Alongside your fish entree served at this huge seafood chain, comes a dollop of delicious tartar sauce. But the sauce served at the restaurant has around 22 grams of fat per two tablespoons. This adds significant fat to an entree that is otherwise so naturally light in fat and calories.

Using fat-free mayonnaise, we can easily eliminate every bit of the fat in this sauce. The finished product tastes just like the original.

    KFC (Kentucky Fried Chicken) Hot & Spicy Wings

    If you like chicken wings with a strong, spicy punch that doesn't overwhelm the great flavor, these are the wings for you. The Colonel's new extra-crispy chicken wings don’t rely on a zesty sauce for heat because it’s built into the delicious extra-crispy breading. And by soaking the wings in a chili brine, you'll get great flavor that goes through to the bone.

    The secret ingredient in my KFC Hot & Spicy Wings copycat recipe is ground habanero pepper, which you can find online. For wings as hot as the originals, you'll need this ground pepper to add to the breading and the brine.

    Another secret to re-creating the KFC experience is to let the fried wings rest in a warm, but not hot, oven for at least 20 minutes before serving as soon as they're done frying. An oven set to 250 degrees simulates the holding station at the restaurant where fried chicken pieces rest until an order comes in. This simple step is a crucial one for crispy wings that taste just like the real deal.

    Dickey's Barbecue Pit Cabbage Slaw

    Here’s an easy secret recipe for a great coleslaw that’s as good, if not better, than the world-famous cole slaw from KFC (which I hacked here). And making a home copy with my exclusive original secret formula is about as easy as it gets.

    To make my Dickie’s Barbecue Pit coleslaw recipe, you won’t have to mince the cabbage as fine as you would for some of the other clones. For this hack, thin-slice the cabbage first, then give those slices a medium chop, and you're good to go. A medium head of cabbage will give you around 8 cups chopped—the perfect amount for this recipe.

    After you mix in the dressing, let the finished slaw sit in your refrigerator for at least an hour so that the flavor develops and improves, and be sure to give it a good stir before you serve it. Your patience will be rewarded.

    Benihana Hibachi Chicken and Steak

    When 20-year old Rocky Aoki came to New York City from Japan with his wrestling team in 1959 he was convinced it was the land of opportunity. Just five years later he used $10,000 he had saved plus another $20,000 that he borrowed to open a Benihana steakhouse on the West Side of Manhattan. His concept of bringing the chefs out from the back of the kitchen to prepare the food in front of customers on a specially designed hibachi grill was groundbreaking. The restaurant was such a smashing success that it paid for itself within 6 months.

    The most popular items at the restaurant are the Hibachi Chicken and Hibachi Steak, which are prepared at your table on an open hibachi grill. But, since most home kitchens are not fitted with a hibachi grill, you'll have to improvise. It's best to use two pans for my Benihana hibachi chicken and steak copycat recipe below; one for the meat and mushrooms, and the other for the remaining vegetables. And since many of today's cooking surfaces are coated with scratchable, nonstick coatings, we won't be slicing the meat and vegetables while they are sizzling on the hot cooking surface as the Benihana chefs do.

    Wingstop Hot Honey Rub Wings

    Hot honey-flavored foods are having a moment right now, and Wingstop joins the party with this new hot-and-sweet wing rub. Rather than creating a hard-to-manage sticky honey sauce, the chicken wing chain wisely developed an easy-to-apply rub packed with the perfect combination of salty, sweet, and spicy flavors.

    Hacking the rub was the primary goal of this mission, so when I got my wings I ordered plenty of the seasoning on the side for analysis. But back in the underground lab, my work went slowly. The overwhelming spiciness of the red pepper numbed my tongue, and I continually lost the ability to distinguish flavors to make a decent copy. I was forced to take multiple breaks, many of which included chugging whole milk, until my tastebuds recovered. Despite the slow go, I was eventually able to crack it.

    The secret ingredient in my Wingstop Hot Honey Rub Wings copycat recipe is powdered honey, which you’ll have no trouble finding online. That sweet powder, plus several other common ingredients from your spice rack, will make a rub that sticks nicely to fried chicken wings after they’ve been tossed with melted margarine.

    This recipe will make a batch of ten wings, like a standard order at Wingstop, with just enough rub left over for another batch of ten.

    Taco Bell Cantina Chicken

    In March of 2024, Taco Bell introduced Cantina Chicken, a versatile menu item that can be ordered on tacos, burritos, quesadillas, and bowls. The slow-roasted chicken is seasoned with chilies, onion, and garlic and is often paired with the chain’s Avocado Verde Salsa, which I’ve already cloned for you here.

    For my Taco Bell Cantina Chicken copycat recipe, I’ve made the process quick and easy by using a cooked rotisserie chicken, which can be found in most supermarkets and big box stores. Once you’ve chopped the chicken into bite-size pieces, combine it with chicken broth and the secret combination of spices below in a large sauté pan over medium heat.

    When the liquid has cooked off, you’ll have four cups of chicken, which you can use in your homemade tacos, burritos, bowls, or whatever you’re craving.

    Taco Bell Meximelt

    In 2024, Taco Bell brought back five iconic menu items as part of the chain’s new “Decades” menu: the Tostada from the 1960s, the Green Sauce Burrito from the 1970s, the Meximelt from the 1980s, the Gordita Supreme from the 1990s, and the Caramel Apple Empanada from the 2000s.

    The Meximelt generated the most excitement in my circles, so I jumped at the chance to hop into a culinary time machine and recreate this long-lost classic. It’s a small flour tortilla filled with the chain’s seasoned beef, a melted combination of three cheeses, and fresh pico de gallo. If it weren’t called a Meximelt, you’d call it a soft taco. And you’d love it either way.

