KFC (Kentucky Fried Chicken) Mashed Potatoes & Gravy

My KFC gravy recipe here duplicates the tasty tan stuff that's poured over fluffy mashed potatoes at the Colonel's chain of restaurants. And since the original recipe contains MSG (as does their chicken), my recipe was designed with that "secret" ingredient. You may choose to leave out the MSG, which is a natural amino acid found in vegetables and other foods, but your clone won't taste like the real thing without it.

Panda Express Fried Rice
Read moreA popular staple of any Chinese chain is fried rice, so it better be good, and the version served at Panda Express most certainly is. Here's my easy Panda Express Fried Rice recipe for when you need a stress-free, low-cost side for your entrées. But I do suggest that you cook the white rice several hours or even a day or two before you plan to make the finished dish. I found that the cooked rice called for in this recipe works best when it's cold.
As for a shortcut, bagged frozen peas and carrots will save you from the hassle of petite-dicing carrots since the carrots in those bags are the perfect size to produce an identical clone. And they're already cooked.

This Top Secret Recipe makes a lasagna that tips the scale at nearly 10 pounds and will feed hungry mouths for days, with every delicious layer copied directly from the carefully dissected Olive Garden original.
I found a few credible bits of intel in a video of an Olive Garden chef demonstrating what he claims is the real formula on a midday news show, but the recipe was abbreviated for TV and the chef left out some crucial information. One ingredient he conspicuously left out of the recipe is the secret layer of Cheddar cheese located near the middle of the stack. I wasn’t expecting to find Cheddar in lasagna, but when I carefully separated the layers from several servings of the original dish, there was the golden melted cheesy goodness in every slice.
This clone recipe will make enough for 8 big portions, but if you make slightly smaller slices this is easily enough food to fill twelve lasagna-loving bellies. If you like lasagna, you're going to love this version.

Rao's Homemade Marinara Sauce
Read moreGetting a table at the 123-year-old original Rao’s restaurant in New York City is next to impossible. The tables are “owned” by regulars who schedule their meals months in advance, so every table is full every night, and that’s the way it’s been for the last 38 years. The only way an outsider would get to taste the restaurant’s fresh marinara sauce is to be invited by a regular.
If that isn’t in the stars for you, you could buy a bottle of the sauce at your local market (if they even have it). It won't be fresh, and it's likely to be the most expensive sauce in the store, but it still has that great Rao's taste. An even better solution is to copy the sauce for yourself using my easy Rao's Homemade Marinara Sauce copycat recipe.
The current co-owner of Rao’s, Frank Pellegrino Jr., told Bon Appetit in 2015 that the famous marinara sauce was created by his grandmother many years ago, and the sauce you buy in stores is the same recipe served in his restaurants. The ingredients are common, but correctly choosing the main ingredient—tomatoes—is important. Try to find San Marzano-style whole canned tomatoes, preferably from Italy. They are a little more expensive than typical canned tomatoes, but they will give you some great sauce.
After 30 minutes of cooking, you’ll end up with about the same amount of sauce as in a large jar of the real thing. Your version will likely be just a little bit brighter and better than the bottled stuff, thanks to the fresh ingredients. But now you can eat it anytime you want, with no reservations, at a table you own.

Panda Express Chow Mein
Read moreI got lucky on the day I picked up a box of chow mein from this huge Chinese chain because they had just run out. This meant that I could watch from the sidelines as they whipped up a fresh batch in a giant wok over a high flame in the completely visible kitchen, and I was able to take plenty of mental notes. The whole dish took just a few minutes for the enthusiastic chef to prepare, and before I knew it I was out the door with a huge box of hot chow mein ready for hacking.
Just like the real Panda Express Chow Mein, the beauty in this re-creation is its simplicity. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also called Chinese stir fry noodles) which are easy to find and cheap, and dark soy sauce to get that great caramel color. And if you don’t have a wok for this, a large skillet with sloped sides for tossing will work just fine.

Texas Roadhouse Rolls & Cinnamon Butter
Read moreI never thought dinner rolls were something I could get excited about until I got my hand into the breadbasket at Texas Roadhouse. The rolls are fresh out of the oven and they hit the table when you do, so there’s no waiting to tear into a magnificently gooey sweet roll topped with soft cinnamon butter. The first bite you take will make you think of a fresh cinnamon roll, and then you can’t stop eating it. And when the first roll’s gone, you are powerless to resist grabbing for just one more. But it’s never just one more. It’s two or three more, plus a few extra to take home for tomorrow.
Discovering the secret to making rolls at home that taste as good as Texas Roadhouse Rolls involved making numerous batches of dough, each one sweeter than the last (sweetened with sugar, not honey—I checked), until a very sticky batch, proofed for 2 hours, produced exactly what I was looking for. You can make the dough with a stand mixer or a handheld one, the only difference being that you must knead the dough by hand without a stand mixer. When working with the dough add a little bit of flour at a time to keep it from sticking, and just know that the dough will be less sticky and more workable after the first rise.
Roll the dough out and measure it as specified here, and after a final proofing and a quick bake—plus a generous brushing of butter on the tops—you will produce dinner rolls that look and taste just like the best rolls I’ve had at any famous American dinner chain.

KFC Extra Crispy Fried Chicken (Improved)
Read moreTo get their Extra Crispy Chicken so crispy, KFC breads the chicken two times. This double breading gives the chicken its ultra craggy exterior and extra crunch, which is a different texture than the less crispy original recipe fried chicken that’s breaded just once and pressure fried.
As with my KFC Original Fried Chicken recipe, we must first brine the chicken to give it flavor and moisture all the way through, like the real thing, then the chicken is double breaded and deep-fried until golden brown. KFC uses small chickens which cook faster, but small chickens can be hard to find. If your chicken parts are on the large side, they may not cook all the way through in the 12 to 15 minutes of frying I’m specifying here. To be sure your chicken is cooked, start frying with the thickest pieces, like the breasts, then park them in a 300-degree oven while you finish with the smaller pieces. This will keep the chicken warm and crispy, and more importantly, ensure that they are cooked perfectly all the way through.
On my CMT show Top Secret Recipe I chatted with Winston Shelton, a long-time friend of KFC founder Harland Sanders. Winston saw the Colonel's handwritten secret recipe for KFC Original Recipe chicken, and he told me one of the secret ingredients is Tellicherry black pepper. It's a more expensive, better-tasting black pepper that comes from the Malabar coast in India, and you should use it here if you can find it. Winston pulled me aside and whispered this secret to me when he thought we were off-camera, but our microphones and very alert cameramen caught the whole thing, and we aired it.

