California Pizza Kitchen The Original BBQ Chicken Chopped Salad

Menu Description: "Chopped lettuce, black beans, sweet corn, jicama, cilantro, basil, crispy corn tortilla strips, and Monterey Jack cheese tossed together in our herb ranch dressing. Topped with chopped BBQ chicken breast, diced tomatoes and scallions."
It was probably the popularity of CPK's BBQ chicken pizza that inspired this twist on the original chopped salad. I think the herb ranch dressing that's made here is much better than any ranch dressing you can buy in bottles in your local supermarket, but you can still choose to use one of those on this salad to speed things up, if you prefer. You might also consider substituting ingredients listed here for lower-fat ingredients, such as low-fat mayonnaise, sour cream and fat-free milk. As with any clone, consider this formula as your springboard into a custom dish that suits your own specs.

P.F. Chang's Mongolian Beef

The beef comes out tender as can be, and the simple sauce sings to your taste buds.I designed my P.F. Chang's Mongolian Beef copycat recipe using a wok, but if you don't have one, a sauté pan will suffice. You may need to add more oil to the pan to cover the beef in the flash-frying step.
P. F. Chang's secret sauce is what makes this dish so good, and it's versatile. If you don't dig beef, you can substitute with chicken. Or you can brush it on grilled salmon.

Rao's Homemade Marinara Sauce
Read moreGetting a table at the 123-year-old original Rao’s restaurant in New York City is next to impossible. The tables are “owned” by regulars who schedule their meals months in advance, so every table is full every night, and that’s the way it’s been for the last 38 years. The only way an outsider would get to taste the restaurant’s fresh marinara sauce is to be invited by a regular.
If that isn’t in the stars for you, you could buy a bottle of the sauce at your local market (if they even have it). It won't be fresh, and it's likely to be the most expensive sauce in the store, but it still has that great Rao's taste. An even better solution is to copy the sauce for yourself using my easy Rao's Homemade Marinara Sauce copycat recipe.
The current co-owner of Rao’s, Frank Pellegrino Jr., told Bon Appetit in 2015 that the famous marinara sauce was created by his grandmother many years ago, and the sauce you buy in stores is the same recipe served in his restaurants. The ingredients are common, but correctly choosing the main ingredient—tomatoes—is important. Try to find San Marzano-style whole canned tomatoes, preferably from Italy. They are a little more expensive than typical canned tomatoes, but they will give you some great sauce.
After 30 minutes of cooking, you’ll end up with about the same amount of sauce as in a large jar of the real thing. Your version will likely be just a little bit brighter and better than the bottled stuff, thanks to the fresh ingredients. But now you can eat it anytime you want, with no reservations, at a table you own.

Carrabba's Chicken Marsala

To create my Carrabba's Chicken Marsala recipe, I ordered the dish to go, with the sauce on the side, so that I could separately analyze each component. After some trial and error in the underground lab, I found that re-creating the secret sauce from scratch is easy enough with a couple small cans of sliced mushrooms, a bit of prosciutto, some Marsala wine, shallots, garlic and a few other good things.Cooking the chicken requires a very hot grill. The restaurant chain grills chicken breasts over a blazing real wood fire, so crank your grill up high enough to get the flames nipping at your cluckers (not a euphemism). If your grill has a lid, keep it open, so you can watch for nasty flare-ups.

Olive Garden Chicken Scampi

This chicken scampi dish is a big favorite of Olive Garden regulars. Chicken tenderloins are lightly breaded and sautéed along with colorful bell peppers and chopped red onion. Angel hair pasta is tossed into the pan along with a healthy dose of fresh scampi sauce.The sauce is really the star, so you might think about doubling the recipe. If you're cooking for two, you can prepare my Olive Garden Chicken Scampi copycat recipe for the table in one large skillet, saving the remaining ingredients for another meal. If you're making all four servings at once, you'll need two skillets. If you can't find fresh chicken tenderloins (the tender part of the chicken breast), you can usually find bags of them in the freezer section.

California Pizza Kitchen (CPK) Thai Crunch Salad

You can plan ahead for my delicious California Pizza Kitchen (CPK) Thai Crunch salad copycat recipe by first grilling the chicken and chilling it, then preparing the cilantro-lime dressing and the peanut sauce in advance. The menu description says that the salad is topped with "crispy rice sticks," but they look to me like crispy bean threads, cooked in a flash when dropped into hot oil for a few seconds. The crispy wontons are made from frying thinly sliced wonton wrappers in the same hot oil.For the edamame (soybeans), look in the frozen food section, and if they're still in their pods, be sure to take them out before measuring and tossing them into the salad. Once you've got everything chilled and chopped, building each dish is a breeze, and you'll have four huge dinner-size salads that will each be enough for an entire meal.

