Made the regular recipe and made mine Kosher. I left out the MSG. It was absolutely wonderful! I used ground lamb. Had to add some oil to the pan in order to brown better, but the end result was just perfect, exactly the way I remember it growing up in Texas. It looks like a pitiful small amount of spices to go into a big pound of meat, but it was plenty. I let the mixture sit in the frig overnight. My husband does not usually eat a big breakfast, but I made this for a Sunday brunch and he loved it. He ate 5 patties which is saying something because he's been a vegetarian for most of his life. He has never eaten sausage of any kind, ever! I took a pattie to my workmate the next day (sandwiched in one of my homemade biscuts) and she loved it too. Thank you Mr. Wilbur.