McDonald's Chicken McNuggets
Read moreWhen dippable tempura-battered chicken chunks made their debut at select McDonald’s restaurants in 1981, America couldn’t get enough…literally. Supply chain issues prevented the burger chain from meeting high demand in all markets for many months, and it wasn’t until two years after the McNuggets were first introduced that they were finally available at every McDonald’s in the country.
The famous finger food was invented by McDonald’s first executive chef, Rene Arend, who discovered that reconstituted chicken blended with flavor enhancers, enrobed with tempura batter, and deep-fried until golden brown, made a simple, portable snack. The chicken was formed into four “B” shapes designed for dipping—the bell, the bow-tie, the ball, and the boot—and served along with child-friendly dipping sauces such as ranch and barbecue, so the breakout finger food product became a huge winner with kids.
To make a home version that looks and tastes like McNuggets I dissected a real one and discovered that the chicken in the middle is coated twice: once with dry, seasoned breading, and then once more with wet batter before frying. The chicken in McNuggets is puréed not ground, and the best way to prepare it is with a food processor. “Ground” chicken in grocery stores is often puréed, then pushed through a die to look more appealing in the package, similar to how ground beef is presented. For my Chicken McNugget recipe below, it's best to use a home food processor, but if you don’t have one, ground chicken from your butcher will work.
If I had to identify a secret ingredient in this hack it would be Knorr chicken bouillon powder. It contains many of the same ingredients found in real Chicken McNuggets, so once you get that crucial flavoring component, you’re well on your way to an amazing knockoff of an iconic American food.

Church's Chicken Original and Spicy Fried Chicken
Read moreOn the list of inspirational American food success stories is the small fried chicken restaurant George W. Church opened across the street from the Alamo in San Antonio, Texas in 1952. In the years since Church's Chicken exploded into a monster chicken chain with over 1000 restaurants in 35 countries.
The truth is, no chain would grow that big without good food. George's special homestyle fried chicken formula was his secret recipe to success, and as far as I can tell, nobody has properly hacked it. Until now.
The ingredient list for this crispy chicken is smaller than what you might find in “The Colonel’s” kitchen, which is good because you won’t have to go out and buy 11 herbs and spices. Much of the flavoring in this chicken recipe develops during the brining process, which also has the added benefit of keeping the chicken moist and juicy inside. I discovered that Church’s marinates their chicken for 12 hours, so I worked backward and designed a brine that would do its job in exactly half a day.
For my Church's Fried Chicken copycat recipe, you'll need to plan ahead to give your chicken time to marinate. But that's a good thing—your patience will be rewarded with the down-home taste of delicious fried chicken, just like what grandma used to make.

Long John Silver's Batter-Dipped Fish
Read moreJerrico, Inc., the parent company for Long John Silver's Seafood Shoppes, got its start in 1929 as a six-stool hamburger stand called the White Tavern Shoppe. Jerrico was started by a man named Jerome Lederer, who watched Long John Silver's thirteen units dwindle in the shadow of World War II to just three units. Then, with determination, he began rebuilding. In 1946 Jerome launched a new restaurant called Jerry's and it was a booming success, with growth across the country. Then he took a chance on what would be his most successful venture in 1969, with the opening of the first Long John Silver's Fish 'n Chips. The name was inspired by Robert Louis Stevenson's Treasure Island. In 1991 there were 1,450 Long John Silver Seafood Shoppes in thirty-seven states, Canada, and Singapore, with annual sales of more than $781 million. That means the company holds about 65 percent of the $1.2 billion quick-service seafood business.

Wendy's Seasoned Potatoes
Read moreReviewers of Wendy’s tasty seasoned potatoes point out that the skin-on slices stay crispy even when cool. That tells us the breading is most likely made with a non-wheat flour blend, an assumption confirmed by the website ingredients list for the potatoes where nary a gram of wheat flour is included. Yep, these seasoned potatoes are gluten-free.
Wendy’s uses a blend of food starches plus rice flour for the breading on their version, but my tests confirmed that cornstarch is all you’ll need for a great clone of Wendy's seasoned potatoes. The secret process starts by coating the potato slices with the dry breading mix, which contains salt. The salt in the blend will draw water out of the potatoes, magically transforming the dry breading into a wet batter in about 20 minutes.
When all the breading is wet, the potatoes go into the oil for partial frying. After resting a bit, they get dropped in again until golden brown and crispy. And, thanks to the cornstarch, these potatoes will stay crispy, even when they’re completely cool. Pretty cool right? Give my Wendy's seasoned potatoes copycat recipe a try.

KFC (Kentucky Fried Chicken) Potato Wedges
Read more“Don’t call them fries,” says KFC about its popular side made with sliced, skin-on russet potatoes. What sets these potatoes apart from all the others is the secret breading made with a similar seasoning blend to the one used for Colonel's Original Recipe Fried Chicken. To achieve the proper crispiness, the potatoes are par-fried, frozen, then fried again until golden brown.
One important ingredient that completes the flavor is MSG. Monosodium glutamate is a food additive derived from glutamic acid, which is an important amino acid found in abundance in nature, food, and in you right now. Over the last 60 years of study and use, MSG has not only been found harmless in normal amounts, but tests have shown glutamate to be a chemical messenger that benefits gut health, immunity, and brain functions such as memory and learning. In addition to all of that, it imparts a unique savoriness that enhances flavors in other ingredients and makes your food taste amazing. Using MSG in your food is, literally, smart cooking.
Another important ingredient is ground Tellicherry black pepper, a select black pepper from India. Winston Shelton, a friend of Harland Sanders who invented the first high-volume pressure fryers for KFC, confirmed this. Shelton recalled seeing the ingredient when Sanders showed him the secret formula for the fried chicken seasoning he had scribbled on a piece of paper.
While we were shooting the first episode of my TV Show, Top Secret Recipe, Winston pulled me aside and whispered to me that Tellicherry pepper is crucial to creating the unique KFC aftertaste. It was a great tip, and fortunately, we caught that moment on camera and you can see it in the show. Later, I conducted a side-by-side taste test with common black pepper and Tellicherry black pepper and discovered Winston was right. If you want the best taste for your copycat KFC Potato Wedges, you'll need Tellicherry pepper, which you can find online and in some food stores. Be sure to grind it fine before using it.
For my KFC Potato Wedges recipe, just two russet potatoes are all it takes to make the equivalent of a large serving of fried potato wedges, which will be enough for at least four people.

