In 1963 the busiest clown in America, Ronald McDonald, made his debut in Washington, D.C. But beneath that red wig and 14 1/2-inch shoes was someone who would later become the portly weatherman on NBC's "Today" show. It was Willard Scott.
Future Ronald McDonald wanna-be's get their training at McDonald's "college," just as many of the chain's managers and franchise owners do. It is a surprisingly busy institution. By 2001 the 40,000th student was granted a Hamburgerology Degree from McDonald's Hamburger University in Oak Brook, Illinois. Hamburger University was set up to provide instruction for McDonald's personnel in the various aspects of their business—equipment, controls, human relations skills, and management skills.
Nearly 3,000 students pass through the halls of the school each year as they continue to grow in their McDonald's careers. And the American council on Education has approved eighteen of the university's courses for college credits.
One more chapter in the studies of H.U. graduates came in 1985, when the "hot side" and "cool side" of the McD.L.T. found their way onto McDonald's menu. It lives on only here, for five years after it was introduced, the McD.L.T. was dropped and replaced with the McLean Deluxe.

- 1 sesame seed hamburger bun
- 1/8 teaspoon prepared mustard
- 1 teaspoon ketchup
- 2 medium onion rings, quartered
- 3 dill pickle slices
- 1/4 cup chopped lettuce
- 1 tablespoon mayonnaise
- 1 slice American cheese
- 2 tomato slices
- 1/4 pound ground beef
- Pinch salt
1. Lightly brown both halves of the hamburger bun, face down, in a hot pan. Set aside and keep the pan hot.
2. Build the "cool side" of the McD.L.T. in the following stacking order from the bottom up:
bottom bun
mustard
ketchup
chopped onion
pickle slices
chopped iceberg lettuce
mayonnaise
American cheese slice
tomato slices
3. With your hands, form the ground beef into a thin patty slightly larger in diameter than the bun.
4. Cook the patty in the hot pan for 2 to 3 minutes per side. Lightly salt and pepper the patty.
5. Build the "hot side" in the following stacking order from the bottom up:
top bun
beef patty
6. When you are ready to eat, slap the "cool side" and the "hot side" together, and do the eating.
Makes 1 hamburger.

BJ's Restaurant and Brewhouse Honey Sriracha Brussels Sprouts

Brussels sprouts have been exploding on chain restaurant menus in recent years, and the best I've tasted are served as starters. The cruciferous wonders are usually roasted or fried, then dressed with a sauce meant to override the sprouts' inherent bitterness. And when they’re done right, those Brussels sprouts will be the most memorable dish at the table.
BJ’s preparation technique of choice for Brussels sprouts is to fry them, then sprinkle them with a lemony seasoning blend by Big Poppa Smokers just before they get drizzled with sweet sriracha crema. For the seasoning, there’s no need to buy the real thing since I’ve come up with an easy hack. And the sriracha crema copycat couldn’t be simpler, with just four ingredients.
My BJ's Honey Sriracha Brussels Sprouts recipe makes a share plate appetizer-size serving for 2 to 4 people, but you'll have enough seasoning and sauce here for a bigger serving (such as a side dish) if you just add more sprouts.

Hostess Mint Chocolate CupCakes
Read moreRecently, Hostess released a new “limited-edition” mint chocolate version of the brand’s famous CupCakes, with mint creamy filling and mint frosting on top. I had already hacked the well-known chocolate CupCakes from Hostess for my Step-by-Step book, so the cake recipe and the white icing on top was already done. For my Hostess Mint Chocolate CupCakes copycat recipe, all I had to do was rework the filling and the frosting with delicious mint flavor and proper green hue.
The frosting is designed to be runny so that you can dip the cupcakes in it. This will produce a smooth frosting that, when dry, looks just like the real thing. Most likely, you’ll need a couple coats of frosting. The first coat is a crumb layer that locks in the chocolate cake crumbs so that the second layer finishes clean and smooth. If you find that you’re losing too many crumbs in the frosting bowl when dipping the cupcakes, you may want to spread on your first layer with a butter knife.
Before baking, be sure to grease your muffin cups well so that cupcakes come out clean. And you'll need a piping bag or pastry gun with a medium tip to fill the cupcakes and a small tip to add the seven loops of white icing on top. No proper Hostess CupCakes recipe would be right without that final step.

Panera Bread Cream of Chicken and Wild Rice Soup
Read moreOther recipes I’ve seen that claim to duplicate the fabulous flavor of this popular soup do not make good clones, yet the long grain and wild rice mix that many of these recipes call for is a great way to get the exact amount of rice you need in a perfect blend. Just be sure not to use the flavor packet that comes with those rice kits, or you won’t get a good clone of the Panera original. Toss out that blend (or you can use it elsewhere; see Tidbits) and use my recipe below to make a better flavoring for the soup.

