I really had high hopes for this recipe because I ADORE Red Lobster Stuffed Mushrooms, and they fell a little flat, in my opinion. I tweaked the recipe and came up with what has been my go-to appetizer for over 10 years. All I did was add just a touch of Old Bay (maybe not Red Lobster, but it adds a little more flavor). And as the other commenter mentioned, cheddar is not the right cheese. Monterey Jack works perfectly, though! Also, instead of the traditional (expensive) lobster, minced roasted shrimp is a good substitution.
