This is a simple fast food sandwich to clone, and it's one of my favorites to make at home. This sandwich has been around since March of 1991, and has been a popular choice at Carl's Jr. outlets dotting the western United States.
Chicken fillets are marinated in teriyaki sauce and grilled. The chicken is then stacked on a whole wheat bun along with American cheese, lettuce, mild green chili peppers and a spicy southwestern-style spread. - 4 skinless chicken breast fillets
- 1 cup teriyaki marinade (Lawry's is best)
Santa Fe Sauce
- 1/4 cup mayonnaise
- 1/4 teaspoon paprika
- 1/8 teaspoon ground cayenne pepper
- 1/4 teaspoon curry powder
- Pinch salt
- 4 whole wheat hamburger buns
- 4 iceberg lettuce leaves
- One 4-ounce can mild green chili peppers, well-drained
- 4 slices American cheese
1. One a time, wrap each chicken fillet in plastic wrap and flatten it with a mallet so that the thickness is uniform throughout the fillet—about 1/2-inch thick. Marinate the flattened chicken fillets in the teriyaki marinade in a shallow bowl for at least 1 hour.
2. Preheat a clean barbecue to medium grilling heat.
3. Prepare the sauce in a small bowl by mixing the mayonnaise with the paprika, cayenne pepper, curry powder, and salt.
4. Grill the chicken for 5 to 8 minutes per side, or until done.
5. Brown the faces of each bun in a hot frying pan.
6. Spread a tablespoon of sauce on the faces of each bun, top and bottom.
7. On each bottom bun place a lettuce leaf, then a green chili pepper. You want the pepper to be spread over most of the lettuce. To do this, slice the pepper down the middle and spread it open so that it covers more territory. When sliced open like this, some peppers are big enough for 2 sandwiches.
8. Place one chicken fillet on each of the sandwiches, on top of the chili pepper.
9. Place a slice of American cheese on the chicken.
10. Top it all off with the top bun.
Makes 4 sandwiches.

Fuddruckers Hamburger Seasoning

You decorate your hamburger creation with sliced tomato, onions, lettuce, pickles, peppers, relish and whatever else is offered at the toppings bar. Everyone builds their burger differently, yet the company claims these are "The World's Greatest Hamburgers." What makes them so good? Fuddruckers boasts that it uses only 100% USDA choice, aged ground beef.
What Fuddruckers won't tell you is which secret ingredients make up the delicious burger seasoning used on each of those patties. After analyzing a sample of the blend used in the shakers back by the griddle, I've come up with this simple Fuddruckers Hamburger Seasoning copycat recipe which you can now mix up at home, and pour into an empty shaker bottle. Sprinkle it onto 1/3- or 1/2-pound ground beef patties just before they cook, then grab some fresh buns in the bakery section of your store. Add your choice of other fresh toppings, and you'll soon have a hamburger clone that tastes just like those served at the more than 230 Fuddruckers.

Perkins Family Restaurants Potato Pancakes
Read moreWhen Matt and Ivan Perkins tasted the food at Smitty's Pancake House in Seattle, they were smitten. Soon they had purchased the rights to William Smith's recipes, which had been perfected at his renowned restaurant that opened just after the end of World War II. In 1958, the brothers opened their own Smitty's restaurants in Cincinnati, Ohio, and eventually changed the name from Smitty's to Perkins.
If you've never tried potato pancakes from Perkins, or any restaurant, now's the time with this copycat recipe. I've given you the option to make the potatoes with frozen hash brown potatoes or with fresh potatoes you shred by hand. It's up to you. Wienerschnitzel Chili Sauce
Read moreThe real version of this chili sauce comes to each Wienerschnitzel unit as concentrated brown goo in big 6-pound, 12-ounce cans. After adding 64 ounces of water and 15 chopped hamburger patties the stuff is transformed into the familiar thick and spicy chili sauce dolloped over hot dogs and French fries at America's largest hot dog chain. The proper proportion of spices, tomato paste, and meat is crucial; but the real challenge in creating my Wienerschnitzel chili copycat recipe is finding a common grocery store equivalent for modified food starch that's used in the real chili sauce as a thickener.
After a couple of days in the underground lab with Starbucks lattes on intravenous drip, I came out, squinting at the bright sunshine, with a solution to the chili conundrum. This secret combination of cornstarch and Wondra flour and plenty of salt and chili powder makes a chili sauce that says nothing but "Wienerschnitzel" all over it.

