Rao's Homemade Marinara Sauce
Read moreGetting a table at the 123-year-old original Rao’s restaurant in New York City is next to impossible. The tables are “owned” by regulars who schedule their meals months in advance, so every table is full every night, and that’s the way it’s been for the last 38 years. The only way an outsider would get to taste the restaurant’s fresh marinara sauce is to be invited by a regular.
If that isn’t in the stars for you, you could buy a bottle of the sauce at your local market (if they even have it). It won't be fresh, and it's likely to be the most expensive sauce in the store, but it still has that great Rao's taste. An even better solution is to copy the sauce for yourself using my easy Rao's Homemade Marinara Sauce copycat recipe.
The current co-owner of Rao’s, Frank Pellegrino Jr., told Bon Appetit in 2015 that the famous marinara sauce was created by his grandmother many years ago, and the sauce you buy in stores is the same recipe served in his restaurants. The ingredients are common, but correctly choosing the main ingredient—tomatoes—is important. Try to find San Marzano-style whole canned tomatoes, preferably from Italy. They are a little more expensive than typical canned tomatoes, but they will give you some great sauce.
After 30 minutes of cooking, you’ll end up with about the same amount of sauce as in a large jar of the real thing. Your version will likely be just a little bit brighter and better than the bottled stuff, thanks to the fresh ingredients. But now you can eat it anytime you want, with no reservations, at a table you own.

Jimmy Dean Pancakes and Sausage on a Stick
Read moreWhen Jimmy Dean debuted Pancakes and Sausage on a Stick in 2006, Jon Stewart held up a box on The Daily Show declaring it an example of how America continues “to push the envelope for what could technically be defined as food.” But the unusual—and apparently humorous—combination of salty breakfast sausage encased in sweet pancake batter, all on a stick, might surprise you. This innovative product probably tastes better than you expect—as good as eating maple pancakes with a side of sausage, but simultaneously and with one hand. In fact, this quirky treat became so popular that other companies joined the party, and now several brands have their own versions in the freezer aisle.
As I worked on my Jimmy Dean Pancakes and Sausage on a Stick copycat recipe, I realized that there is no breakfast sausage you can buy that’s as big as the sausage used in the original. It's very long! So, for the best clone, I made the Jimmy Dean sausage from scratch using my Jimmy Dean Breakfast Sausage hack. That slightly tweaked recipe is included here, along with everything you need to know to make dippable pancake batter that can be fried.
Alternatively, if you’d like to save some time, you can use frozen pre-made sausage, rather than making the sausage from scratch. The sausage won't taste like Jimmy Dean's, but the recipe will still work. I've got details on that in the Tidbits below.
After frying each of these breakfast snacks on a stick for 5 minutes, you can serve them right away, or you can freeze them and then heat them up later in a microwave minute, just like the real ones.

Cheesecake Factory Orange Chicken
Read moreWith delicious versions on the menus at Panda Express, Pei Wei, and P.F. Chang’s, the orange chicken space is certainly competitive (click on the brands for my recipes). That’s why it’s so impressive that The Cheesecake Factory serves up one of the best orange chicken entrées of any chain, including chains that specialize in Chinese food.
For this easy entrée hack, I’ve included a recipe for breading and frying the chicken yourself, but you may prefer to bake or fry pre-breaded frozen chicken strips or nuggets and toss them in the sauce you make here. The sauce is the big secret in this recipe, and the version I’ve whipped up for you has just the right amount of sweet, sour, and spicy to match the real thing.
Add some rice and stir-fry vegetables, and you’ll have two large Cheesecake Factory-size entrées with this hack, or you can split it into four more modest portions.

Pizza Hut Spicy Lover's Pizza
Read moreTo satisfy America’s growing desire for foods that bite back, Pizza Hut introduced its spiciest pizza ever in early 2022. The new peppery pies include Spicy Hawaiian Chicken and Spicy Veggie, but it’s the Spicy Double Pepperoni version, with both regular pepperoni and cupped pepperoni, that takes the top spot.
This is Pizza Hut’s first pizza to be topped with brined red jalapeño slices, which are similar to those packed in a jar from Old El Paso. If you can’t find bottled slices, use sliced fresh red jalapeños or red Fresno peppers, or any other spicy red pepper you find in your produce section. Red jalapeños will certainly bring some sting, but most of the boom will come from the chain’s new spicy marinara sauce that’s been kicked up with added peppers, and it's hacked here for you.
When your feisty pie comes out of the oven, hit it with some “fiery flakes” (crushed red pepper and parsley) and you’ve got a perfect hack of Pizza Hut Spicy Lover's Pizza for your pizza-loving, hungry home team who like some heat.

McDonald's Chicken McNuggets
Read moreWhen dippable tempura-battered chicken chunks made their debut at select McDonald’s restaurants in 1981, America couldn’t get enough…literally. Supply chain issues prevented the burger chain from meeting high demand in all markets for many months, and it wasn’t until two years after the McNuggets were first introduced that they were finally available at every McDonald’s in the country.
The famous finger food was invented by McDonald’s first executive chef, Rene Arend, who discovered that reconstituted chicken blended with flavor enhancers, enrobed with tempura batter, and deep-fried until golden brown, made a simple, portable snack. The chicken was formed into four “B” shapes designed for dipping—the bell, the bow-tie, the ball, and the boot—and served along with child-friendly dipping sauces such as ranch and barbecue, so the breakout finger food product became a huge winner with kids.
To make a home version that looks and tastes like McNuggets, I dissected a real one and discovered that the chicken in the middle is coated twice: once with dry, seasoned breading, and then once more with wet batter before frying. The chicken in McNuggets is puréed not ground, and the best way to prepare it is with a food processor. “Ground” chicken in grocery stores is often puréed, then pushed through a die to look more appealing in the package, similar to how ground beef is presented. For my Chicken McNugget copycat recipe below, it's best to use a home food processor, but if you don’t have one, ground chicken from your butcher will work.
If I had to identify a secret ingredient in this hack, it would be Knorr chicken bouillon powder. It contains many of the same ingredients found in real Chicken McNuggets, so once you get that crucial flavoring component, you’re well on your way to an amazing knockoff of an iconic American food.

