In June of 1998, Gardenburger was on a roll. Bolstered by booming sales of its Original Veggie Burger, the company introduced three new varieties of its popular meatless patties: Classic Greek, Fire-Roasted Vegetable, and Savory Mushroom. The first one, the Classic Greek Veggie Patty, includes calamata olives, feta cheese, and spinach to give it a distinctively Mediterranean flavor, yet with only three grams of fat per serving.

  • 2 tablepoons bulgar wheat
  • 1 cup cooked brown rice
  • 1/2 pound white button mushrooms, quartered
  • 2/3 cup diced white onion
  • 1/4 cup diced red onion
  • 1/2 cup rolled oats
  • 1/4 cup canned white beans, drained
  • 2/3 cup reduced-fat mozzarella cheese (2% fat)
  • 1/4 cup crumbled feta cheese
  • 1 tablepoon fat-free cottage cheese
  • 2 tablespoons frozen chopped spinach, thawed
  • 4 pitted calamata olives
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon paprika
  • Pinch ground black pepper
  • 3 egg whites
  • 2 tablespoons cornstarch
Do This

1. Add 1/4 cup of boiling water to the bulgur wheat in a small bowl or measuring cup and let it sit for about 1 hour. Now is a good time to prepare the brown rice according to the directions on the package.

2. Steam the quartered mushrooms for 10 minutes or until tender. Remove the mushrooms from your steamer, and replace them with the onions. Steam the diced onions for 10 minutes or until the pieces become translucent. Keep the steamed mushrooms and onions separate and set them aside.

3. Add 1/2 cup of water to the rolled oats and let them soak for at least 10 minutes, until soft.

4. Drain any excess water from the bulgur wheat and oats, then combine the grains with the steamed mushrooms, rice, beans, cheeses, spinach, olives, and spices in a food processor and pulse 3 to 4 times until the ingredients are chopped but not pureed. You want a coarse texture with some identifiable chunks of grain, mushrooms, beans, cheese, and olives.

5. Pour the mixture into a bowl with the remaining ingredients and mix well.

6. Preheat the oven to 300 degrees and set a large skillet over medium/low heat.

7. Spray the skillet with a light coating of olive oil cooking spray. Measure 1/2 cup at a time of the patty mixture into the pan and shape with a spoon into a 3 3/4-inch patty that is approximately 1/2 inch thick. Cook the patties in batches for 2 to 4 minutes per side, or until light brown on the surface.

8. When all of the patties have been cooked in the skillet, arrange them on a lightly sprayed baking sheet and bake for 20 to 25 minutes in the oven. Be sure to turn them over halfway through the cooking time. You can serve the patties immediately or freeze them, like the original, when they have cooled.

9. If you freeze the patties, you can reheat them several ways. Spray a light coating of olive oil cooking spray on each side and heat each patty in a pan over medium heat for 3 to 4 minutes per side until it is hot in the center. You can also use a grill to prepare the patties. Just be sure to spray each frozen patty with the oil, and be sure the flames are low. Cook for 3 to 4 minutes per side. Those are the best cooking methods, however, you can also prepare a frozen patty by microwaving it for 30 to 35 seconds, the turn the patty over and zap it for another 30 to 35 seconds. Finally, you can heat a frozen patty in the microwave for 30 to 35 seconds, then place the partially defrosted patty in a toaster or toaster oven and cook it on medium heat until it's hot in the center.

    In the early eighties, at his Gardenhouse restaurant, Chef Paul Wenner created a unique meatless patty to replace hamburgers. The patty, which contained mushrooms, brown rice, onions, oats, and low-fat cheeses was dubbed Gardenburger and quickly became a hit. Soon, Wenner closed his restaurant and began to concentrate on marketing his meatless, low-fat creation to a hungry, health-conscious America. Today Gardenburger patties can be found in more than 35,000 food service outlets around the world, and in more than 20,000 stores.

