This cocktail requires a vanilla-flavored Spanish liqueur called Licor 43. When it's mixed with key lime juice, sugar, and cream in just the right proportions, you get a remarkable liquid version of key lime pie. The restaurant uses bottled key lime juice which can be found at specialty stores such as Trader Joe's, or you can just squeeze your own key limes. In a pinch, you can use regular limes. And if you can't track down Licor 43, I found that Tuaca liqueur substitutes nicely. Cheers.

  • lime wedge
  • graham cracker crumbs
  • 1 1/2 ounce Licor 43
  • 1 teaspoon granulated sugar
  • 1 ounce key lime juice
  • 3/4 ounce half-and-half
  • canned whipped cream
Garnish
  • lime slice
Do This
1. Rub a wedge of lime on the rim of a chilled 8-ounce martini glass. Turn the glass over onto a small plate of graham cracker crumbs until the rim is thoroughly coated with crumbs.
2. Measure Licor-43 into the martini glass.
3. Measure sugar, key lime juice, and half-and-half into a cocktail shaker. Swirl the canned whipped cream 3 times around the inside of the shaker. Add a handful of ice and shake vigorously.
4. Strain the drink into the martini glass and garnish with a thin slice of lime.
Makes 1 drink.
