To make a version of this frozen treat at home, with fat reduced by about 75 percent, you will need fat-free vanilla ice cream, Nestle Quick, and low-fat milk. Oh, and a blender.

The cheesy little biscuits that come with your meal at the country's largest seafood chain were first served in 1990. According to a company spokesperson, it's the menu item the chain has become best known for. In 1997 the chain served over 435 million Cheddar Bay Biscuits.

Each of those small biscuits has around 7 grams of fat, but we're going to change that. Here is a delicious light version of the biscuits which tastes just as good as the original. Using reduced-fat Bisquick and reduced-fat shredded Cheddar cheese these biscuits are now less than half the fat of the originals.

If you've ever laid your fork into one of these, you know how tough it is to take just one bite. Now you don't worry about stopping there. TSR drastically reduces the fat in this clone of the Shoney's creation with the help of reduced-fat devil's food cake mix and fat-free ice cream. Just be sure to get the type of ice cream that comes in a rectangular container, so that slicing and arranging the ice cream on the cake is make easier. Breyer's makes excellent fat-free vanilla ice cream and the container works well for this recipe. You may have some ice cream left over, which you can eat with the small cake or cupcakes you can bake with the cup of leftover cake batter.

According to one Chili's spokesperson, "The Guiltless Grill selections are extremely popular. Guiltless Grill was a smash from the start." This clone recipe makes two huge dinner-size portions, just like the restaurant serves. The recipe should even be enough for three, perhaps four—if there's a big dessert coming.

Here's another item that has been on Chili's Guiltless Grill menu from the start. It's a chicken sandwich that gets its sweet smoky flavor from the marinated chicken that is grilled over an open flame. The chicken is stacked on whole wheat buns with lettuce and tomato; and a tasty, yet simple-to-make honey mustard sauce is drizzled over the top. If your chicken fillets are too plump, just give'em a few whacks with a tenderizing mallet and rejoice in the extra calories you work off.

Despite the name this TSR reduced-fat version of one of Shoney's most popular country-style items is not fried. If it were, it surely wouldn't have nearly one-fourth the fat of the original, which you can order at any of the 900 restaurants in this mostly Southern U.S. chain. But you'll swear this version tastes like the original, because we still bread the steak, and then spray it with a light coating of cooking spray. Once it's baked, then broiled to a golden brown, the steak is smothered with low-fat gravy. Use these low-fat cooking tricks to make a country steak that's just as good as the fried version.

Menu Description: "Pecan-crusted chicken, served sliced and chilled on salad greens tossed with Balsamic Vinaigrette dressing, topped with mandarin oranges, sweet-glazed pecans, celery, dried cranberries and bleu cheese."

With dried cranberries, mandarin orange wedges, bleu cheese, pecan-crusted chicken breast, and a delicious sweet and sour balsamic vinaigrette, it's no wonder this salad is the top pick at one of America's first casual dining chains. And don't be intimidated by all the ingredients. The dressing is a cakewalk since you pour everything except the garlic into a blender. The pecan-crusted chicken is a simple breading process, and the chicken cooks up in a snap. You'll be spending most of your time at the chopping block as you hack pecans into little pieces and get the lettuce, garlic and celery ready. I've designed this recipe to serve four, but if there are only two of you, you can easily cut it in half.

When Glen Bell opened the first Taco Bell in 1962, he probably never envisioned that one day he would see his name on more than 10,000 locations serving his special brand of Americanized Mexican fast food. He probably also didn't expect there would one day be a clone recipe for a reduced-fat version of his popular menu item.

You'll want to start this one several hours before, or even the day before you plan to eat it, so that the chicken can properly marinate.

You may not know that the delicious "pizzas" you get from the world's largest Mexican food chain have 36 grams of fat. If you like Taco Bell's Mexican Pizza as much as I do, you'll be happy to know that you can make a home version with only 10 grams of fat, and fewer calories, too.

The secret fat savings come from baking, rather than frying, the flour tortillas. You'll also say "adios" to much of the fat by using reduced-fat Cheddar and Jack cheeses. I picked reduced-fat for these, because the fat-free stuff does not melt well when the pizza is baked.

This cheesecake at T.G.I. Fridays tastes like a decadent, fat-filled dessert—creamy and delicious. It's hard to believe that there is not a single gram of fat in a serving. This clone recipe will solve the problems of other fat-free cheesecake recipes—too tough or too grainy— and produce a dessert that tastes amazing, just like the popular cheesecake you can order at one of America's most successful restaurant chains.

You'll need a 9-inch springform pan for this recipe, and be sure to let the cream cheese come to room temperature before you use it. Serve this one to your friends and watch the surprise when you tell them it's 100 percent fat-free.
