The redesigned Kahlua Coffee Liqueur labels now says, "Rum and Coffee Liqueur," which is a description that is helpful when creating a clone version of the famous cordial. Unfortunately, this text was not on the bottle 30 years ago when I made my first version of this Liqueur using vodka—not rum. So, back into the lab went I, to create an improved version of the drink with rum, just like the labels says. We won't be using caramel color as the Kahlua bottlers do, so your drink will come out a lighter shade of brown than the original. Color aside, it should taste great and be a much more accurate hack.

When I saw this recipe, I really thought "It can't be that easy", but it is that easy! I did find that the corn syrup, coffee and hot water mix was not really dissolving the sugar very well with whisking, stirring, shaking or letting it sit for a bit. So I just put the mix container in another container filled with hot water and whisked for a couple of minutes, and presto! I was in business. My husband and I tried it with a bit of milk, and we'd swear it was just like the real thing!
