- McDonald's Mighty Hot Sauce
This super-spicy, slightly-sweet dipping sauce was introduced in the Fall of 2020 with the debut of the Spicy McNuggets, and it was the first new McDonald’s dipping sauce since the 2017 re-release of the infamous Szechuan Sauce (sauce mob details and hack here). The Mighty Hot Sauce was only offered for a limited time, and it vanished along with the Spicy McNuggets later that year. But not for long. Due to a social media outcry, Spicy McNuggets and Mighty Hot Sauce came back to the Golden Arches on February 1, 2021, for another limited-time-only run.
Now you can get that same heavenly heat any time you want at home with my simple Mighty Hot Sauce recipe and use it as a dip for chicken fingers, wings, or whatever. This hack will give you about ½ cup of the sauce, but feel free to double it for a mightier portion. Just add another 20 seconds to the cooking time.
If you want the best McDonald’s match use Texas Pete’s cayenne sauce for your hack. If you can’t find that brand, go with Frank’s.

Five Guys Cajun Fries
Read moreWhen I first attempted making this Five Guys Cajun Fries recipe using large, unpeeled russet potatoes I had just picked up at the grocery store, the fries came out of the oil looking miserably discolored and had an unpleasant soggy texture. They were dark brown and soft, rather than light brown and crispy like the amazing fries from Five Guys. I was sure to properly prep the fries by soaking them in water to wash away excess starch, then par-frying them at a low temperature, allowing them to cool, then frying them again at a higher temperature. But my initial results were a failure, and then I got distracted.
Over the next two weeks, I got busy with other recipes and neglected my unused potatoes. When I went back to the potatoes, I noticed they had become much softer and looked like they were about to sprout. Not wanting to let them go to waste, I cut the potatoes and fried them, and I was shocked to see how different they looked from my earlier batch. Rather than soggy and limp, these fries came out golden brown and crispy from tip to tip. Do old potatoes make better fries?
I remembered that Five Guys stacks bags of the potatoes used for the fries in the restaurant, and I wondered if I could see dates on those bags. I dashed back over to the restaurant and, sure enough, the potatoes were dated. The bags at one end of the stack were just one day old, and the bags closest to the kitchen were eight days old. I later discovered that Five Guys use specific Idaho potatoes because they are denser than other russets. I knew I couldn't get those special potatoes, but I discovered that I could still make crispy, more flavorful fries like Five Guys if I just let common russet potatoes sit out for a week or so before slicing and frying them.
Just like the restaurant, the potatoes in my Five Guys Cajun Fries copycat recipe are fried twice, then you'll sprinkle them with the Cajun seasoning as soon as they came out of the oil. At Five Guys, they salt the fries first and then add Cajun seasoning, but I’ve included all the salt you’ll need in the secret seasoning mix below to eliminate that additional salting step.
Now how about a famous hamburger knock-off to go with those fries? Find your favorite hamburger copycat recipes here.

Domino's Spicy Jalapeno-Pineapple Specialty Chicken
Read moreMy Domino’s new spicy specialty chicken recipe gives you a new way to turn frozen breaded chicken from any supermarket into an impressive appetizer. And this Top Secret Recipe comes with my complete formula for duplicating the chain’s famous sweet mango habanero dipping sauce to give your dish its fiery personality.
Top your chicken with a blend of Cheddar and mozzarella cheese, jalapeño slices, and pineapple, and bake it on a strip of parchment paper until the cheese is bubbly and browned around the edges.

Chipotle Chicken Al Pastor
Read moreA dish traditionally made with pork is redesigned for chicken in this Mexican chain’s limited-time-only sweet-and-spicy variation. All the key ingredients for good al pastor are here: pineapple, lime, achiote, and morita chipotle peppers, which come together to make a bright orange sauce used here for basting marinated chicken thighs.
The TV commercial for Chipotle’s new offering claims the morita peppers are seared and shows wild flames dancing around a pan filled with fresh green and red peppers. That is perhaps not an accurate depiction of the preparation process considering that morita peppers are made by smoking red jalapeños, not green ones. And smoked jalapeños do not look like fresh jalapeños, so I'm not sure what's going on there.
Regardless of the confusing clues in the TV ad, to make my Chipotle Chicken Al Pastor copycat recipe, you'll want to find dry morita peppers, then remove the seeds and toast the peppers in your oven before making the secret sauce. Baste the sauce on your chicken just before it's done cooking, then chop it up and use it to make delicious tacos, burritos, salads, and bowls.

Qdoba 3-Cheese Queso
Read moreThere are many acceptable ways to formulate good queso, but to make this specific queso the Qdoba way, the ingredients must be correct – and most copycat recipes seem to get it wrong. A few recipes get one of the peppers and two of the cheeses right, but pretty much every recipe out there is a bit of a mess that I will now save you from.
Quesos can be made with a variety of cheeses that include queso fresco, asadero, and Muenster, but this particular queso includes a cheese you probably didn’t expect: Swiss. That cheese is slow to melt, so we’ll shred it first, along with the Jack. And you won't need to gum up the queso with flour or cornstarch by making a roux because the white American cheese in the mix contains either sodium citrate or sodium phosphate—additives that help the cheese melt smoothly and stay that way.
Authors of recipes that call for tomatoes in this dish haven’t looked closely. Those are red bell peppers and they are roasted, peeled, and seeded along with the poblano and jalapeños before they are diced and added to the cheese sauce. The sauce cooks on low heat, never bubbling, so that it stays smooth and creamy.
When done, your queso might seem thin in the pan, but it will thicken as it cools to a perfect consistency for dipping tortilla chips, or as a topping for tacos and burrito bowls.

Rao's Homemade Marinara Sauce
Read moreGetting a table at the 123-year-old original Rao’s restaurant in New York City is next to impossible. The tables are “owned” by regulars who schedule their meals months in advance, so every table is full every night, and that’s the way it’s been for the last 38 years. The only way an outsider would get to taste the restaurant’s fresh marinara sauce is to be invited by a regular.
If that isn’t in the stars for you, you could buy a bottle of the sauce at your local market (if they even have it). It won't be fresh, and it's likely to be the most expensive sauce in the store, but it still has that great Rao's taste. An even better solution is to copy the sauce for yourself using my easy Rao's Homemade Marinara Sauce copycat recipe.
The current co-owner of Rao’s, Frank Pellegrino Jr., told Bon Appetit in 2015 that the famous marinara sauce was created by his grandmother many years ago, and the sauce you buy in stores is the same recipe served in his restaurants. The ingredients are common, but correctly choosing the main ingredient—tomatoes—is important. Try to find San Marzano-style whole canned tomatoes, preferably from Italy. They are a little more expensive than typical canned tomatoes, but they will give you some great sauce.
After 30 minutes of cooking, you’ll end up with about the same amount of sauce as in a large jar of the real thing. Your version will likely be just a little bit brighter and better than the bottled stuff, thanks to the fresh ingredients. But now you can eat it anytime you want, with no reservations, at a table you own.