Rao's Traditional Meatballs
Read moreTweaking a classic recipe with a few special prep tricks leaked to me by a server was the key to developing this spot-on hack for the famous meatballs from the iconic 125-year-old Italian dining room. With just two locations in the U.S. (Los Angeles and New York), sinking your fork into a fresh meatball at the restaurant requires quite a trip for most people, but my Rao's Traditional Meatballs recipe, refined through multiple batches, will make you a meatball master in your own kitchen, producing ten 5½-ounce meatballs that look and taste like the real thing.
Fortunately, I could squeeze in a reservation at the Las Vegas Rao’s location a few weeks before it closed its doors forever at Caesar’s Palace in late November 2021. While there, I made sure to ask my server for any information about the recipe, and was informed about the secret two-step process described in this hack to create giant meatballs that are cooked through, but so moist that they practically crumble when cut with a fork.
Rao’s has shared a meatball recipe in the past, but don’t be fooled. That recipe produces decent meatballs, but they are not the same as what’s served in the restaurant. If you want to make meatballs that taste like the classic original, use my Rao's meatballs recipe below.

The Old Spaghetti Factory Rich Meat Sauce
Read moreSince 1969, The Portland, Oregon-based Old Spaghetti Factory has been filling bellies with a comfort food menu full of fabulous pasta choices, and this signature meat sauce has been the sauce of choice at the 43-unit chain for more than five decades.
To reverse-engineer the sauce for my Old Spaghetti Factory Rich Meat Sauce copycat recipe, I started by rinsing the original sauce in a wire mesh strainer to see what secrets could be revealed. Once the solids were visible, I noted the size and ratios of ground beef, onion, celery, and garlic, and I also noticed that there were no bits of tomato left behind. This meant the tomato was puréed, but rather than using canned tomato purée, I opted for richer tomato paste. Lemon juice helped match the zing of the original, and I rounded out the flavor with just a bit of sugar.
This recipe will make 3½ cups of meat sauce, which is enough for several huge plates of pasta. Use it on spaghetti as they do at the restaurant, or whatever pasta shape you prefer.

IKEA Swedish Meatballs
Read moreI've always known IKEA as a giant global furniture chain, but before researching these tasty little balls of meat, I wasn't aware that IKEA is also one of the world's largest food retailers. And at the very top of the list of the most popular menu items at the stores' cafeteria-style IKEA Restaurant & Bistro, are the Swedish Meatballs, which are consumed at a rate of 150 million each year.
The chain's secret Swedish meatballs are moist and delicious and come smothered in a cream sauce, with a side of lingonberry jam. But there's no need to work your way through the giant rat maze of furniture that is the ingenious layout of each store to get to the cafeteria when you can now duplicate them at home with my IKEA Swedish Meatball copycat recipe below, and very little effort.
The secret is to use ground beef that is 20 percent fat and a food processor to puree all of the ingredients. If you don't have a food processor, a blender works, too. Form the balls with a 1 1/4-inch dough scoop or teaspoon measure, and keep your hands thoroughly moistened to prevent the meat mixture from sticking.
After you make the meatballs, you'll probably want to make the secret cream sauce that goes over the top, and that recipe is here, too.

Qdoba 3-Cheese Queso
Read moreThere are many acceptable ways to formulate good queso, but to make this specific queso the Qdoba way, the ingredients must be correct – and most copycat recipes seem to get it wrong. A few recipes get one of the peppers and two of the cheeses right, but pretty much every recipe out there is a bit of a mess that I will now save you from.
Quesos can be made with a variety of cheeses that include queso fresco, asadero, and Muenster, but this particular queso includes a cheese you probably didn’t expect: Swiss. That cheese is slow to melt, so we’ll shred it first, along with the Jack. And you won't need to gum up the queso with flour or cornstarch by making a roux because the white American cheese in the mix contains either sodium citrate or sodium phosphate—additives that help the cheese melt smoothly and stay that way.
Authors of recipes that call for tomatoes in this dish haven’t looked closely. Those are red bell peppers and they are roasted, peeled, and seeded along with the poblano and jalapeños before they are diced and added to the cheese sauce. The sauce cooks on low heat, never bubbling, so that it stays smooth and creamy.
When done, your queso might seem thin in the pan, but it will thicken as it cools to a perfect consistency for dipping tortilla chips, or as a topping for tacos and burrito bowls.

Popeyes Famous Fried Chicken
Read morePopeyes Famous Fried Chicken and Biscuits has become the third-largest quick-service chicken chain in the world in the twenty-two years since its first store opened in New Orleans in 1972. (KFC has the number-one slot, followed by Church's Chicken). Since then, the chain has grown to 813 units, with many of them overseas in Germany, Japan, Jamaica, Honduras, Guam, and Korea.
While making my Popeyes Fried Chicken copycat recipe, I tested several spices and I found that the right blend of cayenne and white pepper bring the same heat as the original. Try my recipe below and see what you think.

In the late sixties, Dan Evins was a Shell Oil "jobber" looking for a new way to market gasoline. He wanted to create a special place that would arouse curiosity, and would pull travelers off the highways. In 1969 he opened the first Cracker Barrel just off Interstate 40 in Lebanon, Tennessee, offering gas, country-style food, and a selection of antiques for sale. Today there are over 529 stores in 41 states, with each restaurant still designed as a country rest stop and gift store. In fact, those stores which carry an average of 4,500 different items apiece have made Cracker Barrel the largest retailer of American-made finished crafts in the United States.
Those who know Cracker Barrel love the restaurant for its delicious home-style breakfasts and this casserole, made with hash brown-sliced potatoes, Colby cheese, milk, beef broth, and spices. My Cracker Barrel Hash Brown Casserole copycat recipe is designed for a skillet that is also safe to put in the oven (so no plastic handles). Jimmy Dean Breakfast Sausage

His singing success launched a television career on ABC with The Jimmy Dean Show, where Roy Clark, Patsy Cline, and Roger Miller got their big breaks. The TV exposure led to acting roles for Jimmy, as a regular on Daniel Boone, and in feature films, including his debut in the James Bond flick Diamonds are Forever. Realizing that steady income from an acting and singing career can be undependable, Jimmy invested his show-biz money in a hog farm. In 1968 the Jimmy Dean Meat Company developed the special recipe for sausage that has now become a household name. Today the company is part of the Sara Lee Corporation, and Jimmy retired as company spokesman in 2004.
My Jimmy Dean breakfast sausage copycat recipe re-creates three varieties of the famous roll sausage that you form into patties and cook in a skillet. Use ground pork found at the supermarket—make it lean pork if you like—or grind some up yourself if you have a meat grinder.