    Now you can make a surprisingly accurate clone of the real thing with the same type of ingredients Wenner uses. Most of the ingredients can be found at your local supermarket, although you may have to go to a health food store to get bulgar wheat.     Olive Garden Breadsticks

    Anyone who loves Olive Garden is probably also a big fan of the bottomless basket of warm, garlicky breadsticks served before each meal at the huge Italian casual chain. My guess is that the breadsticks are proofed, and then sent to each restaurant where they are baked until golden brown, brushed with butter and sprinkled with garlic salt. Getting the bread just right for a great Olive Garden breadstick hack was tricky—I tried several different amounts of yeast in all-purpose flour, but then settled on bread flour to give these breadsticks the same chewy bite as the originals. The two-stage rising process is also a crucial step in this much requested Olive Garden breadstick copycat recipe.

    Rao's Homemade Marinara Sauce

    Getting a table at the 123-year-old original Rao’s restaurant in New York City is next to impossible. The tables are “owned” by regulars who schedule their meals months in advance, so every table is full every night, and that’s the way it’s been for the last 38 years. The only way an outsider would get to taste the restaurant’s fresh marinara sauce is to be invited by a regular.

    If that isn’t in the stars for you, you could buy a bottle of the sauce at your local market (if they even have it). It won't be fresh, and it's likely to be the most expensive sauce in the store, but it still has that great Rao's taste. An even better solution is to copy the sauce for yourself using my easy Rao's Homemade Marinara Sauce copycat recipe.

    The current co-owner of Rao’s, Frank Pellegrino Jr., told Bon Appetit in 2015 that the famous marinara sauce was created by his grandmother many years ago, and the sauce you buy in stores is the same recipe served in his restaurants. The ingredients are common, but correctly choosing the main ingredient—tomatoes—is important. Try to find San Marzano-style whole canned tomatoes, preferably from Italy. They are a little more expensive than typical canned tomatoes, but they will give you some great sauce.

    After 30 minutes of cooking, you’ll end up with about the same amount of sauce as in a large jar of the real thing. Your version will likely be just a little bit brighter and better than the bottled stuff, thanks to the fresh ingredients. But now you can eat it anytime you want, with no reservations, at a table you own.

    Hooters Buffalo Chicken Wings

    Gardenburger Fire-Roasted Vegetable Veggie Patty

    Paul Wenner started his company in 1985 when he developed a meatless hamburger from leftovers at his vegetarian restaurant. Even though his Gardenburger was a hit, Paul was forced to close the restaurant due to dwindling sales. On the bright side, this gave Paul more free time to develop and sell his delicious puck-shaped plant patty. Today Paul's Gardenburger brand is thriving, with an estimated fifty million patties served in restaurants, cafeterias, and concession stands in 1998 alone.

    To make this clone, you'll need a food processor and a hot barbecue grill. And if you're looking for an interesting way to serve it, the manufacturer suggests you slap the veggie patty onto some focaccia bread and top it off with marinara sauce, grilled squash, and a little Parmesan cheese.

    Chipotle Barbacoa Burrito (Cilantro-Lime Rice / Pinto Beans)

    The original Mexican dish barbacoa was traditionally prepared by cooking almost any kind of meat goat, fish, chicken, or cow cheek meat, to name just a few, in a pit covered with leaves over low heat for many hours, until tender. When the dish made its way into the United States via Texas the word transformed into "barbecue" and the preparation changed to incorporate above-ground techniques such as smoking and grilling.

    The good news is that we can re-create the beef barbacoa that Chipotle has made popular on its ginormous burritos without digging any holes in our backyard or tracking down a local source for fresh cow faces. After braising about 30 pounds of chuck roasts, I finally discovered that the secret to making perfect barbacoa is a taste-alike adobo sauce that fills your roast with flavor as it slowly cooks to a fork-tender delicacy on your stovetop over 5 to 6 hours.

    Part of the secret for great adobo sauce is toasting whole cumin seeds and cloves and then grinding them in a coffee grinder (measure the spices after grinding them). Since the braising process takes so long, start early in the day and get ready for a big dinner, because I've also included clones here for Chipotle's pico de gallo, pinto beans, and delicious cilantro-lime rice to make your burritos complete. You can add your choice of cheese, plus guacamole and sour cream for a super-deluxe clone version.

