It took me more than eighteen years to find a Popeyes Cajun Gravy recipe that requires chicken gizzard -- not that I was looking for one. I got a peek at the ingredients list on the shipping box for Popeyes Cajun Gravy and confirmed that gizzard is in there. The gizzard is a small organ found in the lower stomach of a chicken, and your butcher should be able to get one for you. After you saute and chop the gizzard, it's simmered with the other ingredients until you have a thick, authentic Southern gravy that goes great over the Popeyes Buttermilk Biscuits clone, or onto whatever begs to be swimming in pure flavor. Get ready for some of the best gravy that's ever come off your stovetop.

I cooked this this morning, followed all directions. Not even close. Color is good, but taste is not. I'll try the red beans tomorrow and see how that comes out.

This gravy is fantastic. We don't have Popeye's chicken here where I live (Quebec, Canada) so I wouldn't know if it taste as the original, but it's great! I use it on TSR Claim Jumper Meatloaf and it makes a perfect meal. Thank you