Olive Garden Breadsticks

My guess is that the breadsticks are proofed, and then sent to each restaurant where they are baked until golden brown, brushed with butter and sprinkled with garlic salt. Getting the bread just right for a great Olive Garden breadstick hack was tricky—I tried several different amounts of yeast in all-purpose flour, but then settled on bread flour to give these breadsticks the same chewy bite as the originals. The two-stage rising process is also a crucial step in this much requested Olive Garden breadstick copycat recipe.

In the last forty years KFC has experienced extraordinary growth. Five years after first franchising the business, Colonel Harland Sanders had 400 outlets in the United States and Canada. Four years later there were more than 600 franchises, including one in England, the first overseas outlet. In 1964 John Y. Brown, Jr., a young Louisville lawyer, and Jack Massey, a Nashville financier, bought the Colonel's business for $2 million. Only seven years later, in 1971 Heublein, Inc., bought the KFC Corporation for $275 million. Then in 1986, for a whopping $840 million, PepsiCo added KFC to its conglomerate, which now includes Pizza Hut and Taco Bell. That means PepsiCo owns more fast food outlets than any other company including McDonald's.
At each KFC restaurant, workers blend real buttermilk with a dry blend to create the well-known KFC buttermilk biscuits recipe that have made a popular menu item since their introduction in 1982. Popeyes Homestyle Mac & Cheese
Read moreIn late 2021, Popeyes debuted a new macaroni and cheese recipe made with cheddar, cream, and butter, and browned nicely on top like it was just pulled out of Mom’s home oven. After analyzing the real thing from Popeyes in my kitchen lab and experimenting with multiple batches, I was eventually able to reproduce the dish so the same great mac & cheese taste can now come out of your OWN home oven. And the best part: it's super easy to make. You'll like that.
I created my Popeyes Mac & Cheese copycat recipe using the same ingredients used by the chain: cheddar cheese, whole milk, heavy cream, unsalted butter—all wholesome foods without any weird stuff. We'll make a quick roux for the cheese sauce using a little flour, and I’m also adding easy-melting American cheese into the mix for its keen ability to keep the sauce from becoming grainy, as cheddar-based sauces tend to do.
Combine the sauce with the pasta, brown the top under a broiler, and you just home-styled your way to a delicious mac & cheese masterpiece.

Cracker Barrel Meatloaf
Read moreThe Southern-themed chain famous for its gift shops filled with made-in-America products and delicious homestyle food is also known to have a particularly good meatloaf. This dish ranks high in popularity, right up there with the Chicken ‘n Dumplins and the Hash Brown Casserole, so a good Cracker Barrel Meatloaf copycat recipe is long overdue.
Making meatloaf is easy. What’s hard is making it taste like the meatloaf at Cracker Barrel which is tender and juicy, and flavored with onion, green pepper, and tomato. I sought to turn out a moist and tender loaf of meat, and one that’s not dry and tough, but my first attempts were much too dense. I wasn’t happy about that, but my dog was thrilled.
After playing around with the eggs-to-breadcrumbs-to-milk ratios and being careful to use gentle hands when combining everything and pressing it into the loaf pan, the final batch was a winner and I get to pass it along to you.
It's best to use a meatloaf pan here which has an insert that lets the fat drip to the bottom, away from the meat. A regular loaf pan will still work, but you’ll want to pour off the fat in the pan before slicing.

KFC Chicken Pot Pie (Improved)
Read moreKFC's Chicken Pot Pie is a classic. It's packed with lots of shredded white and dark meat chicken, potatoes, peas, and carrots; all of it swimming in a delicious creamy gravy and topped with a tantalizing flakey crust. It seems more like homemade food than fast food. And now it can be made at home better than ever before with this improved hack of my original recipe (found here). The crust now has a better flavor (more butter!), and the gravy tastes closer to the original with the addition of more spices.
You can make my KFC Chicken Pot Pie copycat recipe using ramekins or small oven-safe baking dishes, or get some recyclable aluminum pot pie pans you can find in many supermarkets. Those pans are the perfect size for four single servings, and they make cleanup easy after the feast.

Olive Garden Five Cheese Ziti al Forno

Creating my Olive Garden’s famous baked ziti copycat recipe would not be possible without a perfect clone of the chain’s popular five-cheese marinara sauce. I started with my previous recipe of the plain marinara for Olive Garden’s Chicken Parmigiana and enhanced it with the addition of five kinds of Italian cheese and heavy cream.
Determining which five types of cheese are in a prepared sauce is tough without some insider assistance, so before cooking I focused my efforts on convincing a server to ask the chef for the list…and I got it! The blend of cheese used here in the sauce comes straight from the kitchen of my local Olive Garden. When you taste it, you’ll know the intel was legit.
After the sauce is added to the pasta it’s topped with a cheese-and-breadcrumb mix called “ziti topping,” then it’s browned under a salamander (for the restaurant version) or a broiler (for your version). The result is a beautiful dish with great sauce and a cheesy topping that should satisfy even the pickiest baked ziti fanatics.

Cracker Barrel Country Fried Steak
Read moreIt finally happened. I recently created a new clone recipe for Cracker Barrel's Country Fried Steak only to realize much later that I had already cloned it eight years before in my book, Top Secret Recipes Step-by-Step. But I'm okay with the unplanned re-do because the final result turned out to be a more accurate re-creation, with several improvements to my first hack from many moons ago.
Most chicken-fried steak recipes, including my previous Cracker Barrel Country Fried Steak copycat recipe, call for cube steak—round steak that’s been scored in a butcher’s tenderizer—which isn’t always as tender as you may like it to be. Connective tissue that remains intact will make some bites too chewy, yet if the steak is over-tenderized it will fall apart when cooked.
To ensure that every bite is perfectly tender, my solution is to avoid cube steak altogether and start with lean ground beef, as with recipes for Salisbury steak or Hamburg steak. Forming the ground beef into steaks and then freezing them so they hold together makes the breading and cooking process easy, and when served, every bite of the finished product is guaranteed to be fork-tender.
Of course, this iconic clone recipe wouldn’t be complete without a spot-on hack for the famous sawmill gravy that gets spooned over the top. I’m including a fresh hack for the gravy that improves on my original recipe, and it's super easy to make with just six ingredients.