    I tackled my Taco Bell Meximelt copycat recipe by first duping the mild pico de gallo with a simple combination of tomatoes, onion, cilantro, lime juice, and salt. And I made sure to dice the tomato and onion super small to match the real thing. Next, I copied the seasoned beef using my previously hacked recipe for the chain’s Chalupa Supreme and determined the ratios for a three-cheese blend of shredded cheddar, Jack, and mozzarella.

    I piled everything on a warm 6-inch flour tortilla, took a big bite, and let my mouth take me on a tasty trip back to the era of MTV, yuppies, Blockbuster, and Rubik’s Cubes.

    On the Border Chicken Tortilla Soup

    Ingredients you don’t find in other popular tortilla soups are likely the reason this has been my most requested menu item to hack from the Mexican cuisine chain. And I’m thrilled to have finally cracked it since this is now the go-to tortilla soup recipe at my house.

    You’ll notice some standout ingredients, including zucchini, fresh corn kernels, diced Roma tomato, rice, and a garnish of Monterey Jack cheese and avocado, but the ingredient that brings this soup together is the generous portion of perfectly seasoned chicken tinga. The shredded chicken tenderizes nicely in the soup, and all the elements that make it such a delicious tinga add great flavor and color to the pot.

    I spent the first day creating the best chicken tinga recipe I could for my copycat version of On the Border's Chicken Tortilla Soup. I started with uncooked white and dark chicken fillets, but soon found that a supermarket rotisserie chicken worked even better and saved oodles of time. After removing the skin and bones, I used two forks to shred the chicken, and was happy to have exactly four cups of chicken. I made a tinga sauce with chipotle, tomato, onion, garlic, and spices and mixed it with the shredded chicken; then, I constructed the rest of the soup around the tinga.

    When your soup is done, you’ll have enough for ten bowls, each garnished with Jack cheese, tortilla strips or chips, cilantro, and a fresh wedge of avocado. And just so you know, the tasty chicken tinga recipe here also makes an excellent filling for tacos, burritos, and enchiladas.

    Panda Express Blazing Bourbon Chicken

    In collaboration with the YouTube talk show Hot Ones, Panda Express launched its spiciest dish yet, featuring a new sauce made with the treacherous Apollo chili pepper. The Apollo pepper was developed by renowned chili breeder Ed Currie, who also cultivated the Carolina Reaper, once rated the world’s hottest chili pepper. With a heat level of approximately 3 million Scoville units, the Apollo pepper is 1.4 times hotter than the Carolina Reaper.

    For my Panda Express Blazing Bourbon Chicken copycat recipe, I knew it would be unreasonable to expect you to purchase Hot Ones’ The Last Dab Apollo Hot Sauce, the "secret" source of heat in the original dish. A bottle of that sauce costs around 30 bucks, and you would only need one drop, so my first order of business was to find a much cheaper substitute.

    I settled on a ghost pepper sauce, which, at 1 million Scoville units, is one-third as hot as the Apollo. When ghost pepper is blended with other ingredients in a sauce, such as in Melinda’s Ghost Pepper Sauce (which I used for my clone), it becomes diluted, flavorful, and not overwhelming.

    That ghost pepper sauce, combined with garlic, ginger, soy sauce, brown sugar, and a hint of bourbon, will create the perfect blend to mix with onion, bell pepper, and crispy chicken for a delicious, fiery, yet not overly spicy, home hack of this tasty, limited-time entrée.

    Red Robin Ensenada Chicken

    This chain’s most popular chicken dish owes its appeal to two delicious sauces and the great way they work together. The dark red ancho chili sauce wakes the chicken with big, bold lime and chili flavors, and the salsa ranch drizzled over the top contributes a delicious, cooling layer of creaminess. If you like tequila lime chicken and fiesta chicken entrees from other restaurants, you'll really love this recipe.

    For my Red Robin Ensenada Chicken copycat recipe, you have the option of cooking the brined chicken on an outdoor barbecue grill, on a flat grill, or in a sauté pan. It’s unclear which cooking method Red Robin uses for the chicken since the photo of the dish in the menu clearly shows grill marks as if cooked on a grate, while my take-home sample of the dish showed signs of being cooked on a flat surface. In the end, either way works.

    The standout secret ingredient in this recipe is the A-1 sauce used in the ancho chili sauce, which contributes perfect fruity sweet-and-sour notes. That may sound like a strange addition, but it’s not unusual for Worcestershire sauce to be called for in ancho sauce, and A-1 is similar in many ways to Worcestershire.

    The recipe makes 1 1/3 cups each of the ancho sauce and salsa ranch, so after you make these servings, you’ll still have plenty of the goodness left over for more chicken later or for other dishes.

    The Old Spaghetti Factory Rich Meat Sauce

    Since 1969, The Portland, Oregon-based Old Spaghetti Factory has been filling bellies with a comfort food menu full of fabulous pasta choices, and this signature meat sauce has been the sauce of choice at the 43-unit chain for more than five decades.

    To reverse-engineer the sauce for my Old Spaghetti Factory Rich Meat Sauce copycat recipe, I rinsed the original sauce in a wire mesh strainer to see what secrets could be revealed. Once the solids were visible, I noted the size and ratios of ground beef, onion, celery, and garlic, and I also noticed that there were no bits of tomato left behind. This meant the tomato was puréed, but rather than using canned tomato purée, I opted for richer tomato paste. Lemon juice helped match the zing of the original, and I rounded out the flavor with just a bit of sugar.

    This recipe will make 3½ cups of meat sauce, which is enough for several huge plates of pasta. Use it on spaghetti as they do at the restaurant, or whatever pasta shape you prefer.