Jimmy Dean Breakfast Sausage
Read moreBefore he became America's sausage king, Jimmy Dean was known for crooning the country hit "Big Bad John." That song came out in 1962 and sold more than 8 million copies. His singing success launched a television career on ABC with The Jimmy Dean Show, where Roy Clark, Patsy Cline, and Roger Miller got their big breaks. The TV exposure led to acting roles for Jimmy, as a regular on Daniel Boone, and in feature films, including his debut in the James Bond flick Diamonds are Forever. Realizing that steady income from an acting and singing career can be undependable, Jimmy invested his show-biz money in a hog farm. In 1968 the Jimmy Dean Meat Company developed the special recipe for sausage that has now become a household name. Today the company is part of the Sara Lee Corporation, and Jimmy retired as company spokesman in 2004.
My Jimmy Dean breakfast sausage copycat recipe re-creates three varieties of the famous roll sausage that you form into patties and cook in a skillet. Use ground pork found at the supermarket—make it lean pork if you like—or grind some up yourself if you have a meat grinder.

Maggiano's Famous Rigatoni "D"
Read more“D” was chef David Di Gregorio’s nickname at the first Maggiano’s, which opened in Chicago, Illinois in 1991, and he’s the guy who developed the best-selling pasta dish on the menu.
Maggiano’s Famous Rigatoni “D” is a genuinely great dish that anyone can copy if they use the exclusive top secret techniques revealed here. After many trials and several errors, I finally replicated the amazing creamy marsala sauce by reducing two full bottles of inexpensive marsala wine down to just one-half cup of intensely flavored liquid. The alcohol cooks out, the mushrooms contribute their savory umami goodness, and after about an hour-and-a-half you have the perfect flavoring solution for your cream sauce.
The other mushrooms in the dish are served unsliced, so make sure they’re small enough to eat in one bite. Sometimes it’s tough to find 40 small mushrooms, so feel free to use your choice of white (button) or brown (cremini) mushrooms for this recipe. They are the same mushroom species with only minor differences (white mushrooms are a cultivated mutation of the brown ones), so either will work. But, if you have a choice, go with creminis since they tend to have a slightly deeper flavor.

Cheesecake Factory Chicken Piccata
Read moreMenu Description: “Sautéed chicken breast with lemon sauce, mushrooms, and capers. Served with angel hair pasta.”
A great chicken piccata doesn’t have to be complicated, and this fantastic take on the lemony dish from the Cheesecake Factory is a perfect example.
Since the sauce is the key to the great taste of this entrée, I made sure to get a sample on the side for later analysis when I requested my to-go order from the restaurant. While waiting, I asked the server what was in the sauce and she listed some obvious ingredients—lemon, wine, butter, cream—and then she mentioned garlic and shallots. When I got home, I rinsed the sauce through a mesh strainer to discover how much garlic and shallot were in the sauce, but there was no physical evidence of either solid ingredient left behind in the strainer.
I made a batch of the sauce without garlic and shallot, and it tasted flat. So on the next batch, I added the garlic and shallot back in, then strained out the solid ingredients after they contributed their goodness to the sauce. The result was noticeably better.
After adding mushrooms and capers to the new lemon sauce, I spooned it over sautéed chicken cutlets and was rewarded with a fantastic homemade version of this amazing dish, which you can now copy at home using my Cheesecake Factory Chicken Piccata recipe below.

Pizza Hut Spicy Lover's Pizza
Read moreTo satisfy America’s growing desire for foods that bite back, Pizza Hut introduced its spiciest pizza ever in early 2022. The new peppery pies include Spicy Hawaiian Chicken and Spicy Veggie, but it’s the Spicy Double Pepperoni version, with both regular pepperoni and cupped pepperoni, that takes the top spot.
This is Pizza Hut’s first pizza to be topped with brined red jalapeño slices, which are similar to those packed in a jar from Old El Paso. If you can’t find bottled slices, use sliced fresh red jalapeños or red Fresno peppers, or any other spicy red pepper you find in your produce section. Red jalapeños will certainly bring some sting, but most of the boom will come from the chain’s new spicy marinara sauce that’s been kicked up with added peppers, and it's hacked here for you.
When your feisty pie comes out of the oven, hit it with some “fiery flakes” (crushed red pepper and parsley) and you’ve got a perfect hack of Pizza Hut Spicy Lover's Pizza for your pizza-loving, hungry home team who like some heat.

Rao's Traditional Meatballs
Read moreTweaking a classic recipe with a few special prep tricks leaked to me by a server was the key to developing this spot-on hack for the famous meatballs from the iconic 125-year-old Italian dining room. With just two locations in the U.S. (Los Angeles and New York), sinking your fork into a fresh meatball at the restaurant requires quite a trip for most people, but my Rao's Traditional Meatballs recipe, refined through multiple batches, will make you a meatball master in your own kitchen, producing ten 5½-ounce meatballs that look and taste like the real thing.
Fortunately, I could squeeze in a reservation at the Las Vegas Rao’s location a few weeks before it closed its doors forever at Caesar’s Palace in late November 2021. While there, I made sure to ask my server for any information about the recipe, and was informed about the secret two-step process described in this hack to create giant meatballs that are cooked through, but so moist that they practically crumble when cut with a fork.
Rao’s has shared a meatball recipe in the past, but don’t be fooled. That recipe produces decent meatballs, but they are not the same as what’s served in the restaurant. If you want to make meatballs that taste like the classic original, use my Rao's meatballs recipe below.
And when they're done, top the meatballs with your favorite marinara or use my hack here to re-create Rao’s famous sauce.

Panda Express Chow Mein
Read moreI got lucky on the day I picked up a box of chow mein from this huge Chinese chain because they had just run out. This meant that I could watch from the sidelines as they whipped up a fresh batch in a giant wok over a high flame in the completely visible kitchen, and I was able to take plenty of mental notes. The whole dish took just a few minutes for the enthusiastic chef to prepare, and before I knew it I was out the door with a huge box of hot chow mein ready for hacking.
Just like the real Panda Express Chow Mein, the beauty in this re-creation is its simplicity. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also called Chinese stir fry noodles) which are easy to find and cheap, and dark soy sauce to get that great caramel color. And if you don’t have a wok for this, a large skillet with sloped sides for tossing will work just fine.

