I doubled the recipe and doubled the seasonings also. Because there was so much liquid I kept it boiling for 30 min and simmered uncovered for about an hour. The result was fantastic. I almost never write reviews but had to let you know how much I loved it. I had cooked 24 Oz of thick slice bacon to get enough bacon grease. I used the crispy bacon as a garnish for each serving, to be mixed in by the person i served. This is one recipe I will use again for sure.

Was looking forward to this copy cat recipe, but was very disappointed. Very bland and the amout of rice you put on top of the beans should be cut in half. Very disappointed. I even used the bacon I had cooked for the grease.

Sorry, followed recipe to the "T", not even close. Everyone must live in a different part of the Country and have different Red Beans tailored to where they live. This in no way tastes like Popeyes in Louisiana.

I used butter and liquid smoke instead of bacon fat. I added more garlic powder and salt. Beans are bland so you have to amp up the seasoning according to your taste.

I use smoked ham hock, when cooking the beans, it really adds the smokey flavor. Plus add the trinity ( Green pepper, onion, garlic)