T.G.I. Friday's Potato Skins

Perfume salesman Alan Stillman was a single guy in New York City in 1965, looking for a way to meet women who lived in his neighborhood. He figured out a way to get their attention: buy a broken-down beer joint in the area, jazz it up, and call it "The T.G.I.F." to attract the career crowd. Within a week, police had barricaded the area to control crowds flocking to Alan's new restaurant. The restaurant made $1 million in its first year—a lot of dough back then. Soon restaurateurs across the country were imitating the concept.
In 1974 T.G.I. Friday's invented an appetizer that would also be copied by many in the following years. Potato skins are still the most popular item on the T.G.I. Hot Dog on a Stick Hot Dog on a Stick (Corn Dog)
Read moreOne hot summer day in 1946 Dave Barham was inspired to dip a hot dog into his mother's cornbread batter, then deep-fry it to a golden brown. Dave soon found a quaint Santa Monica, California location near the beach to sell his new creation with mustard on the side and a tall glass of ice-cold lemonade. For a perfect homemade Hot Dog On A Stick, be sure you find the shorter turkey hot dogs, not "bun-length". In this case, size does matter. Snag some of the disposable wood chopsticks from a local Chinese or Japanese restaurant next time you're there and start dipping.
Update 5/3/17: If your hot dogs are browning too fast, turn the temperature of the oil down to 350 degrees. And rather than using chopsticks, thick round skewer sticks (corn dog skewers) found in houseware stores and online will work much better.

Claim Jumper Cheese Potatocakes

Chili's Chocolate Chip Paradise Pie

One thing that makes this dessert special is the way it comes to your table sizzling in a cast iron skillet—just like fajitas. The chocolate chip cookie and graham cracker crust "pie" sits in a hot skillet on top of bubbling cinnamon butter. It's topped with a scoop of vanilla ice cream, and then finished with walnuts, chocolate and caramel syrup. If you're a cloning perfectionist and want to present this dessert exactly like they do at the restaurant, you'll need a small skillet for each serving. Small cast iron skillets are the best, but any 6- or 8-inch saute pan will do fine. Just be sure your pan is real hot to get that same Chili's "sizzle" when you lay in the goodies. If you've got a big crew to feed and don't have enough skillets for each serving, you can add the cinnamon butter to individual serving plates, microwave the plates until the butter melts, then build each serving on the warm plates. Update 1/13/17: For an improved recipe, replace the 1/2 cup shortening with 3/4 cup softened unsalted butter. Also, reduce the baking soda to 1 1/2 teaspoons. 2 teaspoons is too much. Also, raising the oven temperature a little—to 300 degrees F—will help with browning and still keep the cookies chewy. Bake for 15 to 18 minutes.

GrandMa's Oatmeal Raisin Big Cookies

Long John Silver's Batter-Dipped Fish
Read moreJerrico, Inc., the parent company for Long John Silver's Seafood Shoppes, got its start in 1929 as a six-stool hamburger stand called the White Tavern Shoppe. Jerrico was started by a man named Jerome Lederer, who watched Long John Silver's thirteen units dwindle in the shadow of World War II to just three units. Then, with determination, he began rebuilding. In 1946 Jerome launched a new restaurant called Jerry's and it was a booming success, with growth across the country. Then he took a chance on what would be his most successful venture in 1969, with the opening of the first Long John Silver's Fish 'n Chips. The name was inspired by Robert Louis Stevenson's Treasure Island. In 1991 there were 1,450 Long John Silver Seafood Shoppes in thirty-seven states, Canada, and Singapore, with annual sales of more than $781 million. That means the company holds about 65 percent of the $1.2 billion quick-service seafood business.
