I have been making this since I worked there nearly 20 years ago. Back then it did not have scallions, but came with the option of grilled chicken. I liked to make it as a post-workout meal and instead of dressing I'd add fresh lemon juice and olive oil, sometimes red wine vinegar with dried basil and parsley. Now I add olives, green pepper, and red onion. Had it again for lunch today--great for summertime.

This is a very sweet vinaigrette..... and could use more garlic in any form for better flavor. Pasta gets gummy really quick Here so not great the next day at all..... it is best eaten as fresh as possible. I will leave out the sugar next time. I’m sure Todd got the recipe right on, its just that I’m not a fan personally of terribly “sweet” vinaigrette’s. It was the first time I ever had this menu item as I have never been to a Hooters.

Been using this recipe since the book was published. Add green pepper, sometimes red onion if I have it, use fresh pickle rather than cucumber then you don't have to peel. Can add cooked shrimp, diced rotisserie chicken or cooked diced beef for a whole meal. May like to double dressing as pasta absorbes it. Add some then wait. Might want to add more
