Who needs meat when you can make a pizza taste like this without it? It's grilled veggies and mozzarella cheese stacked on a great clone for the chain's tasty honey-wheat dough. With regular mozzarella cheese, the total fat for three slices comes in at around nineteen grams, which is still much less than you'd get from, say, the pepperoni-topped variety tipping the scales at about fifteen grams per slice. Just remember to prepare your dough a day before you plan to make the pizza. This way you'll get the best consistency in the final product. And one heck of a better clone.

Honey Wheat Dough
  • 1/3 cup plus 1 tablespoon warm water (105 to 115 degrees F)
  • 1 tablespoon honey
  • 3/4 teaspoon yeast
  • 2/3 cup bread flour
  • 1/3 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 tablespoon olive oil
Sauce
  • 1 teaspoon olive oil
  • 1 tablespoon minced white onion
  • 1 clove garlic
  • 1 tomato, chopped
  • 1 15-ounce can tomato sauce
  • 2 teaspoons granulated sugar
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon dried thyme
  • Pinch ground black pepper

  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1/8 teaspoon ground cayenne pepper
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground cumin
  • 1/2 eggplant, sliced lengthwise 1/4 inch thick
  • 1 cup shredded mozzarella cheese
  • 3/4 cup mushrooms, sliced thin (2 to 3 mushrooms)
  • 1/3 medium onion, sliced into thin rings (about 2/3 cup)
  • 1/3 cup reconstituted sun-dried tomatoes, sliced into strips (see Tidbits)
  • 1 1/2 cups steamed broccoli florets (bite-size)
  • 1 teaspoon minced fresh oregano
Do This

1. Prepare the pizza dough by combining the water with the honey and yeast in a small bowl or measuring cup. Stir until the yeast is dissolved, then let the mixture sit for 5 minutes until the surface turns foamy. Sift the flours and salt together in a medium bowl. Make a depression in the flour and pour the olive oil and yeast mixture into it. Use a fork or spoon to stir the liquid, gradually drawing in more flour as you stir, until all the ingredients are combined. At this point you will have to use your hands to blend the dough until it is smooth and form it into a ball. Knead the dough with the heels of your hands on a lightly floured surface for 10 minutes or until the texture of the dough is smooth and elastic. Form the dough back into a ball, coat it lightly with oil, and place it in a clean bowl covered with plastic wrap. Keep the dough in a warm place for about 2 hours to allow the dough to double in size. Punch the dough down and put it back into the covered bowl and into the refrigerator overnight. Take the dough from the refrigerator 1 to 2 hours before you plan to build the pizza so that the dough can warm up to room temperature.

2. When you are ready to make the pizza, preheat oven to 500 degrees F. Use a pizza stone if you have one.

3. Prepare the sauce by first heating the olive oil over medium heat in a medium saucepan. Saute the onion and garlic for 1 minute in the oil. Add the tomato and saute for an additional minute before adding the remaining sauce ingredients to the pan. Bring the sauce to a boil, then reduce heat and simmer for 20 to 30 minutes, or until thicker. Cover the sauce until it is needed.

4. Preheat barbecue grill to high temperature.

5. Combine the soy sauce with 1 tablespoon olive oil, cayenne pepper, garlic powder, and cumin in a small bowl.

6. Brush the entire surface of the eggplant with the soy sauce mixture. Grill the eggplant slices for 2 to 3 minutes per side, then remove the slices from the heat and set them aside until they are needed.

7. On a lightly floured surface, form the pizza dough into a circle that is approximately 10 inches across.

8. Spread about 1/2 cup of the sauce evenly over the surface of the dough.

9. Arrange the grilled eggplant on the pizza, then sprinkle the cheese evenly over the top of the eggplant.

10. Next sprinkle the mushrooms onto the pizza, followed by the onion slices.

11. Sprinkle the sun-dried tomato slices on the pizza, followed by the broccoli florets.

12. Bake the pizza for 10 to 12 minutes or until the crust is light brown and the cheese begins to bubble. Pop any bubbles in the crust that may form as the pizza bakes.

13. Remove the pizza from the oven and sprinkle the fresh oregano over the top. Use a pizza wheel to slice the pizza into 6 pieces and serve.