    Cracker Barrel French Toast

    Next time you make French Toast, try using sourdough bread. Cracker Barrel does this, and their French toast is fantastic. So, I went right ahead and cloned it for you.

    My Cracker Barrel French Toast copycat recipe is super easy to make, but if you want yours to look like the real thing, you’ll want to track down a loaf of sourdough bread with relatively small slices. Bigger loaves will still work great, but the yield may be less than 12 slices.

    Dust your finished French toast with powdered sugar and serve it up with soft butter and warm maple syrup on the side.

    Cracker Barrel Buttermilk Pancakes

    A great buttermilk pancake recipe will produce fluffy, tangy, and slightly sweet pancakes—the same qualities as the popular pancakes served at Cracker Barrel restaurants nationwide. But Cracker Barrel’s flapjacks have a secret ingredient that sets the chain’s morning stack apart from other restaurants. And this Top Secret Recipe will reveal it.

    To create my Cracker Barrel Buttermilk Pancakes copycat recipe, I first purchased a box of the chain’s pancake mix at the restaurant’s store to examine the list of ingredients on the package. In the list were the ingredients you'd expect, like wheat flour, sugar, salt, and leavening. But there was also a surprise: yellow corn flour. When added to the mix in the right ratio, the yellow corn flour contributed great cornbread-like flavor and gave the pancakes a unique crumbly texture that many seem to love.

    Does this special ingredient produce buttermilk pancakes which are superior to a more traditional recipe? It's easy to find out. Once you have corn flour and just a handful of other common ingredients, it takes just minutes to produce enough pancakes for you and everyone else to get a taste and decide if these are indeed the best buttermilk pancakes in the biz.

    Cracker Barrel Corn Muffins

    I find clues for cracking restaurant recipes in many places, but other than having the actual recipe, knowing the list of ingredients is quite a big score. That's why I’m thrilled whenever a restaurant chain sells its famous products in packages, as Cracker Barrel does with a box of mix that helps you reproduce the chain’s popular corn muffins at home. 

    The ingredients are listed in descending order by weight, which not only helped me identify important ingredients, such as white corn meal, but also gave me a rough idea of how much to use for the ultimate Cracker Barrel Corn Muffins copycat recipe. The preparation instructions provided more clues, such as revealing that the chain adds melted margarine and a little bacon grease to the batter. 

    Several batches later, using information from the box and lessons learned from my trial-and-error, I created a great clone of the famous muffins that I think you'll really like.

    Cheesecake Factory Shrimp Scampi

    This top entrée pick from Cheesecake Factory is a classic dish, but its preparation is far from traditional, and perhaps that's why it's so popular.

    The creamy scampi sauce is flavored with a handful of whole roasted garlic cloves, plus shallot, basil, and tomato. The shrimp are lightly battered and fried until golden, then arranged upright around the plate to keep their crunchy coats from sogging.

    In addition to all the secrets you’ll need to assemble two servings of my Cheesecake Factory Shrimp Scampi copycat recipe, I’m also including a cool technique for easily roasting the garlic in just 15 to 20 minutes. And you won’t even need to peel the cloves. After your garlic cools, the skins will slip right off.

    McDonald's Mambo Sauce

    One of two new sauces McDonald’s debuted in late 2023 is inspired by the famous Washington D.C.-area sauce originally offered at chicken wing restaurants and Chinese takeout joints in the 1960s. The sweet, sour, and spicy mambo sauce—also called mumbo sauce—is used as a dip for all kinds of finger foods including fried chicken, chicken wings, chicken nuggets, French fries, and eggrolls.

    But McDonald’s only offered the sauce in small blister packs, which were available for about a month. So, if we want to bring back the great flavor of the limited-time-only sauce we'll need a handy home hack. Fortunately, I got my mitts on enough of the sauce before it went away to whip up this exclusive knockoff.

    My McDonald's Mambo Sauce copycat recipe is super easy, requires only common ingredients, and will make 1½ cups of the versatile stuff you can use for dipping anything that needs to be perked up.

    See's Candies Chocolate Walnut Fudge

    Fudge can be finicky. It's created by combining hot candy syrup with chocolate, which can result in a grainy mess if the chocolate seizes and gets clumpy. This undesirable situation can be avoided by closely monitoring the temperature, but even then your chocolate could still lock up, and your fudge will be ruined. I couldn't let that happen in my recipe re-creation of the famous fudge from the 100-year-old West Coast candy chain. 

    For my See's Chocolate Walnut Fudge copycat recipe, I made over 56 pounds of fudge on my quest to develop a recipe that works every time, even if the chocolate seizes. And in most of my batches, it usually did. So I came up with a secret trick: reserve a little cream for later, then after the hot candy syrup is mixed with the chocolate and the chocolate begins to seize, send the cream to the rescue and the fudge will become smooth, as if by magic. 

    Stir in some walnuts, then pour the fudge into a wax paper-lined pan, and when it cools, you'll have over 3 1/2 pounds of thick fudge that tastes just like the real thing. That's more than $110 of fudge if you buy it at the candy store!

    Southern Comfort Traditional Egg Nog

    Online taste tests and reviews frequently highlight Farmland Fresh, Darigold, and Southern Comfort as America's top egg nog brands. Among these, Southern Comfort, a brand known for its fruit-flavored whiskey, often ranks highest with its delicious “traditional” egg nog, which, ironically, contains no alcohol.

    But the first egg nog, invented in medieval Britain, was quite intoxicating. In those days, it was a warm drink made with milk and sherry, thickened with plenty of egg yolks. Sure, that’s a different experience than today’s cold egg nog, but at least it was made with wholesome ingredients. The cartons of nog available at the market today are typically made with non-traditional ingredients, such as corn syrup, and much of the egg yolk has been replaced with cheaper, longer-lasting natural gums like carrageenan and guar gum.

