressed with mustard, minced onion, and dill pickles. Since the meat is loose, the sandwich is always served with a spoon for scooping up the ground beef that will inevitably fall out.

    When this clone recipe for Maid-Rite was originally posted on our website several years ago, it elicited more e-mail than any recipe in the site's history. Numerous Midwesterners were keyboard-ready to insist that the clone was far from accurate without the inclusion of a few bizarre ingredients, the most common of which was Coca-Cola. One letter states: "You evidently have not ever had a Maid-Rite. The secret to the Maid-Rite is coke syrup. Without it you cannot come close to the taste." Another e-mail reads: "Having lived in the Midwest all of my life and knowing not only the owners of a Maid-Rite restaurant but also many people who worked there, I can tell you that one of the things you left out of your recipe is Coca-Cola. Not a lot, just enough to keep the meat moist."

    On the flip side, I received comments such as this one from an Iowa fan who lived near Don Taylor's original Maid-Rite franchise: "The secret to the best Maid-Rite is the whole beef. Don had a butcher shop in his basement where he cut and ground all his beef. Some people still swear they added seasoning, but that is just not true. Not even pepper."

    Back in my lab, no matter how hard I examined the meat in the original product—which was shipped to me in dry ice directly from Don Taylor's original store in Marshalltown, Iowa—I could not detect Coca-Cola. There's no sweetness to the meat at all, although the buns themselves seem to include some sugar. When the buns are chewed with the meat, the sandwich does taste mildly sweet. I finally decided that Coca-Cola syrup is not part of the recipe. If it is added to the meat in the Maid-Rite stores, it's an insignificant amount that does not have any noticeable effect on the flavor.

    Also, the texture is important, so adding plenty of liquid to the simmering meat is crucial. My Maid Rite sandwich copycat recipe requires 1 cup of water in addition to 1/4 cup of beef broth. By simmering the ground beef in this liquid for a couple of hours, the meat will tenderize and become infused with a little flavor, just like the real thing.

    When the liquid is gone, form the ground beef into a 1/2 cup measuring scoop, dump it onto the bottom of a plain hamburger bun, then add your choice of mustard, onions, and pickles. Adding ketchup is up to you, although it's not an ingredient found in Maid-Rite stores. Many say that back in the early days "hobos" would swipe the ketchup and mix it with water to make tomato soup. Free ketchup was nixed from the restaurants way back then, and the custom has been in place ever since.

    Olive Garden Tiramisu Low-Fat

    The Olive Garden chain offers a very popular and delicious tiramisu that is produced outside the restaurants and then delivered fresh to each outlet. Fluffy mascarpone cheese is layered over ladyfingers soaked in a solution of espresso and coffee liqueur, and the dessert is topped with dusting of cocoa. But mascarpone cheese has 13 grams of fat per ounce, and there's nothing that tastes quite like it. However, there is one way to get very close, and its a special creamy combination of Dream Whip, gelatin, and fat-free cream cheese. You can make your own espresso, use extra strong coffee as a substitute, or order a quadruple shot of espresso on your next trip to Starbucks. If you love the traditional Italian dessert, but don't love the fat, you simply must check out this slightly tweaked version of the clone from Top Secret Recipes - Lite! that will create a guilt-free clone to satisfy any tiramisu craving.

    California Pizza Kitchen (CPK) Sedona White Corn Tortilla Soup Low-Fat

    When you get a steaming bowl of great tortilla soup plopped down in front of you, it's tough to stop slurping until you hit bottom. California Pizza Kitchen has just such a soup, but the oil and fried tortilla chips jack up the fat. Never fear. You can use my CPK Sedona White Corn Tortilla Soup recipe below to make a soup that tastes just as good as the original without most of the oil and fat. Fat-free chicken broth stands in well for the regular stuff, and baked corn tortilla chips give the soup its traditional taste and texture. You'll want to use a hand blender for this one, if you've got one. If not, a regular blender or food processor will work fine to purée the soup so that it has the smooth consistency of the original CPK tortilla soup, but with only a miniscule two grams of fat per serving.

    Margaritaville Jamaica Mistaica Wings

    Menu Description: "Come back to Jamaica! Our wings tossed in habanero-honey wing sauce with cucumber sticks and house-made mango ranch dipping sauce."

    Chicken wings. Everyone loves the flavorful non-functioning chicken parts. When they're good, they're real good. And these Jamaica Mistaica wings from Jimmy Buffet's chain of island-themed restaurants are some of the best. The preparation is no big secret: Fry the wings, add the sauce. It's that habanero honey sauce recipe that makes these so good. Add to that an easy-to-make mango ranch dipping sauce, and you're off on a non-stop cruise to chicken wing paradise. Margaritaville serves 10 wings at the restaurant, but these top secret sauces will be enough for 30 Jamaica Mistaica wings.