Sweet Baby Ray's Honey Barbecue Sauce
Read moreBrothers Dave and Larry Raymond came up with a top secret recipe for barbecue sauce that was so good they entered it in Chicago’s Rib Fest barbecue competition in the late ‘80s. The fourth time they entered, in 1985, they took home the 2nd place trophy. By the following year, they were selling bottles of their now-famous sauce in stores, and the brand became a huge success.
The brothers sold their $30-million-a-year sauce business in 2005, and the brand kept growing. By 2008, Sweet Baby Ray’s was America's #2 best-selling barbecue sauce.
Now, with my Sweet Baby Ray's Honey Barbecue Sauce copycat recipe, you can make 2 cups of a taste-alike sauce with mostly common ingredients plus pineapple juice, celery salt, and tamarind paste to help nail down the familiar award-winning taste.

Roadhouse Grill Baby Back Ribs

El Pollo Loco Flame-Broiled Chicken
Read moreEl Pollo Loco, or "The Crazy Chicken," has been growing like mad since it crossed over the border into the United States from Mexico. Francisco Ochoa unknowingly started a food phenomenon internacional in 1975 when he took a family recipe for chicken marinade and opened a small roadside restaurante in Gusave, Mexico. He soon had 90 stores in 20 cities throughout Mexico. The first El Pollo Loco in the United States opened in Los Angeles in December 1980 and was an immediate success. It was only three years later that Ochoa got the attention of bigwigs at Dennys, Inc., who offered him $11.3 million for his U.S. operations. Ochoa took the deal, and El Pollo Loco grew from 17 to more than 200 outlets over the following decade.

Cracker Barrel Baked Apple Dumplin
Read moreOne of the best choices you will make in life is having this dish for dessert when you’re at Cracker Barrel. They call it a “dumplin” but it’s just a little streusel-covered apple pie, served up hot in its own small baking dish with two scoops of vanilla bean ice cream on top, and drizzled with warm apple/caramel sauce—it's good stuff. Take a bite and you may notice the apples inside taste like Cracker Barrel’s Fried Apples side dish, so we'll use my previous hack for that part to bring it all together.

Fleming's Prime Steakhouse Chipotle Cheddar Macaroni and Cheese
Read moreI've never met a macaroni & cheese I didn't like. But there are a few restaurants that push this common side dish to a higher level. I've had mac & cheese made with three or four cheeses, and some that come drizzled with truffle oil. I've had mac & cheese with green pepper in it, and onion, and parsley, and bacon—it all works for me. But at Fleming's Prime Steakhouse, it's about the chipotle. The smoky jalapeño flavor sets this one apart from others, and makes this one of the top side dishes at the upscale steakhouse chain.
For my Fleming's Chipotle Cheddar Macaroni and Cheese copycat recipe below, you'll start with a cheese sauce made with smoked cheddar. There's some minced jalapeño and green onion in there, plus a little ground chipotle pepper. A nice finishing touch comes from the breadcrumb topping that's made with Japanese breadcrumbs, or panko, which is flavored with more ground chipotle. The pasta shape used at Fleming's is called cellentani, which looks like long corkscrews. You could also use cavatappi pasta which are shorter corkscrews, or just go for the traditional elbow macaroni which can found pretty much anywhere.

Carrabba's Spicy Sausage Lentil Soup
Read moreIt's not served every day at Carrabba's Italian Grill, but when this amazing soup is on the menu, consider yourself lucky and snag a bowl. It's chock-full of lentils and other good bits of vegetables and herbs, plus there are big chunks of spicy Italian sausage in every bite.
Use my Carrabba's Spicy Sausage Lentil Soup copycat recipe to easily make it at home. Most of the work here is just chopping stuff up, including a small ham steak, which you can find where the bacon is sold in your market. If you can't find a ham steak, you can slice up some deli ham. Get everything in a pot and let it simmer. In 1 hour, you'll have enough hot, chunky soup for at least a dozen cup-size servings.

Islands Tortilla Soup
Read moreThe entire process for making this soup which Islands serves in "bottomless bowls" takes as long as 3 hours, but don't let that discourage you. Most of that time is spent waiting for the chicken to roast (up to 90 minutes -- although you can save time by using a precooked chicken, see Tidbits) and letting the soup simmer (1 hour). The actual work involved is minimal -- most of your time is spent chopping the vegetable ingredients.
My Islands Tortilla Soup recipe produces a copycat with awesome flavor and texture, since you'll be making fresh chicken stock from the carcass of the roasted chicken. As for the fried tortilla strip garnish that tops the soup, you can go the hard way or the easy way on that step. The hard way makes the very best tortilla strips, and it's really not that hard: Simply slice corn tortillas into strips, fry the strips real quick, then toss the fried strips with a custom seasoning blend. The easy way is to grab a bag of the new habanero-flavored Doritos, which happen to be similar in spiciness to the strips used at the restaurant. Simply crumble a few of these chips over the top of your bowl of soup, and dive in.

