While working on this clone, I couldn't help thinking of Steve Martin and Bernadette Peters in The Jerk enjoying "the best pizza in a cup ever." Applebee's has taken a slice of key lime pie out of the pie pan and put it into a 6-ounce rocks glass. The key lime filling for this clone is thickened on your stovetop, and the topping is made by combining key lime juice and sweetened sour cream. Try to find key limes for this recipe, but any lime juice will work in a pinch if key limes or bottled key lime juice is hard to track down. Chill the filling for a few hours in your fridge before building these 4 servings with graham cracker crumbs on the bottom, and whipped cream on top. It's really good stuff. Probably the best key lime pie in a cup ever.

Key Lime Filling
  • 4 egg yolks
  • 1 14-ounce can sweetened condensed milk
  • 1/2 cup key lime juice
Key Lime Topping
  • 1/2 cup sour cream
  • 2 teaspoons key lime juice
  • 3 tablespoons powdered sugar

  • 1/2 cup plus 2 teaspoons graham cracker crumbs

      1. Beat egg yolks on high speed in a medium bowl for 2 to 3 minutes or until light yellow. Add sweetened condensed milk and beat again for another 30 seconds. Transfer this mixture into a medium saucepan over medium/low heat and stir in 1/2 cup key lime juice. Continue heating for 8 to 10 minutes, stirring often, until the mixture begins to bubble. Remove key lime filling from the heat and cool, then cover and chill for 3 to 4 hours.

      2. Make the key lime topping by combining the sour cream, key lime juice, and powdered sugar. Cover and chill.

      3. To build each serving, spoon 2 tablespoons of graham cracker crumbs into a 6-ounce rocks glass. Spoon in 1/3 cup key lime filling, and top it off with 2 tablespoons of the topping. Add a pile of whipped cream, sprinkle about 1/2 teaspoon of graham crumbs on the whipped cream and serve.

      Makes 4 servings.

I made this today and my husband loved it! Instead of raw graham cracker crumbs, I first cooked them with a teaspoon of butter on the stove for a few minutes. Thanks so much for the recipe!

I had this at Applebee's AFTER making it from this recipe. This recipe is for sure the best!! It's very rich, though, so a "shooter" is about all you can handle. Waaaaay good!!!