Makes 1 10-inch pizza.

Tidbits: Heat a couple cups of water to boiling in the microwave. Add 6 to 8 sun-dried tomato slices to the water and let them sit for about 1/2 hour. Remove and drain the slices on paper towels until you need them.

    Olive Garden Breadsticks

    Anyone who loves Olive Garden is probably also a big fan of the bottomless basket of warm, garlicky breadsticks served before each meal at the huge Italian casual chain. My guess is that the breadsticks are proofed, and then sent to each restaurant where they are baked until golden brown, brushed with butter and sprinkled with garlic salt. Getting the bread just right for a great Olive Garden breadstick hack was tricky—I tried several different amounts of yeast in all-purpose flour, but then settled on bread flour to give these breadsticks the same chewy bite as the originals.     California Pizza Kitchen Grilled Eggplant Cheeseless Pizza

    When PepsiCo shelled out $100 million for a 67 percent share of the trendy pizza chain back in 1992, founders Lawrence Flax and Richard Rosenfield thought they had it made. Unfortunately, the company behind Pizza Hut found expanding the more upscale eatery an unfamiliar struggle. The company expanded too quickly, and as costs began to dwarf sales figures, fresh ingredients were replace with cheaper frozen products. Customers noticed and sales took a nosedive. By 1996, PepsiCo decided to bail out.

    The following year, PepsiCo's share of the chain was picked up by New York investment firm Rosser, Sherrill and Co. Fresh ingredients returned to the kitchens, and the size of the pizzas was increased without adjusting the price. Sales once again blossomed, and the chain was on its way back to turning its first profit since 1991.

    Here's a great pizza to clone if you need to take a little time off from delicious-yet-fat-filled mozzarella cheese. With the marinated, grilled eggplant and tasty honey-wheat dough, you won't even miss that gooey white stuff. Be sure to start this one a day before you plan to eat it. The dough needs that long to rise in the fridge for just the right California Pizza Kitchen-like taste.

    California Pizza Kitchen (CPK) California Club Pizza

    There's no better way to clone the great pizzas from this creative chain than to start with dough made from scratch. Since the best way to re-create commercial-style pizza dough at home is to use the same slow-rising technique the pros use, you're going to have to plan ahead at least 24 hours. This is the length of time it will take for the gluten in the flour to work its magic while resting comfortably in your refrigerator. And, if you've got the patience, 48 hours is even better. 

    Once the dough is ready to go, you should bake your pizzas—my CPK California Club Pizza recipe makes two—on a pre-heated pizza stone in your oven. If you don't already have one, you can find one of the round or rectangular stones in just about any housewares store.     Cracker Barrel Hash Brown Casserole

    In the late sixties, Dan Evins was a Shell Oil "jobber" looking for a new way to market gasoline. He wanted to create a special place that would arouse curiosity, and would pull travelers off the highways. In 1969 he opened the first Cracker Barrel just off Interstate 40 in Lebanon, Tennessee, offering gas, country-style food, and a selection of antiques for sale. Today there are over 529 stores in 41 states, with each restaurant still designed as a country rest stop and gift store. In fact, those stores which carry an average of 4,500 different items apiece have made Cracker Barrel the largest retailer of American-made finished crafts in the United States.

    Those who know Cracker Barrel love the restaurant for its delicious home-style breakfasts and this casserole, made with hash brown-sliced potatoes, Colby cheese, milk, beef broth, and spices.     Wendy's Chili

    Dave Thomas, Wendy's late founder, started serving this chili in 1969, the year the first Wendy's opened its doors. Over the years, the recipe has changed a bit, but my Wendy's copycat chili recipe is a great version of the one served in the early 90s. Try topping it with some chopped onion and Cheddar cheese, just as you can request in the restaurant.

    California Pizza Kitchen (CPK) Southwestern Burrito Pizza

    Menu Description: "With grilled chicken breast marinated in lime and herbs, Southwestern black beans, fire-roasted mild chilis, sweet white onions and Cheddar cheese. Served with green tomatillo salsa and sour cream."

    California Pizza Kitchen uses imported Italian wood-fired ovens to bake the specialty pizzas. These ovens reach temperatures over 800 degrees F, allowing the pizzas to cook in just three minutes. This technique keeps ingredients from drying out so that the pizzas don't require as much cheese as in traditional recipes.