Cinnabon Cinnamon Rolls
Read moreIn early 1985, restaurateur Rich Komen felt there was a specialty niche in convenience-food service just waiting to be filled. His idea was to create an efficient outlet that could serve freshly made cinnamon rolls in shopping malls throughout the country. It took nine months for Komen and his staff to develop a cinnamon roll recipe he knew customers would consider the "freshest, gooiest, and most mouthwatering cinnamon roll ever tasted." The concept was tested for the first time in Seattle's Sea-Tac mall later that year, with workers mixing, proofing, rolling, and baking the rolls in full view of customers. Now, more than 626 outlets later, Cinnabon has become the fastest-growing cinnamon roll bakery in the world.

Soup Nazi's Mexican Chicken Chili
Read moreIn Zagat's 1995 New York City Restaurant Survey, Le Cirque 2000, one of the city's most upscale restaurants, received a 25 rating out of a possible 30. In the same guide, Al "The Soup Nazi" Yeganeh's Soup Kitchen International scored an impressive 27. That put the Soup Nazi's eatery in 14th place among the city's best restaurants for that year.
It was common to see lines stretching around the corner and down the block as hungry patrons waited for their cup of one of five daily hot soup selections. Most of the selections changed every day, but of the three days that I was there, the Mexican chili was always on the menu. The first two days, it was sold out before I got to the front of the line. But on the last day, I got lucky: "One extra-large Mexican Chicken Chili, please." Hand over money, move to the extreme left.Below is my Soup Nazi's Mexican Chicken Chili copycat recipe. If you like, you can substitute turkey breast for the chicken to make turkey chili, which was the soup George Costanza ordered on the show.
Update 1/9/17: Replace the 10 cups of water with 8 cups of chicken broth for a shorter simmer time and better flavor. I also like using El Pato tomato sauce (recipe calls for 1/2 cup) for a bit more heat.

The emerging trend of cake pops on blogs and at specialty bake shops caught the attention of the world’s largest coffee house chain. Starbucks research and development chefs figured out how to produce three different flavors for the large coffee chain: tiramisu, rocky road and the most popular flavor: birthday cake hacked here, which celebrates Starbucks’ 40th anniversary. The pops are each made by hand for the chain, so you will do the same with my Starbucks birthday cake pop copycat recipe.

Long John Silver's Batter-Dipped Fish
Read moreJerrico, Inc., the parent company for Long John Silver's Seafood Shoppes, got its start in 1929 as a six-stool hamburger stand called the White Tavern Shoppe. Jerrico was started by a man named Jerome Lederer, who watched Long John Silver's thirteen units dwindle in the shadow of World War II to just three units. Then, with determination, he began rebuilding. In 1946 Jerome launched a new restaurant called Jerry's and it was a booming success, with growth across the country. Then he took a chance on what would be his most successful venture in 1969, with the opening of the first Long John Silver's Fish 'n Chips. The name was inspired by Robert Louis Stevenson's Treasure Island. In 1991 there were 1,450 Long John Silver Seafood Shoppes in thirty-seven states, Canada, and Singapore, with annual sales of more than $781 million. That means the company holds about 65 percent of the $1.2 billion quick-service seafood business.

Panda Express Fried Rice
Read moreA popular staple of any Chinese chain is fried rice, so it better be good, and the version served at Panda Express most certainly is. Here's my easy Panda Express Fried Rice recipe for when you need a stress-free, low-cost side for your entrées. But I do suggest that you cook the white rice several hours or even a day or two before you plan to make the finished dish. I found that the cooked rice called for in this recipe works best when it's cold.
As for a shortcut, bagged frozen peas and carrots will save you from the hassle of petite-dicing carrots since the carrots in those bags are the perfect size to produce an identical clone. And they're already cooked.

Benihana Hibachi Chicken and Steak
Read moreWhen 20-year old Rocky Aoki came to New York City from Japan with his wrestling team in 1959 he was convinced it was the land of opportunity. Just five years later he used $10,000 he had saved plus another $20,000 that he borrowed to open a Benihana steakhouse on the West Side of Manhattan. His concept of bringing the chefs out from the back of the kitchen to prepare the food in front of customers on a specially designed hibachi grill was groundbreaking. The restaurant was such a smashing success that it paid for itself within 6 months.
The most popular items at the restaurant are the Hibachi Chicken and Hibachi Steak, which are prepared at your table on an open hibachi grill. But, since most home kitchens are not fitted with a hibachi grill, you'll have to improvise. It's best to use two pans for my Benihana hibachi chicken and steak copycat recipe below; one for the meat and mushrooms, and the other for the remaining vegetables. And since many of today's cooking surfaces are coated with scratchable, nonstick coatings, we won't be slicing the meat and vegetables while they are sizzling on the hot cooking surface as the Benihana chefs do.