    Taco Bell Baja Sauce

    This is the spicy sauce that comes on your Gordita or Chalupa at Taco Bell. But the only way to get a significant amount of the delicious creamy sauce to use at home on tacos, fajitas, and burritos is by making some yourself. With my Taco Bell Baja Sauce recipe below, you will make enough to hold you over for a while. 

    You need a food processor to purée the vegetables, but don't expect to use all the purée. I've made the measurements for the purée larger than required so that your food processor will have something to grab on to. This is a mayo-based sauce, so if you want to eliminate some fat, use light mayonnaise in the recipe and make low-fat homemade Baja Sauce. You can't get that at Taco Bell.

    Old Bay Seasoning

    With spice grinder in hand, Gustav Brunn traveled to America from Germany, and settled down in Baltimore on the Chesapeake Bay, where steamed crabs are a staple. Gustav began grinding. In 1939, after trying many different combinations, Gustav found just the right mix for a top secret blend of spices that would be the most-used seasoning on steamed crabs, shrimp, lobster, and other tasty seafood dishes for generations to come. But McCormick & Co., which purchased Old Bay in 1990, insists that the celery salt based blend is not just for seafood. You can also use the seasoning on chicken, French fries, popcorn, baked potatoes, deviled eggs, hamburgers, and even pizza.

    KFC (Kentucky Fried Chicken) Cajun Honey Wings

    These "Limited-Time Only" wings from KFC may be gone now, but since this clone duplicates the sweet-and-spicy sauce on this amazing finger food, the great taste of this Dead Food lives on. In each store wings are coated with a KFC-style breading before they get fried up and tossed in delicious Cajun sauce. The sauce is da bomb on wings, but you can also put it to work on ribs or other chicken parts like breaded tenders or baked nuggets. This recipe calls for Emeril's Bayou Blast Cajun Seasoning, but it will also work with any other Cajun seasoning blend you find in your local market.

    Romano's Macaroni Grill Chicken Portobello

    Menu Description: "Grilled chicken breast with Portobello mushrooms, smoked mozzarella and demi glace, with a spinach orzo pasta."

    Fire up the grill for my take on one of Romano's Macaroni Grill's most popular entrées: Chicken Portobello. After you grill a couple portobello caps, slice them thinly at an extreme angle to make wide slices that fit perfectly on top of grilled chicken breasts that have been rubbed with stone ground mustard (the kind with the whole mustard seeds in it). 

    Romano's delicious demi-glace is made from reduced veal stock, but a nice substitute can be made from a combination of canned beef broth and chicken broth. With plenty of garlic, rosemary and thyme in there, the aroma of sauce simmering on the stove will make everyone in the house drool.

    P.F. Chang's Orange Peel Chicken

    Menu Description: "Tossed with orange peel and chili peppers for a spicy/citrus combination."

    Several of P.F. Chang's top-selling items are similar in preparation technique: bite-size pieces of meat are lightly breaded and wok-seared in oil, then doused with a secret sauce mixture. This dish is made the same way. The heat in the citrusy sauce comes from chili garlic sauce, which you'll find in the aisle with the Asian foods in your supermarket—the rest of the sauce ingredients are common stuff. The orange peel is julienned into thin strips before adding it to the dish. Since the flavor from the peel is so strong, we won't need to add it until the end. Cook up some white or brown rice to serve alongside your homemade P.F. Chang's Orange Peel chicken and get the chopsticks ready

    Outback Steakhouse Grilled Shrimp on the Barbie & Remoulade Sauce

    My Outback Steakhouse Grilled Shrimp on the Barbie recipe makes the same size appetizer serving that you get in the restaurant. That's only 6 shrimp—enough for me, but what are you guys having? That's why I've designed the formulas for the remoulade sauce and the shrimp seasoning for a bigger serving, so you can grill up to a pound of shrimp and chow down. Find bags of frozen uncooked shrimp that have been peeled, but with the tails left on.

    Olive Garden Tiramisu

    Menu Description: "The classic Italian dessert. A layer of creamy custard set atop espresso-soaked ladyfingers."

    In Italian, tiramisu means "pick me up" or "cheer me up." And when you taste the delicious combination of mascarpone cheese (sometimes referred to as Italian cream cheese), ladyfingers, espresso and Kahlua it will be hard not to smile. 

    For my Olive Garden Tiramisu recipe below, you'll want to get out your double boiler for the egg yolks (a metal bowl over a saucepan of simmering water will also do) and get some ladyfingers (ladyfingers are miniature cakes about the size of two fingers side-by-side). For this tiramisu dessert, you can either make your own espresso, use extra strong coffee as a substitute, or, next time you're at Starbucks, order up a quadruple shot of espresso to go.