    For my Southern Comfort Traditional Egg Nog copycat recipe, we're turning back the clock to make egg nog the traditional way, using plenty of real egg yolks to thicken the batch without any gums or corn syrup. My easy recipe yields around 36 ounces of fresh homemade egg nog, and the decision to add booze is up to you.

    Chick-fil-A Honey Pepper Pimento Chicken Sandwich

    Chick-fil-A becomes the first fast food chain to feature pimento cheese—a traditional Southern spread made with cheddar cheese, mayonnaise, and pimentos—on a sandwich. The chain’s Honey Pepper Pimento Chicken Sandwich features a regular or spicy crispy chicken breast fillet­ stacked on sliced jalapeños, then drizzled with honey and topped with a healthy portion of their exclusive pimento cheese formula.

    For the chicken fillet, I was able to use my previous Chick-fil-A chicken sandwich copycat recipe, but the chain’s excellent pimento cheese spread is a new creation that needed to be hacked from scratch. Rinsing the real spread through a strainer revealed some hidden secrets, including tiny bits of green pepper, which I copied by adding a small amount of minced jalapeño.

    The chicken requires four hours to brine, and that’s a good time to make the pimento cheese so it can rest for a bit to improve its color and flavor. The recipe included here is for the original chicken fillet, but if you prefer the kicked-up spicy version of the sandwich, I’ve got the tweak for that variation down in the Tidbits.

    Cafe Rio Sweet Pork Barbacoa

    When building your burritos, tacos, or tostada salads, there are several delicious fire-grilled and pulled meats to choose from at Café Rio, but the signature dish that everyone raves about is the Sweet Pork Barbacoa. The slow-braised pork is fork tender and comes in a sweet sauce that is flavored with a certain popular soft drink. Over the years I have debunked several culinary rumors of Coca-Cola being used in some secret recipes like Maid-Rite Loose Meat Sandwiches, but in this case I have confirmed that the rumors are indeed true. Coca-Cola is the secret ingredient that helps give this pork its sweet flavor.

    For my Café Rio Sweet Babacoa copycat recipe, you'll need a total of 72 ounces of Coke, or the same amount that's in a six-pack of cans. It's best if you can find Mexican Coke, which is made with real sugar rather than high-fructose corn syrup found in the U.S. version, but any Coke you've got will work here. 

    After several hours of braising, your pork will be fork-tender and filled with flavor to use in homemade burritos, tacos, and bowls.

    Chipotle Chicken Al Pastor

    A dish traditionally made with pork is redesigned for chicken in this Mexican chain’s limited-time-only sweet-and-spicy variation. All the key ingredients for good al pastor are here: pineapple, lime, achiote, and morita chipotle peppers, which come together to make a bright orange sauce for basting marinated chicken thighs.

    The TV commercial for Chipotle’s new offering claims the morita peppers are seared and shows wild flames dancing around a pan filled with fresh green and red peppers. That is perhaps not an accurate depiction of the preparation process, considering that morita peppers are made by smoking red jalapeños, like chipotles, not green ones. And smoked jalapeños do not look like fresh jalapeños, so I'm not sure what's going on there in that pan.

    Regardless of the confusing clues in the TV ad, to make my Chipotle Chicken Al Pastor copycat recipe, you'll want to find dry morita peppers, then remove the seeds and toast the peppers in your oven before making the secret sauce. Baste the sauce on your chicken just before it's done cooking, then chop it up and use it to make delicious tacos, burritos, salads, and bowls.

    Red Lobster Lobster & Langostino Pizza

    Top a Margherita pizza with big chunks of lobster and langostino, and you've got Red Lobster’s famous thin-crust Lobster and Langostino Pizza appetizer. And—as with a traditional Margherita pizza—there is no sauce, just mozzarella, tomato, and basil. Its simplicity is what makes it simply delicious.

    For my Red Lobster & Langostino Pizza copycat recipe, you'll steam a small lobster tail, fresh or frozen, then dice it. You'll do the same with the langostinos, but if you have difficulty finding some, you can also use lobster claw meat, often found in the freezer aisle.

    To keep things easy, I designed the recipe so that you won’t need to build the pizza dough from scratch. Just find a pre-made 11-inch pizza dough in a tube, add the toppings, bake at 450 degrees F (on a pizza stone, if you’ve got one), and you’ll soon have a perfect match for the popular starter from the huge seafood chain.

    Red Lobster Walt's Favorite Shrimp

    Many recognize Red Lobster as the restaurant that serves free cheesy Cheddar Bay Biscuits with every meal, but the chain also has another claim to fame as the first chain to popularize popcorn shrimp

    Introduced in 1974, Walt’s Favorite Shrimp is butterflied, breaded, and lightly fried, making the crustaceans a simple-to-eat finger food. However, there’s more to my Red Lobster Walt’s Favorite Shrimp copycat recipe than just breading and frying a pound of large shrimp. First, we need to infuse flavor into the shrimp with a brine. Instead of a salt brine, I discovered that a chicken bouillon-based brine worked wonders for flavoring the shrimp all the way through.

    After brining the shrimp, coat them three times in flour and once in breadcrumbs. Then, fry for just about a minute until they’re golden brown, crispy, and ready to serve with a side of cocktail sauce.

    McDonald's Hotcakes

    With the invention of the Egg McMuffin in 1971, McDonald’s became the first fast-food restaurant to serve breakfast. The morning sandwich was so successful that by 1977, the chain had expanded nationally with a complete breakfast menu rollout, featuring scrambled eggs, hashbrowns, sausage, bacon, and these popular golden-brown hotcakes.