KFC (Kentucky Fried Chicken) Original Recipe Fried Chicken
Read moreOne of the most protected, discussed, and sought-after secret recipes in the food world is KFC's Original Recipe Fried Chicken. Long ago I published my first hack of the famous formula, but the recipe, which was based on research from "Big Secrets" author William Poundstone, includes only salt, pepper, MSG, and flour in the breading, and not the blend of eleven herbs and spices we have all heard about. The fried chicken made with my first recipe is good in a pinch, but it really needs several more ingredients to be a true clone.
That is why, over twenty years later, I was happy to get another crack at the secret when we shot the pilot episode for my CMT TV series Top Secret Recipe. In the show, I visited KFC headquarters, talked to friends of Harlan Sanders who had seen the actual recipe, and even checked out the Corbin, Kentucky, kitchen where Harland Sanders first developed his chicken recipe. During that four-day shoot I was able to gather enough clues about the secret eleven herbs and spices to craft my new KFC Original fried chicken copycat recipe—one that I believe is the closest match to the Colonel's secret fried chicken that anyone has ever revealed.

Subway Cookies
Read moreThe chewy, fresh-out-of-the-oven cookies sold at Subway are baked daily at the sandwich shop with frozen dough pucks provided by Otis Spunkmeyer. So, I guess you could say that this copycat recipe for several of Subway’s most popular cookies is also a clone of several of Otis Spunkmeyer’s most popular cookies.
Perhaps the biggest secret revealed here is the butter/oil blend. Most cookie recipes call for just softened butter as the fat component, but that can add too much butter flavor. According to the ingredients list for these cookies, they contain a blend of oil and butter, which worked best as a 2-to-1 ratio of butter to oil after baking through a number of test batches. This fat blend helped improve the texture with crispier edges and a chewier middle, and the butter flavor was perfectly muted. Also, just one egg is added here—most cookie recipes like this add two—to make the cookies less cakey.

King's Hawaiian Original Hawaiian Sweet Rolls
Read moreA recipe for Portuguese sweet bread inspired the soft rolls that became a big hit at Robert Tiara's Bakery & Restaurant in Honolulu, Hawaii in the 1950s. It wasn’t long before Robert changed the name of his thriving business to King’s Hawaiian, and in 1977 the company opened its first bakery on the mainland, in Torrance, California, to make the now-famous island sweet rolls sold in stores across the U.S.
King’s Hawaiian Rolls are similar to Texas Roadhouse Rolls in that they are both pillowy, sweet white rolls, so it made sense to dig out my Texas Roadhouse Rolls clone recipe and use it as a starting point. These new rolls had to be slightly softer and sweeter, so I made some adjustments and added a little egg for color. And by baking the dough in a high-rimmed baking pan with 24 dough balls placed snugly together, I ended up with beautiful rolls that rose nicely to the occasion, forming a tear-apart loaf just like the original King's Hawaiian Rolls, but with clean ingredients, and without the dough conditioners found in the packaged rolls.
Use my King's Hawaiian Sweet Rolls copycat recipe for sandwiches, sliders, or simply warmed up and slathered with soft European butter.

Five Guys Cajun Fries
Read moreWhen I first attempted making this Five Guys Cajun Fries recipe using large, unpeeled russet potatoes I had just picked up at the grocery store, the fries came out of the oil looking miserably discolored and had an unpleasant soggy texture. They were dark brown and soft, rather than light brown and crispy like the amazing fries from Five Guys. I was sure to properly prep the fries by soaking them in water to wash away excess starch, then par-frying them at a low temperature, allowing them to cool, then frying them again at a higher temperature. But my initial results were a failure, and then I got distracted.
Over the next two weeks, I got busy with other recipes and neglected my unused potatoes. When I went back to the potatoes, I noticed they had become much softer and looked like they were about to sprout. Not wanting to let them go to waste, I cut the potatoes and fried them, and I was shocked to see how different they looked from my earlier batch. Rather than soggy and limp, these fries came out golden brown and crispy from tip to tip. Do old potatoes make better fries?
I remembered that Five Guys stacks bags of the potatoes used for the fries in the restaurant, and I wondered if I could see dates on those bags. I dashed back over to the restaurant and, sure enough, the potatoes were dated. The bags at one end of the stack were just one day old, and the bags closest to the kitchen were eight days old. I later discovered that Five Guys uses specific Idaho potatoes because they are denser than other russets. I knew I couldn't get those special potatoes, but I discovered that I could still make crispy, more flavorful fries like Five Guys if I just let common russet potatoes sit out for a week or so before slicing and frying them.
Just like the restaurant, the potatoes in my Five Guys Cajun Fries copycat recipe are fried twice, then you'll sprinkle them with the Cajun seasoning as soon as they come out of the oil. At Five Guys, they salt the fries first and then add Cajun seasoning, but I’ve included all the salt you’ll need in the secret seasoning mix below to eliminate that additional salting step.

Red Lobster Cheddar Bay Biscuits
Read moreOrder an entree from America's largest seafood restaurant chain and you'll get a basket of some of the planet's tastiest garlic-cheese biscuits served up on the side. For many years, the Cheddar Bay Biscuits recipe has been the most-searched-for clone recipe on the Internet, according to Red Lobster. As a result, several versions are floating around, including one that was at one time printed right on the box of Bisquick baking mix.
The problem with making biscuits using Bisquick is that if you follow the directions from the box you don't end up with a very fluffy or flakey finished product, since most of the fat in the recipe comes from the shortening that's included in the mix. On its own, room temperature shortening does a poor job creating the light, airy texture you want from good biscuits, and it contributes little in the way of flavor. So, we'll invite some cold butter along on the trip -- with grated Cheddar cheese and a little garlic powder. Now you'll be well on your way to delicious Cheddar Bay. Applebee's Chicken Wonton Tacos
Read moreMenu Description: “A deliciously different way to taco. Tangy grilled chicken, sweet Asian chile sauce and dumpling sauce stuffed into crispy wonton shells and topped with a crunchy slaw and cilantro mix.”
Re-creating Applebee's Chicken Wonton Tacos requires cloning four parts; none of which are difficult: grilled chicken, coleslaw, secret dumpling sauce, and the crispy wonton shell to hold it all together. For the chicken, we’ll grill a couple of thighs and chop them up. Then we’ll use bottled sweet chili sauce—usually found in your grocery store where Asian foods are parked—to punch up the flavor.
The coleslaw is easy with a dressing that has only five ingredients, and it’s best when it has some time to sit and marinate. You can slice the cabbage yourself, but a coleslaw kit that’s a combo of sliced cabbage and shredded carrots is a big time-saver. Just measure out 4 cups of the cabbage blend and mix it with the minced cilantro and dressing.
Wonton taco shells are not a thing you can usually find in stores, so we’ll make our own using wonton wrappers and a skillet of hot oil. When the oil is hot, add a wonton wrapper and use tongs to fold it over diagonally as it fries until it’s crispy on both sides. It takes less than a minute to fry each wonton taco shell, and you’ll get better as you go. Just be sure to leave plenty of room in the shell for the delicious fillings to come.