    Roadhouse Grill Baby Back Ribs

    Menu Description: "Our award-winning Baby Back Ribs are slow-roasted, then basted with Jim Beam Bourbon BBQ Sauce and finished on our Mesquite grill."

    When your crew bites into these baby backs they'll savor meat so tender and juicy that it slides right off the bone. The slow braising cooks the ribs to perfection, while the quick grilling adds the finishing char and smoky flavor. But the most important component to any decent rack of ribs is a sauce that's filled with flavor, and this version of Roadhouse Grill's award-wining sauce is good stuff. I ordered the ribs naked (without sauce) so that I could see if there was any detectable rub added before cooking and I didn't find anything other than salt and a lot of coarse black pepper. So that's the way I designed my Roadhouse Grill Baby Back Ribs recipe, and it works.

    P.F. Chang's Lemon Pepper Shrimp

    Menu Description: "Stir-fried with chives and bean sprouts."

    Chefs at P. F. Chang's China Bistro cook most dishes in heavy woks over extremely high heat, with flames nipping at their noses. The special stove is designed so that the tall fires work at the back end of the wok, away from the chef. The well-ventilated stove is built with a steady stream of running water nearby to thin sauces and rinse the woks after each dish is prepared. 

    Since we don't have those blaster stoves at home, I had to tweak my P.F. Chang's Lemon Pepper Shrimp recipe below for standard kitchen equipment. A gas stove and a wok will give you the best results, but this recipe can be knocked-off just as well with a large sauté pan, if that's all you've got. 

    Things are moving fast in P.F. Chang's kitchens. The chefs are well-trained, but they eyeball measurements for sauces with a ladle, so each wok-prepared dish is going to come out a little different. Considering this, I figured the best way to get a good clone would be to order the dish several times. I averaged the flavors by combining several batches of sauce into one large bowl, and then copied that. The shrimp is lightly breaded—they use potato starch, but cornstarch is a good substitute—and flash fried in oil. Strain the shrimp out of the oil, add it back to the pan with the sauce, and you've got yourself a clone.

    Mimi's Cafe Corn Chowder

    Arthur Simms was in the restaurant business for many years before he opened the first Mimi's Cafe with his son, Tom, in Anaheim, California in 1978. Back in the Golden Age of Hollywood Arthur was the guy running things in the MGM Studios commissary where, on any given day, Jean Harlow, Clark Gable and Judy Garland might stop in for a grazing. Arthur named his New Orleans-influenced, bistro-style restaurant after a woman he met and fell in love with in Paris during the war. 

    Today it's Tom who runs the show at this growing 93-unit chain where regulars return for the staple favorites including the French Market Onion Soup, Carrot Raisin Bread and the delicious corn chowder. Use my Mimi's Corn Chowder recipe below to enjoy this great soup at home.

    Newman's Own Creamy Caesar Dressing

    With over 100 million dollars given to charity since 1982, Newman's Own products have become an American favorite. One variety of the brand's dressings that really stands out is this exceptional Caesar salad dressing. It's probably the best commercial Caesar dressing on the market. 

    One secret ingredient in my Newman's Own Creamy Caesar Dressing recipe is the inclusion of Worcestershire sauce. Not only does Worcestershire give your dressing the perfect flavor and color of the original, but the sauce is made with a fishy ingredient that's crucial for a good Caesar dressing: anchovies.

    Boston Market Meatloaf

    In the early 90's Boston Chicken was rockin' it. The home meal replacement chain's stock was soaring and the lines were filled with hungry customers waiting to sink their teeth into a serving of the chain's delicious rotisserie chicken. The chain was so successful with chicken, the company quickly decided it was time to introduce other entrée selections, the first of which was a delicious barbecue sauce-covered ground sirloin meatloaf. 

    Offering the other entrées presented the company with a dilemma: what to do about the name. The bigwigs decided it was time to change the name to Boston Market, to reflect a wider menu. That meant replacing signs on hundreds of units and retooling the marketing campaigns. That name change, plus rapid expansion of the chain and growth of other similar home-style meal concepts, sent the company into a tailspin. By 1988, Boston Market's goose was cooked, and the company filed for bankruptcy. Soon McDonald's stepped in to purchase the company, with the idea of closing many of the stores for good, and slapping Golden Arches on the rest. But that plan was scrapped when, after selling many of the under-performing Boston Markets, the chain began to fly once again.  Within a year of the acquisition Boston Market was profitable, and those meals with the home-cooked taste are still being served at over 700 Boston Market restaurants across the country.