California Pizza Kitchen (CPK) Original Chopped Salad

It's the delicious herb-mustard Parmesan vinaigrette that makes this salad so good. And since freshly made dressings are way better than anything you'll buy in a store, here's a great recipe for vinaigrette that you can use either on the CPK Original chopped salad copycat recipe below, or on any salad you assemble with ingredients on hand. After heating up these vinaigrette ingredients for a couple of minutes, let the mixture cool, and then drizzle a thin stream of olive oil into the dressing as you blend it with an electric mixer on high speed. This will create an emulsion to thicken the vinaigrette and hold all the ingredients together even as the dressing chills.Try more of my CPK copycat recipes for appetizers, soups, and pizza here.

DoubleTree Hotel Chocolate Chip Cookies
Read moreWhen you check in at one of more than 250 hotels run by this U.S. chain, you are handed a bag from a warming oven that contains two soft and delicious chocolate chip cookies. This is a tradition that began in the early 80s using a recipe from a small bakery in Atlanta. All the cookies are baked fresh every day on the hotel premises. The chain claims to give out about 29,000 cookies every day.
Raves for the cookies from customers convinced the hotel chain to start selling tins of the cookies online. But if you've got an insatiable chocolate chip cookie urge that can't wait for a package to be delivered, you'll want to try my DoubleTree Hotel Chocolate Chip cookie copycat recipe below. Just be sure to get the cookies out of the oven when they are barely turning brown so that they are soft and chewy in the middle when cool.

Popeyes Famous Fried Chicken
Read morePopeyes Famous Fried Chicken and Biscuits has become the third-largest quick-service chicken chain in the world in the twenty-two years since its first store opened in New Orleans in 1972. (KFC has the number-one slot, followed by Church's Chicken). Since then, the chain has grown to 813 units, with many of them overseas in Germany, Japan, Jamaica, Honduras, Guam, and Korea.
While making my Popeyes Fried Chicken copycat recipe, I tested several spices and I found that the right blend of cayenne and white pepper bring the same heat as the original. Try my recipe below and see what you think.

Wendy's Seasoned Potatoes
Read moreReviewers of Wendy’s tasty seasoned potatoes point out that the skin-on slices stay crispy even when cool. That tells us the breading is most likely made with a non-wheat flour blend, an assumption confirmed by the website ingredients list for the potatoes where nary a gram of wheat flour is included. Yep, these seasoned potatoes are gluten-free.
Wendy’s uses a blend of food starches plus rice flour for the breading on their version, but my tests confirmed that cornstarch is all you’ll need for a great clone of Wendy's seasoned potatoes. The secret process starts by coating the potato slices with the dry breading mix, which contains salt. The salt in the blend will draw water out of the potatoes, magically transforming the dry breading into a wet batter in about 20 minutes.
When all the breading is wet, the potatoes go into the oil for partial frying. After resting a bit, they get dropped in again until golden brown and crispy. And, thanks to the cornstarch, these potatoes will stay crispy, even when they’re completely cool. Pretty cool right? Give my Wendy's seasoned potatoes copycat recipe a try.

The Avocado Lime Ranch Dressing is best on a Southwestern-style salad like the one on Chick-fil-A’s menu with mixed greens, black beans, corn, spicy chicken, and tortilla strips on top. But it’ll work on just about any mixed greens salad or burrito bowl you come up with at home, or use it as a dip for chicken fingers, taquitos, and Southwestern eggrolls.
For a good home clone, be sure to smash the avocado until no chunks remain and let the dressing sit for at least an hour before you use it so the dried herbs, onion, and garlic can rehydrate, and the flavors can bloom.

Chipotle Carnitas
Read moreBraised and shredded pork shoulder is a staple of Mexican cuisine that Chipotle prepares with a simple blend of flavors, and a surprising ingredient you may not have expected: juniper berries. Once you track those down (they’re easy to find online), the berries are combined with thyme and bay leaves in a braising liquid that will transform your own pork roast into an easily shreddable thing of beauty in under 3 hours. Then you can use your Chipotle carnitas clone on tacos, in burritos, or in a bowl over rice and beans just like they do in the restaurant.
When picking your pork roast, try to find one without too much fat. If your roast has a thick cap of fat on it, trim off the excess. You want some fat in your braising liquid, but if the cap of fat is too thick, it may not fully render down and you’ll get chunks of fat in the shred.
It’s often assumed that the pork butt is from the rear end of the pig, even though cuts from the back region already have a name: ham. The pork butt, also known as a Boston butt, is cut from the other end, the upper shoulder of the pig. It’s called a “butt” because in pre-Revolutionary War New England the roasts were stored and transported in barrels called “butts”, and the confusing name stuck.