    Soup Nazi's Indian Mulligatawny Soup

    Elaine: "Do you need anything?"
    Kramer: "Oh, a hot bowl of Mulligatawny would hit the spot."
    Elaine: "Mulligatawny?"
    Kramer: "Yeah, it's an Indian soup. Simmered to perfection by one of the great soup artisans in the modern era."
    Elaine: "Oh. Who, the Soup Nazi?"
    Kramer: "He's not a Nazi. He just happens to be a little eccentric. You know, most geniuses are."

    Kramer was right. Al Yeganeh—otherwise known as The Soup Nazi from the Seinfeld episode that aired in 1995—is a master at the soup kettle. His popular soup creations have inspired many inferior copycats in the Big Apple, including The Soup Nutsy, which was only ten blocks away from Al's original location on 55th Street. Yeganeh's mastery shows when he combines unusual ingredients to create unique and delicious flavors in his much-raved-about soups. In this one, you might be surprised to discover pistachios and cashews among the many vegetables. It's a combination that works.

    I took a trip to New York and tasted about a dozen of the Soup Nazi's original creations. This one, the Indian Mulligatawny, was high on my list of favorites. After each daily trip to Soup Nazi headquarters (Soup Kitchen International), I immediately headed back to the hotel and poured samples of the soups into labeled, sealed containers, which were then chilled for the trip back home. Back in the lab, portions of the soup were rinsed through a sieve so that ingredients could be identified. I recreated four of Al's best-selling soups after that trip, including this one, which will need to simmer for 3 to 4 hours, or until the soup reduces. The soup will darken as the flavors intensify, the potatoes will begin to fall apart to thicken the soup, and the nuts will soften. If you follow these directions, you should end up with a clone that would fool even Cosmo Kramer himself.

    Update 2/6/18: The recipe can be improved by doubling the curry (to 2 teaspoons) and reducing the water by half (to 8 cups). Cook the soup for half the recommended time or until it's your desired thickness.

    BJ's Restaurant and Brewhouse Parmesan Crusted Chicken Breast

    Menu Description: "Our marinated chicken breast coated with Parmesan cheese and crunchy panko breadcrumbs, lightly pounded and pan fried to a golden brown.     My Parmesan Crusted Chicken Breast copycat recipe lays out a great way to prepare that 4-pack of chicken breasts you dropped into your shopping cart. While you're at the market, head down the aisle where the Asian foods are parked and pick up some Japanese breadcrumbs, also called "panko" breadcrumbs. Combining these coarse breadcrumbs with shredded Parmesan cheese makes a crispy breading for the chicken that doesn't even need a sauce to taste good. Still, the lemony Chardonnay butter sauce used at the restaurant is cloned here too, so you'll have the complete flavor experience. You'll want to plan ahead a bit for this dish since the chicken fillets will need to marinate in the brine solution for 2 to 3 hours.

    Bonefish Grill Citrus Herb Vinaigrette

    There a are few decent bottled salad dressings out there, but there's nothing on the shelf that compares in taste to this homemade version of the house salad dressing from Bonefish Grill. Not only that, it's a heck of a lot cheaper to make your own vinaigrette from scratch.     Applebee's Apple Walnut Chicken Salad

    Menu Description: "A masterwork of flavors. Grilled, marinated chicken breast crowns this fresh mix of delectable greens, crisp apples, rich crumbled blue cheese and sweet candied walnuts. Tossed in our tangy balsamic vinaigrette."

    Sometimes I feel like a C.S.I. To re-create this salad, I ordered several to-go and then sat down with a magnifying glass and carefully picked out each of the bits and pieces and separated them into smaller bowls. Sure, this was tedious work, but it made it easy to measure out each ingredient for the most accurate Applebee's Apple Walnut Chicken Salad recipe. 

    Next, I cooked a ton of chicken, each with different versions of the marinade, until I found the one that worked. The smoky marinade for the chicken here is basically a brine that adds just the right amount of saltiness and flavor through osmosis, so be sure not to let the chicken soak longer than specified. Of course, the lead performer in any salad is the dressing, since it is responsible for much of what you taste. The tangy balsamic vinaigrette is delicious with honey, Dijon mustard, garlic, and tarragon in there. You can make an easy emulsion out of it with a hand mixer. The best part is that you'll end up with leftover vinaigrette that you can use to make a couple more meal-size salads, and then some. Case closed.