Rao's Homemade Bolognese Sauce
Read moreThe family recipes of Rao’s Italian restaurant have been enjoyed for over 125 years, but it’s only been since 1992 (starting with the marinara sauce) that the chain has been selling the ultra-popular bottled sauces under the Rao’s Homemade label, which is on track to become a billion-dollar company.
One of the many popular sauces now available from Rao’s Homemade is the Bolognese sauce, a blend of tomatoes, veggies, crumbled meatballs, and pancetta. Like my Rao’s Marinara Sauce clone recipe, this hack starts with canned San Marzano tomatoes with the famous red, white, and green San Marzano label. Those are true San Marzano tomatoes grown in the San Marzano region of Italy, and they are superior to other San Marzano-style canned tomatoes in my local grocery stores, many of which aren’t from Italy.
I would suspect that the meatballs crumbled into Rao’s Bolognese sauce are the famous Rao’s meatballs, which Rao’s sells in the restaurants and frozen food aisles, and which I hacked here. For my Rao’s Bolognese Sauce recipe, you’ll need ½ cup of crumbled meatballs using either this top secret recipe, or a bag of frozen Italian meatballs found in most stores. Obviously, my Rao’s meatball hack will give you the best ingredients for this recipe, but I found that the frozen meatballs still work great, as long as they’re good meatballs. This sauce will only be as good as the meatballs you choose.
The slow simmer marries the flavors, and after about an hour you’ll have a great Bolognese to spoon over tagliatelle, tortellini, gnocchi, or whatever you want.

Chipotle Pollo Asado
Read moreIn 2022, for the first time in its 29-year history, Chipotle debuted a new style of grilled chicken, and it became an instant hit. At least it was at the Chipotle near me, where the Pollo Asado was ordered more than any other protein, according to servers there. But the new flavor is for a limited-time-only, and when it’s gone, my exclusive Chipotle Pollo Asado recipe may be the only way to satisfy your deep desire.
It appears that Chipotle’s new chicken is marinated in a vacuum meat tumbler similar to the way the Mexican chicken chain El Pollo Loco does it. I sure wish I had one of those awesome tumblers because they speed up and improve the marinating process, producing moist chicken packed with flavor all the way through. But those tumblers are expensive and bulky, and I have absolutely zero space left in my kitchen to store one. So, an overnight marinade, along with a bit of patience, must suffice.
The next day, grill your marinated chicken, chop it up, toss it with the secret citrusy sauce hacked here, add some fresh cilantro and lime juice, then use it as you see fit on burritos, tacos, salads, and bowls.

Olive Garden Chicken Parmigiana
Read moreMenu Description: “Two lightly fried parmesan-breaded chicken breasts are smothered with Olive Garden’s homemade marinara sauce and melted Italian cheeses. We serve our Chicken Parmigiana with a side of spaghetti for dinner.”
Chicken parmigiana is a forever favorite, and it’s not a difficult dish to whip up at home. But for it to taste like the Olive Garden signature entree, we’ll need to take some very specific steps.
Olive Garden’s chicken is salty and moist all the way through, so we must first start by brining the chicken. Give yourself an extra hour for this important marinating step. The marinara sauce used on the chicken is an Olive Garden specialty and no bottled sauce compares, so we’ll make our own from scratch using canned crushed tomatoes and the formula below.
While the sauce cooks, filling your house with its intoxicating aroma, the chicken is breaded and browned. When the marinara is done, top the chicken with the sauce and mozzarella and stick it under your hot broiler until bubbling.
Hopefully, everyone at your house is hungry, because the Olive Garden dinner portion is two chicken fillets, and my Olive Garden Chicken Parmigiana recipe will yield a total of four 2-piece servings. Add a small serving of spaghetti on the side, topped with more of the delicious sauce, and you'll have a perfect match to the restaurant plate.

Shakey's Mojo Potatoes
Read moreSherwood Johnson survived a case of malaria while serving in World War II, which left him with some residual nerve damage and a new nickname: Shakey. Despite his affliction, Shakey Johnson was still able to bang out toe-tapping Dixieland jazz on the piano night after night in the pizza parlor he opened in Sacramento in 1954, where live jazz accompanied the thin crust pizza and cold pitchers of beer.
Shakey’s became the first franchised pizza restaurant in the U.S., and by 1974 the chain had 500 stores across the U.S. The #1 dish is clearly the made-to-order pizza, but the chain’s trademarked crispy battered potato slices are a close runner-up and a perfect tasty subject to hack.
Recipes that claim complete pancake mix is the secret breading ingredient in Mojo Potatoes fail to observe that pancake mix contains sugar, and there is no noticeable sweetness in the breading of the Mojos. I also decided that dry breading wouldn't work since in my tests the paprika failed to bloom and give the coating a perfect hue like it does when the mixture is wet.
I eventually settled on a simple wet batter made with seasoned salt, flour, and little cornstarch for crunch to best match the flavor, crispiness, and red/orange tint of the real thing from America’s first pizza chain. Use this original technique, and these handy step photos, to make extra crispy potatoes the Shakey's way.