Taco Bell Breakfast Crunchwrap
Read moreWhen Taco Bell introduced breakfast to America in 2014, the company had high hopes for its new Waffle Taco: a waffle shaped like a taco, filled with scrambled eggs and sausage, and served with a side of syrup. But the Waffle Taco had less-than-stellar sales and the product was eventually yanked off the breakfast menu.
But another clever morning item, the Breakfast Crunchwrap, continues to sell well at the Mexican food chain. This hexagonal grill-pressed wrap is a variation of the Crunchwrap Supreme, made by wrapping a large flour tortilla around a crispy corn tortilla, meat, cheese, sour cream, lettuce, and tomato (i hacked it in TSR Step-by-Step). When it was introduced in 2005, the Crunchwrap Supreme was Taco Bell’s most successful new product launch.
The Breakfast Crunchwrap looks exactly like a Crunchwrap Supreme from the outside—albeit slightly smaller—but the inside has been swapped out for morning food. The flour tortilla is wrapped around a crispy hash brown patty that’s been slathered with creamy jalapeño sauce and topped with cheese, eggs, and bacon (or sausage). The flour tortilla is folded over six times to make a pinwheel wrap, then the wrap is pressed on a flat grill until golden brown on both sides.

Jim 'N Nick's Bar-B-Q Cheese Biscuits
Read moreThe barbecue at Jim N' Nick's is good food. But it's the irresistible mini cheese biscuits served with every meal that have become the signature specialty of this 40-store chain. The sweet little biscuits are made from scratch every day at each restaurant using the same wholesome ingredients I'm including here in my Jim 'N Nick's Bar-B-Q Cheese Biscuits recipe.
A bag of dry mix can be purchased at the restaurant, but you’re still required to add eggs, butter, cheese, and milk, so why not just make the whole thing from scratch? It's much cheaper than buying the bag of mix, and the biscuits come out better when you use fresh buttermilk rather than relying on the powdered buttermilk included in the dry mix.
Use a mini muffin pan here to make your biscuits the same size as the originals or use a standard muffin pan, if that's all you've got, for bigger muffins. It will take a little longer to cook the larger biscuits (instructions are below), but they will still turn out as addictively delicious as the famous tiny restaurant originals.

KFC Grilled Chicken
Read moreIt took chefs several years to develop what would eventually become KFC's most clucked about new product launch in the chain's 57-year history. With between 70 to 180 calories and four to nine grams of fat, depending on the piece, the new un-fried chicken is being called "KFC's second secret recipe," and "a defining moment in our brand's storied history" in a company press release. The secret recipe for the new grilled chicken is now stored on an encrypted computer flash drive next to the Colonel's handwritten original fried chicken recipe in an electronic safe at KFC company headquarters. Oprah Winfrey featured the chicken on her talk show and gave away so many coupons for free grilled chicken meals that some customers waited in lines for over an hour and half, and several stores ran out and had to offer rain checks. Company spokesperson Laurie Schalow told the Associated Press that KFC has never seen such a huge response to any promotion. "It's unprecedented in our more than 50 years," she said. "It beats anything we've ever done."
When I heard about all the commotion over this new secret recipe, I immediately locked myself up in the underground lab with a 12-piece bucket of the new grilled chicken, plus a sample I obtained of the proprietary seasoning blend, and got right to work. After days of nibbling through what amounts to a small flock of hens, I'm happy to bring you this amazing cloned version of this fast food phenomenon so that you can now reproduce it in your own kitchen.
Find the smallest chicken you can for my KFC grilled chicken copycat recipe, since KFC uses young hens. Or better yet save some dough by finding a small whole chicken and cut it up yourself. The secret preparation process requires that you marinate (brine) your chicken for a couple of hours in a salt and MSG solution. This will make the chicken moist all the way through and give it great flavor. After the chicken has brined, it's brushed with liquid smoke-flavored oil that will not only make the seasoning stick to the chicken, but will also ensure that the chicken doesn't stick to the pan. The liquid smoke in the oil gives the chicken a smoky flavor as if it had been cooked on an open flame barbecue grill.
The grilled chicken at KFC is probably cooked on ribbed metal plates in specially designed convection ovens to get those grill marks. I duplicated that process using an oven-safe grill pan, searing the chicken first on the stove top to add the grill marks, then cooking the chicken through in the oven. If you don't have a grill pan or a grill plate, you can just sear the chicken in any large oven safe sauté pan. If you have a convection function on your oven, you should definitely use it, but the recipe will still work in a standard oven with the temperature set just a little bit higher. After baking the chicken for 20 minutes on each side, you're ready to dive into your own 8-piece bucket of delicious indoor grilled chicken that's as tasty as the fried stuff, but without all the fat.