Del Taco Tamales
Read moreThis 600-unit Mexican fast food chain celebrates the holidays each year with delicious little $2 corn husk-wrapped pork tamales made from a traditional recipe with an authentic south-of-the-border taste. The only problem is when the holidays go away, so do these tasty tamales. And that's why we bust out this Top Secret Recipe.
Making authentic tamales is not hard, but it does take time. The pork requires a braise for several hours to get it fork-tender, and the wrapped tamales will take around 2 hours to steam until they're done.
My Del Taco Tamales copycat recipe is inspired by traditional tamale recipes that include a braising sauce for the pork made from rehydrated guajillo peppers. To coax out more flavor, I chose to first toast the peppers before adding them to the liquid. And rather than using lard in the masa dough, I found a combination of vegetable shortening and butter to be a more flavorful alternative.
Steam all 24 tamales until they are fully cooked, and store those you can’t eat in your freezer for several weeks. Steam the frozen tamales for 20 to 30 minutes, and they’ll taste as good as fresh.

Wendy's Seasoned Potatoes
Read moreReviewers of Wendy’s tasty seasoned potatoes point out that the skin-on slices stay crispy even when cool. That tells us the breading is most likely made with a non-wheat flour blend, an assumption confirmed by the website ingredients list for the potatoes where nary a gram of wheat flour is included. Yep, these seasoned potatoes are gluten-free.
Wendy’s uses a blend of food starches plus rice flour for the breading on their version, but my tests confirmed that cornstarch is all you’ll need for a great clone of Wendy's seasoned potatoes. The secret process starts by coating the potato slices with the dry breading mix, which contains salt. The salt in the blend will draw water out of the potatoes, magically transforming the dry breading into a wet batter in about 20 minutes.
When all the breading is wet, the potatoes go into the oil for partial frying. After resting a bit, they get dropped in again until golden brown and crispy. And, thanks to the cornstarch, these potatoes will stay crispy, even when they’re completely cool. Pretty cool right? Give my Wendy's seasoned potatoes copycat recipe a try.

Shakey's Mojo Potatoes
Read moreSherwood Johnson survived a case of malaria while serving in World War II, which left him with some residual nerve damage and earned him a new nickname: Shakey. Despite his affliction, Shakey Johnson could still bang out toe-tapping Dixieland jazz on the piano night after night in the pizza parlor he opened in Sacramento in 1954, where live jazz accompanied the thin-crust pizza and cold pitchers of beer.
Shakey’s became the first franchised pizza restaurant in the U.S., and by 1974, the chain had 500 stores nationwide. The top dish is clearly the made-to-order pizza, but the chain’s trademarked crispy battered potato slices are a close runner-up and a perfect, tasty subject to hack.
Recipes claiming that pancake mix is the secret seasoning ingredient in Mojo Potatoes fail to recognize that pancake mix contains sugar, yet there is no noticeable sweetness in the breading. I also concluded that dry breading wouldn't work, as my tests showed that the paprika failed to bloom and contribute the same color as it does when the mixture is wet.
For my Shakey's Mojo Potatoes recipe, I eventually settled on a wet batter made with seasoned salt, flour, cornstarch, and paprika to match the flavor, crispiness, and red/orange tint of the real thing from America’s first pizza chain. Use this original technique and these handy step photos to make extra crispy potatoes the Shakey's way.

Carl’s Jr./Hardee’s Hand-Breaded Chicken & Waffle Sandwich
Read moreAmid the chicken sandwich wars of 2019-2021, Carl’s Jr. (Hardee’s) debuted a simple chicken and waffle sandwich that is remarkably good. Crispy chicken breast is doused with maple butter sauce and sandwiched between two Belgian waffle buns for a sweet-and-savory handful of fab.
To clone the sandwich at home, the chicken gets brined for great flavor and juiciness like the real thing, and then it’s cooked until perfectly golden brown and crispy. The maple butter sauce is easy to hack with just three ingredients and a mixer.
The biggest secret I reveal is how to make Belgian waffles with one flat side just like the real sandwich using a standard waffle iron and a piece of folded aluminum foil. Domino's Chicken Taco Pizza
Read moreIf you like pizza, and you like chicken tacos, you’ll love my Domino's Chicken Taco Pizza copycat recipe. Domino’s figured out how to combine grilled chicken, three kinds of cheese, green pepper, onion, and tomato onto a hand-tossed crust brushed with a secret seasoning blend so that each bite tastes like a taco.
The taco seasoning brushed on the dough plays a significant role in the secret, so that hack is here, along with the cheese blend you’ll need, and my method for creating a chewy, pizza chain-style crust, including the garlic spread brushed on at the end.
The dough recipe is based on the Domino’s Cheese Pizza hack that I sleuthed out on my show Top Secret Recipe and in Step-by-Step. It includes high-gluten flour for extra bite, but if you can’t find that you can increase the bread flour to 25 ounces (5 cups), and your pizzas will still come out great.

