Lone Star Steakhouse Amarillo Cheese Fries

Growth by this newcomer to the steakhouse segment has been phenomenal. So far, there are over 160 Lone Stars across the country, most of them in the East and Midwest. There are even four in Austrailia. The company is the fastest growing steakhouse chain in the country, and if you don't have one near you yet, you probably will soon.
Amarillo Cheese Fries are made with thick-sliced potatoes. The recipe here is created from scratch, using freshly sliced potatoes. But, if this is one of those days when you just don't feel up to slicing and frying some russets, you can also use a bag of frozen steak fries. Just be aware that those will likely be made from peeled potatoes, unlike the restaurant fries which are unpeeled. I've also included a cool recipe for homemade ranch dressing to dip the fries in, if you decide you'd like to make yours from scratch.

- 1/4 cup mayonnaise
- 1 tablespoon buttermilk
- 1/2 teaspoon granulated sugar
- 1/4 teaspoon white vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon finely chopped fresh dill
- 1/4 teaspoon finely chopped fresh parsley
- 1/8 teaspoon onion powder

- Pinch paprika
- 3 unpeeled russet potatoes
- 4 to 6 cups vegetable oil for frying
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 3 slices bacon, cooked
- 1/3 cup ranch dressing

1. Make the ranch dressing by combining all of the ingredients in a small bowl and set it aside.
2. Slice the potatoes into wide rectangular slices. They should be about 1/4 inch thick and 3/4 inch wide. You should end up with around 12 to 15 slices per potato. Keep the potato slices immersed in water until they are ready to fry so that they don't turn brown.
3. Heat the oil in a deep fryer or deep pan to 350 degrees F. Dry the potato slices on paper towels and fry them for 1 minute in the hot oil. This is the blanching stage. Remove the potatoes from the oil and drain until they cool, about 10 minutes.
4. When the potato slices are cool, fry them for 5 more minutes or until they are a light golden brown. Drain.
5. Preheat your oven to 375 degrees F, then arrange the fries on an oven-safe plate.
6. Sprinkle the Cheddar cheese over the fries.
7. Sprinkle the Monterey Jack cheese over the Cheddar.
8. Crumble the cooked bacon and sprinkle it over the cheese.
9. Bake the fries in the oven for 5 minutes or until the cheese has melted. Serve hot with ranch dressing on the side.
Tidbits: You can also make this recipe using a 32-ounce bag of store-bought frozen steak fries. Just cook them following the directions on the bag, adding the toppings in the last 5 minutes of baking.
