In the first book, Top Secret Recipes, I included a recipe for homemade Orange Julius that was often requested for demonstrations on TV talk shows. Just about every time I did those demos, I was asked how to make other Julius flavors. So here they are: my Orange Julius Strawberry Julius and Pineapple Julius copycat recipes. Each one is made like the orange version but has chunks of real fruit thrown in, just like the real thing.

  • 1 cup frozen sliced strawberries, thawed, or one 8-ounce can crushed pineapple in juice
  • 1 cup water
  • 2 egg whites
  • 3/4 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1 heaping cup crushed ice
Do This

Combine all the ingredients for the Julius of your choice in a blender set on high speed for exactly 1 minute.

Makes 2 drinks.

Tidbits: For the Strawberry Julius, sweetened sliced strawberries work best. They can often be found in 16-ounce boxes in the frozen-food section of the supermarket. Make sure to thaw them first.

    Olive Garden Hot Artichoke-Spinach Dip

    Menu Description: "A creamy hot dip of artichokes, spinach and Parmesan with pasta chips."

    Just about every aspect of the Olive Garden restaurants was developed from consumer research conducted in a corporate think tank by the General Mills Corporation. Restaurant-goers were questioned about preferences, such as the type of food to be served, the appearance and atmosphere of the restaurant, even the color of the candleholders on each table. The large tables and the comfy chairs on rollers that you see at the Olive Garden restaurants came out of those vigorous research sessions.

    I'm not sure if this dish came from those sessions, but according to servers at the Olive Garden, the Hot Artichoke-Spinach Dip is one of the most requested appetizers on the menu. The restaurant serves the dip with chips made from fried pasta, but you can serve your homemade Olive Garden hot artichoke dip with just about any type of crackers, chips, or toasted Italian bread, like bruschetta.

    Chili's Southwestern Egg Rolls

    Menu Description: "Smoked chicken, black beans, corn, jalapeño Jack cheese, red peppers and spinach wrapped inside a crispy flour tortilla. We serve it with our avocado-ranch dipping sauce."

    Chili's was the first chain to popularize the Southwestern-style egg roll, but as with any successful menu item, clones have been popping up on other major chains' appetizer menus over the past several years. Even though it's more like a small chimichanga than an egg roll, this appetizer is a fabulous creation with monster flavor. A flour tortilla is stuffed with a spicy blend of corn, green onions, black beans, spinach, jalapeño peppers, Monterey Jack cheese and spices; then it's deep-fried. Slice the fried rolls diagonally, dunk the wedges into a creamy avocado ranch sauce, and you've done your taste buds a solid. 

    I suggest you make your homemade Chili's Southwestern egg rolls several hours before you plan to serve them, so they can freeze before frying (it's a great dish to make a day ahead of a party or event). This freezing step will help the outside fry to a golden brown, but the egg rolls will stay folded, and oil won't seep in. Assembling the egg rolls takes a little time, so if you like these, I suggest making a double batch. Since you'll be freezing them, you'll have extra on hand in the freezer ready to cook with just a little additional effort.

    Wingstop Garlic Parmesan Wings

    If you feel like diving into a pile of wings with big flavor and no heat, you'll love this Wngstop Garlic Parmesan Wings recipe. At the restaurant, these wings are deliciously doused with a buttery garlic Parmesan baste and then sprinkled with grated Parmesan cheese. A home clone is easy when you toss crispy wings in this hack of the top secret baste and top them with a snowfall of good Parmesan cheese. 

    To duplicate the baste, you clarify a stick of butter, then add a little oil so that the butter doesn’t solidify. Parmesan cheese, garlic, and salt are mixed in, then the sauce is set aside to cool and thicken.

    Once the wings are fried to a golden brown, toss them with the baste in a bowl, then grab the grated Parm and make it snow.

    Wingstop Lemon Pepper Wings

    The Wingstop menu offers nearly a dozen flavor variations of fried chicken wings, including original hot buffalo-style, Parmesan-garlic, and mango habanero, but it’s the lemon pepper wings that get the most raves. And even though they’re referred to as “dry rub” wings on the menu, the secret to a perfect Wingstop lemon pepper wings copycat recipe is in the wet baste that goes on first.

    The lemon pepper won’t stick to the wings without making them wet, and that’s where the sauce, or baste, comes in. The baste is easy to make by clarifying butter and combining it with oil to prevent the butter from solidifying, then adding lemon pepper and salt.