    Buffalo Wild Wings Buffalo Wings and Sauces

    Since Buffalo, New York was too far away, Jim Disbrow and Scott Lowery satisfied their overwhelming craving in 1981 by opening a spicy chicken wing restaurant close to home in Kent, Ohio. With signature sauces and a festive atmosphere, the chain has now evolved from a college campus sports bar with wings to a family restaurant with over 300 units. 

    While frying chicken wings is no real secret—simply drop them in hot shortening for about 10 minutes—the delicious spicy sauces are what make the wings special. There are 12 varieties of sauce available to coat your crispy chicken parts at the chain, and I'm presenting clones for the more traditional flavors. These sauces are very thick, almost like dressing or dip, so we'll use an emulsifying technique that will ensure a creamy final product where the oil won't separate from the other ingredients. 

    In my Buffalo Wild Wings copycat recipe below you'll find the cooking and coating technique for the wings, followed by copycat recipes for the most popular sauces: Spicy Garlic, Medium and Hot. The sauce recipes might look the same at first, but each has slight variations to make your sauce hotter or milder by adjusting the level of cayenne pepper. You can find Frank's pepper sauce by the other hot sauces in your market. If you can't find that brand, you can also use Crystal Louisiana hot sauce.

    Margaritaville Key Lime Pie

    Menu Description: "A true taste of the tropics. National award-winning recipe."

    Many of the key lime pie recipes circulating, including the recipe found on bottles of key lime juice, have a glaring error: they don't make enough filling to fit properly into a standard 9-inch graham crust pie shell. That's probably because those recipes are designed around one 14-ounce can of sweetened condensed milk. But if we're going to make a beautifully thick key lime pie like the one served at Jimmy Buffett's Margaritaville restaurants, we need to use something like 1 1/2 cans of sweetened condensed milk, or more accurately, two cups of the stuff. 

    My Margaritaville Key Lime pie copycat recipe is a simple one, that's for sure, with only four ingredients including the pie shell. But don't stop there. I'm also including an easy way to make mango sauce by reducing a couple cans of Kern's mango juice. And there's a raspberry sauce recipe here that's made easily with frozen raspberries. These two sauces are used to jazz up the plate at the restaurant and are certainly optional for your clone version, even though I've made this recipe as easy as, um, you know.

    Olive Garden Italian Salad Dressing Fat-Free

    We love to eat salad because it seems so healthy. But add just a couple tablespoons of salad dressing and you've gone from no fat to lots of fat, before your main course has even hit the table. If the salad dressing is delicious, as is Olive Garden's, you might be pouring on more than just a couple tablespoons. Here's a way to eliminate the fat grams from the dressing, but keep all the flavor.

    We'll take out the oil, and add dry pectin to thicken the dressing, along with more water than used in the original version of this recipe. We can add a decent amount of Romano cheese and a single serving of the dressing still comes in under 1/2 gram of fat. Add some vinegar, a little corn syrup and lemon juice, some spices—mission accomplished.

    Gardenburger Savory Mushroom Veggie Patty

    Chef Paul Wenner fathered a hot product when he ground up those leftover vegetables at his restaurant and formed them into the shape of a hamburger patty. When Paul got out ot the restaurant business, he peddled the meatless patties out of his van under name Wholesome and Hearty Foods. In 1992, when his company went public, the stock shop up to $30 from $3 on rumors that McDonald's was planning to sell the veggie patties under the golden arches. When those rumors proved to be false, the stock came crashing down quicker than sales figures for the McLean Deluxe. Later, the name of the company was changed to Gardenburger, and new products, such as the Savory Mushroom Veggie Patty, were developed.

    For this clone, you'll need to track down three types of mushrooms: the common white button, brown or crimini, and portobello. You'll also need a food processor to mash everything up real good.

    Cheesecake Factory Avocado Eggrolls

    In 1995, Forbes Magazine named The Cheesecake Factory in its list of the 200 best small companies in America. At more than 90 stores now, The Cheesecake Factory plans to continue growing at a rate of about 11 new restaurants per year, and still does not franchise.

    The avocado egg rolls are one of the most popular appetizers on the menu at the Cheesecake Factory, and it's not hard to see why. The combination of avocado, sun-dried tomatoes, and the cilantro-tamarind sauce makes this one of the tastiest appetizers I've had at any restaurant chain. 