Chipotle Carne Asada
Read moreChipotle’s popular limited offering is a good example of how straightforward and flavorful carne asada can be. It’s not overly mysterious since Chipotle is transparent about the ingredients used for the restaurant's entire menu—53 ingredients in all—but identifying those is only the beginning of the process. There was still plenty of work to do in establishing ratios and settling on an ideal preparation method.
Carne asada is almost always made with flank steak or skirt steak. A server at Chipotle told me they use skirt steak, which is surprising since that is the tougher of the two cuts. Perhaps she was wrong about that? Flank steak also has a better flavor than skirt steak, so I'm recommending flank here. Just be sure not to marinate it for more than 2 days or the acid in the marinade may toughen your steak and you certainly don't want that.
After you grill it, slice the meat across the grain and use it in burritos, tacos, bowls, or as a Southwest-style salad topper.

Chipotle Garlic Guajillo Steak
Read moreIn the Fall of 2022, Chipotle debuted Garlic Guajillo Steak, a variation of the chain’s classic steak made with a new secret seasoning starring the fruity and slightly smokey flavor of dry guajillo peppers, and, surprisingly, prepared using a gourmet French slow-cooking technique.
After an outbreak of E. coli bacteria at Chipotle infected 53 people in nine states, the chain changed the way it cooks steak. Rather than cooking the beef entirely on a Plancha, or flat griddle, Chipotle now pre-cooks the steaks with the sous vide method wherein vacuum-packed seasoned beef is cooked slowly in swirling, heated water. This cooking technique not only eliminates any potentially harmful bacteria before the beef is grilled, but it will also speed up the seasoning process and help tenderize tougher cuts.
But you shouldn't worry if you don’t have a sous vide setup. My Chipotle Garlic Guajillo Steak recipe will also work by simply chilling the seasoned steak overnight in a zip-top bag and later cooking it off in a heavy pan or on a hot griddle. After slicing the cooked steak, toss it with some freshly squeezed lime juice and fresh cilantro, and use it as you see fit for tacos, burritos, bowls, and salads.

Chipotle Pollo Asado
Read moreIn 2022, for the first time in its 29-year history, Chipotle debuted a new style of grilled chicken, and it became an instant hit. At least it was at the Chipotle near me, where the Pollo Asado was ordered more than any other protein, according to servers there. But the new flavor is for a limited-time-only, and when it’s gone, my exclusive Chipotle Pollo Asado recipe may be the only way to satisfy your deep desire.
It appears that Chipotle’s new chicken is marinated in a vacuum meat tumbler similar to the way the Mexican chicken chain El Pollo Loco does it. I sure wish I had one of those awesome tumblers because they speed up and improve the marinating process, producing moist chicken packed with flavor all the way through. But those tumblers are expensive and bulky, and I have absolutely zero space left in my kitchen to store one. So, an overnight marinade, along with a bit of patience, must suffice.
The next day, grill your marinated chicken, chop it up, toss it with the secret citrusy sauce hacked here, add some fresh cilantro and lime juice, then use it as you see fit on burritos, tacos, salads, and bowls.
Try my Chipotle Pollo Asado recipe below and find more of my Chipotle recipes here.

Yard House Nashville Hot Chicken
Read moreThis hit entrée at the 80-unit Yard House brings crispy Nashville hot chicken together with house-made sweet potato pancakes and honey hot sauce syrup on one beautiful plate, and now you can re-create that gorgeous entrée at home with these exclusive secrets, right down to the crispy sage leaves on top.
In my version of Yard House's Nashville Chicken recipe, the crispy chicken is brined to make it moist and juicy on the inside, and just before serving it gets tossed with the Nashville hot sauce for a perfect re-creation of the plate's main attraction. The honey hot sauce is a simple concoction of five ingredients, and the pancakes are simplified by using canned sweet potatoes rather than fresh ones that require an additional cooking step.
Bring it all together for four impressive plates, and be sure to serve ‘em up with something tall and cold to drink.

Wolfgang Puck Chinois Chicken Salad
Read moreThis iconic Chinese chicken salad, born at Wolfgang Puck’s Chinois restaurant in Santa Monica, California, can also be found on menus at other Puck dining rooms, including Wolfgang Puck Bar & Grill and Wolfgang Puck Player’s Locker, both in Las Vegas.
It's a decades-old secret recipe that is often imitated but never duplicated, since no knockoff I've found includes all the ingredients necessary to create the signature taste. In my underground lab, I sat down with my “to-go” salad (dressing on the side, of course) and meticulously deconstructed it by separating all the ingredients into small bowls. After working for about 45 minutes with the tweezers, I had separate piles of napa cabbage, various greens including frisée, radicchio, shredded carrot, and another shredded root vegetable that I have yet to see anyone include in their so-called “hack”: daikon radish.
In my Wolfgang Puck Chinois Chicken Salad copycat recipe below, I’ll show you how to make the perfect blend of greens (including another secret ingredient that recipes miss), and the ultimate way to clone the famous dressing. I’ve also got easy hacks for perfect candied sesame cashews and crunchy wontons to sprinkle on top, plus I’m including a handful of step photos to ensure that your salad comes out perfect.

Sweet Baby Ray's Honey Barbecue Sauce
Read moreBrothers Dave and Larry Raymond came up with a top secret recipe for barbecue sauce that was so good they entered it in Chicago’s Rib Fest barbecue competition in the late ‘80s. The fourth time they entered, in 1985, they took home the 2nd place trophy. By the following year, they were selling bottles of their now-famous sauce in stores, and the brand became a huge success.
The brothers sold their $30-million-a-year sauce business in 2005, and the brand kept growing. By 2008, Sweet Baby Ray’s was America's #2 best-selling barbecue sauce.
Now, with my Sweet Baby Ray's Honey Barbecue Sauce copycat recipe, you can make 2 cups of a taste-alike sauce with mostly common ingredients plus pineapple juice, celery salt, and tamarind paste to help nail down the familiar award-winning taste.

Applebee's Riblets
Read moreEver wonder where Riblets come from?
"Riblets" is Applebee’s branded name for button ribs or rib tips (as they are called at Walmart), which is a short cut trimmed from the back end of pork spareribs, packed with lots of connective tissue. And that's a good thing because, after 3 to 4 hours of braising, the connective tissue will break down, producing fork-tender meat that slips off the bone. Of the cooking methods I tried for my version of Applebee's Riblets recipe, which included steaming, slow-roasting, and smoking; braising made the most tender, flavorful ribs—even before the sauce went on.
For the braising formula, I found that chicken broth infused with liquid smoke creates tender ribs that taste as if they came out of a smoker. Finish off the braised ribs on your grill and baste them with my original hack below that clones Applebee’s honey barbecue sauce, or use your favorite bottled sauce.
And if you'd like to serve these riblets with almond rice pilaf as they do in the restaurant, you can find my clone recipe here on the site.