Panda Express Firecracker Chicken Breast
Read moreIt’s not always on the menu at the huge Chinese take-out chain, but when this spicy special offering makes a limited-time-only appearance, I’m there. When it’s not on the menu, no problem, you can use my Panda Express Firecracker Chicken copycat recipe and make it at home in no time.
This dish owes its great flavor to black bean paste, which is full of umami savoriness, just like soy sauce, so it enhances the taste of everything around it. You'll have a good laugh when you notice most recipes attempt to hack this dish with canned black beans. That's ridiculous, since black bean paste is a traditional Asian flavoring ingredient made with fermented soybeans, not with black beans like the kind you get in your burrito at Chipotle.
Plan ahead to brine your chicken breast for a couple of hours so that it's moist and flavorful. This is an important step for a spot-on hack.

McDonald's Bacon, Egg & Cheese McGriddles
Read moreThe creator of Jif Peanut Butter, Smashburger, and Pizza Hut’s Stuffed Crust Pizza came up with the idea to cook bits of maple syrup into griddle cake buns for a new sweet-and-savory breakfast sandwich from the world’s #1 fast food chain. Tom Ryan, a food mad scientist with a doctorate in flavor and fragrance chemistry, invented McGriddles in 2003 for McDonald’s popular breakfast menu, and the sandwich is still selling like hotcakes today.
To make four knockoff McGriddles at home, you’ll first need to create eight perfectly round griddle cakes infused with sweet maple bits. Other recipes I found that instruct you to make hard candy from maple syrup for this hack fail to mention that the shattered shards of hard candy do not fully melt when the griddle cakes are cooked, resulting in a distinct crunch not found in the real McDonald’s product. Additionally, breaking the hard maple candy into small, uniform bits is both challenging and messy. My solution was to create a flavorful maple gummy puck that could be neatly diced into tiny cubes and sprinkled into the batter as it cooks. The soft gummy melts perfectly in the pancake buns, making them look like the real thing, and it’s easy.
Just be sure to use maple flavoring rather than maple extract for the maple gummy. Maple flavoring has a more intense flavor than the extract, and its dark brown caramel coloring will make your maple bits look like pancake syrup. You’ll also need one or two 3½-inch rings to make griddle cakes that are the perfect size for your clones.
My McDonald's McGriddles copycat recipe duplicates the bacon and egg version of the sandwich, but you can replace the bacon with a patty made from breakfast sausage for the sausage and egg version, or just go with egg and cheese.

Chick-fil-A Avocado Lime Ranch Dressing
Read moreThis huge chicken chain offers seven delicious dressings to top three salad choices, and this is my current favorite of the bunch. The Avocado Lime Ranch Dressing is best on a Southwestern-style salad like the one on Chick-fil-A’s menu with mixed greens, black beans, corn, spicy chicken, and tortilla strips on top. But it’ll work on just about any mixed greens salad or burrito bowl you come up with at home, or use it as a dip for chicken fingers, taquitos, and Southwestern eggrolls.
For a good home clone, be sure to smash the avocado until no chunks remain and let the dressing sit for at least an hour before you use it so the dried herbs, onion, and garlic can rehydrate, and the flavors can bloom.

Bonchon Chicken Wings
Read moreKorean chicken is famous for its extra crispy coating, and Bonchon’s recipe—especially the wings—is one of the best in the world. The chain's famous formula is why there are now over 473 Bonchon outlets in multiple countries, including over 150 in the US and more planned to open here in the near future.
The biggest challenge when creating my Bonchon chicken wings copycat recipe was finding the perfect magical mixture for the batter that fries to a golden brown and with a light crispiness that stays crunchy long after the wings have been brushed with the flavorful glaze.
I knew that a traditional double-frying technique would help create the crunchy coating we needed, but it would take some trial and error to determine the best time splits. The wings are par-fried, rested, and then fried again until done, but just how long to give each stage was yet to be determined since every recipe I found for Korean chicken used different times and temps. Some recipes even changed the temperature between frying steps, but that extra step made the recipe much too tricky to manage when frying multiple batches.
I eventually settled on 350 degrees F with most of the frying done up front in the par-fry stage. A three-ingredient batter is all that’s needed for crispy golden-brown wings, and the soy garlic sauce is an easy hack using your microwave oven. If you like your wings spicy like I do, it’s very easy to kick them up by adding Korean red chili paste (gochujang) and Korean red pepper powder (gochugaru) to the soy garlic recipe in the measurements listed below.

Chick-fil-A Chicken Noodle Soup
Read moreLike at Wendy’s, where unsold and broken burger patties provide the beef for their famous chili, Chick-fil-A gets the chicken for this delicious noodle soup by chopping up the leftover chicken used on their grilled chicken sandwiches. But grilling isn’t the first step to take when whipping up a home hack of this famous Chick-Fil-A chicken noodle soup. First, you must brine the chicken to fill it with flavor and keep it juicy like the real thing. A couple of hours later, when the brining is done, it’s grilling go-time.
The pasta shape Chick-fil-A uses in their soup is an uncommon one, and you might have a hard time finding it at your local market. It’s called mafalda corta (upper right in the photo), which is a miniature version of the ruffled-edge malfadine pasta used in my hack for Olive Garden Beef Bolognese. It also goes by the name “mini lasagna.” If you can’t find mafalda corta (I found it online), you can instead use your favorite small fancy pasta here, such as farfalle, rotini, fusilli, or whatever looks good at the store.