Gordon Biersch Warm Apple Bread Pudding

I've been searching for the restaurant chain with the best bread pudding recipe, and I think I've found it here at Gordon Biersch. This small, yet growing, microbrewery chain serves great beer, awesome pizza, and a bread pudding that is downright amazing. It could be described as what would materialize out the other side if Jeff Goldblum threw an apple pie, some bread pudding and a cinnamon roll into his teleportation machine from "The Fly," and everything came out the other side combined into a single awesome dessert. The sautéed apples laid into the middle of the bread pudding make other bread puddings I eat now seem like they're missing something. And the homemade caramel sauce, with just a little brown sugar thrown into our clone version, adds a sticky bun flavor you'll have dreams about. No matter how big your dinner feast was, everyone will still somehow find room for this.The original at the restaurant is baked in a deep pan, and the pudding is sliced and served on its side, so for my Gordon Biersch Warm Apple Bread Pudding copycat recipe, you'll want to use the biggest loaf pan you can find. I used a 3-inch deep 10x5-inch loaf pan, and it was full. If your pan is smaller, you may have to leave a bit out. The pudding will swell up out of the pan as it cooks, but it will shrink back down as it cools. Fun to watch. You may want to make this the day before so that the bread pudding can set up in the fridge. When you are ready to serve, nuke a serving for 1 minute until warm, then add the sauce and ice cream and a handful of pecans. It appears the restaurant chain uses egg bread in the pudding, but Texas Toast thick-sliced white bread may be easier to find, and it works just as well.

Wolfgang Puck (Spago) Butternut Squash Soup
Read moreThere are several delicious variations of Wolfgang Puck's butternut squash soup recipe floating around, but as far as I can tell no version comes close to duplicating the amazing stuff served at his flagship restaurant. At the Las Vegas Spago in Caesar's Palace, I recently slurped up the slightly sweetened, pale amber masterpiece with the perfect combination of spices, and then finagled two bowls to go.
Since the soup is completely smooth, running it through a strainer revealed no solid evidence of ingredients; only black specks of various spices were visible. This one was not going to be easy. After many attempts, I finally re-created the subtle background flavors with chopped leek slowly sweated in butter, and one gala apple. I discovered that the apple contributes a perfect sweetness. The rest was easy: poach the leek, squash, and apple in broth until soft; blend everything until smooth; then reheat with the cream and just a little brown sugar.

California Pizza Kitchen (CPK) Sedona White Corn Tortilla Soup Low-Fat
Read moreWhen you get a steaming bowl of great tortilla soup plopped down in front of you, it's tough to stop slurping until you hit bottom. California Pizza Kitchen has just such a soup, but the oil and fried tortilla chips jack up the fat. Never fear. You can use my CPK Sedona White Corn Tortilla Soup recipe below to make a soup that tastes just as good as the original without most of the oil and fat. Fat-free chicken broth stands in well for the regular stuff, and baked corn tortilla chips give the soup its traditional taste and texture. You'll want to use a hand blender for this one, if you've got one. If not, a regular blender or food processor will work fine to purée the soup so that it has the smooth consistency of the original CPK tortilla soup, but with only a miniscule two grams of fat per serving.

Benihana Japanese Fried Rice

They juggle salt and pepper shakers, trim food with lightning speed, and flip the shrimp and mushrooms perfectly onto serving plates or into their tall chef's hat.
One of the side dishes that everyone seems to love is the fried rice. Wendy's Hot Chili Seasoning
Read moreThe little red packets of viscous hot sauce at the fast food giant have a cult following of rabid fans who will do whatever it takes to get their hands on large quantities. One such fan of the sauce commented online, "Are there any Wendy's employees or managers out there who will mail me an entire case of Hot Chili Seasoning? I swear this is not a joke. I love the stuff. I tip extra cash to Wendy's workers to get big handfuls of the stuff." Well, there's really no need to tip any Wendy's employees, because now you can make as much as you want in your own kitchen with my Wendy's Hot Chili Seasoning copycat recipe below.
The ingredients listed on the real Hot Chili Seasoning are water, corn syrup, salt, distilled vinegar, natural flavors, xanthan gum, and extractives of paprika. We'll use many of those same ingredients for our clone, but we'll substitute gelatin for the xanthan gum (a thickener) to get the slightly gooey consistency right. For the natural flavor and color we'll use cayenne pepper, cumin, paprika, and garlic powder, then filter the particles out with a fine wire-mesh strainer after they've contributed what the sauce needs.
My Wendy's Hot Chili Seasoning copycat recipe makes 5 ounces of sauce— just the right amount to fit nicely into a used hot sauce bottle—and costs just pennies to make. Try it on a homemade bowl of Wendy's Chili.