    Many pancake recipes require buttermilk for lift, but since McDonald's original recipe doesn't use it, you won't need it here for this clone. And you won't miss it. My McDonald’s Hotcakes copycat recipe makes fluffy pancakes without buttermilk and relies on self-activating baking powder for a satisfying rise and beautiful browning. It's a handy pancake recipe when you don't have buttermilk in the fridge and don't feel like rushing to the market.

    Once your batter is mixed, measure ¼ cup into a heated nonstick pan, and in under 3 minutes, you’ll have a perfect 4½-inch hotcake—the exact size of the original. This recipe makes 16 hotcakes, and you can freeze the leftovers, then easily reheat a stack for just 1 minute in your microwave whenever you need a quick a.m. belly filler.

    Panda Express Sizzling Shrimp

    At the restaurant, onion, red bell pepper, broccolini, and extra-large shrimp are tossed with a new spicy sweet-and-sour sauce in Panda’s giant wok over ultra-high heat.     BJ's Restaurant and Brewhouse Bacon Jam Wings

    The sweet bacon and onion sauce often used to dress up steaks and burgers is now a fantastic wing topper in this addictive new appetizer from the 215-unit West Coast chain. I've hacked the secret bacon jam recipe here along with a special 2-step cooking process so that you can make perfect wings with great flavor all the way through.

    My BJ’s Bacon Jam Wings copycat recipe starts by brining the wings, then baking them with moist heat to simulate the special CVap commercial moist ovens BJ’s uses to cook ribs and wings. When you’re ready to serve the dish, the wings are fried until crispy, tossed with the addictive bacon jam, and served with celery and ranch dressing on the side.

    After you polish off your first pile of wings, you should have plenty of bacon jam left over for more wings or as a flavorful spread on burgers.

    Marie Callender's Double Cream Blueberry Pie

    Vanilla custard and whipped cream make up the delicious “double cream” that tops this ultra-popular blueberry pie from the West Coast chain that is most famous for its homestyle pies. Finally, I got the chance to give this great dessert the hack it deserves—from what I've seen, no other "copycat" recipe even comes close.

    For my Marie Callender’s Double Cream Blueberry Pie copycat recipe, it was important that the custard be creamy but not too runny, so in addition to cornstarch, I’ve included just enough gelatin in the mix to stabilize the filling, but not so much that it becomes rubbery. The blueberry filling, made with frozen blueberries, needs only cornstarch to thicken it because there is also apple in the filling which contributes pectin, a natural thickening gel. Just be sure to dice your apple very small before cooking it so that the pieces will soften and work well with the frozen blueberries.

    There’s no need to make the crust from scratch when you can use an unbaked 9-inch pie shell in the frozen food aisle—preferably the one made by Marie Callender’s—but any brand will do.

    Then, to finish your pie, the gelatin steps up again, stabilizing the whipped cream topping so that it holds its shape for as long as it takes to eat the whole pie. Which probably won't be long at all.

    Chipotle Roasted Chili-Corn Salsa

    Citrus juices, sweet white corn, and roasted jalapeno pepper combine for this slightly spicy sweet-and-sour salsa, which has become a popular topper at the chain for those not looking for something with a lot of heat.

    For my Chipotle Roasted Chili-Corn Salsa copycat recipe, I started by piercing a jalapeno with a skewer and lightly blackened it over my stovetop gas flame (if you don’t have a gas stove, you can also roast it in your oven). I diced the pepper, then combined it with white corn, red onion, cilantro, salt, and citrus juices and let it rest for a half hour.

    After a taste test and several more batches to adjust ratios, I finally had a salsa that was indistinguishable from the real thing and could now be used on all sorts of deserving home creations, just like the corn salsa you get at the famous Mexican chain.

    IHOP Thick 'N Fluffy French Toast

    IHOP upped its French toast game in 2022 with the introduction of a new recipe that suggests your French toast is only as good as the bread you start with, and IHOP’s new Thick ‘N Fluffy French Toast starts with thick specialty artisan bread, rather than the more commonly used Texas toast white bread.

    For my IHOP Thick 'N Fluffy French Toast copycat recipe, you can use any thick-sliced bread from your bakery, but there are two national brands that work well: Nature’s Own Perfectly Crafted Thick-Sliced White Bread and Sara Lee Artisano. Either of those will do, but of the two, Nature’s Own is shaped more like IHOP’s version.

    Adding vanilla and a little cinnamon to the easy batter will set these waffles apart from most others, and in no time, you’ll have 6 beautiful slices of French toast for a total of 3 servings. Dust them with a little powdered sugar, add some butter and maple syrup on the side, and it’s like you just opened an IHOP in your house.

    Chipotle Garlic Guajillo Steak

    In the Fall of 2022, Chipotle debuted Garlic Guajillo Steak, a variation of the chain’s classic steak made with a new secret seasoning starring the fruity and slightly smokey flavor of dry guajillo peppers, and, surprisingly, prepared using a gourmet French slow-cooking technique.

    After an outbreak of E. coli bacteria at Chipotle infected 53 people in nine states, the chain changed the way it cooks steak. Rather than cooking the beef entirely on a Plancha, or flat griddle, Chipotle now pre-cooks the steaks with the sous vide method wherein vacuum-packed seasoned beef is cooked slowly in swirling, heated water. This cooking technique not only eliminates any potentially harmful bacteria before the beef is grilled, but it will also speed up the seasoning process and help tenderize tougher cuts.