    Most of us don't have wood-burning pizza ovens in our kitchens, so I have designed my California Pizza Kitchen Southwestern Burrito Pizza recipe to work in a conventional oven with a minimum of cheese. If you have a pizza stone, use it. If you have a hard time finding tomatillos (they look like small green tomatoes with a thin papery skin and are found in the produce section) you can use canned green salsa.

    You have the option of using a store-bought crust or instant pizza dough, but I can't say enough about making the dough yourself from my recipe here. You just have to plan ahead, making the dough one day before you plan to bake the pizza. This way, the dough will get to rest and will rise slowly in the refrigerator—a great technique the pros use.

    T.G.I. Friday's Pecan Crusted Chicken Salad

    Baja Fresh Salsa Baja

    You won't find freezers, can openers, or microwave ovens at this national Mexican food chain. Since 1990 Baja Fresh has been serving up great food, made fresh with each order. As you're waiting for your food to come out, that's when you hit up the salsa bar, where you'll find several varieties of delicious fresh salsa, from hot to mild, ready to be spooned into little tubs that you can take to your table or to your car. One of the most popular selections is called Salsa Baja—its medium spiciness, smoky flavor, and deep black color make the salsa unique and mysterious. That is, until now, since I've got a Top Secret formula for you right here. But the recipe wasn't as easy to create as I first thought. I figured the tomatoes would have to be extremely blackened over a hot grill, but I wasn't sure how to get them dark enough to turn the salsa black without the tomatoes getting all mushy and falling apart on the barbecue.

    So, I went back to Baja Fresh before they opened to peer through the window to see if I could catch some hot salsa production action. I waited and waited. After several hours, as the lunch rush was beginning to wind down and no fresh salsa was in the pipeline, it was time for extreme measures to get things moving. I went in and ordered 30 tubs of Salsa Baja to go, and that did it. I ended up with a big bag filled with 2 gallons of salsa (thankfully they poured those 8-ounce portions into bigger bowls), and the restaurant went immediately into "salsa red alert" to replenished the now-dwindling salsa reserve. It was perfect. As I was grabbing my bag of salsa, a dude come out from the kitchen with a huge box of tomatoes and placed them all on the grill. I ordered a giant Diet Pepsi and parked myself at a close table to watch the process. That's when I discovered the secret. For super-charred tomatoes, they start with firm, chilled tomatoes, that aren't too big or too ripe. I also found out that the tomatoes must start roasting on the grill with the stem-side down.     Texas Roadhouse Rolls & Cinnamon Butter

    I never thought dinner rolls were something I could get excited about until I got my hand into the breadbasket at Texas Roadhouse. The rolls are fresh out of the oven and they hit the table when you do, so there’s no waiting to tear into a magnificently gooey sweet roll topped with soft cinnamon butter. The first bite you take will make you think of a fresh cinnamon roll, and then you can’t stop eating it. And when the first roll’s gone, you are powerless to resist grabbing for just one more. But it’s never just one more. It’s two or three more, plus a few extra to take home for tomorrow.

    Discovering the secret to making rolls at home that taste as good as Texas Roadhouse Rolls involved making numerous batches of dough, each one sweeter than the last (sweetened with sugar, not honey—I checked), until a very sticky batch, proofed for 2 hours, produced exactly what I was looking for. You can make the dough with a stand mixer or a handheld one, the only difference being that you must knead the dough by hand without a stand mixer. When working with the dough add a little bit of flour at a time to keep it from sticking, and just know that the dough will be less sticky and more workable after the first rise.

    Roll the dough out and measure it as specified here, and after a final proofing and a quick bake—plus a generous brushing of butter on the tops—you will produce dinner rolls that look and taste just like the best rolls I’ve had at any famous American dinner chain.

    KFC (Kentucky Fried Chicken) Potato Wedges

    “Don’t call them fries,” says KFC about its popular side made with sliced, skin-on russet potatoes. What sets these potatoes apart from all the others is the secret breading made with a similar seasoning blend to the one used for Colonel's Original Recipe Fried Chicken. To achieve the proper crispiness, the potatoes are par-fried, frozen, then fried again until golden brown.