Roscoe's Chicken and Waffles
Read moreForty-five years ago, chicken and waffles sounded like an unusual combination to most people, but not to Herb Hudson. He loved the dish so much when he lived in Harlem, New York, where it was created, that he brought it west in 1975 to Long Beach, California, and turned the concept into a chain of seven legendary Los Angeles restaurants that were successful for decades.
But Roscoe’s has recently fallen on hard times. Eater.com reported in January 2018 that the chain had declared bankruptcy and owed $27 million. Snoop Dogg, known over the years for claiming Roscoe’s as his favorite restaurant, told TMZ that he was going to buy the chain and call it Snoop Dogg’s Chicken ‘N Waffles. That deal never happened.
I’m not sure what’s in the cards for Roscoe’s, but I thought it might be a good idea to head out to the Roscoe’s on Gower in LA and do a little hacking, and the sooner, the better. Once there, I ordered plenty of extra chicken and waffles to go, popped them into the cooler, then headed back to Vegas and got to work.
The chicken at Roscoe’s is Southern-style, which usually means the chicken is soaked in buttermilk, but several workers there insisted that wasn’t the case. So instead, I brined the chicken in a simple salt solution and was pleased to discover that it tasted like theirs. By peeking into the kitchen I observed that Roscoe’s chicken is pan-fried, which is a very Southern thing to do with chicken, so we’ll do the same with our chicken clone. My waiter claimed they use canola oil.
As for the waffles, they’re made special with a secret combination of spices added to the batter. I noted a strong taste of cinnamon and vanilla, with just a dash of nutmeg. To be sure, I confirmed these three ingredients with a very helpful server from another table who was proud to talk about the recipe, and even high-fived me when I called out the correct secret ingredients.

Taco Bell Chalupa Supreme
Read moreI’m not sure when it happened, but it appears Taco Bell recently changed its seasoned beef recipe. I hacked the recipe several years ago for the book TSR Step-by-Step, and I recall the recipe had much more oat filler, so that’s how I cloned it. Taco Bell came under fire in 2011 for the significant amount of oats in the recipe that the chain was listing as “spices,” and after that, Taco Bell was more transparent about ingredients. But somewhere along the way it appears the company tweaked the recipe to include less filler and more flavor, so I decided I had to create a new Taco Bell seasoned beef copycat recipe.
You can use my recipe below to make the famous Chalupa—which the restaurant makes by deep-frying the flatbread used for Gorditas. You can also use this new, improved Taco Bell seasoned beef recipe for anything you’re copying, whether it's tacos, burritos, Enchiritos, Mexican Pizzas, or a big pile of nachos.
The secret ingredient in our hack is Knorr tomato bouillon. This flavor powder adds many ingredients found in the original recipe and provides the umami savoriness that’s required for a spot-on clone of the famous seasoned ground beef. To get the right flavor, you need to find "Knorr Tomato Bouillon with Chicken Flavor" powder, in a jar. Not the bouillon cubes.

KFC (Kentucky Fried Chicken) Nashville Hot Chicken
Read moreIt was only a matter of time before the spicy fried chicken made famous in Nashville, Tennessee at shops like Prince's Hot Chicken Shack and Hattie B's would find its way into the mainstream. A dish this good is never contained forever, and KFC became the first fast food chain to give the recipe national exposure. A test run of the new spicy chicken in Pittsburgh was the most successful product test in KFC's recent history.
The original dish from Nashville is made with crispy fried chicken that's doused with a top-secret spicy chili sauce and served on sliced white bread with dill pickles on top. KFC's version is served with just pickles, no bread (a biscuit on the side instead), and is made by soaking the chain's Extra Crispy Fried Chicken with the oily chili sauce from a squirt bottle. Since there isn't any water in the sauce, just oil, the chicken stays crispy, regardless of how much sauce is applied.
For my KFC Nashville Hot Chicken copycat recipe, you first need to prepare the chicken, either using my KFC Extra Crispy Chicken recipe included below, or by baking or frying some of the pre-breaded chicken pieces you can find frozen in just about every grocery store. While the chicken is brining, make the sauce and pour it into a squirt bottle or spouted measuring cup. Apply it to your chicken when it's done (shake it or stir it first!), then top it with dill pickle slices.

KFC Chicken Pot Pie (Improved)
Read moreKFC's Chicken Pot Pie is a classic. It's packed with lots of shredded white and dark meat chicken, potatoes, peas, and carrots; all of it swimming in a delicious creamy gravy and topped with a tantalizing flakey crust. It seems more like homemade food than fast food. And now it can be made at home better than ever before with this improved hack of my original recipe (found here). The crust now has a better flavor (more butter!), and the gravy tastes closer to the original with the addition of more spices.
You can make my KFC Chicken Pot Pie copycat recipe using ramekins or small oven-safe baking dishes, or get some recyclable aluminum pot pie pans you can find in many supermarkets. Those pans are the perfect size for four single servings, and they make cleanup easy after the feast.

Cheddar's Monte Cristo

When pondering casual chains with the best Monte Cristo sandwiches, two come to mind: Bennigan's and Cheddar's recipes. At each chain the sandwich is built with turkey, ham, and cheese, then it’s battered and fried, dusted with powdered sugar, and served with raspberry preserves for dipping. It probably sounds strange if you've never had one, but Monte Cristo alums know it all tastes pretty darn great together. I hacked Bennigans' version years ago for my cookbook Top Secret Restaurant Recipes 2, and recently, on a trip to Charlotte, North Carolina, I was able to get my hands on Cheddars' signature version of this famous sandwich.
I planned for the mission by bringing along a cooler of ice so that I could get a fresh sample safely back home. Once I was back in the lab in Vegas, I subjected the sandwich to a series of tasty tests, burned through several versions of batter, and eventually assembled my new Cheddar's Monte Cristo copycat recipe that I think is even better than my previous Bennigan's hack. The better batter is the big secret here—it's light and crispy and perfectly golden brown, and the sandwich features two kinds of cheese, both white and yellow American. Will this be the best Monte Cristo you've ever had? You’re about to find out.