    The trickiest part of my Cheesecake Factory avocado egg rolls recipe might be finding the tamarind pulp at your market. It's a brown, sticky pulp that looks like puréed prunes, and can be found in the spice section or near the ethnic foods—or try a Middle Eastern market. The pulp sometimes contains the large seeds of the fruit, so be sure to remove them before measuring. If you can't find the tamarind paste, you can get by substituting smashed raisins or prunes.

    P.F. Chang's Mongolian Beef

    Menu Description: "Quickly-cooked steak with scallions and garlic."

    Beef lovers go crazy over this one at P.F. Chang's. Flank steak is cut into bite-sized chunks against the grain, then it's lightly dusted with potato starch, flash-fried in oil, and doused with an amazing sweet soy garlic sauce. The beef comes out tender as can be, and the simple sauce sings to your taste buds. 

    I designed my P.F. Chang's Mongolian Beef recipe using a wok, but if you don't have one, a sauté pan will suffice. You may need to add more oil to the pan to cover the beef in the flash-frying step. 

    P. F. Chang's secret sauce is what makes this dish so good, and it's versatile. If you don't dig beef, you can substitute with chicken. Or you can brush it on grilled salmon.

    Hard Rock Cafe Coleslaw

    Smashing a guitar and hanging it on the wall will not give you the true Hard Rock Cafe experience unless you then eat a sandwich with this coleslaw served on the side. You have to be patient though, since it's not something you can enjoy right away. Good coleslaw needs a little time to chill in the cool box—24 hours at least. The cabbage needs a chance to get it together with the other ingredients before rocking out at the gig inside your mouth.     Boston Market Meatloaf

    In the early 90's Boston Chicken was rockin' it. The home meal replacement chain's stock was soaring and the lines were filled with hungry customers waiting to sink their teeth into a serving of the chain's delicious rotisserie chicken. The chain was so successful with chicken, the company quickly decided it was time to introduce other entrée selections, the first of which was a delicious barbecue sauce-covered ground sirloin meatloaf. 

    Offering the other entrées presented the company with a dilemma: what to do about the name. The bigwigs decided it was time to change the name to Boston Market, to reflect a wider menu. That meant replacing signs on hundreds of units and retooling the marketing campaigns. That name change, plus rapid expansion of the chain and growth of other similar home-style meal concepts, sent the company into a tailspin. By 1988, Boston Market's goose was cooked, and the company filed for bankruptcy. Soon McDonald's stepped in to purchase the company, with the idea of closing many of the stores for good, and slapping Golden Arches on the rest. But that plan was scrapped when, after selling many of the under-performing Boston Markets, the chain began to fly once again.  Within a year of the acquisition Boston Market was profitable, and those meals with the home-cooked taste are still being served at over 700 Boston Market restaurants across the country.

    Jimmy Dean Breakfast Sausage

    Before he became America's sausage king, Jimmy Dean was known for crooning the country hit "Big Bad John." That song came out in 1962 and sold more than 8 million copies. His singing success launched a television career on ABC with The Jimmy Dean Show, where Roy Clark, Patsy Cline, and Roger Miller got their big breaks. The TV exposure led to acting roles for Jimmy, as a regular on Daniel Boone, and in feature films, including his debut in the James Bond flick Diamonds are Forever. Realizing that steady income from an acting and singing career can be undependable, Jimmy invested his show-biz money in a hog farm. In 1968 the Jimmy Dean Meat Company developed the special recipe for sausage that has now become a household name. Today the company is part of the Sara Lee Corporation, and Jimmy retired as company spokesman in 2004.

    Cheesecake Factory Key Lime Cheesecake

    Just 15 minutes after the very first Cheesecake Factory opened in Beverly Hills back in 1978, the lines began forming. These guys know how to make a dang good cheesecake! 

    You'll love this yummy twist on Key lime pie. Since Key limes and Key lime juice can be hard to find, I decided to use standard lime juice in my Cheesecake Factory Key Lime Cheesecake copycat recipe, which can be purchased bottled or squeezed fresh. If you can find Key lime juice, bear in mind that Key limes are more tart, so you'll need only half as much juice. You'll also need a springform pan. If you don't have one, you can use two 9-inch pie pans and make two smaller cheesecakes.