Olive Garden Breadsticks
Read moreAnyone who loves Olive Garden is probably also a big fan of the bottomless basket of warm, garlicky breadsticks served before each meal at the huge Italian casual chain. My guess is that the breadsticks are proofed, and then sent to each restaurant where they are baked until golden brown, brushed with butter and sprinkled with garlic salt. Getting the bread just right for a great Olive Garden breadstick hack was tricky—I tried several different amounts of yeast in all-purpose flour, but then settled on bread flour to give these breadsticks the same chewy bite as the originals. The two-stage rising process is also a crucial step in this much requested Olive Garden breadstick copycat recipe.

Chili's Firecracker Tilapia

Here's a great way to prepare that next batch of fresh fish fillets when you're contemplating a new taste. If you and your diners love spicy food this is the perfect clone, since the top secret glaze and tapenade recipes I've included here both come packing heat. You can make the sauces several hours—or even days—ahead of time, and then when you're ready to eat, the fish will cook up in less than 10 minutes. Chili's calls this "grilled" tilapia on the menu, but don't expect to find grill marks on the fish. It appears the restaurant uses a flat griddle or saute pan to cook the fish, since the tender tilapia would fall through the grate on a barbecue grill. Don't limit this recipe to tilapia. The intense glaze and tapenade will perk up a variety of fish fillets, from sea bass to salmon.

Wienerschnitzel Chili Sauce
Read moreThe real version of this chili sauce comes to each Wienerschnitzel unit as concentrated brown goo in big 6-pound, 12-ounce cans. After adding 64 ounces of water and 15 chopped hamburger patties the stuff is transformed into the familiar thick and spicy chili sauce dolloped over hot dogs and French fries at America's largest hot dog chain. The proper proportion of spices, tomato paste, and meat is crucial; but the real challenge in creating my Wienerschnitzel chili copycat recipe is finding a common grocery store equivalent for modified food starch that's used in the real chili sauce as a thickener.
After a couple of days in the underground lab with Starbucks lattes on intravenous drip, I came out, squinting at the bright sunshine, with a solution to the chili conundrum. This secret combination of cornstarch and Wondra flour and plenty of salt and chili powder makes a chili sauce that says nothing but "Wienerschnitzel" all over it.

My McDonald's French Fries recipe requires a two-step frying process to replicate the same qualities: the fries are par-fried, frozen, then fried once more to crispy just before serving. Be sure to use a slicer to cut the fries for a consistent thickness (1/4-inch is perfect) and for a cooking result that will make them just like the real thing. As for the rumor that you must soak the fries in sugar water to help them turn golden brown, I also found that not to be necessary. If the potatoes have properly developed, they contain enough sugar on their own to make a good clone with great color.

Baja Fresh Salsa Baja
Read moreYou won't find freezers, can openers, or microwave ovens at this national Mexican food chain. Since 1990 Baja Fresh has been serving up great food, made fresh with each order. As you're waiting for your food to come out, that's when you hit up the salsa bar, where you'll find several varieties of delicious fresh salsa, from hot to mild, ready to be spooned into little tubs that you can take to your table or to your car. One of the most popular selections is called Salsa Baja—its medium spiciness, smoky flavor, and deep black color make the salsa unique and mysterious. That is, until now, since I've got a Top Secret formula for you right here. But the recipe wasn't as easy to create as I first thought. I figured the tomatoes would have to be extremely blackened over a hot grill, but I wasn't sure how to get them dark enough to turn the salsa black without the tomatoes getting all mushy and falling apart on the barbecue.
So, I went back to Baja Fresh before they opened to peer through the window to see if I could catch some hot salsa production action. I waited and waited. After several hours, as the lunch rush was beginning to wind down and no fresh salsa was in the pipeline, it was time for extreme measures to get things moving. I went in and ordered 30 tubs of Salsa Baja to go, and that did it. I ended up with a big bag filled with 2 gallons of salsa (thankfully they poured those 8-ounce portions into bigger bowls), and the restaurant went immediately into "salsa red alert" to replenished the now-dwindling salsa reserve. It was perfect. As I was grabbing my bag of salsa, a dude come out from the kitchen with a huge box of tomatoes and placed them all on the grill. I ordered a giant Diet Pepsi and parked myself at a close table to watch the process. That's when I discovered the secret. For super-charred tomatoes, they start with firm, chilled tomatoes, that aren't too big or too ripe. I also found out that the tomatoes must start roasting on the grill with the stem-side down.