    But you shouldn't worry if you don’t have a sous vide setup. My Chipotle Garlic Guajillo Steak recipe will also work by simply chilling the seasoned steak overnight in a zip-top bag and later cooking it off in a heavy pan or on a hot griddle. After slicing the cooked steak, toss it with some freshly squeezed lime juice and fresh cilantro, and use it as you see fit for tacos, burritos, bowls, and salads.

    Chipotle Pollo Asado

    In 2022, for the first time in its 29-year history, Chipotle debuted a new style of grilled chicken, and it became an instant hit. At least it was at the Chipotle near me, where the Pollo Asado was ordered more than any other protein, according to servers there. But the new flavor is for a limited-time-only, and when it’s gone, my exclusive Chipotle Pollo Asado recipe may be the only way to satisfy your deep desire.

    It appears that Chipotle’s new chicken is marinated in a vacuum meat tumbler similar to the way the Mexican chicken chain El Pollo Loco does it. I sure wish I had one of those awesome tumblers because they speed up and improve the marinating process, producing moist chicken packed with flavor all the way through. But those tumblers are expensive and bulky, and I have absolutely zero space left in my kitchen to store one. So, an overnight marinade, along with a bit of patience, must suffice. 

    The next day, grill your marinated chicken, chop it up, toss it with the secret citrusy sauce hacked here, add some fresh cilantro and lime juice, then use it as you see fit on burritos, tacos, salads, and bowls.

    Yard House Nashville Hot Chicken

    This hit entrée at the 80-unit Yard House brings crispy Nashville hot chicken together with house-made sweet potato pancakes and honey hot sauce syrup on one beautiful plate, and now you can re-create that gorgeous entrée at home with these exclusive secrets, right down to the crispy sage leaves on top.

    In my version of Yard House's Nashville Chicken recipe, the crispy chicken is brined to make it moist and juicy on the inside, and just before serving it gets tossed with the Nashville hot sauce for a perfect re-creation of the plate's main attraction. The honey hot sauce is a simple concoction of five ingredients, and the pancakes are simplified by using canned sweet potatoes rather than fresh ones that require an additional cooking step.

    Cracker Barrel Country Fried Steak

    It finally happened. I created this new clone recipe for Cracker Barrel's Country Fried Steak only to realize, much later, that I had already cloned it eight years prior in my book, Top Secret Recipes Step-by-Step. However, I'm okay with this unplanned redo because this version is significantly improved, with several enhancements over my first hack from many moons ago.  

    Most chicken-fried steak recipes, including my previous Cracker Barrel copycat recipe, call for cube steak—round steak that’s scored in a butcher’s tenderizer—which may not be as tender as you like it to be. Connective tissue that remains intact will make some bites chewy, yet if the steak is over-tenderized, it will fall apart when cooked.

    To ensure that every bite of this clone is perfectly tender, I avoid cube steak altogether and start with lean ground beef, similar to recipes for Salisbury steak or Hamburg steak. Forming the ground beef into steaks and then freezing them ensures they hold together, making the breading and cooking process more manageable. And when served, every bite is guaranteed to be fork-tender. 

    Of course, this iconic clone recipe wouldn’t be complete without a spot-on hack for the famous sawmill gravy that gets spooned over the top. I’m including a fresh hack for the gravy that improves on my original formula, and it's super easy to make with just six ingredients.

    Popeyes Megan Thee Stallion Hottie Sauce

    In a 2021 collaboration with female rap artist Megan Thee Stallion, Popeyes created a popular dipping sauce with a feisty kick for dunking your nuggets and strips, or for slathering over a crispy chicken sandwich. The chicken chain’s limited edition Hottie Sauce is a sweet-and-sour combo with a base of tangy cayenne pepper sauce. It’s sweetened with sugar, corn syrup, and honey and freckled with delicious Aleppo peppers. The sauce is filled with big flavor and appears to be a huge success for the chain since they have been running out of it at some locations.

    My Popeyes Megan Thee Stallion Hottie Sauce recipe is easy, so you’ll have no trouble being thee cloner of over one cup of this spirited sauce just as soon as you get your hands on some tasty dried Aleppo pepper flakes, which you can find online.

    When I went back to Popeyes a week later to load up on more sauce, they informed that it was sold out. So, if you like to use this sauce on your crispy chicken, you may really need this recipe. But don't stop there, you can also make a homemade version of Popeye's Chicken Sandwich here

    Wendy's Seasoned Potatoes

    Reviewers of Wendy’s tasty seasoned potatoes point out that the skin-on slices stay crispy even when cool. That tells us the breading is most likely made with a non-wheat flour blend, an assumption confirmed by the website ingredients list for the potatoes where nary a gram of wheat flour is included. Yep, these seasoned potatoes are gluten-free.

    Wendy’s uses a blend of food starches plus rice flour for the breading on their version, but my tests confirmed that cornstarch is all you’ll need for a great clone of Wendy's seasoned potatoes. The secret process starts by coating the potato slices with the dry breading mix, which contains salt. The salt in the blend will draw water out of the potatoes, magically transforming the dry breading into a wet batter in about 20 minutes.

    When all the breading is wet, the potatoes go into the oil for partial frying. After resting a bit, they get dropped in again until golden brown and crispy. And, thanks to the cornstarch, these potatoes will stay crispy, even when they’re completely cool. Pretty cool right? Give my Wendy's seasoned potatoes copycat recipe a try.

    Cracker Barrel Buttermilk Biscuits

    A great buttermilk biscuit isn’t hard to make. This is good news if you're serving hundreds each day as they do at this popular Southern kitchen chain. But a simple recipe such as this one is also a blessing when you need to whip up a modest batch at home for your hungry gang of biscuit fanatics, and it's an added bonus if they taste as good as the famous biscuits from Cracker Barrel. 