    One important ingredient that completes the flavor is MSG. Monosodium glutamate is a food additive derived from glutamic acid, which is an important amino acid found in abundance in nature, food, and in you right now. Over the last 60 years of study and use, MSG has not only been found harmless in normal amounts, but tests have shown glutamate to be a chemical messenger that benefits gut health, immunity, and brain functions such as memory and learning. In addition to all of that, it imparts a unique savoriness that enhances flavors in other ingredients and makes your food taste amazing. Using MSG in your food is, literally, smart cooking.

    Another important ingredient is ground Tellicherry black pepper, a select black pepper from India. Winston Shelton, a friend of Harland Sanders who invented the first high-volume pressure fryers for KFC, confirmed this. Shelton recalled seeing the ingredient when Sanders showed him the secret formula for the fried chicken seasoning he had scribbled on a piece of paper.

    While we were shooting the first episode of my TV Show, Top Secret Recipe, Winston pulled me aside and whispered to me that Tellicherry pepper is crucial to creating the unique KFC aftertaste. It was a great tip, and fortunately, we caught that moment on camera and you can see it in the show. Later, I conducted a side-by-side taste test with common black pepper and Tellicherry black pepper and discovered Winston was right. If you want the best taste for your copycat KFC Potato Wedges, you'll need Tellicherry pepper, which you can find online and in some food stores. Be sure to grind it fine before using it.

    For my KFC Potato Wedges recipe, just two russet potatoes are all it takes to make the equivalent of a large serving of fried potato wedges, which will be enough for at least four people.

    Hostess Powdered Donettes

    At the 2018 Salvation Army National Doughnut Day World Doughnut Eating Contest, held every June 1st, competitive eater Joey Chestnut consumed 257 Hostess powdered Donettes in six minutes to take home the top prize. There was a big smile on Joey's powdered-sugar-and-crumb-coated face that day as he raised a trophy to celebrate another glorious gastronomic feat.  

    If you had to guess who makes the top-selling doughnuts in America, you’d probably say Dunkin’ Donuts or Krispy Kreme, but you’d be wrong. According to Hostess, Donettes are the country’s most popular doughnuts—you rarely find a supermarket, corner market, or convenience store without at least a few packages on the shelf. Hostess Donettes come in several flavors, including chocolate, crumb, and strawberry, but the one most people turn to, and the one I grew up on (they were called “Gems” back then), is coated with a thick layer of powdered sugar.    

    Making the donuts at home is not hard, once you know the secrets. Use my Hostess Powdered Donettes recipe below to make a stiff cake dough, punch out 2-inch rounds with a biscuit cutter, pierce the dough with a straw or chopstick to make a hole, then fry the doughnuts for 2 minutes until golden brown. After you roll them in powdered sugar, you'll have around 20 fresh, home-cloned miniature Donettes that will make you feel like a kid again.

    And—just doing a little math here—it would take Joey Chestnut all of about 14 seconds to eat that entire plate of doughnuts you just made.

    Qdoba Grilled Adobo Chicken

    The 729-unit chain did not start its life as Qdoba. When the Mexican food chain was first founded by Robert Miller and Anthony Hauser in Denver, Colorado in 1995, it was called Zuma Mexican Grill, named after a friend’s cat. As it turned out, a restaurant in Boston had that same name and threatened to sue, so the partners changed the name to Z-Teca. It wasn’t long before two different restaurants threatened to sue for that name—Z’Tejas in Arizona and Azteca in Washington—and the partners were forced to change the name yet again. This time they called their restaurant Qdoba, a completely made-up name that was unlikely to be used by anyone else.           

    A signature item and consistent top seller is this marinated adobo chicken, offered as a main ingredient in most of the chain’s selections. The secret is marinating the thigh meat for a couple of days in the adobo sauce (a worker there told me they let it soak for up to 8 days), then grill and chop. Use my Qdoba grilled adobo chicken copycat recipe below, and enjoy that same great flavor in burritos, tacos, bowls, on nachos, and in tortilla soup.