KIND Dark Chocolate Nuts & Sea Salt Bar
Read moreYou probably think the dark chocolaty stuff that looks like dark chocolate on a dark chocolate Kind nut bar is all chocolate, but it mostly isn’t. There is chocolate in there, but chicory root is listed third in the ingredients list, right after peanuts and almonds and way before cocoa, so the dark chocolate is actually a chocolate-flavored coating made mostly with chicory root fiber. Curiously, older labels list “chocolate-flavored coating” as the second ingredient, but newer labels don’t.
Chicory is the root of the endive plant, and it’s beloved in New Orleans, where it’s combined with coffee drinks because its taste is so similar to coffee. Chicory also happens to taste a lot like chocolate, and it’s cheaper than chocolate, and that’s probably why it’s used here.
But just because Kind uses chicory, doesn’t mean we have to. For my Kind Bar copycat recipe, you'll use real chocolate in the form of melting wafers you can find in most stores. I used Ghirardelli brand because it tastes great, but any easy-to-melt, dippable dark chocolate will do.
The bars are stuck together with honey and agave syrup heated to 260 degrees F, or the hard ball stage. The sticky mixture is pressed into a 10x5-inch loaf pan, cooled, and sliced into 8 bars. The bottoms are dipped in the pure chocolate, and more is drizzled over the top. About 30 minutes later, when the chocolate sets up, your homemade Kind bars are ready to eat.

Olive Garden Breadsticks
Read moreAnyone who loves Olive Garden is probably also a big fan of the bottomless basket of warm, garlicky breadsticks served before each meal at the huge Italian casual chain. My guess is that the breadsticks are proofed, and then sent to each restaurant where they are baked until golden brown, brushed with butter and sprinkled with garlic salt. Getting the bread just right for a great Olive Garden breadstick hack was tricky—I tried several different amounts of yeast in all-purpose flour, but then settled on bread flour to give these breadsticks the same chewy bite as the originals. The two-stage rising process is also a crucial step in this much requested Olive Garden breadstick copycat recipe.

Original Pancake House Apple Pancake

Fresh, high-quality ingredients and traditional recipes are what makes this growing chain a frequent favorite for anyone who stops in. The star of the show is the incredible apple pancake, the chain's signature dish. To make a dead-on clone, Granny Smith apples are sautéed in butter, brown sugar and cinnamon, then allowed to cool for a bit. Pizza Hut Pan Pizza
Read moreThe secret to perfect pan pizza is pressing the dough into a well-oiled pan (Pizza Hut uses soybean oil), then the pan is covered and the dough rises in a heated cabinet for 45 to 60 minutes. When the dough is topped, the edge is sprayed with a butter-flavored “food release” and the pie is baked at 500 degrees F until perfectly browned on top. You can use a 9-inch, 12-inch, or 15-inch deep dish pizza pan or cake pan for my Pizza Hut Pan Pizza recipe, and you’ll want to preheat your oven with a pizza stone in it to simulate the type of oven used at the chain. The hot ceramic surface of the pizza stone will cause the oil in the pan to cook the bottom of the dough so that it’s brown and crispy, like an authentic pan pizza crust should be.
I tried making the dough with cake flour, all-purpose flour, superfine “00” flour, bread flour and many combinations of these different flours which all contain varying amounts of gluten. I even tried rising the dough slowly in the refrigerator for various lengths of time, as long as up to four days. But after a month of testing and about 30 pan pizzas later, I found the best dough to be straight bread flour, and to let the dough rise at room temperature. I did find that if you let the dough rest for at least 4 hours before the final rise in the pizza pan you will get the best texture with the perfect chewy bite to it, just the Pizza Hut Pan Pizza.

P.F. Chang's Kung Pao Chicken

My favorite chicken dish at P.F. Chang’s is also the top spicy chicken entrée at the 89-unit China bistro chain. The secret to homemade P.F. Chang's Kung Pao chicken is combining the right ingredients for the perfect marinade that will also become the sauce. Soy sauce and oyster sauce provide the saltiness. Mirin, which is sweetened sake, contributes the sweet flavor component. Chili oil gives the sauce its spicy kick, and a little rice vinegar adds the necessary acidy.Sliced chicken breasts take a soak in this sauce for about an hour, then the chicken is dusted with a little cornstarch and flash-fried in peanut oil. You can use a wok for the frying stage and then rinse it out for use in the final sauté, or you can use a medium saucepan to fry the chicken and a sauté pan to finish cooking everything with the reserved sauce. Either way, you’ll get a great clone that goes perfect with a side of white or brown rice. Sure, I nailed the P.F. Chang's Kung Pao chicken copycat recipe, but I still can't pick up peanuts with chopsticks.