Cinnabon Cinnamon Rolls (Improved)
Read moreI made several discoveries on episode 2 of my CMT Show "Top Secret Recipe" that helped me improve significantly on the recipe for my first clone of Cinnabon Cinnamon Rolls that I first hacked many years ago in my book "More Top Secret Recipes". After interviewing the creator of the Cinnabon roll, Jerilyn Brusseau (aka "Cinnamom"), at her home in Seattle and visiting Cinnabon headquarters in Atlanta, I was able to sleuth out some important clues that make this the closest Cinnabon Cinnamon Roll copycat recipe you'll find. I learned about the unique gooey properties of a specific cinnamon found in Indonesia called Korintje cinnamon, which Cinnabon calls "Makara") and how to give the rolls their signature golden color (buttermilk and baking soda). I also discovered that the dough must rise in your refrigerator for at least 5 hours, and that adding some xanthan gum to the filling will keep the filling from leaking down into the pan as the rolls bake.
Cinnabon master chefs allowed me to step into the development kitchen at Cinnabon headquarters for an up-close demonstration of the rolling and slicing techniques, so the instructions I have laid out for here come straight from the inside, and will give you beautiful rolls that look and taste just like those you get at the mall. In fact, if you follow these instructions carefully, being sure to weigh the ingredients rather than measuring by volume, everyone will be shocked that the delicious finished product came out of your very own kitchen.

Maggiano's Zucchini Fritte
Read moreIn Maggiano’s hit starter, large slices of zucchini are breaded and fried until crispy, sprinkled with Parmesan cheese, and served with a bright lemon aioli for dipping. This is the top pick from the appetizer menu, according to servers at the upscale Italian chain, and I had to be sure my hack could satisfy even the most fervid fans of the original.
The first order of business for my Maggiano’s Zucchini Fritte copycat recipe was to figure out how to replicate the ultra-crispy coating that is a standout feature of the real thing. It’s clear that the zucchini is breaded with panko, but I needed a batter to make the panko stick to the zucchini. My first batter, made with flour, didn’t produce the standout crunchiness of the real thing. So, I called in the cornstarch. Cornstarch batters are notoriously crispy, so I combined cornstarch with the flour for the batter and finally discovered the crunchy breading I was searching for.
After the breading was cracked, I focused on the formula for a dipping sauce made with variations of mayo, sour cream, cream, and lemon juice until I had the ratios right for a perfect match. I brought it all together on a plate, finished it off with a sprinkling of grated Parmesan cheese and freshly minced Italian parsley, and my mouth thought I was at Maggiano’s.

IHOP Thick 'N Fluffy French Toast
Read moreIHOP upped its French toast game in 2022 with the introduction of a new recipe that suggests your French toast is only as good as the bread you start with, and IHOP’s new Thick ‘N Fluffy French Toast starts with thick specialty artisan bread, rather than the more commonly used Texas toast white bread.
For my IHOP Thick 'N Fluffy French Toast copycat recipe, you can use any thick-sliced bread from your bakery, but there are two national brands that work well: Nature’s Own Perfectly Crafted Thick-Sliced White Bread and Sara Lee Artisano. Either of those will do, but of the two, Nature’s Own is shaped more like IHOP’s version.
Adding vanilla and a little cinnamon to the easy batter will set these waffles apart from most others, and in no time, you’ll have 6 beautiful slices of French toast for a total of 3 servings. Dust them with a little powdered sugar, add some butter and maple syrup on the side, and it’s like you just opened an IHOP in your house.

Maggiano's Famous Rigatoni "D"
Read more“D” was chef David Di Gregorio’s nickname at the first Maggiano’s, which opened in Chicago, Illinois, in 1991, and he’s the guy who created the best-selling pasta dish on the menu.
After many trials and several errors, I finally replicated David’s fantastic creamy Marsala sauce for my Maggiano’s Famous Rigatoni “D” hack by reducing two full bottles of inexpensive Marsala wine to just half a cup of intensely flavored liquid. The alcohol cooked off, the mushrooms contributed their savory umami goodness, and after about an hour and a half, I had the perfect flavoring solution for the cream sauce.
The rest of the mushrooms in the dish are served unsliced, so make sure they’re small enough to eat in one bite. For this recipe, find 40 small mushrooms that can be white (button) or brown (cremini). They are the same mushroom species with only minor differences (white mushrooms are a cultivated mutation of the brown ones), so either will work. If you have a choice, go with creminis since they tend to have a slightly deeper flavor.