Panda Express Fried Rice
Read moreA popular staple of any Chinese chain is fried rice, so it better be good, and the version served at Panda Express most certainly is. Here's my easy Panda Express Fried Rice recipe for when you need a stress-free, low-cost side for your entrées. But I do suggest that you cook the white rice several hours or even a day or two before you plan to make the finished dish. I found that the cooked rice called for in this recipe works best when it's cold.
As for a shortcut, bagged frozen peas and carrots will save you from the hassle of petite-dicing carrots since the carrots in those bags are the perfect size to produce an identical clone. And they're already cooked.

Olive Garden Five Cheese Ziti al Forno
Read moreMenu Description: “A baked blend of Italian cheeses, pasta, and our signature five-cheese marinara.”
Creating my Olive Garden’s famous baked ziti copycat recipe would not be possible without a perfect clone of the chain’s popular five-cheese marinara sauce. I started with my previous recipe of the plain marinara for Olive Garden’s Chicken Parmigiana and enhanced it with the addition of five kinds of Italian cheese and heavy cream.
Determining which five types of cheese are in a prepared sauce is tough without some insider assistance, so before cooking I focused my efforts on convincing a server to ask the chef for the list…and I got it! The blend of cheese used here in the sauce comes straight from the kitchen of my local Olive Garden. When you taste it, you’ll know the intel was legit.
After the sauce is added to the pasta it’s topped with a cheese-and-breadcrumb mix called “ziti topping,” then it’s browned under a salamander (for the restaurant version) or a broiler (for your version). The result is a beautiful dish with great sauce and a cheesy topping that should satisfy even the pickiest baked ziti fanatics.
I've cloned a ton of dishes from Olive Garden. See if I hacked your favorite here.

Popeyes Cajun (Dirty) Rice
Read morePopeyes offers two sides with rice: the ultra-popular Red Beans and Rice, which I previously cloned here, and this rice made Cajun-style with ground beef and spices.
The real recipe at the chain most likely includes chicken gizzard, but that ingredient is not always easy to find outside of buying a whole uncooked chicken that includes a bag of giblets tucked inside. So I set out to design my Popeyes Cajun Rice copycat recipe without that ingredient, and the results were great.
The secret to the fabulous taste, after all, is not found in the gizzard, but in the flavors contributed by the “holy trinity” of green pepper, onion, and celery salt; accentuated by the ground thyme and oregano.
If you’re making rice tonight, bump it up to something special with just a little extra work for delicious results.

Olive Garden Lasagna Classico
Read moreCrafting an Olive Garden’s signature Lasagna Classico recipe became the perfect opportunity to create a beautiful multi-layered lasagna hack recipe that uses up the whole box of lasagna noodles and fills the baking pan all the way to the top. This Top Secret Recipe makes a lasagna that tips the scale at nearly 10 pounds and will feed hungry mouths for days, with every delicious layer copied directly from the carefully dissected Olive Garden original.
I found a few credible bits of intel in a video of an Olive Garden chef demonstrating what he claims is the real formula on a midday news show, but the recipe was abbreviated for TV and the chef left out some crucial information. One ingredient he conspicuously left out of the recipe is the secret layer of Cheddar cheese located near the middle of the stack. I wasn’t expecting to find Cheddar in lasagna, but when I carefully separated the layers from several servings of the original dish, there was the golden melted cheesy goodness in every slice.
This clone recipe will make enough for 8 big portions, but if you make slightly smaller slices this is easily enough food to fill twelve lasagna-loving bellies. If you like lasagna, you're going to love this version.

Bonchon Wings
Read moreKorean chicken is famous for its extra crispy coating, and Bonchon’s recipe—especially the wings—is one of the best in the world. That chain's famous formula is why there are now over 340 Bonchon outlets in nine countries, including over one hundred in the US and more planned to open here in the near future.
The biggest challenge when creating my Bonchon chicken wings recipe was finding the perfect magical mixture for the batter that fries to a golden brown, and with tender crispiness that stays crunchy long after the wings have been brushed with the flavorful glaze.
I knew that a traditional double-frying technique would help create the crunchy coating we needed, but it would take some trial and error to determine the best time splits. The wings are par-fried, rested, and then fried again until done, but just how long to give each stage was yet to be determined since every recipe I found for Korean chicken used different times and temps. Some recipes even changed the temperature between frying steps, but that extra step made the recipe too difficult to manage when frying multiple batches.
I eventually settled on 350 degrees F with most of the frying done up front in the par-fry stage. A three-ingredient batter is all that’s needed for crispy golden-brown wings, and the soy garlic sauce is a quick hack using your microwave oven. If you like your wings spicy like I do, it’s very easy to kick them up by adding Korean red chili paste (gochujang) and Korean red pepper powder (gochugaru) to the soy garlic recipe in the measurements listed below.

Bojangles' Bo's Special Sauce
Read moreBojangles’ was founded in 1977 in Charlotte, North Carolina, and today the 750-unit chain is famous throughout the southeastern U.S. for its juicy fried chicken, fluffy buttermilk biscuits, and Cajun dirty rice.
And just like McDonald’s, Bo’s has a special sauce that’s pretty famous too. It’s arguably much better than McDonald’s Big Mac sauce, especially if you like the flavors of horseradish and roasted red bell pepper. The lemon juice, apple cider vinegar, and sugar team up for the appropriate sweet-and-sour notes found in any decent special sauce, and the herbs add a nice finish you don’t get with other sandwich sauces. You might also like to know that my Bo's special sauce recipe is made without the high-fructose corn syrup that’s listed as the third ingredient in the real thing.
Mix everything in a bowl and park it in the fridge for a spell so the flavors can mingle, then use the sauce as you see fit on sandwiches made with fried chicken, grilled chicken, and roast beef, or as a dip for chicken fingers and nuggets.

Maggiano's Beef Tenderloin Medallions
Read moreFor many years this entrée has been a top menu choice at Maggiano's, the 54-unit Italian chain from Brinker, the same company that operates Chili’s Grill & Bar. The $30 restaurant dish consists of three 2½-ounce tenderloin steaks, swimming in a fantastic balsamic cream sauce with sliced portabello mushrooms—but a home version is only six easy steps away, and it won't hit you in the wallet as hard as the pricey original.
Cracking this dish required a perfect hack of the balsamic cream sauce, and that came quickly after obtaining some very reliable information from my incredibly helpful server/informant at a Las Vegas Maggiano’s. Let’s call him Skippy.
According to Skippy, the balsamic cream sauce is as simple as mixing a sweet balsamic glaze with the chain’s creamy Alfredo sauce. So, I first got a sample of Maggiano’s Alfredo sauce and figured out how to replicate it. Once that was done, I measured increments of balsamic glaze into the Alfredo sauce until the color and flavor matched the original. The rest of the recipe was easy.
My recipe will make two servings and includes preparation for the tenderloins and sauce. If you’d like to complete the dish the way it’s served at the restaurant (as in the photo), add some garlic mashed potatoes on the side, using my hack for Olive Garden Garlic Mashed Potatoes.

