I confess, I have never been to Benihana so I can't speak to the authenticity, however, I go to Teppanyaki restaurants often and this is the closest to that wonderful ginger dressing on a nice crisp salad that I have tried. It is EXCELLENT!
The dressing is incredible. I made it today!

Spot on. Soooo good.
I was pretty disappointed with the result of this recipe, especially with all of these high reviews. I am pretty sure most of these 5 star ratings are due to the taste and not to how close it is to Benni's. In comparison the taste/color was off, it had too much peanut oil and was far too watery like a store-bought sesame dressing...
- No water. Forget the ketchup
- WAY too much peanut oil. Use 1/4 cup instead?
- Not as much pepper
- A whole lot more celery, like 2 full sticks
- A lot more onion, maybe almost 1/2 a full onion
- Could also use a lot more salt, soy sauce, fresh ginger AND garlic!
I've been to Benihana's my whole life and even our modifications to this recipe was pretty bland in comparison to Benihana's. I am going to ask a past chef for his take and add it on here eventually!

I worked at Benihana and we used tomato paste not ketchup the rest looks right... For some reason I thought there was carrots in it.. I'll look for my recipe

I made it exactly as the recipe called and it was fantastic!!! Thanks for the recipe.
This recipe is spot on in flavor! I didn't add the water per some people's advice and it was perfect without the water . To have this recipe is life changing I've always wanted it !!
