- Applebee's Red Apple Sangria
Menu Description: "Drink in the passions of Spain! A delightful mix of Sutter Home Cabernet Sauvignon, Shakka Apple Liqueur, Dole pineapple juice, Ocean Spray cranberry juice, and grenadine. Garnished with maraschino cherry, orange, lime and fresh apple."
The menu description for this quenching Applebee's red apple sangria specifies brand names that the restaurant uses to create this drink. For the best clone, I suggest you use the same brands. However, if you must substitute with other brands, I don't suspect anyone will care. I certainly won't, and I promise not to tell anyone your secret. If you can't find Shakka brand apple liqueur, use any sour apple flavored liqueur. If you don't have Sierra Mist lemon-lime soda, you can use Sprite or 7-Up.

Ruby Tuesday Apple Salad
Read moreMosey on over to the salad bar at Ruby Tuesday and you'll find this sweet, creamy apple salad somewhere down at the end. It's a simple recipe to clone with just nine ingredients, and it makes a great side for any casual cookout, picnic, reunion, or mandatory boring office party. Dried cranberries rehydrate to add notes of concentrated sweetness, and the celery and chopped pecans contribute extra crunch. You'll need two kinds of apples—one green and one red. Plan ahead on this one so that you can let the salad sit for several hours before you serve it. It tastes much better after a good fridge nap. My Ruby Tuesday Apple Salad recipe yields enough for 6 servings, but it can easily be doubled or quadrupled to fill more mouths.

Applebee's Strawberry Cheesecake Dessert Shooter
Read moreMenu Description: "Classic cheesecake, graham cracker crumbs, strawberry sauce and whipped cream make this one to savor."
Making cheesecake like this means you don't need to crank up your oven and run it for the hour or more that traditional cheesecake recipes require. Since the cheesecake filling is layered into a small glass, you make it ahead of time on your stovetop, which substantially shortens cooking and cooling times. When the filling is chilled, it's spooned into 6-ounce glasses on top of graham cracker crumbs, then thawed sliced strawberries in syrup are spooned on top. After finishing off each dessert with a pile of whipped cream, you get to pass out some spoons, sit back, and enjoy a roomful of "mmmm" and "aww" at your copycat Applebee's Strawberry Cheesecake Dessert Shooter.

Applebee's Key Lime Pie Dessert Shooter
Read moreMenu Description: "This tart and tangy layer of graham cracker crumbs, key lime filling and whipped cream is a little taste of heaven."
While working on this recipe, I couldn't help thinking of Steve Martin and Bernadette Peters in The Jerk enjoying "the best pizza in a cup ever." Applebee's has taken a slice of key lime pie out of the pie pan and put it into a 6-ounce rocks glass. The key lime filling for this clone is thickened on your stove top, and the topping is made by combining key lime juice and sweetened sour cream.
Try to find key limes for my Applebee's Key Lime Dessert Shooter copycat recipe, although any lime juice will work in a pinch if key limes or bottled key lime juice is hard to track down. Chill the filling for a few hours in your fridge before building these 4 servings with graham cracker crumbs on the bottom, and whipped cream on top. It's really good stuff. Probably the best key lime pie in a cup ever.

Fuddruckers Hamburger Seasoning
Read moreFor 25 years, Fuddruckers has been serving huge, cooked-when-ordered beef patties on freshly baked buns. You decorate your hamburger creation with sliced tomato, onions, lettuce, pickles, peppers, relish and whatever else is offered at the toppings bar. Everyone builds their burger differently, yet the company claims these are "The World's Greatest Hamburgers." What makes them so good? Fuddruckers boasts that it uses only 100% USDA choice, aged ground beef.
What Fuddruckers won't tell you is which secret ingredients make up the delicious burger seasoning used on each of those patties. After analyzing a sample of the blend used in the shakers back by the griddle, I've come up with this simple Fuddruckers Hamburger Seasoning copycat recipe which you can now mix up at home, and pour into an empty shaker bottle. Sprinkle it onto 1/3- or 1/2-pound ground beef patties just before they cook, then grab some fresh buns in the bakery section of your store. Add your choice of other fresh toppings, and you'll soon have a hamburger clone that tastes just like those served at the more than 230 Fuddruckers.

Red Lobster Maple-Glazed Salmon and Shrimp
Read moreMenu Description: "A Pacific Northwest-inspired combination of fresh salmon and skewered jumbo shrimp, fire-grilled and topped with a maple and cherry glaze. Served over wild rice pilaf with fresh asparagus."
Whenever a recipe calls for maple syrup, make sure you use the real deal and not the maple-flavored corn syrups that come in plastic squirt bottles, like Aunt Jemima and Log Cabin. Sure, authentic maple syrup is more expensive than the imitation stuff, and it must be refrigerated after opening, but true maple taste is worth the extra ka-ching. Real maple flavor dominates this sweet glaze, but you'll also notice a nice citrusy note and perfect soy saltiness—it all works really well with salmon and shrimp, and even chicken if you feel like it. Since Red Lobster's executive chef Michael LaDuke added this dish to the menu in July 2007, it's been a big winner for the seafood chain. Now you can add this winning taste to your own repertoire. My Red Lobster Maple-Glazed Salmon and Shrimp recipe here is a super simple one, with only 6 ingredients for the glaze, including dried cherries which you should find near the raisins and dried cranberries in your market. You can make the sauce several days ahead of time if you like, and store it, covered, in the fridge until you bring home the perfect salmon fillets.