Ruth's Chris Steak House Petite Filet Mignon Steak

This is the signature item for the Ruth's Chris chain. It's a delicious filet mignon that comes to your table sizzling hot and so tender you can cut it with a fork. If you want to prepare filets the Ruth's Chris way, you first need some prime corn-fed filets, which can be found in specialty meat markets or Costco. Prime is your best choice, but the technique will still work with other grades of beef.
My Ruth's Chris petite filet mignon copycat recipe duplicates the smaller steak filet on the Ruth's Chris menu, since the larger filet is so big—about 14 ounces. Ruth's Chris uses a special broiler which reaches temperatures as high as 1800 degrees F. It's likely you don't have such an oven, so you can use a conventional oven set on high broil, with the rack inches away from the heat source. If you have a gas oven, watch for flame-ups from spattering. If you begin to get flames, move the rack to a lower level. Also, you will need ceramic oven-safe plates to serve the sizzling steak on.

P.F. Chang's Orange Peel Chicken

In the late sixties, Dan Evins was a Shell Oil "jobber" looking for a new way to market gasoline. He wanted to create a special place that would arouse curiosity, and would pull travelers off the highways. In 1969 he opened the first Cracker Barrel just off Interstate 40 in Lebanon, Tennessee, offering gas, country-style food, and a selection of antiques for sale. Today there are over 529 stores in 41 states, with each restaurant still designed as a country rest stop and gift store. Bennigan's The Monte Cristo

It sounds crazy, but it tastes great: a triple-decker ham, turkey, and cheese sandwich is dipped in a tempura-style batter; fried to a golden brown; then served with a dusting of powdered sugar and a side of raspberry preserves. For over ten years, tons of cloning requests for this one have stacked up at TSR Central, so it was time for a road trip. There are no Bennigan's in Las Vegas, and since the Bennigan's chain made this sandwich famous, I headed out to the nearest Bennigan's in San Diego.Back home, with an ice chest full of the original Bennigan's Monte Cristo sandwiches well-preserved and ready to work with, I was able to come up with this simple clone for a delicious sandwich that is crispy on the outside, and hot, but not greasy, on the inside (the batter prevents the shortening from penetrating). My Bennigan's Monte Cristo copycat recipe makes one sandwich, which may be enough for two. If you want to make more, you'll most likely have to make more batter so that any additional sandwiches get a real good dunking.
Recently, Bennigan's restaurants across the country have been closing, but with this secret formula you can still experience the taste of the chain's signature sandwich.

McDonald's French Fries
Read moreThey're the world's most famous French fries, responsible for one-third of all U.S. French fry sales, and many say they're the best. These fried spud strips are so popular that Burger King even changed its own recipe to better compete with the secret formula from Mickey D's. One-quarter of all meals served today in American restaurants come with fries; a fact that thrills restaurateurs since fries are the most profitable menu item in the food industry.
Proper preparation steps were developed by McDonald's to minimize in-store preparation time, while producing a fry that is soft on the inside and crispy on the outside. My McDonald's French Fries copycat recipe requires a two-step frying process to replicate the same qualities: the fries are par-fried, frozen, then fried once more to crispy just before serving. Be sure to use a slicer to cut the fries for a consistent thickness (1/4-inch is perfect) and for a cooking result that will make them just like the real thing. As for the rumor that you must soak the fries in sugar water to help them turn golden brown, I also found that not to be necessary. If the potatoes have properly developed, they contain enough sugar on their own to make a good clone with great color.

Jimmy Dean Breakfast Sausage
Read moreBefore he became America's sausage king, Jimmy Dean was known for crooning the country hit "Big Bad John." That song came out in 1962 and sold more than 8 million copies. His singing success launched a television career on ABC with The Jimmy Dean Show, where Roy Clark, Patsy Cline, and Roger Miller got their big breaks. The TV exposure led to acting roles for Jimmy, as a regular on Daniel Boone, and in feature films, including his debut in the James Bond flick Diamonds are Forever. Realizing that steady income from an acting and singing career can be undependable, Jimmy invested his show-biz money in a hog farm. In 1968 the Jimmy Dean Meat Company developed the special recipe for sausage that has now become a household name. Today the company is part of the Sara Lee Corporation, and Jimmy retired as company spokesman in 2004.
My Jimmy Dean breakfast sausage copycat recipe re-creates three varieties of the famous roll sausage that you form into patties and cook in a skillet. Use ground pork found at the supermarket—make it lean pork if you like—or grind some up yourself if you have a meat grinder.

Panda Express Dynamite Chicken
Read moreHave a drink nearby when you enjoy this new white-meat chicken entrée from Panda Express. Chunks of chicken breast are breaded with crispy puffed rice for extra crunch, then wok-cooked with onion, red bell pepper, and the hottest sauce ever offered by the popular Chinese takeout chain.
It was clear that perfecting the sauce was essential for my Panda Express Dynamite Chicken copycat recipe, so I started there. After isolating and analyzing the sauce, I noticed it contained more chili bits than other Panda sauces, so I added a generous amount of sambal to boost flavor and color. My sauce was hot but not as fiery as the original until I added Buldak. This Korean chicken-flavored hot sauce gave the sauce a richer red hue and just the right amount of delicious heat.
Once the sauce was hacked, I moved on to the crispy chicken. For the breading, I used smashed Rice Krispies out of curiosity, thinking it probably wouldn't be the right approach since the cereal is slightly sweetened. However, I was pleasantly surprised that the lightly sugared cereal worked so well, delivering great flavor and excellent crunch. Rice Krispies cereal is very easy to find, so it’s a great solution.
The real challenge with the breading was deciding whether to use a wet batter or a dry coating for the best results. As it turned out, I achieved the best results with both. After dredging the chicken in a wet batter, I coated it with the dry, puffed-rice mixture. After frying, the chicken's breading was perfectly thick and craggy, with a great crunch even when tossed in the flavorful sauce.