    Olive Garden Garlic Mashed Potatoes

    Garlic mashed potatoes are a great side for many entrées, especially when the mashed potatoes are as creamy and flavorful as those at Olive Garden. In our hack, the cloves of peeled garlic are boiled with the potatoes. When the potatoes get passed through a potato ricer (or mashed) the softened garlic cloves go along for the ride and get mashed up too. This way, you’re guaranteed to get the perfect amount of flavorful garlic in every bite.

    I settled on cream as the dairy here in my Olive Garden Mashed Potatoes copycat recipe after my attempts using milk and half-and-half resulted in thin and runny potatoes. I found that cream adds the perfect thickness and smooth richness to the mashers, and it made the closest duplicate to the original potatoes.

    Olive Garden Chicken Parmigiana

    Menu Description: “Two lightly fried parmesan-breaded chicken breasts are smothered with Olive Garden’s homemade marinara sauce and melted Italian cheeses. We serve our Chicken Parmigiana with a side of spaghetti for dinner.”

    Chicken parmigiana is a forever favorite, and it’s not a difficult dish to whip up at home. But for it to taste like the Olive Garden signature entree, we’ll need to take some very specific steps.

    Olive Garden’s chicken is salty and moist all the way through, so we must first start by brining the chicken. Give yourself an extra hour for this important marinating step. The marinara sauce used on the chicken is an Olive Garden specialty and no bottled sauce compares, so we’ll make our own from scratch using canned crushed tomatoes and the formula below.

    While the sauce cooks, filling your house with its intoxicating aroma, the chicken is breaded and browned. When the marinara is done, top the chicken with the sauce and mozzarella and stick it under your hot broiler until bubbling.

    Hopefully, everyone at your house is hungry, because the Olive Garden dinner portion is two chicken fillets, and my Olive Garden Chicken Parmigiana recipe will yield a total of four 2-piece servings. Add a small serving of spaghetti on the side, topped with more of the delicious sauce, and you'll have a perfect match to the restaurant plate.

    Werther's Original Hard Candies

    The famous hard caramel candy created in 1903 in the German town of Werther is easy to duplicate at home as long as you’ve got a candy thermometer and some rounded silicone candy molds. Realistically, you can make these candies any shape you want (one time I made some in a gummy-bear mold!), but the best shape for hard candies is something smooth and rounded. That’s what works best for a candy designed to be sucked on, rather than chewed. Just be sure to get enough molds to hold 50 or more bite-size candies at once.      

    My Werther's candy recipe calls for fresh cream and butter just like the original, which was invented in Germany over 100 years ago and is now sold throughout Europe and North America.

    Bob Evans Farms Chocolate Chunk Cookies

    Bob Evans built his first restaurant on a farm in Rio Grande, Ohio in 1962, primarily to sell his own brand of high-quality sausage. Business was good. Really good. There are now over 500 Bob Evans Restaurants in 18 states, each one decorated in a country-living theme that reminds us of the original farm location. Customers seem to like it.

    They also seem to like the packaged baked goods sold at each of the restaurants under the Bob Evans Farms brand, especially this top-selling, chewy, chocolaty cookie that can now be hacked in a snap by you with my Bob Evans chocolate chunk cookies recipe.

    Red Robin Red's Homemade Chili

    Menu Description: "Lots of fresh ground beef and red kidney beans with a perfect blend of fresh Poblano & Chipotle peppers and plenty of seasoning. Topped with Cheddar cheese, diced red onions and tortilla strips. Not too hot, but enough flavor to know you ate it."

    Ah yes, nothing like a hot bowl of homemade chili on a cool day. Red Robin serves hot, chunky chili topped with cheddar cheese, onions and crunchy tortilla strips that'll warm your soul. My Red Robin Red's homemade chili recipe below can be served up the same fashion, or you can use this chili as they do in the restaurant to top homemade nachos or an open-faced chili cheeseburger. If you're one of those who prefer a higher-octane, spicier chili, just use more canned chipotles, or add some of the delicious adobo sauce that's in the can with the chilies.

    Outback Steakhouse Victoria's Crowned Filet

    Tonight, don't settle for steaks that are served straight off the grill. Instead, blow everyone away when you serve up grilled beef tenderloin filets that have been "crowned" with buttery horseradish breadcrumbs. This presentation looks and tastes great, but the best part: it's really freakin' easy. The crust is prepared ahead of time by combining the ingredients and forming the mixture into crust "pucks" that are chilled until firm. Then, when the steaks come off the grill, you top each one with a crust, and broil until bubbling. Now, sit back and watch as your feeders flip when they take the first bite. That's right, tonight you rule.