Applebee's Crispy Orange Chicken Bowl
Read moreMenu Description: "Breaded boneless chicken breast is delicately spiced and covered in a spicy-sweet orange glaze. Served in a big bowl over almond rice pilaf and a flavorful mixture of mushrooms, broccoli, red pepper, sugar snap peas, and shredded carrots. Topped with toasted almonds and crispy noodles."
In a dish like this, it's important to get the sauce tasting just right or the whole hack will be off. Simmering a secret blend of orange juice, brown sugar, marmalade, and few other ingredients will give you a sauce that's sweet, tangy, spicy and really, really freakin' good. Rather than going to the trouble of breading and frying the chicken from scratch, I've cut time off your prep by including frozen breaded chicken fingers that you simply bake in the oven when you're ready to assemble the dish. I used Claim Jumper brand chicken tenderloins for this recipe since one 20-ounce box was perfect for the two servings this recipe yields. However, these are mongo-huge restaurant-size portions, so you'll be able to divide this recipe up into four more modest servings if you like.Make more of your favorite dishes from Applebee's.

Olive Garden Zuppa Toscana Soup

Rondele Garlic & Herbs Cheese Spread
Read moreThe real thing found in the deli section of your market is used on crackers, as a dip for raw vegetables, or even as a spread on sandwiches, burgers, and wraps. Now I've come up with an easy way to duplicate Rondele using a 12-ounce tub of whipped cream cheese—so you'll happily get three times the amount of the 4-ounce original! Just be sure when mixing your version that you don't over mix, or you will destroy the fluffiness of the whipped cheese. The Italian seasoning included here is a dried herb blend (usually marjoram, thyme, rosemary, savory, sage, oregano, and basil) found near the other bottled herbs and spices in your market. I used McCormick brand for this Rondele garlic & herbs cheese spread clone recipe, but any brand should work fine. Since the herbs are dried, the flavor is more subtle than it would be with fresh herbs, even after the dried bits soak up moisture from the cheese. And that's just want we want for a good clone.

Mimi's Cafe Corn Chowder
Read moreArthur Simms was in the restaurant business for many years before he opened the first Mimi's Cafe with his son, Tom, in Anaheim, California in 1978. Back in the Golden Age of Hollywood Arthur was the guy running things in the MGM Studios commissary where, on any given day, Jean Harlow, Clark Gable and Judy Garland might stop in for a grazing. Arthur named his New Orleans-influenced, bistro-style restaurant after a woman he met and fell in love with in Paris during the war.
Today it's Tom who runs the show at this growing 93-unit chain where regulars return for the staple favorites including the French Market Onion Soup, Carrot Raisin Bread and the delicious corn chowder. Use my Mimi's Corn Chowder recipe below to enjoy this great soup at home.

Applebee's Honey Grilled Salmon
Read moreMenu Description: "Flame-grilled Atlantic Salmon with Applebee's Honey Pepper Sauce served with a side of almond rice pilaf, seasoned vegetables and toasted garlic bread."
To make a spot on Applebee's Honey Grilled Salmon copycat recipe, it's all about getting the sauce right. This sweet, tangy and slightly spicy sauce goes perfectly with salmon, but can also be used on chicken or ribs. Just be sure to watch the sauce closely as it cooks in case it starts to bubble over. If it sounds like I'm speaking from experience, you're right—oh, what a beautiful mess I made on one attempt. So, cook the sauce slowly, and watch it closely as it thickens. If it gets too thick, you can always add a bit of water to thin it out. I suggest serving this salmon with almond rice pilaf as they do in the restaurant. You can find my recipe here on the site.

Benihana Japanese Fried Rice
Read moreThe talented chefs at Benihana cook food on hibachi grills with flair and charisma, treating the preparation like a tiny stage show. They juggle salt and pepper shakers, trim food with lightning speed, and flip the shrimp and mushrooms perfectly onto serving plates or into their tall chef's hat.
One of the side dishes that everyone seems to love is the fried rice. At Benihana this dish is prepared by chefs with precooked rice on open hibachi grills, and is ordered a la cart to complement any Benihana entrée, including Hibachi Steak and Chicken. I like when the rice is thrown onto the hot hibachi grill and seems to come alive as it sizzles and dances around like a bunch of little jumping beans. Okay, so I'm easily amused.