    I obtained a sample of Wingstop’s lemon pepper seasoning and took a few stabs at cloning the blend from scratch, but ultimately decided the task was a time-waster when pre-blended lemon pepper is so easy to find. I compared Wingstop’s lemon pepper with the blends from McCormick and Lawry’s—each is slightly different than what Wingstop uses. McCormick’s is lemonier than Wingstop’s blend, and Lawry’s version is chunkier and less lemony, but either blend is close enough to deliver a satisfying clone.

    After the wings are fried, baste them with the sauce below and sprinkle them with your favorite lemon pepper. Now you've made homemade Wingstop's Lemon Pepper Wings like a pro.

    Panera Bread Autumn Squash Soup

    The weather’s cooler, the days are shorter, and pumpkin spice lattes are back in style. When fall arrives, it brings with it the traditional edibles we have come to expect. Usually, that’s something warm and/or orange and/or with squash in it. Panera Bread's Autumn Squash soup is all of the above. And its great taste inspired this new hack.

    On Panera’s ingredients statement for this soup, there is no specification for which types of squash are used. The ingredients mention only “squash,” so it’s possible there is more than one type of squash in it. Butternut squash has a great taste and rich orange color, so that’s an obvious choice, but I added another flavorful squash to my recipe: acorn squash. Its flesh is golden in color and tastes like pumpkin, but it’s sweeter and more buttery. I found the blended color and flavor from the combination of both butternut squash and acorn squash worked perfectly for my Panera Bread Autumn Squash Soup recipe.

    The flavor of the soup is created with several spices including cinnamon, curry, and cardamom, plus ginger purée, honey, apple juice, and Neufchatel cheese. Just a little cream at the end gives the soup body and a smooth richness you will love.

    When the soup is thick, serve it hot with freshly toasted pumpkin seeds sprinkled on top, and taste the season.

    Olive Garden Chicken Piccata

    Menu Description: “Grilled chicken topped with a lemon garlic butter sauce, sun-dried tomatoes, and capers.”

    For many years this traditional chicken dish has been a top choice at the nation’s largest Italian restaurant chain, so an Olive Garden Chicken Piccata recipe is long overdue. Brined chicken breast fillets are grilled and topped with a lemon butter sauce made with garlic, sundried tomatoes, and capers in this copycat clone that will fool even the biggest Olive Garden fans.

    Two large chicken breasts get sliced into four fillets here, so you’ll have either four lunch-size portions or two double-sized dinner meals. And if you need even more servings, you can easily double up the recipe.

    In the Tidbits, I’ve added a quick recipe for the optional side of Parmesan-crusted zucchini served with the actual dish if you want to make an even more authentic clone.

    Mauna Loa Kona Coffee Glazed Macadamia Nuts

    It's not necessary to use expensive Kona coffee when cloning these awesome glazed macadamia nuts from Mauna Loa. Since the coffee is combined with butter, sugar, and other ingredients, no one will know the difference. But you will have to make your coffee very strong. Use twice the grounds recommended by your coffee maker or use espresso.

    You'll also need a candy thermometer for my Mauna Loa Kona coffee glazed macadamia nuts recipe below, since you'll need to bring the candy to precisely 290 degrees F before stirring in the nuts. Make sure to heat up the nuts in a separate pan, so they'll be hot when you add them to the candy. This way the candy doesn't cool too quickly and the nuts get a nice thin coating of the goodness. The candy coating won't be as thin as on the original nuts, but it's a pretty good copy, considering your home kitchen probably doesn't come equipped with one of the commercial candy tumblers or enrobers you find on the production line in the Mauna Loa manufacturing plant.

    Buffalo Wild Wings Buffalo Wings and Sauces

    Menu Description: "Here they are in all their lip-smacking, award-winning glory: Buffalo, New York-style chicken wings spun in your favorite signature sauce."