    Sabra Classic Hummus

    Every brand of hummus I've tried over the years has been just so-so in taste and texture, until I discovered Sabra. Now this ultra-smooth hummus—which has been rated number one in a blind taste test—is the only hummus in my fridge, unless I've made this clone. Hummus is an awesome snack as a dip for vegetables or pita chips, since it's rich in protein, soluble fiber, potassium, and Vitamin E. The secret to duplicating Sabra's smooth and creamy quality is to let your food processor work the stuff over for a solid 10 minutes. Also, when getting your Sabra hummus ingredients ready, don't use all of the liquid from the can of garbanzo beans or the hummus will end up too runny. Strain off the liquid first, then measure only 1/2 cup back into the food processor. Sabra uses canola and/or soybean oil, but you may think olive oil tastes better. Look for a jar of sesame tahini in the aisle where all the international foods are parked, and while you're there find the citric acid, which may also go by the name "sour salt." The clone below will not have the proper acidic bite without this secret ingredient, and citric acid also works as a preservative to help the leftover hummus stay fresh and tasty.

    California Pizza Kitchen (CPK) Original Chopped Salad

    Menu Description: "Chopped lettuce, basil, salami, chilled roast turkey breast, diced tomatoes and Mozzarella cheese tossed in our herb-mustard Parmesan vinaigrette topped with scallions."

    It's the delicious herb-mustard Parmesan vinaigrette that makes this salad so good. And since freshly made dressings are way better than anything you'll buy in a store, here's a great recipe for vinaigrette that you can use either on the CPK Original chopped salad here, or on any salad you assemble with ingredients on hand. After heating up these vinaigrette ingredients for a couple of minutes, let the mixture cool, and then drizzle a thin stream of olive oil into the dressing as you blend it with an electric mixer on high speed. This will create an emulsion to thicken the vinaigrette and hold all the ingredients together even as the dressing chills.

    Bonefish Grill Bang Bang Shrimp

    Menu Description: "Tender, crispy wild gulf shrimp tossed in a creamy, spicy sauce."

    Bonefish Grill proudly refers to this appetizer as the "house specialty." And why not, it's an attractive dish with bang-up flavor, especially if you like your food on the spicy side. The heat in my Bonefish Grill Bang Bang Shrimp copycat recipe comes from the secret sauce blend that's flavored with chili garlic sauce, also known as sambal. You can find this bright red sauce where the Asian foods are in your market—and while you're there, pick up some rice vinegar. 

    Once the sauce is made, you coat the shrimp in a simple seasoned breading, fry them to a nice golden brown, toss them gently in the sauce, and then serve them up on a bed of mixed greens to hungry folks who, hopefully, have a cool drink nearby to mellow the sting.

    Wienerschnitzel Chili Sauce

    The real version of this chili sauce comes to each Wienerschnitzel unit as concentrated brown goo in big 6-pound, 12-ounce cans. After adding 64 ounces of water and 15 chopped hamburger patties the stuff is transformed into the familiar thick and spicy chili sauce dolloped over hot dogs and French fries at America's largest hot dog chain. The proper proportion of spices, tomato paste, and meat is crucial; but the real challenge in creating my Wienerschnitzel chili copycat recipe is finding a common grocery store equivalent for modified food starch that's used in the real chili sauce as a thickener. 

    After a couple of days in the underground lab with Starbucks lattes on intravenous drip, I came out, squinting at the bright sunshine, with a solution to the chili conundrum. This secret combination of cornstarch and Wondra flour and plenty of salt and chili powder makes a chili sauce that says nothing but "Wienerschnitzel" all over it.

    T.G.I. Friday's Potato Skins

    Menu Description: "Loaded with cheddar cheese and bacon. Served with sour cream and chives."

