Wilbur must have learned KFC secret recipe back in the early 90's the same way I did..From the KFC chicken seasoning package itself list of ingredients. I remember the ingredients were salt, white pepper, and MSG. That's all. And carefully sifting through it there was only white crystals and black specks. No other colors like green, red or yellow to be found indicating any other herbs and spices used. Wilbur's copycat is correct in simple black and white. My girlfriend was a KFC manager and told me KFC got away from the 11 herbs and spices recipe decades ago. #1 to reduce costs. #2 the 11 herbs and spices fouled the cooking oil much faster. Because residual herbs and spices burned in the oil and spoiled it. Makes sense they could fry much more chicken between oil changes.

I followed the measurements of the recipe but not the type of chicken and cooking portion because I had boneless chicken breast and do not have a pressure cooker. The chicken tasted great! Also, I double-dipped the chicken in the egg/milk mixture and the dry ingredients mixture.

After about 10 minutes frying in the oil, I picked up a piece of the chicken with my tongs and checked the internal temperature with a meat thermometer until it read 165 degrees.

Will definitely use this recipe again!

i worked at kfc and they do not dip in milk they dip in water and then into flour