    Since Buffalo, New York was too far away, Jim Disbrow and Scott Lowery satisfied their overwhelming craving in 1981 by opening a spicy chicken wing restaurant close to home in Kent, Ohio. With signature sauces and a festive atmosphere, the chain has now evolved from a college campus sports bar with wings to a family restaurant with over 300 units. While frying chicken wings is no real secret—simply drop them in hot shortening for about 10 minutes—the delicious spicy sauces make the wings special. There are 12 varieties of sauce available to coat your crispy chicken parts at the chain, and I'm presenting clones for the more traditional flavors. These sauces are very thick, almost like dressing or dip, so we'll use an emulsifying technique that will ensure a creamy final product where the oil won't separate from the other ingredients. Here is the chicken wing cooking and coating technique, followed by clones for the most popular sauces: Spicy Garlic, Medium and Hot. The sauce recipes might look the same at first, but each has slight variations make your sauce hotter or milder by adjusting the level of cayenne pepper. You can find Frank's pepper sauce by the other hot sauces in your market. If you can't find that brand, you can also use Crystal Louisiana hot sauce.

    Romano's Macaroni Grill Chicken Scaloppine

The successful Italian chain is part of the Brinker group of restaurants that controls several other high-profile casual eateries including Border Mexican Grill, Maggiano's, and Chili's.

    Wienerschnitzel Chili Sauce

    The real version of this chili sauce comes to each Wienerschnitzel unit as concentrated brown goo in big 6-pound, 12-ounce cans. After adding 64 ounces of water and 15 chopped hamburger patties the stuff is transformed into the familiar thick and spicy chili sauce dolloped over hot dogs and French fries at America's largest hot dog chain. The proper proportion of spices, tomato paste, and meat is crucial; but the real challenge in creating my Wienerschnitzel chili copycat recipe is finding a common grocery store equivalent for modified food starch that's used in the real chili sauce as a thickener. 

    After a couple of days in the underground lab with Starbucks lattes on intravenous drip, I came out, squinting at the bright sunshine, with a solution to the chili conundrum. This secret combination of cornstarch and Wondra flour and plenty of salt and chili powder makes a chili sauce that says nothing but "Wienerschnitzel" all over it.

    For two years after the first Olive Garden restaurant opened in 1982, operators were still tweaking the restaurant's physical appearance and the food that was served. Even the tomato sauce was changed as many as 25 times. It's that sort of dedication that creates fabulous dishes like this popular soup. It blends the flavors of potatoes, kale, and Italian sausage in a slightly spicy chicken and cream broth.

    Oscar and Evelyn Overton's wholesale cheesecake company was successful quickly after it first started selling creamy cheesecakes like this clone to restaurant chains in the early 1970's. When some restaurants balked at the prices the company was charging for high-end desserts, Oscar and Evelyn's son David decided it was time to open his own restaurant, offering a wide variety of quality meal choices in huge portions, and, of course, the famous cheesecakes for dessert. Today, the chain has over 87 stores across the country, and consistently ranks number one on the list of highest grossing single stores for a U.S. restaurant chain.

    Baking your cheesecakes in a water bath is part of the secret for producing beautiful cheesecakes at home with a texture similar to those sold in the restaurant. The water surrounds your cheesecake to keep it moist as it cooks, and the moisture helps prevent ugly cracking. You'll start the oven very hot for just a short time, then crank it down to finish. I also suggest lining your cheesecake pan with parchment paper to help get the thing out of the pan when it's done without a hassle.

    Taco Bell Baja Sauce

    This is the spicy sauce that comes on your Gordita or Chalupa at Taco Bell. But the only way to get a significant amount of the delicious creamy sauce to use at home on tacos, fajitas, and burritos is by making some yourself. With my Taco Bell Baja Sauce recipe below, you will make enough to hold you over for a while. 

    You need a food processor to purée the vegetables, but don't expect to use all the purée. I've made the measurements for the purée larger than required so that your food processor will have something to grab on to. This is a mayo-based sauce, so if you want to eliminate some fat, use light mayonnaise in the recipe and make low-fat homemade Baja Sauce. You can't get that at Taco Bell.

    Carrabba's Chicken Bryan

    Menu Description: "Grilled Chicken breast topped with goat cheese, sundried tomatoes, and a basil lemon butter sauce."

    Carrabba's number one chicken dish is simple to clone once you duplicate the delicious basil lemon butter sauce. Preheat your grill to high and pound the chicken breasts with a mallet so that they'll cook evenly. Use the sun-dried tomatoes that come in a bag rather than those that come bottled in oil. To rehydrate them, simmer the sun-dried tomatoes in a small pan of water for about 4 minutes, then slice them. The goat cheese used at the chain is called Caprino cheese, which is a very smooth and creamy goat cheese. If you can't find Caprino, use any available goat cheese from your market, and you'll still have a tasty clone.

