Famous Dave's Smoked Salmon Spread

Famous Dave's is famous for making pork ribs so good you forget you're wearing the embarrassing bib. But before you get your face smeared with BBQ sauce, you may want to kick off your meal with this popular choice from the chain's appetizer column. Start with 4 ounces of the best smoked salmon you can find—it should be very smoky if you want to duplicate the same taste of the original. If you can't find salmon that's smoky enough, I found that adding a little hickory liquid smoke to the mix works perfectly to flavor the spread so that it tastes like Dave's version. You'll end up with twice the amount of spread as the original which makes this a great appetizer for a small party. You can even prepare the flatbread ahead of time, then wrap it up in foil and reheat it in the oven before serving.

  • 8 ounces cream cheese, softened
  • 4 ounces smoked salmon
  • 4 teaspoons minced capers
  • 1/4 teaspoon ground chipotle chile pepper
  • 1/4 teaspoon hickory liquid smoke (optional)
Seasoning Blend for Flatbread
  • 1 1/2 teaspoons paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground cayenne pepper
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon dried oregano
  • 2 tablespoons butter, melted
  • 1/4 teaspoon garlic powder
  • 4 to 6 flatbreads (or naan)

    • Instructions

      1. Preheat barbecue grill or a grill pan to high heat.

      2. Combine cream cheese with 3 ounces of smoked salmon, capers and chipotle chile pepper and mix well. If the salmon has only a mild smoky taste, stir in the liquid smoke. Spoon salmon spread into a small bowl and crumble the remaining 1 ounce of salmon over the top of the spread.  

      3. Combine the ingredients for the seasoning blend in a small bowl.

      4. Combine the melted butter with the garlic powder in another small bowl.

      5. Brush one side of each flatbread with a light coating of garlic butter. Place the bread, buttered-side-down, onto the grill or grill pan. Cook for 30 seconds to 1 minute or until grill marks form on the bread. Flip the bread over, sprinkle seasoning on the buttered side, and continue to grill the bread for another 30 seconds or so.

      6. After all the flatbread is grilled, slice each one like a pizza into 4 to 6 slices each, and arrange the slices around the salmon spread that has been placed onto the center of a serving platter.

      Serves 8 as an appetizer.

I've tried other recipes claiming to be the recipe for Famous Dave's salmon spread. Being that they no longer serve it, I have been on a quest. This spread is so good and just like I remember. This recipe alone has made me a believer in Top Secret Recipes. Try this one, you won't be disappointed.

I tried this receipe only because my Son had some frozen fish that we were going to use for a large end-of-summer/fall cookout today.It turned out great. I have always soaked my fish in milk or buttermilk to thaw it out, that may have made a difference. But, everyone thought that we had ordered out for this, even while they were there watching us grill the Steelhead and two Salmon. Thanks Todd