KFC (Kentucky Fried Chicken) Nashville Hot Chicken
Read moreIt was only a matter of time before the spicy fried chicken made famous in Nashville, Tennessee at shops like Prince's Hot Chicken Shack and Hattie B's would find its way into the mainstream. A dish this good is never contained forever, and KFC became the first fast food chain to give the recipe national exposure. A test run of the new spicy chicken in Pittsburgh was the most successful product test in KFC's recent history.
The original dish from Nashville is made with crispy fried chicken that's doused with a top-secret spicy chili sauce and served on sliced white bread with dill pickles on top. KFC's version is served with just pickles, no bread (a biscuit on the side instead), and is made by soaking the chain's Extra Crispy Fried Chicken with the oily chili sauce from a squirt bottle. Since there isn't any water in the sauce, just oil, the chicken stays crispy, regardless of how much sauce is applied.
For my KFC Nashville Hot Chicken copycat recipe, you first need to prepare the chicken, either using my KFC Extra Crispy Chicken recipe included below, or by baking or frying some of the pre-breaded chicken pieces you can find frozen in just about every grocery store. While the chicken is brining, make the sauce and pour it into a squirt bottle or spouted measuring cup. Apply it to your chicken when it's done (shake it or stir it first!), then top it with dill pickle slices.

Red Robin Ensenada Chicken
Read moreThis chain’s most popular chicken dish owes its appeal to two delicious sauces and the great way they work together. The dark red ancho chili sauce wakes the chicken with big, bold lime and chili flavors, and the salsa ranch drizzled over the top contributes a delicious, cooling layer of creaminess. If you like tequila lime chicken and fiesta chicken entrees from other restaurants, you'll really love this recipe.
For my Red Robin Ensenada Chicken copycat recipe, you have the option of cooking the brined chicken on an outdoor barbecue grill, on a flat grill, or in a sauté pan. It’s unclear which cooking method Red Robin uses for the chicken since the photo of the dish in the menu clearly shows grill marks as if cooked on a grate, while my take-home sample of the dish showed signs of being cooked on a flat surface. In the end, either way works.
The standout secret ingredient in this recipe is the A-1 sauce used in the ancho chili sauce, which contributes perfect fruity sweet-and-sour notes. That may sound like a strange addition, but it’s not unusual for Worcestershire sauce to be called for in ancho sauce, and A-1 is similar in many ways to Worcestershire.
The recipe makes 1 1/3 cups each of the ancho sauce and salsa ranch, so after you make these servings, you’ll still have plenty of the goodness left over for more chicken later or for other dishes.

The Old Spaghetti Factory Rich Meat Sauce
Read moreSince 1969, The Portland, Oregon-based Old Spaghetti Factory has been filling bellies with a comfort food menu full of fabulous pasta choices, and this signature meat sauce has been the sauce of choice at the 43-unit chain for more than five decades.
To reverse-engineer the sauce for my Old Spaghetti Factory Rich Meat Sauce copycat recipe, I started by rinsing the original sauce in a wire mesh strainer to see what secrets could be revealed. Once the solids were visible, I noted the size and ratios of ground beef, onion, celery, and garlic, and I also noticed that there were no bits of tomato left behind. This meant the tomato was puréed, but rather than using canned tomato purée, I opted for richer tomato paste. Lemon juice helped match the zing of the original, and I rounded out the flavor with just a bit of sugar.
This recipe will make 3½ cups of meat sauce, which is enough for several huge plates of pasta. Use it on spaghetti as they do at the restaurant, or whatever pasta shape you prefer.

Chick-fil-A Honey Pepper Pimento Chicken Sandwich
Read moreChick-fil-A becomes the first fast food chain to feature pimento cheese—a traditional Southern spread made with cheddar cheese, mayonnaise, and pimentos—on a sandwich. The chain’s Honey Pepper Pimento Chicken Sandwich features a regular or spicy crispy chicken breast fillet stacked on sliced jalapeños, then drizzled with honey and topped with a healthy portion of their exclusive pimento cheese formula.
For the chicken fillet, I was able to use my previous Chick-fil-A chicken sandwich copycat recipe, but the chain’s excellent pimento cheese spread is a new creation that needed to be hacked from scratch. Rinsing the real spread through a strainer revealed some hidden secrets, including tiny bits of green pepper, which I copied by adding a small amount of minced jalapeño.
The chicken requires four hours to brine, and that’s a good time to make the pimento cheese so it can rest for a bit to improve its color and flavor. The recipe included here is for the original chicken fillet, but if you prefer the kicked-up spicy version of the sandwich, I’ve got the tweak for that variation down in the Tidbits.

Jason's Deli Irish Potato Soup
Read moreTraditional Irish potato soup—a simple formula made with potatoes, onions, stock, and cream—gets an upgrade with cheddar cheese, carrots, green onions, and sour cream in Jason’s Deli's delicious take on the classic recipe. These improvements make a great soup that's still easy to make, but it also may be the best-tasting potato soup I’ve ever hacked.
The secret to this soup recipe is that it starts life as a cheddar cheese sauce, which may worry you if you’ve ever made cheese sauce that wound up “grainy." But that won’t happen here if you're sure to use mild or medium cheddar cheese. Older (sharper) cheddar contains less water and doesn’t melt as well as younger cheese, so the first important step is to choose your cheddar wisely.
Also, shred your own cheese. Pre-shredded cheese won’t melt as well, since shredded cheese is usually drier and often dusted with cornstarch to keep the shreds from clumping. For my Jason's Deli Irish Potato Soup recipe below, I highly recommend that you shred your own cheese to get the best results.
After an hour or so of simmering, you’ll have eight beautiful bowls of soup, all topped with cheddar cheese and crumbled bacon before serving, just like the real thing.