    Cheesecake Factory Bruschetta

    In 1972, Oscar and Evelyn Overton moved from Detroit to Los Angeles to build a wholesale bakery that would sell cheesecakes and other high-quality desserts to local restaurants. Business was a booming success, but some restaurants balked at the high prices the bakery was charging for its desserts. So, in 1978, the couple's son David decided to open a restaurant of his own—the first Cheesecake Factory restaurant—in posh Beverly Hills. The restaurant was an immediate success and soon David started an expansion of the concept. Sure, the current total of 20 restaurants doesn't seem like a lot, but his handful of stores earns the chain more than $100 million in business each year. That's more than some chains with four times the number of outlets rake in.

    Bruschetta is one of the top-selling appetizers at the restaurant chain. Bruschetta is toasted bread flavored with garlic and olive oil, broiled until crispy, and then arranged around a pile of tomato-basil salad in vinaigrette. This salad is scooped onto the bruschetta, and then you open wide. My Cheesecake Factory Bruschetta recipe makes five slices just like the dish served at the restaurant, but the recipe can be easily doubled.

    Lucille’s Smokehouse Bar-B-Que Cracked Out Deviled Eggs

    The West Coast barbecue chain introduced these creative deviled eggs with the eye-catching name as a limited-time-only offer, but sales were so good that Lucille’s Cracked Out Deviled Eggs is now a permanent fixture on the menu.

    For this dish, the deviled egg yolks are combined with a blend of bacon, green onion, red bell pepper, and the chain’s delicious barbecue blend, then arranged on crispy onion straws with seasoned chicken cracklings poked down into the top of each egg. These tasty deviled eggs are unlike any you've had before and all the secrets you need to make a perfect copy at home are "cracked" for you here, including my newly hacked recipe for the delicious onion straws.

    Two chicken thighs will provide enough skin for you to make plenty of the cracklings, and I’ll give you all the prep details in the recipe below, along with a couple of good ways to hard cook your eggs.     Lotus Biscoff Cookies

    Jan Boone first created the traditional Belgian speculoos cookies at his Lotus Bakery in Lembeke, Belgium in 1932. Spiced shortbread cookies like these are often enjoyed with a cup of coffee, so the new cookie was called Biscoff as a mashup of “biscuit” and “coffee.” The cookies didn't become popular in the U.S. until the 1990s when airlines began passing out the cookies to travelers on every trip.

    Recipe authors who claim to re-create these cookies with a blend of spices that includes clove, nutmeg, and cardamom appear to be confusing speculoos cookies from Belgium with speculaas cookies from the Netherlands. Many spices were too costly to import to Belgium at that time, so speculoos cookies were often made with just cinnamon, while the Dutch version got the more expensive blend of exotic spices.

    Biscoff cookies are called “caramelized cookies” because they’re made with Belgian blonde candy sugar (bruen leger), which is granulated sugar that has been lightly caramelized. This ingredient contributes a unique taste to the cookies that is slightly different from cookies made with American brown sugar, which contains molasses. You can find brun leger online or make it yourself with white sugar in your oven using the tips here. If you'd rather not fuss with that, you can substitute with domestic light brown sugar.

    Finish my Lotus Biscoff Cookies copycat recipe by slicing the rolled dough with a fluted pastry wheel to make fancy edges like the real thing, and you’ll have around 3 dozen of the classic European cookies that will fit nicely on one half-sheet pan for baking. I’m calling for all-purpose flour here, but if you want more tender, melt-in-your-mouth cookies, use fine pastry flour.

    Wendy's Seasoned Potatoes

    Reviewers of Wendy’s tasty seasoned potatoes point out that the skin-on slices stay crispy even when cool. That tells us the breading is most likely made with a non-wheat flour blend, an assumption confirmed by the website ingredients list for the potatoes where nary a gram of wheat flour is included. Yep, these seasoned potatoes are gluten-free.

    Wendy’s uses a blend of food starches plus rice flour for the breading on their version, but my tests confirmed that cornstarch is all you’ll need for a great clone of Wendy's seasoned potatoes. The secret process starts by coating the potato slices with the dry breading mix, which contains salt. The salt in the blend will draw water out of the potatoes, magically transforming the dry breading into a wet batter in about 20 minutes.