By diversifying the menu with new products such as this kicked-up version of the famous sandwich, the chain grew over the years to become the #1 chicken restaurant in the nation, and this sandwich is now one of the most popular picks on the menu board.
The secrets to a good clone of the Chick-fil-A Spicy Deluxe Chicken Sandwich lie in the brine and the breading. I recently obtained some insider intel confirming the long-standing rumor that pickle juice is in the brine. I hadn’t called for it in my prior Chick-fil-A chicken sandwich copycat recipe because the listed ingredients for the sandwich didn’t include it. I’m not sure why that is, but my latest test versions with the pickle juice were noticeably better, so now it’s in there. You should also know that MSG is an important ingredient in both the brine and breading, so don’t leave that out if you want the best clone.
Use this special slicing trick to get three perfect sandwich-size cutlets out of each chicken breast, and then give the chicken a nice 4-hour brine. Your patience will be rewarded with one of the best Chick-fil-A chicken sandwich hacks to ever come out of a home kitchen.

Pizza Hut Meaty Marinara Pasta
Read moreOne of two pasta dishes currently on the pizza giant’s menu, the Meaty Marinara Pasta was first introduced in a 2008 April Fool’s publicity stunt when Pizza Hut claimed it was changing its name to “Pasta Hut.” No one fell for the prank but they did fall for the pasta, and that's why the Tuscani Creamy Chicken Alfredo Pasta and Meaty Marinara Pasta have been on the menu ever since. The sauce is the big secret here; it's simple and classic, but customized to produce a marinara with that distinct Pizza Hut taste. And the recipe will make more than enough pasta to go around.
My Pizza Hut Meaty Marinara Pasta copycat recipe is an easy one. After browning the seasoned beef, you add it to the sauce, simmer the sauce until thick, then spread it over one pound of rotini pasta in a baking dish in two layers so that every bite is filled with flavor. Sprinkle shredded mozzarella over the top and melt it until golden brown under your broiler. Boom! No one can resist. You rule.
This simple and inexpensive meal will feed eight, and leftovers keep well in the fridge for a couple of days.

Chili's Original Chili
Read moreOver the years I've hacked a bunch of items from Chili's menu, including their Fajitas, Baby Back Ribs, Salsa, Chili Queso, Southwestern Eggrolls, Chicken Crispers, Boneless Wings, and more, but it wasn’t until recently that I got the chance to create a recipe for the Chili's award-winning Original Chili. Why it took so long, I have no idea.
The chili served at Chili’s is a Texas-style con carne recipe, which traditionally means no beans and no tomato. You won’t find any beans in this recipe or chunks of tomato, but their chili does have a tomato base to boost flavor, so I’m adding that into the mix by including one 6-ounce can of tomato paste. As it turns out, that small can is just the right amount.
The preparation technique for my Chili's Original chili copycat recipe is simple: brown the beef, drain off the fat, then add some of the fat back to the empty pan to sauté the onions and peppers in. When those are done, you add the beef back to the pan along with the remaining ingredients and simmer for 1½ hours. That will be just long enough to braise the beef and tenderize it, and to thicken the chili to a perfect consistency.
When the chili’s done, top each serving with a cheddar/pepper Jack blend, and some crispy tortilla bits. Then pass out the spoons.

Domino's Loaded Tots
Read moreDomino’s oven-baked starter, which debuted in early 2023, reveals a great way to transform a boring bag of potato tots into a dish with pizzazz. The pizza chain’s new Loaded Tots are built with a delicious pile of crispy potato tots, topped with cheese, a secret sauce, and other good stuff that I probably should have been stacking on potato tots years ago.
For my Domino’s Loaded Tots recipe, I picked the two bestsellers of the three versions offered at Domino’s for you to clone: Philly Cheesesteak and Cheddar Bacon. The Philly Cheesesteak version includes onion, green pepper, steak, and Alfredo sauce, and the Bacon Cheddar is topped with crispy crumbled bacon and garlic Parmesan sauce. Which one will you be making?
Once you decide, simply arrange a couple of dozen cooked tots on a baking sheet and smother them with the mozzarella/cheddar cheese blend, a few toppings, and the secret sauce hack, then bake for just 8 minutes until it’s melty and magnificent.

Applebee's Brew Pub Pretzels & Beer Cheese Dip
Read moreThe chain’s popular appetizer brings three secret recipes together in one dish: the pretzels, the beer cheese, and the honey Dijon mustard dip. And I’ve got original hacks for all three formulas that will make enough for lots of bellies.
Bavarian pretzels are traditionally bathed in a lye solution before they’re baked to give them a dark shiny brown skin. Food-grade lye, when cooked, is safe to eat, but it’s not an ingredient usually found at the corner food store. So, to make my Applebee’s Beer Pub Pretzels recipe more convenient, I’m opting for a baking soda bath to darken these pretzels. They don’t have the same shine as lye-bathed pretzels, but if you use enough baking soda, your pretzels will come out beautifully caramel brown, just like the real thing.
For my Applebee’s Beer Cheese Dip recipe, I had to come up with a good way to melt white cheddar, which can be tricky since it’s hard to find mild (softer) white cheddar. Most white cheddar I found was either sharp or extra sharp, and when I made a sauce using a roux, the finished product came out much too grainy. On my next attempt, I tried a different approach by melting a chunk of Velveeta Queso Blanco in some milk before adding the shredded white cheddar. Thanks to sodium citrate, a cheese melting aid that’s in Velveeta, the sauce came out smooth as silk, and I was thrilled.
After your pretzels and beer cheese are done, mix up the easy honey Dijon mustard dipping sauce in a small bowl, and you’re ready to serve a gang of pretzel lovers with 12 Bavarian pretzel sticks and plenty of beer cheese and mustard sauce for dipping.

Pei Wei Wei Better Orange Chicken
Read moreThis 220-unit downscaled version of P.F. Chang’s China Bistro targets the lunch crowd with a smaller menu that features bento boxes, bowls, and small plates. Obviously, a clone is needed for this one, stat.
The name “Wei Better Orange Chicken” is a competitive callout to Panda Express's signature orange chicken, which is made with pre-breaded and frozen chicken. Pei Wei claims its orange chicken is prepared each day from scratch with chicken that is never frozen, so we’ll craft our Pei Wei Better Orange Chicken recipe the same way. But rather than assemble the dish in a wok over a high-flame fast stove like they do at the restaurant, we’ll prepare the sauce and chicken separately, then toss them with fresh orange wedges just before serving.
By the way, Pei Wei Better Orange Chicken goes very well with white or brown rice, so don’t forget to make some.