    KFC (Kentucky Fried Chicken) Honey BBQ Wings

    Once a regular menu item, these sweet, saucy wings are now added to the KFC menu on a "limited-time-only" basis in many markets. So how are we to get that sticky sauce all over our faces and hands during those many months when we are cruelly denied our Honey BBQ Wings? Now it's as easy as whipping up my KFC honey BBQ wings recipe that re-creates the crispy breading on the chicken wings, and the sweet-and-smoky honey BBQ sauce. "Limited-time-only" signs—we laugh at you.

    DoubleTree Hotel Chocolate Chip Cookies

    When you check in at one of more than 250 hotels run by this U.S. chain, you are handed a bag from a warming oven that contains two soft and delicious chocolate chip cookies. This is a tradition that began in the early 80s using a recipe from a small bakery in Atlanta. All the cookies are baked fresh every day on the hotel premises. The chain claims to give out about 29,000 cookies every day. 

    Raves for the cookies from customers convinced the hotel chain to start selling tins of the cookies online. But if you've got an insatiable chocolate chip cookie urge that can't wait for a package to be delivered, you'll want to try my DoubleTree Hotel Chocolate Chip cookie copycat recipe below. Just be sure to get the cookies out of the oven when they are barely turning brown so that they are soft and chewy in the middle when cool.

    Carnegie Deli Classic New York Cheesecake

    Carnegie Deli's huge pastrami sandwiches were selected as the best in New York by New York Magazine in 1975, but it's the cheesecakes, which can be shipped anywhere in the country, that really put this famous deli on the map. 

    The secret to my Carnegie Deli traditional New York cheesecake recipe is creating the perfect not-too-sweet sugar cookie crust and varying the baking temperature so that you get a nicely browned top before cooking the cheesecake through.     Now, you can make my Taco Bell Chicken Fajita! Seasoning Mix recipe with a combination of common spices and cornstarch, and keep it indefinitely until your brain's fajita-craving neurons begin firing.     Taco Bell Fire Border Sauce

    For years Taco Bell customers had only the "mild" and "hot" varieties of free taco sauce blister packs to choose from to kick up their fistful of tacos. That is, until a recent addition to the hot sauce selection bumped the heat-o-meter up a few notches. True chili heads might find this sauce mild when compared with the glut of extreme pepper sauces on the market today, but it's definitely an improvement on the Mexican fast-food chain's original hot sauce formula.     Ben & Jerry's Heath Bar Crunch Ice Cream

    When Ben Cohen and Jerry Greenfield first met in their seventh-grade gym class, they quickly became good friends. After college the two decided they wanted to try their hand at selling ice cream. With $12,000 to invest, they moved from New York to Burlington, Vermont, where they purchased an abandoned gas station as the first location for their ice cream store.

    After passing a five-dollar correspondence course on ice cream making from Pennsylvania State University and spending their life savings on renovating the gas station, the two were officially in the ice cream business. Ben and Jerry opened the doors to their first ice cream parlor in 1978. The pair's ice cream was such a big hit that they soon moved to a much larger facility. Today, just fifteen years after opening day, they produce more that 500,000 gallons of ice cream each month.

    Heath Bar Crunch was one of the earliest flavors on the menu and is still the most popular of the thirty original chunky ice cream creations that made them famous. Try making this Ben and Jerry's favorite yourself with our Heath Bar ice cream recipe below!

    Buffalo Wild Wings Asian Zing Sauce

    Menu Description: "Sweet meets heat: A chili pepper, soy and ginger sauce."

    Here's a clone for one of the newer sauces that the wing masters at Buffalo Wild Wings added to the menu. When I get over to BWW, I order up a tall Foster's on tap, and 12 boneless wings covered in this great sauce. It's sweet-and-sour with a kick, and the kick is what the beer's for. Next time you're at the market grab yourself some chili garlic sauce in the aisle with the other Asian foods. That's the crucial ingredient to this Buffalo Wild Wings Asian Zing Sauce recipe that gives this sauce its heat, along with its deep red color. Once this sauce is made it'll store for weeks in a sealed container in your fridge. Now you've got a quick dip for eggrolls, wontons and spring rolls. Cook up some wings, nuggets or breaded tenders and toss 'em in the gooey goodness until well-coated, then serve hot. And don't forget the beer.

    Carrabba's Spicy Sausage Lentil Soup

    It's not served every day at Carrabba's Italian Grill, but when this amazing soup is on the menu, consider yourself lucky and snag a bowl. It's chock-full of lentils and other good bits of vegetables and herbs, plus there are big chunks of spicy Italian sausage in every bite. Best of all, you can use my Carrabba's spicy sausage and lentil soup recipe below to easily make it at home. Most of the work here is just chopping stuff up, including a small ham steak, which you can find where the bacon is sold in your market. If you can't find a ham steak, you can slice up some deli ham. Get everything in a pot and let it simmer. In 1 hour, you'll have enough hot, chunky soup for at least a dozen cup-size servings.