    Perfume salesman Alan Stillman was a single guy in New York City in 1965, looking for a way to meet women who lived in his neighborhood. He figured out a way to get their attention: buy a broken-down beer joint in the area, jazz it up, and call it "The T.G.I.F." to attract the career crowd. Within a week, police had barricaded the area to control crowds flocking to Alan's new restaurant. The restaurant made $1 million in its first year—a lot of dough back then. Soon restaurateurs across the country were imitating the concept.

    In 1974 T.G.I. Friday's invented an appetizer that would also be copied by many in the following years. Potato skins are still the most popular item on the T.G.I. Friday's menu, with nearly 4 million orders served every year. The recipe has the added benefit of providing you with leftover baked potato ready for mashing.

    Hot Dog on a Stick Hot Dog on a Stick (Corn Dog)

    One hot summer day in 1946 Dave Barham was inspired to dip a hot dog into his mother's cornbread batter, then deep-fry it to a golden brown. Dave soon found a quaint Santa Monica, California location near the beach to sell his new creation with mustard on the side and a tall glass of ice-cold lemonade. For a perfect homemade Hot Dog On A Stick, be sure you find the shorter turkey hot dogs, not "bun-length". In this case, size does matter. Snag some of the disposable wood chopsticks from a local Chinese or Japanese restaurant next time you're there and start dipping.

    Update 5/3/17: If your hot dogs are browning too fast, turn the temperature of the oil down to 350 degrees. And rather than using chopsticks, thick round skewer sticks (corn dog skewers) found in houseware stores and online will work much better.

    California Pizza Kitchen (CPK) Sedona White Corn Tortilla Soup Low-Fat

    When you get a steaming bowl of great tortilla soup plopped down in front of you, it's tough to stop slurping until you hit bottom. California Pizza Kitchen has just such a soup, but the oil and fried tortilla chips jack up the fat. Never fear. You can use my CPK Sedona White Corn Tortilla Soup recipe below to make a soup that tastes just as good as the original without most of the oil and fat. Fat-free chicken broth stands in well for the regular stuff, and baked corn tortilla chips give the soup its traditional taste and texture. You'll want to use a hand blender for this one, if you've got one. If not, a regular blender or food processor will work fine to purée the soup so that it has the smooth consistency of the original CPK tortilla soup, but with only a miniscule two grams of fat per serving.

    California Pizza Kitchen Original BBQ Chicken Pizza

    Menu Description: "Introduced in our first restaurant in 1985. With barbecued chicken, sliced red onion, cilantro, and smoked Gouda cheese."

    In 1985, attorneys Larry Flax and Rick Rosenfield traded in their private practice, which included defending mob bosses and union officials, for a specialty pizza chain. These two "amateur chefs" say they were influenced by Wolfgang Puck, whose Spago restaurant in Los Angeles was the first to create pizza with unusual toppings. Now they have developed a niche somewhere between gourmet food and traditional Italian-style pizzas, creating what one magazine described as "designer pizza at off-the-rack prices." In addition to the pastas, soups, and salads, California Pizza Kitchen offers dozens of unique pizza creations that reflect the current trends in dining. When Cajun food was in style, the Cajun chicken pizza was a top seller; today that item has been replaced with Southwestern and Thai pizza varieties. As the menu explains, the Barbecued Chicken Pizza was one of the first pizzas served at California Pizza Kitchen. Decades later it remains one of the top-selling pizza creations.

    You can use this CPK BBQ chicken pizza recipe to make your pizza with pre-made or packaged dough, but I highly recommend taking the time to make the dough yourself. You'll find that it's well worth the little bit of extra work.

    Lone Star Steakhouse Baked Sweet Potato

    Sweet potatoes are not related to the more common russet potatoes and are often confused with yams in the grocery store and on menus (the yam is actually starchier and less flavorful). Just be sure you're buying sweet potatoes when you get to the produce section—even the produce stickers get mixed up. Bake these up, and when you spoon on some butter and sprinkle cinnamon/sugar over the top, you've got a treat that tastes more like dessert than a side dish.

    Baking your cheesecakes in a water bath is part of the secret for producing beautiful cheesecakes at home with a texture similar to those sold in the restaurant. The water surrounds your cheesecake to keep it moist as it cooks, and the moisture helps prevent ugly cracking. You'll start the oven very hot for just a short time, then crank it down to finish. I also suggest lining your cheesecake pan with parchment paper to help get the thing out of the pan when it's done without a hassle.