McDonald's Big Arch
Read moreMcDonald’s goes big with its latest burger, featuring two quarter-pound beef patties, three slices of white cheddar, and a new secret sauce. And the whole thing is easy to knock off at home, including the special sesame- and poppy-seed buns.
For my McDonald’s Big Arch copycat recipe, I made a sauce by mixing ketchup, mustard, and mayonnaise with a few other common ingredients. But the key to the flavor was adding dill pickle relish, finely minced with a sharp knife, before mixing it in. You'll end up with nearly a cup of this secret sauce, leaving plenty left over for more burgers after making the two this recipe yields.
Once you make the sauce, assembling the burger is easy, with both fresh and fried onions, sliced lettuce, and pickles. For buns similar to those used by McDonald's, look for Ballpark Everything Burger Buns, which are baked with poppy and sesame seeds on top, just like the real thing.

Chin Chin Famous Chinese Chicken Salad
Read moreFounded by Bob Mandler in California in 1983, Chin Chin quickly became a West Hollywood hotspot, where celebrities dined on dim sum and the iconic Chinese chicken salad with red ginger dressing. The original Sunset Boulevard location closed in 2025 after more than 40 years, but four others are still open in California. And there’s also a Chin Chin in Las Vegas at the New York, New York casino, which made it easy for me to dive into the salad and get a sample to go.
To create my Chin Chin Famous Chinese Chicken Salad copycat recipe, I started by hacking the famous red ginger dressing. The secret ingredient is julienned ginger pickled in a red brine, and it’s easy to find online. It isn’t true red ginger, but the taste and color work great when combined with soy sauce, red wine vinegar, sesame oil, and the other ingredients. You’ll get 1¼ cups of cloned dressing, which is plenty for two big salads, or four smaller ones.
After roasting and chilling a few chicken breasts, and making wonton crisps and fried rice noodles, you’ll be ready to toss your salads with the dressing and pile them high on serving plates. Sprinkle the salads with crispy noodles, green onions, and sliced almonds, and treat your taste buds to a classic dish from Hollywood’s Sunset Strip.

Stouffer's French Bread Pizza
Read moreI owe many years of a blistered roof of my mouth to these pizzas I ate often as a kid, usually right after school when I was apparently too hungry to let them cool after coming out of the toaster oven. But the classic recipe for this snack that many of you might also fondly remember, has recently changed.
According to most accounts, the manufacturer changed the production process in the summer of 2025 so that the pizzas are no longer made with sliced French bread. Today, the bread is molded to resemble sliced French bread, but it lacks the crusty quality that made the pizzas special. Critics also say the sauce recipe has changed to one that’s sweeter and less tangy than the original.
For my Stouffer’s French Bread Pizza copycat recipe, I’m going back in time to when these pizzas were better. For this knockoff, we'll use real French bread for the crust, and the sauce here is less sweet than the current version, more like the original from back in the day. Find thick slices of pepperoni, and for the best melted cheese, shred your own mozzarella from a block rather than using pre-shredded cheese.
Also, I suggest waiting a bit for these to cool before taking your first bite.

Du-Par's Legendary Buttermilk Hotcakes
Read moreJames Dunn and Edward Parsons combined parts of their surnames to name the restaurant they opened at the original Farmer’s Market in Los Angeles, California, in 1938. The eatery served a variety of diner foods, including sandwiches, burgers, and pies, but it’s the huge buttery pancakes that made the restaurant so iconic. Many who have tried these say they’re the best pancakes they’ve ever tasted. And yet, nobody has cracked the secret of the 88-year-old recipe. Until now.
There are enough rumors about the recipe to drive a food hacker crazy. Some suggest the batter takes hours to make, while others say the dry ingredients are pre-mixed in secret and cooks simply add buttermilk. Some claims suggest the recipe requires a special flour, while others say it’s just all-purpose flour. When I asked a server about the recipe, she claimed she couldn’t offer any information, or she would get fired and I would go to jail. Yes, she really said that.
But according to my tests with several batches, the recipe requires two major tweaks to an ordinary pancake recipe to make these “legendary.” For my Du-Par’s Legendary Buttermilk Hotcakes copycat recipe, I increased the number of eggs typically used in pancake batter to re-create the custardy texture of the original. The second big secret is butter. The most notable step that makes Du-Par’s pancakes special is the clarified butter generously ladled over the top before serving.
The steps are simple, the recipe is easy, and the pancakes are incredible. This is one you need to try.

Costco (Kirkland) Triple Chocolate Muffins
Read moreAfter hacking the recipes for Costco’s other popular muffins, including the Blueberry Muffins, Almond Poppyseed Muffins, and Lemon Raspberry Muffins, I would be remiss not to satisfy my fellow chocoholics by cracking the formula for the big box chain’s delicious Triple Chocolate Muffins. And I decided that these need to be really big. Much to the chagrin of many customers, Costco recently reduced the size of all their muffins, so for this recipe, these muffins have been re-created in their former “jumbo” size.
My Costco Triple Chocolate Muffins copycat recipe is simple, requiring basic ingredients, including chocolate chips, chocolate chunks, and Dutch-process cocoa (the dark one), for a rich, dark chocolate flavor. You’ll need a jumbo muffin pan to make these like the big muffins Costco used to sell, but you can also use a standard muffin pan to make smaller muffins if that’s all you’ve got.