    When all the breading is wet, the potatoes go into the oil for partial frying. After resting a bit, they get dropped in again until golden brown and crispy. And, thanks to the cornstarch, these potatoes will stay crispy, even when they’re completely cool. Pretty cool right? Give my Wendy's seasoned potatoes copycat recipe a try.

    Cracker Barrel Buttermilk Biscuits

    A great buttermilk biscuit isn’t hard to make. This is good news if you're serving hundreds each day as they do at this popular Southern kitchen chain. But a simple recipe such as this one is also a blessing when you need to whip up a modest batch at home for your hungry gang of biscuit fanatics, and it's an added bonus if they taste as good as the famous biscuits from Cracker Barrel. 

    The secret to tender, flakey biscuits like you get at the restaurant chain is using a lower-gluten self-rising flour such as White Lily; a staple for Southern biscuit recipes. A bit of shortening in the mix will help tenderize the finished product, as will a light mixing hand. Overmixing the dough may toughen your biscuits, so mix the dough gently and only as much as you have to.

    If you don’t use White Lily flour and go with a heavier self-rising flour such as Gold Medal, take note that you may have to add a couple of tablespoons more buttermilk to the dough to loosen it up. Good biscuit dough should be soft, but not sticky.

    Domino's Crispy Bacon & Tomato Specialty Chicken

    I imagine a chef at Domino's in the middle of the development kitchen, surrounded by all the toppings they use on pizza, experimenting with new combinations of these ingredients, trying to come up with something delicious that isn't pizza. And then this dish happens: crispy chicken topped with garlic-Parmesan sauce, Cheddar-mozzarella cheese, bacon, tomato, and baked until gooey.  

    Use my Domino's Crispy Bacon & Tomato Specialty Chicken copycat recipe below to make your own killer appetizer at home. To make it simple, you'll start with crispy chicken strips or popcorn chicken from the freezer section.

    Chick-fil-A Zesty Apple Cider Vinaigrette

    The country’s largest chicken chain offers some of the best choices for salad dressings you’ll find at any fast food restaurant. But good luck sweet-talking your order-taker into floating you a few extra packets of this great fruity vinaigrette to use on your home salads—they are under strict orders to be stingy. And that could be why you’re here.

    Apple cider vinegar, pineapple juice, honey, lemon juice, and lime juice are just a few of the secret ingredients that make this dressing so great. Another secret you'll find here is xanthan gum, a natural thickener often used as an emulsifier to hold salad dressing together so that it doesn’t need shaking. You can find xanthan online or at Whole Foods, and you won't need much.

    Panda Express Fried Rice

    A popular staple of any Chinese chain is fried rice, so it better be good, and the version served at Panda Express most certainly is. Here's my easy Panda Express Fried Rice recipe for when you need a stress-free, low-cost side for your entrées. But I do suggest that you cook the white rice several hours or even a day or two before you plan to make the finished dish. I found that the cooked rice called for in this recipe works best when it's cold. 

    As for a shortcut, bagged frozen peas and carrots will save you from the hassle of petite-dicing carrots since the carrots in those bags are the perfect size to produce an identical clone. And they're already cooked.

    KFC Chicken Pot Pie (Improved)

    KFC's Chicken Pot Pie is a classic. It's packed with lots of shredded white and dark meat chicken, potatoes, peas, and carrots; all of it swimming in a delicious creamy gravy and topped with a tantalizing flakey crust. It seems more like homemade food than fast food. And now it can be made at home better than ever before with this improved hack of my original recipe (found here). The crust now has a better flavor (more butter!), and the gravy tastes closer to the original with the addition of more spices.

    You can make my KFC Chicken Pot Pie copycat recipe using ramekins or small oven-safe baking dishes, or get some recyclable aluminum pot pie pans you can find in many supermarkets. Those pans are the perfect size for four single servings, and they make cleanup easy after the feast.