Chipotle Tomatillo-Red Chili Salsa
Read moreThis is my go-to salsa at Chipotle, so it was only a matter of time before I tackled a hack for the famous secret recipe. And now that I can make it at home with just 7 ingredients and about 20 minutes of prep, this salsa replaces several grocery store brands I was previously loyal to.
The process for my Chipotle red chili Salsa recipe is simple: roast tomatillos, Fresno peppers, and garlic under your broiler for a few minutes, then purée everything in a blender with vinegar and seasoning. The trick is to not over-blend the mixture. Once the tomatillos are added, purée the mixture until no chunks of tomatillo are visible, but stop blending while you can still see tomatillo seeds in the sauce.
Add this great-tasting salsa to anything that needs a hit of hotness—tacos, burritos, salads, and bowls. Just know that it's a hack of Chipotle’s spiciest salsa, so be ready for the boom.
You could also use this great salsa on Chipotle's famous barbacoa, carnitas, carne asada, or pollo asado. Find all of those recipes and more here.

Chili's Secret Sauce Burger
Read moreIn 2021, Chili’s added a new burger to its menu lineup of Big Mouth Burgers, and this one comes with a big saucy secret.
Chili's Secret Sauce Burger is simple in construction with a soft brioche bun, a huge ½-pound patty, sliced lettuce, and American cheese. It’s also got sautéed onion piled on it, which sets this burger recipe apart from typical fast food fare, but it’s the secret sauce that makes this big burger rock.
The sauce used on this burger is the same sauce the chain initially created for Chili’s Big Mouth Chicken Sandwich—a formula that appears to be inspired by the popular chicken sandwich sauce made famous at Chick-fil-A. You can make my Chili's Secret Sauce recipe revealed here in just a couple of minutes with a simple combination of mayonnaise, ketchup, barbecue sauce, honey, and mustard, plus a little turmeric to add a golden tint.
As for the burger patties, get ground chuck that has a fat content of at least 20%, or grind your own. As the burgers cook, press down on them with a spatula to release the melting fat like they do in the restaurant. This will trigger the Maillard reaction that browns the meat and adds a flavorful crust to your burgers, so your homemade Chili's Secret Sauce Burgers will taste just as good as the original.

Terry Ho's Spicy Yum Yum Sauce
Read moreThe most famous recipe from Terry Ho’s Hibachi Express chain of fast casual Japanese restaurants located in Georgia and Alabama is the secret orange sauce served alongside every meal. In 2012, Terry bottled his famous Yum Yum sauce, claiming on the label that it’s “the best sauce ever” and is “good on everything.”
I chose to hack the kicked-up spicier version of the sauce since it had more character than the milder original version, but if this version is too hot for your taste, reduce or eliminate the cayenne pepper and pepper sauce.
Use my Terry Ho's Spicy Yum Yum Sauce recipe below to easily make the sauce at home. Combine all the ingredients in a small bowl, and then let it rest in your refrigerator. After about 30 minutes, you’ll have a cup of the delicious creamy stuff to use on shrimp, chicken, steak, or whatever you want.

Dickey's Barbecue Pit Original BBQ Sauce
Read moreDiving deep into good Texas-style barbecue brisket, burnt ends, ribs, chicken, and spicy jalapeño beans doesn’t require a trip to Texas if you've got a Dickey's nearby.
World War II veteran Travis Dickey founded the restaurant in 1941 in Dallas, Texas, then his sons Roland and T.D. took over the business in 1967. Since then, the company has become the king of Texas barbecue. There are now over 550 locations in 44 states, making Dickey’s the biggest barbecue chain in the country.
And no barbecue chain gets that big without great barbecue and great sauce. Indeed, Dickey’s original bottled sauce is unique. It’s sweet, smoky, slightly spicy, and has a nice Worcestershire sauce undertone that sets it apart from other slathers. Thankfully, I've finally figured out how to hack the secret formula and it's easy! Now you can use my Dickey's barbecue sauce recipe here to re-create that signature flavor for all of your grilled and smoked masterpieces, and it'll only take about 20 minutes.
If you're a fan of Dickey’s Original Barbecue sauce, you’ll love this hack.

Cheesecake Factory Chicken Marsala and Mushrooms
Read moreMenu Description: “Chicken breast sautéed with fresh mushrooms in a rich Marsala wine sauce. Served over bow tie pasta.”
Unlike the creamy Marsala sauce served at many restaurant chains (as with Olive Garden’s Stuffed Chicken Marsala), the sauce served at The Cheesecake Factory is rich and dark with an unctuous concentration of flavor seemingly created by a thorough reduction.
For my Cheesecake Factory Chicken Marsala and Mushrooms copycat recipe, you'll reduce lightly seasoned marsala wine and chicken broth to less than one-quarter of its original volume. Once reduced, your cloned sauce is strained to remove the herbs, then butter and lemon are added, along with a browning sauce such as Kitchen Bouquet to match the deep color of the original.
Browned mushrooms are added to the sauce, then it's all spooned over sautéed chicken cutlets arranged on a huge bed of farfalle pasta. Hope you're hungry, because this recipe makes two huge Cheesecake Factory-size servings. If it's too much for two of you, the dish can easily be portioned into three or four more modest servings.

McDonald's Chicken McNuggets
Read moreWhen dippable tempura-battered chicken chunks made their debut at select McDonald’s restaurants in 1981, America couldn’t get enough…literally. Supply chain issues prevented the burger chain from meeting high demand in all markets for many months, and it wasn’t until two years after the McNuggets were first introduced that they were finally available at every McDonald’s in the country.
The famous finger food was invented by McDonald’s first executive chef, Rene Arend, who discovered that reconstituted chicken blended with flavor enhancers, enrobed with tempura batter, and deep-fried until golden brown, made a simple, portable snack. The chicken was formed into four “B” shapes designed for dipping—the bell, the bow-tie, the ball, and the boot—and served along with child-friendly dipping sauces such as ranch and barbecue, so the breakout finger food product became a huge winner with kids.
To make a home version that looks and tastes like McNuggets I dissected a real one and discovered that the chicken in the middle is coated twice: once with dry, seasoned breading, and then once more with wet batter before frying. The chicken in McNuggets is puréed not ground, and the best way to prepare it is with a food processor. “Ground” chicken in grocery stores is often puréed, then pushed through a die to look more appealing in the package, similar to how ground beef is presented. For my Chicken McNugget recipe below, it's best to use a home food processor, but if you don’t have one, ground chicken from your butcher will work.
If I had to identify a secret ingredient in this hack it would be Knorr chicken bouillon powder. It contains many of the same ingredients found in real Chicken McNuggets, so once you get that crucial flavoring component, you’re well on your way to an amazing knockoff of an iconic American food.