    Kraft Stove Top Stuffing

    My Kraft Stove Top Stuffing copycat recipe duplicates the common 6-ounce box of stuffing mix you find in any grocery store. This secret formula duplicates the chicken variety, the brand's most popular version. It's nice to be able to make as much of this as you want prior to the holiday crunch, and just keep it sealed up in the pantry until you're ready to use it. You have enough to worry about, like deciding which fruits to use in the Jell-O mold. When it's time to cook, it's just a matter of adding some water and margarine, and in 10 easy minutes this stuff is all ready to go.

    Ragu Pasta Sauces

    It's America's most popular pasta sauce, and now you can whip up clones of two varieties at home at a fraction of the cost. Add a few ingredients to a large can of tomato sauce and get on with the simmering. These recipes duplicate the traditional "Meat" variety of the sauce and the newer "Chunky Garden Style" version with tomato, basil, and Italian cheese.     Here's a clone for another of KFC's famous side dishes. We'll use easy-to-melt Velveeta, with its very smooth texture, as the main ingredient for the cheese sauce.     El Pollo Loco Avocado Salsa

    This creamy green sauce is available at the salsa bar at each of the 389 El Pollo Loco outlets located throughout the western United States, and folks are going crazy over it. The problem is, you can only get it in small quantities at the restaurant, and once you taste a little there you're going to want a lot more of it at home. Use a food processor to mix this one up (everything but the cilantro and onion goes in there) and prepare for a delicious, spicy concoction that you can pour over your favorite homemade Mexican-style dishes, from taco salads to fajitas. Big props go out to Pancho Ochoa, who opened his first roadside chicken stand in Guasave, Mexico in 1975. Today Pancho's El Pollo Loco is the number one quick-service, flame-broiled chicken chain in America.

    Bisquick Original All-Purpose Baking Mix

    You've got a hankerin' for pancakes or biscuits, but the recipe calls for Bisquick, and you're plum out. Not to worry. Now you can make a clone of the popular baking mix at home with just four simple ingredients. Store-bought Bisquick includes shortening, salt, flour, and leavening, so that's exactly what we need to duplicate Bisquick perfectly at home. 

    My Bisquick recipe makes about 6 cups of the stuff, which, just like the real thing, you can keep sealed up in a container in your pantry until it's flapjack time. When that time comes, just add milk and eggs for pancakes or waffles, or only milk if it's biscuits you want. You'll find all those recipes below in the "Tidbits."

    Ruby Tuesday Potato Cheese Soup

    Sandy Beall managed Pizza Huts while a freshman at the University of Tennessee to get out of fraternity house duties. It was just three years later that Sandy's boss at Pizza Hut would favor him with a nice gift: $10,000 to invest in a dream. With that, Sandy and four of his fraternity buddies pitched in to open the first Ruby Tuesday on the university campus in Knoxville, Tennessee, in 1972. Sandy was only 21 at the time.

    Our Ruby Tuesday potato cheese soup recipe can be served by the cup or in large bowls as a meal in itself. Along with the potatoes is a little bit of minced celery, some minced onion, and a small amount of grated carrot for color. An additional pinch of cheese, crumbled bacon, and chopped green onion make a tasty garnish just like on the Ruby Tuesday original.

    Outback Steakhouse Alice Springs Chicken

    In the late eighties, as the public's concern about eating beef was growing, the restaurant industry saw a big shift toward chicken meals. In the midst of a poultry-crazy country, that last thing you'd expect anyone to do is open a steakhouse. But that's exactly what the gang who founded Outback Steakhouse did. And by the time their restaurant had become the sixth largest dinnerhouse chain in the country, they had proven what many people still want is a big honkin' slab of beef.

The powdered cheese included in the Kraft instant macaroni & cheese kits flavors this homegrown version of the popular bright orange crackers.     That creamy, white Dijon sauce that smothers the original version of this delicious pasta is luscious indeed but cursed by oodles of flabby fat grams. This can be fixed in our reduce-fat clone by using strained fat-free yogurt-an ingredient apparently inspired by the ancient Mediterranean technique of straining yogurt through a cheesecloth-that adds a thick, creamy conistency to our sauce without adding fat.