    Panda Express Beijing Beef

    The problem with adding sauce to fried food is that the wet sauce makes the crunchy fried food not so crunchy. Panda Express manages to keep the crispy beef in Beijing Beef crispy even though it may be sitting for over 20 minutes in the sauce on its way to a hungry you. My early attempts at hacking my favorite dish at the massive Chinese food chain all resulted in gummy, soggy beef pieces that were more like flat dumplings than the delicious, crunchy strips of joy they were meant to be.

    Then finally, on one batch, I decided to fry the coated beef for much longer than I intuitively felt it should be cooked, resulting in dark browning on the cornstarch coating and an even darker piece of meat beneath it. I anticipated a beef jerky experience, but when I took a bite, I found it to be delicious! It wasn’t tough and chewy as I expected it to be. And when this seemingly overcooked beef was stirred into the sauce, it stayed crispy until served, just like the real thing. Now, with the soggy beef problem solved, we’ve finally got a great Panda Express Beijing Beef copycat recipe.

    Olive Garden Dipping Sauces for Breadsticks

    Menu Description: "Freshly prepared alfredo or marinara sauce, served warm."

    The soft breadsticks served at Olive Garden (here's my clone) taste awesome by themselves, but dunk them in one of these warm sauces and...fahgeddaboutit. You can use these clones as dipping sauces or pour them over the pasta of your choice to duplicate a variety of entree items available at the chain. Use the Alfredo sauce over Fettuccine and you get Fettuccine Alfredo. Pour the marinara sauce on Linguine and you've cloned Olive Garden's Linguine alla Marinara. Make up your own dishes adding sausage, chicken or whatever you have on hand for an endless variety of Italian grub.

    P.F. Chang's Spicy Green Beans

    Menu Description: "Stir-fried with Sichuan preserves, fiery chili sauce and garlic."

    Here's an easy side dish that you can start a day or two before you plan to serve it. Planning ahead like this will allow the spicy Sichuan mixture some time to pickle in the salt and acids. When you're ready to cook, a high-heat sauté is put on the beans, and in less than five minutes you've got yourself an impressive, flavorful side that goes great with a slew of entrées—Asian-style or not.

    Outback Steakhouse Mashed Sweet Potatoes

    This special side may not always be on the menu at your local Outback Steakhouse. If it's not, use tmy Outback Steakhouse sweet potato copycat recipe to satisfy your craving. The butter, sugar and spices added to the baked and mashed sweet potatoes make this dish great with salmon, chicken, turkey, and pork; and it rocks as a holiday feast side. It's so sweet and rich that it could double as pie filling. And just check out the amazing finishing touch: pecans, corn flakes and oats mixed with butter, brown sugar, and cinnamon for a streusel-like crunchy topping, that you'll want to eat by the spoonful.

    A thick slice of moist pumpkin bread Starbucks-style is the perfect companion for your morning cup of Joe. Many other pumpkin bread recipes produce sad, squatty loaves—but not this clone. 

    Use my custom Starbucks Pumpkin Bread recipe below that makes enough batter to fill up a medium loaf pan.     BJ's Restaurant and Brewhouse Famous Pizookie

    Menu Description: "A freshly baked, hot out-of-the oven, rich and delicious cookie topped with 2 scoops of vanilla bean ice cream and served in its own deep dish. Your choice of chocolate chunk, white chocolate macadamia nut, peanut butter or oatmeal raisin walnut."

    Visit one of the 83 BJ's restaurants located in the West and Southwest and you'll likely find many giddy diners digging down into one of these deep-dish cookie desserts. Even though the restaurant is known for great Chicago-style deep-dish pizzas and a fantastic selection of custom-brewed beers, it's the Pizookie at the end of the meal that gets the most drools. There are four varieties to choose from on the menu, so I'm giving you the BJ's Pizookie recipe for all four below. Each formula makes enough dough for one giant cookie, and the Pizookie recipe is so easy that you could make more than one with just a little extra effort. You might think that the cooking temperature of 475 degrees is extreme for a cookie, but since BJ's is a pizza joint, these puppies get cooked in cranked-up pizza ovens, and it works great. Not only will you have your cookie done in only 5 to 7 minutes, but also it'll be nice and brown on top, and slightly gooey in the center—all good things for a cookie, right? The restaurants uses 6-inch deep-dish pizza pans, but you can bake your clones in any cake pan or pie pan with a bottom that is 6 to 7 inches across.