Pei Wei Pad Thai
Read moreIf you’re ranking Pad Thai served at U.S. chains, Pei Wei’s tasty take on the dish comes in at the top. The secret sauce is perfectly sweet, sour, salty, and lightly spicy, and the chicken is moist, tender, and filled with great flavor.
For my Pei Wei Pad Thai copycat recipe, you'll first brine the chicken so it doesn't dry out as white meat tends to do. The secret marinade here includes fish sauce; Thailand's MSG. When soaked in the salty sauce the natural aminos contribute fantastic umami goodness to the chicken, and when you cook it with moist heat as described in the steps below it will come out fork-tender and juicy.
The noodles at Pei Wei are thin, so grab the skinniest rice noodles on the shelf. Then prepare them for stir fry by steeping them in a bowl of hot water rather than in a pan of boiling water on the stovetop as may be suggested on the package. When they're done, give the noodles a rinse under cold water and they’ll hold until you need them.
This hack will make two large meal-size entrées—just like you get at the restaurant—which can easily be split into four more modest side servings. And I've included a bunch of step photos to help you along so you can serve a picture-perfect dish.
Check out my recipe for Pei Wei Better Orange Chicken here.

Chick-fil-A Spicy Deluxe Chicken Sandwich
Read moreThis chain’s not-spicy original chicken sandwich which debuted in 1964 was the first chicken sandwich introduced to America by a fast food chain, and it put Chick-fil-A on the map. By diversifying the menu with new products such as this kicked-up version of the famous sandwich, the chain grew over the years to become the #1 chicken restaurant in the nation, and this sandwich is now one of the most popular picks on the menu board.
The secrets to a good clone of the Chick-fil-A Spicy Deluxe Chicken Sandwich lie in the brine and the breading. I recently obtained some insider intel confirming the long-standing rumor that pickle juice is in the brine. I hadn’t called for it in my prior Chick-fil-A chicken sandwich copycat recipe because the listed ingredients for the sandwich didn’t include it. I’m not sure why that is, but my latest test versions with the pickle juice were noticeably better, so now it’s in there. You should also know that MSG is an important ingredient in both the brine and breading, so don’t leave that out if you want the best clone.
Use this special slicing trick to get three perfect sandwich-size cutlets out of each chicken breast, and then give the chicken a nice 4-hour brine. Your patience will be rewarded with one of the best Chick-fil-A chicken sandwich hacks to ever come out of a home kitchen.

Church's Chicken Original and Spicy Fried Chicken
Read moreOn the list of inspirational American food success stories is the small fried chicken restaurant George W. Church opened across the street from the Alamo in San Antonio, Texas in 1952. In the years since Church's Chicken exploded into a monster chicken chain with over 1000 restaurants in 35 countries.
The truth is, no chain would grow that big without good food. George's special homestyle fried chicken formula was his secret recipe to success, and as far as I can tell, nobody has properly hacked it. Until now.
The ingredient list for this crispy chicken is smaller than what you might find in “The Colonel’s” kitchen, which is good because you won’t have to go out and buy 11 herbs and spices. Much of the flavoring in this chicken recipe develops during the brining process, which also has the added benefit of keeping the chicken moist and juicy inside. I discovered that Church’s marinates their chicken for 12 hours, so I worked backward and designed a brine that would do its job in exactly half a day.
For my Church's Fried Chicken copycat recipe, you'll need to plan ahead to give your chicken time to marinate. But that's a good thing—your patience will be rewarded with the down-home taste of delicious fried chicken, just like what grandma used to make.
And here's some more good news: this hack includes two recipes! I've created a Church's copycat recipe for the original recipe fried chicken, along with instructions for duplicating the spicy version if you're in the mood to pump up your jam.

Chick-fil-A Zesty Apple Cider Vinaigrette
Read moreThe country’s largest chicken chain offers some of the best choices for salad dressings you’ll find at any fast food restaurant. But good luck sweet-talking your order-taker into floating you a few extra packets of this great fruity vinaigrette to use on your home salads—they are under strict orders to be stingy. And that could be why you’re here.
Apple cider vinegar, pineapple juice, honey, lemon juice, and lime juice are just a few of the secret ingredients that make this dressing so great. Another secret you'll find here is xanthan gum, a natural thickener often used as an emulsifier to hold salad dressing together so that it doesn’t need shaking. You can find xanthan online or at Whole Foods, and you won't need much.

Jack Link's Original Beef Jerky
Read moreUsing his grandfather’s old recipes for sausage and smoked meats, Jack Link created his first kippered beef sticks in Wisconsin in 1986, and they quickly became a popular snack throughout the state. But that wasn’t enough for Jack, so he invested in a packaging machine to expand into other markets, and eventually—with the help of a successful Sasquatch-themed marketing campaign—Jack Link’s became the #1 jerky brand in the country.
Beef jerky is usually made in a dehydrator designed to circulate air around the food at a low temperature. The temperature for drying beef jerky in a dehydrator is typically 130 to 140 degrees, which is a lower temperature than you can reach with a conventional home oven. But that doesn’t mean we can’t use our home oven to make a perfectly acceptable beef jerky hack that tastes like Jack’s. And even though Jack uses a smoker for his beef jerky, you won’t need one to give your jerky a similar smoky flavor.
The pineapple juice in the marinade is an important part of the taste, but its primary contribution is a unique enzyme that helps break down the proteins in the tough cut of meat to tenderize it. Soy sauce and beef bouillon contribute to the umami savoriness of the jerky, and liquid hickory smoke is used in my Jack Link's Original Beef Jerky copycat recipe as a quick way to add the smoky flavor.
The marinating takes 24 hours and the oven drying takes between 6 to 8 hours, so get the sliced beef into the bath in the morning, and you’ll be munching on homemade Jack Link's beef jerky by dinnertime the next day. And to help you out, I'm including step photos.

Chipotle Queso Blanco
Read moreSocial media shredded Chipotle’s first queso dip which debuted in 2017, calling it “gritty,” “bland,” “watered-down,” and “a crime against cheese.” Chipotle was in desperate need of a re-do.
In early 2020, after months and months of test-marketing an improved cheesy dip recipe in Dallas, Detroit, and San Diego, the Mexican chain introduced Queso Blanco to the entire U.S., and this time the reviews were much better.
Chipotle claims their new formula contains exactly 13 ingredients, including 2 kinds of cheese and 3 different chile peppers. With cornstarch as the thickening agent, the preparation starts by making a white sauce with milk and cream. When the cheese is fully melted and smooth, the veggies go in, and in about 10 minutes it’s ready to serve.
Use my Chipotle Queso Blanco copycat recipe as a dip with tortilla chips or as a topping on your copycat Chipotle carne asada or carnitas tacos and barbacoa burritos. Find all my Chipotle recipes here.