    Buca di Beppo Chicken Limone

    Menu Description: "Chicken breasts lightly sautéed and topped with lemon butter sauce and capers."

    Buca di Beppo's Chicken Limone was deliciously simple to reverse-engineer: I asked the server to check on what kind of dairy is used in the sauce and whether or not white wine is cooked into it. After getting the information I needed, I ordered the dish to go with the sauce on the side and got to work back in the lab. Several versions hit the sink as I unsuccessfully experimented with various amounts of wine, butter, and cream.

    It was only after I decided to chill the lemon-butter sauce that I got the information that I needed. The sauce formed a firm solid in the fridge, which indicated that my recipe needed a lot more butter than first estimated. I made the proper adjustments and the sauce that sat in my pan was a perfect match that could surely stand up to a blindfolded taste test. The rest of the secret technique required pounding the chicken breasts until thin. This tenderized the chicken and made each piece the same size as the original. A quick sauté later, I was arranging the chicken on a serving platter, adding capers, spooning on plenty of sauce, and I had before me a beautiful culinary carbon copy indistinguishable from the real thing.

    Cracker Barrel Chicken & Dumplins

    Menu Description: "We use only the 'best of the breast' chicken tenderloin in our recipe. Our dumplins are made from scratch, then hand-rolled and cut into strips before simmering to perfection in chicken stock."

    By 1977 there were 13 Cracker Barrel stores located in Georgia and Tennessee, with all of them based on founder Dan Evins' original concept of a restaurant and store built around gasoline pumps. But with the oil embargo and energy crisis of the mid-seventies, Cracker Barrel started building stores that did not offer gas. Eventually, all of the original 13 stores were converted so you can no longer "filler-up" while you fill yourself up.

    An old-time favorite at Cracker Barrel is the Chicken & Dumplins found on the lunch and dinner menu. The nice thing about this home version of the popular classic dish is that it creates its own tasty gravy. As the "dumplins" dissolve, the flour thickens the stock into a creamy sauce.

    California Pizza Kitchen (CPK) Thai Crunch Salad

    Menu Description: "Shredded napa cabbage, chilled grilled chicken breast, julienne cucumbers, edamame, crispy wontons, peanuts, cilantro, julienne carrots, red cabbage and scallions tossed with a lime-cilantro dressing. Topped with crispy rice sticks and Thai peanut dressing."

    You can plan ahead for my delicious copycat California Pizza Kitchen (CPK) Thai Crunch salad recipe by first grilling the chicken and chilling it, then preparing the cilantro-lime dressing and the peanut sauce in advance. The menu description says that the salad is topped with "crispy rice sticks," but they look to me like crispy bean threads, cooked in a flash when dropped into hot oil for a few seconds. The crispy wontons are made from frying thinly sliced wonton wrappers in the same hot oil. 

    For the edamame (soybeans), look in the frozen food section, and if they're still in their pods, be sure to take them out before measuring and tossing them into the salad. Once you've got everything chilled and chopped, building each dish is a breeze, and you'll have four huge dinner-size salads that will each be enough for an entire meal.

    Subway Chipotle Southwest Sauce

    Everyone hip on Subway's sandwiches knows the key to cloning the flavor of many of the chain's top-sellers is in hacking the secret sauces. For example, Subway's Sweet Onion Chicken Teriyaki Sandwich is pretty bland without the Sweet Onion Sauce. And one of Subway's newest creations, the Chipotle Southwest Cheese Steak, is just a cheese steak sandwich without the Chipotle Southwest Sauce. 

    Now, with my Subway's Chipotle Southwest Sauce recipe, you can re-create the slightly sweet, mildly sour, and little bit smoky sauce at home to take any of your home sandwich creations on a trip to the spicy Southwest. But you don't have to stop at sandwiches. This sauce also makes an amazing dressing for a zesty Southwestern-style salad. You'll need to pick up some ground chipotle chile in the spice section of your market. McCormick makes good stuff.

    Red Lobster Parrot Bay Coconut Shrimp

    Menu Description: "Jumbo butterflied shrimp hand-dipped in batter flavored with Captain Morgan Parrot Bay Rum & coconut flakes. Served with piña colada dipping sauce."