Panera Bread Baked Potato Soup
Read moreSince Panera Bread makes all its ingredients known, it's not hard to find out that there’s no chicken broth in the original recipe, yet every copycat recipe I located online calls for chicken broth, as well as other ingredients clearly not found in Panera's version. Unlike those other recipes, I use the same or similar ingredients to those listed on the company’s website in my Panera Bread Potato Soup copycat recipe, so you can make the closest replica at home.
One of the ingredients in the soup, according to the posted list, is yeast extract. This tasty ingredient adds an MSG-like savoriness to Panera’s soup, and we can duplicate it by using nutritional yeast—often called "nooch"—now found in many stores, including Whole Foods. A little bit of nooch will provide the umami deliciousness that replaces chicken broth or bouillon.
Panera keeps its soup gluten-free by thickening it with a combination of rice flour and cornstarch, rather than wheat flour. I’ve included those ingredients as well so that your clone is similarly gluten-free. Use the steps below and in about an hour you’ll have 8 servings of a soup that is a culinary doppelganger to Panera Bread's Baked Potato soup, and at a mere fraction of the cost.

KFC Extra Crispy Tenders
Read moreAs you can probably guess, KFC's Extra Crispy Tenders are chicken tenderloins coated with the same delicious breading as KFC’s Extra Crispy Chicken. These tenders come in servings of two, three, six, or twelve, with your choice of dipping sauces on the side including buffalo, barbecue, and the new Finger Lickin' Good Sauce.
To duplicate these chicken fingers at home, we’ll resort to a similar prep technique to the one used for the Extra Crispy Chicken: the chicken is brined for 2 hours to give it more flavor and juiciness, then the tenders are double-breaded for an extra-crunchy coating.
An important secret revealed in this breading recipe is the use of a specific type of ground black pepper. For the best copy of KFC Extra Crispy Tenders, you'll want to use Tellicherry black pepper, which is premium black pepper ground from mature peppercorns that have had time to develop more flavor. The unique aftertaste of KFC chicken is attributed to this special spice, so it’s worth the time to track it down.
Tellicherry black pepper costs a little more than the younger, more common black pepper, but if you want a good clone of the famous crispy fried chicken, it’s an essential ingredient. Be sure to grind the pepper fine before adding it.

Jack Link's Original Beef Jerky
Read moreUsing his grandfather’s old recipes for sausage and smoked meats, Jack Link created his first kippered beef sticks in Wisconsin in 1986, and they quickly became a popular snack throughout the state. But that wasn’t enough for Jack, so he invested in a packaging machine to expand into other markets, and eventually—with the help of a successful Sasquatch-themed marketing campaign—Jack Link’s became the #1 jerky brand in the U.S.
Beef jerky is usually made in a dehydrator designed to circulate air around the food at a low temperature. The temperature for drying beef jerky in a dehydrator is typically 130 to 140 degrees, which is a lower temperature than you can reach with a conventional home oven. But that doesn’t mean we can’t use our home oven to make a perfectly acceptable beef jerky hack that tastes like Jack’s. And while Jack uses a smoker for his beef jerky, you won’t need one to give your jerky a similar smoky flavor.
The pineapple juice in the marinade is an important part of the taste, but its primary contribution is a unique enzyme that helps break down the proteins in the tough cut of meat to tenderize it. Soy sauce and beef bouillon contribute to the umami savoriness of the jerky, and liquid hickory smoke is used in my Jack Link's Original Beef Jerky copycat recipe as a quick way to add the smoky flavor.
The marinating takes 24 hours and the oven drying takes between 6 to 8 hours, so get the sliced beef into the bath in the morning, and you’ll be munching on homemade Jack Link's beef jerky by dinnertime the next day. And to help you out, I'm including step photos.

Maggiano's Beef Tenderloin Medallions
Read moreFor many years this entrée has been a top menu choice at Maggiano's, the 54-unit Italian chain from Brinker, the same company that operates Chili’s Grill & Bar. The $30 restaurant dish consists of three 2½-ounce tenderloin steaks, swimming in a fantastic balsamic cream sauce with sliced portabello mushrooms—but a home version is only six easy steps away, and it won't hit you in the wallet as hard as the pricey original.
Cracking this dish required a perfect hack of the balsamic cream sauce, and that came quickly after obtaining some very reliable information from my incredibly helpful server/informant at a Las Vegas Maggiano’s. Let’s call him Skippy.
According to Skippy, the balsamic cream sauce is as simple as mixing a sweet balsamic glaze with the chain’s creamy Alfredo sauce. So, I first got a sample of Maggiano’s Alfredo sauce and figured out how to replicate it. Once that was done, I measured increments of balsamic glaze into the Alfredo sauce until the color and flavor matched the original. The rest of the recipe was easy.
My recipe will make two servings and includes preparation for the tenderloins and sauce. If you’d like to complete the dish the way it’s served at the restaurant (as in the photo), add some garlic mashed potatoes on the side, using my hack for Olive Garden Garlic Mashed Potatoes.

Bush's Country Style Baked Beans
Read moreIn the Bush’s Beans commercials, Duke, the family golden retriever, wants to sell the secret family recipe, but the Bush family always stops him. The dog is based on the Bush family’s real-life golden retriever, and the campaign, which began in 1995, made Bush’s the big dog of the canned baked beans market practically overnight. Their confidential baked beans formula is considered one of the top 10 biggest recipe secrets in the U.S.
Bush Brothers & Company had been canning a variety of fruits and vegetables for over 60 years when, in 1969, the company created canned baked beans using a cherished recipe from a family matriarch. Sales jumped from 10 thousand cases in the first year to over 100 thousand cases in 1970. And just one year later sales hit a million cases. Today Bush’s makes over 80 percent of the canned baked beans sold in the U.S., and the secret family recipe remains a top food secret, despite Duke’s attempts. A replica of the original recipe book—without the original recipe in it (drat!)—is on display at the company's visitor center in Chestnut Hill, Tennessee.
I chose to hack the “Country Style” version of Bush’s Beans because I don’t think the Original flavor has enough, uh, flavor. Country Style is similar to Original, but richer, with more brown sugar. My Bush's Country Style baked beans copycat recipe starts by soaking dry small white beans in a brine overnight. The salt in the water helps to soften the skins, but don’t soak them for more than 14 hours or the skins may begin to fall off. You can skip this step if you've got a fancy Instant Pot using my directions below.
My first versions tasted great but lacked the deep brown color of the real Bush’s beans, which include caramel coloring—an ingredient that can be hard to find on its own. I eventually discovered that the “browning” sauce, Kitchen Bouquet, will add the dark caramel color needed to our home version of the beans so that they’ll look just like the real thing.