It's Just Wings Smoked Wings & Sauces
Read moreTo help fill the void left by a lack of dine-in customers when the coronavirus pandemic struck the U.S. in early 2020, restaurant operators had to get creative. That spring and summer we saw a surge in ghost kitchens and virtual restaurants where all the food was prepared for delivery only. Ghost kitchens are kitchens without seating and minimal, if any, signage. Virtual restaurants are delivery-only services where food is prepared in established restaurant kitchens.
It's Just Wings is a concept cooked up by Brinker, the team behind Chili’s and Maggiano’s, with a menu limited to wings in three styles—bone-in, boneless, and smoked—tossed in your choice of eight creative sauces or two dry rubs. Since I've already hacked a variety of traditional wings and boneless wings, I chose to clone It's Just Wings stand-out smoked wings which are prepared in the same pecan wood smoking ovens (called Combitherms) Chili’s uses to make baby back ribs.
The secret is to brine the chicken first, then blot it dry and rub the skin with oil to help make it crispy while it smokes. If you don’t have a smoker, you can smoke the wings on your grill by heating one side of the grill and placing the wings on the other side. Set wood chips or pellets in foil over the heated side, then close the lid.
Below you'll find my recipe for It's Just Wings Smoked Wings and three of their most notable sauces: Honey Sriracha, Honey Chipotle, and Truffle Hot Sauce. Pick one (or more), toss your wings in it, and dive in. Or maybe you just want to go naked? These wings also taste great without any sauce at all.
I've hacked a ton of famous fried chicken wings. See if I cloned your favorite here.

Einstein Bros. Bagels Twice-Baked Hash Brown
Read moreI’m not sure why Einstein Bros. claims there are just four cheeses in the new Twice-Baked Hash Brown when the ingredients clearly list six kinds of cheese, plus cream cheese. Regardless, the shredded Asiago, Romano, Parmesan, provolone, and mozzarella listed there can be found combined in an “Italian Blend” at many supermarkets, making for an easy start to our home clone. And don’t just be thinking about breakfast for these cheesy potatoes. They work great as a side for any meal.
In the detailed description of the new item, Einstein Bros. claims the hash browns contain two kinds of schmears, which is true, but a little misleading because one of them is just plain cream cheese. The other is onion-and-chive cream cheese, which we can make from scratch. We’ll combine those two shmears into one blend by doubling the cream cheese added to our onion-and-chive schmear formula.
Follow my Einstein Bros. twice baked hash brown copycat recipe below, and mix everything together. Then, load the ingredients into a standard 12-cup muffin pan with circles of parchment paper cut out to fit into the bottom of the 12 cups. Without these parchment circles, the hash browns may stick and break when they’re released. You can also use paper muffin cups, if you don’t mind the less crispy, ridged sides.
Bake them the first time for 30 minutes, then cool and store. Now you have a dozen servings of cheesy hash brown potatoes that are easy to finish off by baking them a second time until crispy. These Einstein Bros. Twice Baked Hash Browns are great served with breakfast, or for dinner as your starchy side alongside beef, chicken, lamb, and many other savory entrées.
You can also make homemade Einstein Bros bagels, sandwiches, and shmears. See if I hacked your favorites here.

American Coney Island Chili Dogs (Detroit Coney Island Sauce)
Read moreOver a century ago, Detroit, Michigan became the Coney Island chili dog capital of the world, even though Coney Island is nowhere near there. Greek immigrants who entered the U.S. through Ellis Island adapted a recipe for the hot dogs they ate while visiting Coney Island, New York, on their way to the Midwest. When they settled in southern Michigan, many opened restaurants to sell their clones of the food they ate when they first got to America, turning New York-style Coney Dogs into a Midwest phenomenon.
Two of the most famous Coney Island restaurants in Detroit are Lafayette Coney Island and its next-door neighbor, American Coney Island. The two buildings were originally one building with a single restaurant inside, built by brothers Gus and Bill Keros in 1915. But somewhere along the way the brothers had a falling out and split the restaurant in half, right down the middle, and it stayed that way. Today, the two Coney Island restaurants are under different ownership, but they still remain next-door rivals.
I decided the best Coney dog to hack is from American Coney Island, not only because of the restaurant’s deep history, but also because I was able to order the chili dogs shipped to my house in a kit. That’s always good news, since shipped foods must list ingredients, and I get to see exactly what’s in the chili. Built the traditional way, a typical Detroit Coney Island chili dog features a natural-casing hot dog in a soft white bun, smothered in chili sauce, drizzled with mustard, and topped with a pile of diced sweet onion. The kit came with everything I needed, including the tub of chili with clearly-labeled ingredients that I was counting on.
With the help of that information, I was able to create my American Coney Island Chili sauce copycat recipe. A thick, flavorful chili sauce that you can use on your favorite hot dogs to build a clone of the famous Detroit chili dogs. Crushed soda crackers thicken the chili, and extra beef fat adds a smooth quality that mimics the famous 100-year-old American Coney Island chili recipe.
The chili must simmer for four hours to properly tenderize the meat, so plan your Coney dog cloning adventure accordingly.

Olive Garden Chicken Piccata
Read moreMenu Description: “Grilled chicken topped with a lemon garlic butter sauce, sun-dried tomatoes, and capers.”

Brined chicken breast fillets are grilled and topped with a lemon butter sauce made with garlic, sundried tomatoes, and capers in this copycat clone that will fool even the biggest Olive Garden fans.
Two large chicken breasts get sliced into four fillets here, so you’ll have either four lunch-size portions or two double-sized dinner meals. And if you need even more servings, you can easily double up the recipe.

Buffalo Wild Wings Buffalo Wings and Sauces
Read moreMenu Description: "Here they are in all their lip-smacking, award-winning glory: Buffalo, New York-style chicken wings spun in your favorite signature sauce."
Since Buffalo, New York was too far away, Jim Disbrow and Scott Lowery satisfied their overwhelming craving in 1981 by opening a spicy chicken wing restaurant close to home in Kent, Ohio. With signature sauces and a festive atmosphere, the chain has now evolved from a college campus sports bar with wings to a family restaurant with over 300 units. While frying chicken wings is no real secret—simply drop them in hot shortening for about 10 minutes—the delicious spicy sauces are what make the wings special. There are 12 varieties of sauce available to coat your crispy chicken parts at the chain, and I'm presenting clones for the more traditional flavors. These sauces are very thick, almost like dressing or dip, so we'll use an emulsifying technique that will ensure a creamy final product where the oil won't separate from the other ingredients.
In my Buffalo Wild Wings copycat recipe below you'll find the cooking and coating technique for the wings, followed by copycat recipes for the most popular sauces: Spicy Garlic, Medium and Hot. The sauce recipes might look the same at first, but each has slight variations to make your sauce hotter or milder by adjusting the level of cayenne pepper. You can find Frank's pepper sauce by the other hot sauces in your market. If you can't find that brand, you can also use Crystal Louisiana hot sauce.