    Fans of this dish say the best part is the piña colada dipping sauce. And it's true. That sauce is so good you could eat it with a spoon. But the coconut shrimp is pretty awesome too, just on its own. Red Lobster's secret formula includes Captain Morgan's Parrot Bay rum, which sweetens the batter and adds a great coconut flavor (plus you can whip up a nice cocktail with it while you're cooking). Panko breadcrumbs—which give a nice crunch to the shrimp—can be found in the aisle of your market where all the Asian foods are parked. My Red Lobster Parrot Bay coconut shrimp copycat recipe makes two times the size of a serving you get at the Lobster, so there should be enough for everyone. The real thing comes with salsa on the side in addition to the piña colada sauce, but you may not even want to include it.

    Mimi's Cafe Corn Chowder

    Arthur Simms was in the restaurant business for many years before he opened the first Mimi's Cafe with his son, Tom, in Anaheim, California in 1978. Back in the Golden Age of Hollywood Arthur was the guy running things in the MGM Studios commissary where, on any given day, Jean Harlow, Clark Gable and Judy Garland might stop in for a grazing. Arthur named his New Orleans-influenced, bistro-style restaurant after a woman he met and fell in love with in Paris during the war. 

    Today it's Tom who runs the show at this growing 93-unit chain where regulars return for the staple favorites including the French Market Onion Soup, Carrot Raisin Bread and the delicious corn chowder. Use my Mimi's Corn Chowder recipe below to enjoy this great soup at home.

    Cheesecake Factory Chicken Madeira

    Menu Description: "Our most popular chicken dish! Sauteed chicken breast topped with fresh asparagus and melted mozzarella cheese, covered with fresh mushroom madeira sauce. Served with mashed potatoes."

    What makes this Cheesecake Factory's "most popular chicken dish" is the sweet madeira wine reduction sauce spooned over the top. Man, I could slurp that stuff straight from a glass. It's that good. And—get this—it's easy. Even though the real stuff appears to include veal stock, we can concoct a great knockoff using canned beef stock. Get sliced mozzarella cheese from your deli section and be sure to pound the chicken breasts very thin using plastic wrap to cover each one before you get medieval on it. Also, in typical Cheesecake Factory style, their entrée is huge, including two chicken fillets and a giant pile of mashed potatoes on the side. My Cheesecake Factory Chicken Madeira recipe makes a total of four chicken fillets, which divides into two servings if you're at the restaurant. At home though, this is probably the perfect amount for a tribe of four.

    Taco Bell Burrito Supreme

    To copy the Taco Bell Burrito Supreme at home, you first must assemble the meaty foundation of many of the chain's top-selling products: the spiced ground beef. Toss it and seven other tasty ingredients into a large flour tortilla and fold using the same technique as taught to new recruits to the chain. Add your favorite hot sauce for a bit of heat, or clone Taco Bell Mild, Hot, Fire Border, Diablo, Baja, or Lava sauce with my recipes here.

    Carnegie Deli Classic New York Cheesecake

    Carnegie Deli's huge pastrami sandwiches were selected as the best in New York by New York Magazine in 1975, but it's the cheesecakes, which can be shipped anywhere in the country, that really put this famous deli on the map. 

    The secret to my Carnegie Deli traditional New York cheesecake recipe is creating the perfect not-too-sweet sugar cookie crust and varying the baking temperature so that you get a nicely browned top before cooking the cheesecake through. Get ready for the best deli-style cheesecake to ever come out of your oven.

    Outback Steakhouse Honey Wheat Bushman Bread

    Along with your meal at this huge national steakhouse chain, comes a freshly baked loaf of dark, sweet bread, served on its own cutting board with soft whipped butter. One distinctive feature of the bread is its color. How does the bread get so dark? Even though my Outback Honey Wheat Bushman bread copycat recipe includes molasses and cocoa, these ingredients alone will not give the bread its dark chocolate brown color. Commercially produced breads that are this dark—such as pumpernickel or dark bran muffins–often contain caramel color, an ingredient used to darken foods. Since your local supermarket will not likely have this mostly commercial ingredient, we'll create the brown coloring from a mixture of three easy-to-find food colorings—red, yellow and blue. If you decide to leave the color out, just add an additional 1 tablespoon of warm water to the recipe. If you have a bread machine, you can use it for kneading the bread (you'll find the order in which to add the ingredients to your machine in "Tidbits"). Then, to finish the bread, divide and roll the dough in cornmeal, and bake.