    The secret to tender, flakey biscuits like you get at the restaurant chain is using a lower-gluten self-rising flour such as White Lily; a staple for Southern biscuit recipes. A bit of shortening in the mix will help tenderize the finished product, as will a light mixing hand. Overmixing the dough may toughen your biscuits, so mix the dough gently and only as much as you have to.

    If you don’t use White Lily flour and go with a heavier self-rising flour such as Gold Medal, take note that you may have to add a couple of tablespoons more buttermilk to the dough to loosen it up. Good biscuit dough should be soft, but not sticky.

    Applebee's Riblets

    To begin hacking this popular dish from the national chain, I needed an answer to my first question: “What the heck are Riblets?”

    I soon discovered that “Riblets" is Applebee’s branded name for button ribs or rib tips, which is a flat cut trimmed from the back end of pork spareribs. This particular cut is packed with lots of connective tissue, and that's a good thing because it breaks down after 3 to 4 hours of braising, producing fork-tender meat that slips off the bone. Of the cooking methods I tried, including steaming, slow-roasting, and smoking, braising resulted in the most tender and flavorful ribs—even before adding the sauce. 

    For the braising liquid formula, I discovered that chicken broth infused with liquid smoke produces tender ribs that taste like they came out of a smoker. Finish off the braised ribs on your grill and baste them with my original hack for Applebee’s honey barbecue sauce or your favorite bottled sauce. Your Riblets, your choice.

    Shakey's Mojo Potatoes

    Sherwood Johnson survived a case of malaria while serving in World War II, which left him with some residual nerve damage and earned him a new nickname: Shakey. Despite his affliction, Shakey Johnson could still bang out toe-tapping Dixieland jazz on the piano night after night in the pizza parlor he opened in Sacramento in 1954, where live jazz accompanied the thin-crust pizza and cold pitchers of beer.

    Shakey’s became the first franchised pizza restaurant in the U.S., and by 1974, the chain had 500 stores nationwide. The top dish is clearly the made-to-order pizza, but the chain’s trademarked crispy battered potato slices are a close runner-up and a perfect, tasty subject to hack.

    Recipes claiming that pancake mix is the secret seasoning ingredient in Mojo Potatoes fail to recognize that pancake mix contains sugar, yet there is no noticeable sweetness in the breading. I also concluded that dry breading wouldn't work, as my tests showed that the paprika failed to bloom and contribute the same color as it does when the mixture is wet.

    For my Shakey's Mojo Potatoes recipe, I eventually settled on a wet batter made with seasoned salt, flour, cornstarch, and paprika to match the flavor, crispiness, and red/orange tint of the real thing from America’s first pizza chain. Use this original technique and these handy step photos to make extra crispy potatoes the Shakey's way.

    Panda Express Chow Mein

    I’m sure it’s frustrating to be standing in line at Panda Express and they run out of chow mein when it’s your turn. For me, though, that scenario is a blessing, and it’s how this dish was hacked. From the line, I watched a cook whip up a new batch of chow mein in the giant wok in the clearly visible kitchen and took plenty of mental notes. The dish was done in just a few minutes, and before I knew it, I was out the door with a hot serving of fresh chow mein and great intel to help hack a perfect clone. 

    Like the real Panda Express Chow Mein, the beauty of my re-creation lies in its simplicity. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also known as Chinese stir fry noodles), which are easy to find and inexpensive, along with dark soy sauce for its deep caramel color. If you don’t have a wok to prepare your faux Panda, a large skillet with sloped sides for tossing will work nicely.

    Chick-fil-A Spicy Deluxe Chicken Sandwich

    This chain’s not-spicy original chicken sandwich, which debuted in 1964, was the first chicken sandwich introduced to America by a fast food chain, and it put Chick-fil-A on the map. By diversifying the menu with new products like this kicked-up version of the famous sandwich, the chain grew over the years to become the #1 chicken restaurant in the nation.

    The secrets to a good clone of the sandwich lie in the brine and the breading for the chicken. For years, I heard rumors that pickle juice is used in the brine, but I wasn’t able to verify that until recently when I spoke to someone with solid intel on the recipe. Tests confirmed the information was good since my finished sandwiches with the pickle juice were noticeably better. But the recipe still wasn’t perfect until the flavor-enhancing magic of MSG was introduced, so be sure to include in your recipe that if you want the best clone.

    My slicing trick here will make three sandwich-size cutlets from each chicken breast, which are then marinated for 4 hours in the brine. It’s worth the wait. Your patience will be rewarded with one of the best Chick-fil-A chicken sandwich hacks to ever come out of a home kitchen.

    Church's Chicken Original and Spicy Fried Chicken

    On the list of inspirational American food success stories is the small fried chicken restaurant George W. Church opened across the street from the Alamo in San Antonio, Texas, in 1952. In the years since, Church's Chicken exploded into a monster chicken chain with over 1000 restaurants in 35 countries.

    No chain would grow that big without good food. George's special homestyle fried chicken formula was his secret recipe to success, and as far as I can tell, nobody has properly hacked it. Until now. 

    The ingredient list for this crispy chicken is smaller than what you might find in “The Colonel’s” kitchen, which is good because you won’t have to go out and buy 11 herbs and spices. Much of the flavoring in this chicken recipe develops during the brining process, which also has the added benefit of keeping the chicken moist and juicy inside. I discovered that Church’s marinates their chicken for 12 hours, so I worked backward and designed a brine that would do its job in exactly half a day.

    For my Church's Fried Chicken copycat recipe, you'll need to plan ahead to give your chicken time to marinate. But that's a good thing—your patience will be rewarded with the down-home taste of delicious Southern-style fried chicken.