Starbucks Holiday Gingerbread
Read moreAs you have probably figured out by the name, this moist spiced loaf of gingerbread was once available at Starbucks during the holiday season, but has since been retired to the land of dead foods. Thankfully, I was able to work up this sweet copycat recipe before the pastry went away forever, so you can create a spot-on home version for the holidays, or anytime you want.
The secret ingredient to my Starbucks Holiday Gingerbread copycat recipe is applesauce in the batter, which helps make the loaf moist and flavorful. Ground ginger and bits of candied ginger add the perfect ginger flavor to the loaf, and orange flavors come in from the zest, orange extract, and candied orange peel on top. With such an overwhelming aroma coming out of your oven as this bakes, the toughest step is waiting for the loaf to cool before frosting it so that you can dig into a slice.

St. Elmo Steak House World Famous Shrimp Cocktail
Read moreWhile in Indianapolis for some live cooking demos, I discovered the best shrimp cocktail I've ever tasted at St. Elmo Steak House, a 124-year-old institution in the heart of the city. The jumbo shrimp were tender and succulent, and the cocktail sauce was mind-blowing. I knew then I had a hacking assignment on my hands, so I ordered some sauce to go. I was told the secret is freshly grated horseradish, which creates a tastier and more potent sauce than typical cocktail sauces made with bottled horseradish.
When shopping for horseradish for my St. Elmo Steak House Shrimp Cocktail copycat recipe, I discovered that the most flavorful horseradish roots are firm to the touch and not at all spongy, so give them the squeeze test before you buy. Once you peel, grate, and mince the horseradish, mix it with vinegar and a little salt to keep it from turning brown and to enhance the flavor.
To make a perfect copy of the original, the shrimp must be perfectly poached so that they are tender, but not rubbery. I've got that technique for you here. Follow this recipe as described and you will have a great home kitchen copy of the famous restaurant appetizer that is sure to leave your diners breathing clearly and begging for more.

Olive Garden Meatballs Parmigiana
Read moreChicken Parmigiana is one of the most popular choices at any Italian restaurant, just like meatballs, so it makes sense to combine the two dishes for this appetizer that filled me up as much as any entrée. The dish at the restaurant comes with five meatballs, and this recipe makes ten meatballs, giving you enough for two appetizer-sized servings.
The first step in making my Olive Garden Meatballs Parmigiana copycat recipe was to figure out the best way to replicate the chain’s meatballs. According to the chain’s nutrition info, only ground beef, and no pork, is used in the meatballs. After trying several batches, I found a great match using ground beef with 20% fat. Any less fat, and the meatballs turned out too tough.
I already hacked the chain’s marinara sauce for the chain’s Chicken Parmesan, which I spooned into a serving dish, then added the meatballs, cheese, and breadcrumbs. After baking until the cheese was melted, I had a delicious match to the restaurant's original that just needed a little sprinkle of parsley before serving.

Stouffer's Spaghetti & Meatballs
Read moreDairy stand owners Abraham and Mahala Stouffer opened their first Stouffer’s restaurant in Cleveland in 1924, and by 1990, the Stouffer’s name was on 68 restaurants and 40 hotels. But by 1992, the company's frozen food business, which started in the '50s, was so successful that Stouffer's sold off its hospitality segment to focus on the brand's booming frozen food empire.
It’s not clear when the company’s spaghetti and meatballs were first sold in freezer sections, but many of Stouffer’s first products were inspired by meals served at the chain’s restaurants, including the popular macaroni and cheese (cloned here), Salisbury steak, corn soufflé, and stuffed peppers.
For my Stouffer’s Spaghetti and Meatballs copycat recipe, I started with the meatballs by first defrosting a frozen serving of the dish, then separating the sauce from the six ½-ounce balls of meat. Using the ingredients list as a guide, I made several batches of tiny meatballs with a combination of beef and pork, along with breadcrumbs, Parmesan cheese, seasoning, and a little beaten egg to hold everything together, until I achieved a good match. Once I had enough meatballs for six servings of the dish, it was time to move on to the sauce.
The sauce came together nicely after sautéing some onions and garlic in oil, then adding tomato paste, diced tomatoes, and seasonings. After simmering the sauce for 30 minutes, I placed six meatballs on a small pile of cooked spaghetti, then poured the sauce over everything, creating a perfect match to the 12 5/8-ounce single-serving of the famous frozen entrée.

Panda Express Chili Crisp Chicken
Read moreThis limited-time-only offering from the country’s biggest Chinese chain debuted in 2025 from May through July in just five markets: Chicago, Atlanta, Houston, Albuquerque-Santa Fe, and Las Vegas. Fortunately, Vegas is my home, so this excellent new dish literally came to my doorstep. Thank you, Uber Eats.
This sauceless entrée uses the chain’s breaded chicken bites, along with chopped white onion, green bell pepper, and dried chilies. At the restaurant, I ordered a large box to go, which triggered the preparation of a new batch in the open kitchen for me to observe. I watched as the cook measured the same amount of onion as pepper, and about half that volume of dried chilies, so I used the same ratio for my clone. I used a slightly tweaked version of my previous Panda Express breading hack, except this time I was sure to use both white and dark meat chicken like the chain does.
For the chili crisp, I found that Fly by Jing Sichuan Chili Crisp or Momofuku Chili Crunch were closest to what Panda Express uses. Both are easy to find online.
After tossing the chili crisp with everything in the wok, the dish is served with a drizzle of hot honey on top. You can use real Mike’s Hot Honey, or you can whip up a batch with my hack here that combines honey with scotch bonnet pepper juice and vinegar for a cost-effective home clone.
