  • 1 2/3 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup vegetable oil (soybean oil)
  • 1 cup plus 2 tablespoons granulated sugar
  • 3 large eggs
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrot
  • 1/4 cup crushed pineapple, with juice
  • 1 cup raisins
  • 3/4 cup chopped walnuts

    • Instructions

      1. Preheat oven to 350 degrees F.

      2. Combine the flour, cinnamon, baking powder, baking soda, and salt in a large mixing bowl.

      3. In another large bowl, combine the oil, sugar, eggs, molasses, and vanilla with an electric mixer until smooth. Add the shredded carrot and pineapple, and mix until well blended. Add the raisins and walnuts and mix well by hand.

      4. Pour the flour mixture into the other ingredients and stir until combined.

      5. Pour the batter into two greased 8-inch loaf pans. Bake for 45-55 minutes, or until a toothpick stuck in the middle comes out clean.

      Makes 2 loaves.

      Tidbits: This recipe works best when the loaf pans are placed directly on the oven rack rather than on a sheet pan.

I made this bread over the weekend and my family loves it. I can not tell the difference between mine and Mimi's. This recipe is a keeper.

Have been making this bread ever since it appeared on Top Secret. It is one of the best sweet breads ever. I love that the recipe makes 2 loaves. This turns out great everytime and freezes well and keeps in the fridge for a long time. Highest rating. If you don't already have the recipe it is more than worth the 79 Cents to order it.