    And here's some more good news: this hack includes two recipes! I've created a Church's copycat recipe for the original fried chicken, as well as instructions for duplicating the spicy version if you feel like pumping up your jam.

    Olive Garden Chicken and Shrimp Carbonara

    Menu Description: “Sauteed seasoned chicken, shrimp, and spaghetti tossed in a creamy sauce with bacon and roasted red peppers.”

    Re-creating this top entrée from Olive Garden allowed me to come up with an easy way to assemble a delicious carbonara from scratch. Traditional carbonara sauce in Italy is usually made with guanciale and sometimes pancetta. But in America and other English-speaking countries carbonara is typically made with bacon, as is this one served at Olive Garden, so that’s what we’ll do for our clone.

    Many traditional carbonara recipes also call for egg, but Olive Garden makes the carbonara sauce for this dish in a different, and much simpler, way: they combine bits of bacon with their classic Alfredo sauce which I cloned long ago. In this tweaked version of that sauce, the bacon flavors the sauce while it simmers, resulting in a perfect match.

    The red pepper gets roasted in your oven, and the chicken and shrimp are sautéed on the stove top. Put it all together, and you've got four generous servings of Olive Garden Chicken and Shrimp Carbonara with that fabulous sauce, and an impressive dinner for your hungry carbonara cravers.

    Domino's Crispy Bacon & Tomato Specialty Chicken

    I imagine a chef at Domino's in the middle of the development kitchen, surrounded by all the toppings they use on pizza, experimenting with new combinations of these ingredients, trying to come up with something delicious that isn't pizza. And then this dish happens: crispy chicken topped with garlic-Parmesan sauce, Cheddar-mozzarella cheese, bacon, tomato, and baked until gooey.  

    Use my Domino's Crispy Bacon & Tomato Specialty Chicken copycat recipe below to make your own killer appetizer at home. To make it simple, you'll start with crispy chicken strips or popcorn chicken from the freezer section.

    All the assembly instructions are here, including an original, and simple, hack for the garlic-Parmesan sauce that gets drizzled over the chicken before adding all the other good stuff.

    Build your dish on a strip of parchment paper, just like the restaurant does, and bake it until the cheese is bubbly. Now you have a cool new thing to make with frozen crispy chicken strips.

    Panda Express Honey Sesame Chicken Breast

    Menu Description: “Honey Sesame Chicken Breast is made with thin, crispy strips of all-white meat chicken tossed with fresh-cut string beans, and crisp yellow bell peppers in a sizzling hot wok with our new delicious honey sauce and topped off with sesame seeds.”

    The limited-time-only availability of this entrée is unfortunate for those who claim it as their top choice at America’s biggest fast Chinese chain. But now, with my Panda Express Honey Sesame Chicken Breast copycat recipe, you can make your own homemade version anytime you want, and it won’t matter if the real one's yanked off the menu.

    The success of this clone depends almost entirely on how good the sauce is. The sauce needs to be sweet, but when I used too much honey the honey flavor overpowered the dish, so it was clear that some of the sweetness would have to come from sugar. Eventually, I found the right balance for a good sauce hack: sweet, salty, and sour, with a light back-end hit of red pepper.

    For the batter, I tweaked the coating in my hack for Panda Express Honey Walnut Shrimp, increasing the yield of the batter, so you won’t run out.

    After your sauce is done and the chicken is finished, build the dish by tossing green beans, yellow bell peppers, and crispy chicken in a wok or large sauté pan with the sauce, then spoon it over rice, and grab some chopsticks.

    Panda Express Firecracker Chicken Breast

    It’s not always on the menu at the huge Chinese take-out chain, but when this spicy special offering makes a limited-time-only appearance, I’m there. When it’s not on the menu, no problem, you can use my Panda Express Firecracker Chicken copycat recipe and make it at home in no time. 

    This dish owes its great flavor to black bean paste, which is full of umami savoriness, just like soy sauce, so it enhances the taste of everything around it. You'll have a good laugh when you notice most recipes attempt to hack this dish with canned black beans. That's ridiculous, since black bean paste is a traditional Asian flavoring ingredient made with fermented soybeans, not with black beans like the kind you get in your burrito at Chipotle.

    Plan ahead to brine your chicken breast for a couple of hours so that it's moist and flavorful. This is an important step for a spot-on hack.

    Applebee's Chicken Wonton Tacos

    Menu Description: “A deliciously different way to taco. Tangy grilled chicken, sweet Asian chile sauce and dumpling sauce stuffed into crispy wonton shells and topped with a crunchy slaw and cilantro mix.”

    Re-creating Applebee's Chicken Wonton Tacos requires cloning four parts, none of which are difficult: grilled chicken, coleslaw, secret dumpling sauce, and the crispy wonton shell that holds everything together. For the chicken, we simply need to grill a couple of thighs and chop them up. Then, we’ll use bottled sweet chili sauce—usually found in your grocery store where Asian foods are parked—to punch up the flavor.

    The coleslaw is easy to prepare with a dressing that includes only five ingredients, and it’s best after it has had some time to sit and marinate. You can slice the cabbage yourself, but using a coleslaw kit that combines sliced cabbage and shredded carrots can save a lot of time. Simply measure out four cups of the cabbage blend and mix it with the minced cilantro and dressing.  

    Crispy wonton taco shells are not usually found in stores, so we’ll make our own using wonton wrappers and a skillet of hot oil. When the oil is hot, add a wonton wrapper and use tongs to fold it diagonally while it fries until crispy on both sides. It takes less than a minute to fry each wonton taco shell, and take it from me, you’ll get better at this as you go. Just be sure to leave plenty of room in the shell for all the delicious fillings.