Olive Garden Lasagna Classico
Read moreCrafting Olive Garden’s signature Lasagna Classico recipe presented the perfect opportunity to create a beautiful, multi-layered lasagna hack recipe that uses an entire box of lasagna noodles and fills the baking pan all the way to the top. My Olive Garden Classico copycat recipe produces a lasagna that tips the scales at nearly 10 pounds and can feed hungry mouths for days, with every delicious layer directly copied from the carefully dissected Olive Garden original.
I found a few credible bits of intel in a video featuring an Olive Garden chef demonstrating what he claims is the real formula for this lasagna on a midday news show. However, the recipe was abbreviated for TV, and the chef omitted numerous crucial details. One ingredient he notably left out of the recipe is the secret layer of Cheddar cheese near the middle of the stack. I wasn’t expecting to find Cheddar in lasagna, but when I carefully separated the layers from several servings of the original dish, there was the golden melted cheesy goodness in every slice.

IKEA Swedish Meatballs
Read moreI've always known IKEA as a giant global furniture chain, but before researching these tasty little balls of meat, I wasn't aware that IKEA is also one of the world's largest food retailers. And at the very top of the list of the most popular menu items at the stores' cafeteria-style IKEA Restaurant & Bistro, are the Swedish Meatballs, which are consumed at a rate of 150 million each year.
The chain's secret Swedish meatballs are moist and delicious and come smothered in a cream sauce, with a side of lingonberry jam. But there's no need to work your way through the giant rat maze of furniture that is the ingenious layout of each store to get to the cafeteria when you can now duplicate them at home with my IKEA Swedish Meatball copycat recipe below, and very little effort.
The secret is to use ground beef that is 20 percent fat and a food processor to puree all of the ingredients. If you don't have a food processor, a blender works, too. Form the balls with a 1 1/4-inch dough scoop or teaspoon measure, and keep your hands thoroughly moistened to prevent the meat mixture from sticking.

Qdoba 3-Cheese Queso
Read moreThere are many acceptable ways to formulate good queso, but to make this specific queso the Qdoba way, you must start with the correct ingredients—and most copycat recipes seem to miss the mark. A few recipes get one of the peppers and two of the cheeses right, but nearly every recipe out there is a big mess that I will now save you from.
Quesos can be made with various cheeses, including queso fresco, asadero, and Muenster, but this particular queso includes a cheese you probably didn’t expect: Swiss. That cheese is slow to melt, so we’ll shred it, along with the Jack. And you won't need to gum up the queso with flour or cornstarch by making a roux because the white American cheese in the mix contains either sodium citrate or sodium phosphate—additives that help the cheese melt smoothly and stay that way.
The authors of recipes that include tomatoes in this dish haven’t looked closely. Those are actually red bell peppers, which are roasted, peeled, and seeded along with the poblano and jalapeños before being diced and added to the cheese sauce. The sauce cooks on low heat, without bubbling, ensuring it remains smooth and creamy.
When it’s done, your queso may appear thin in the pan, but it will thicken as it cools to a perfect consistency for dipping tortilla chips or as a topping for tacos and burrito bowls.

Einstein Bros. Bagels Twice-Baked Hash Brown
Read moreI’m not sure why Einstein Bros. claims there are just four cheeses in the new Twice-Baked Hash Brown when the ingredients clearly list six kinds of cheese, plus cream cheese. Regardless, the shredded Asiago, Romano, Parmesan, provolone, and mozzarella listed there can be found combined in an “Italian Blend” at many supermarkets, making for an easy start to our home clone. And don’t just be thinking about breakfast for these cheesy potatoes. They work great as a side for any meal.
In the detailed description of the new item, Einstein Bros. claims the hash browns contain two kinds of schmears, which is true, but a little misleading because one of them is just plain cream cheese. The other is onion-and-chive cream cheese, which we can make from scratch. We’ll combine those two shmears into one blend by doubling the cream cheese added to our onion-and-chive schmear formula.
Follow my Einstein Bros. twice baked hash brown copycat recipe below, and mix everything together. Then, load the ingredients into a standard 12-cup muffin pan with circles of parchment paper cut out to fit into the bottom of the 12 cups. Without these parchment circles, the hash browns may stick and break when they’re released. You can also use paper muffin cups, if you don’t mind the less crispy, ridged sides.
Bake them the first time for 30 minutes, then cool and store. Now you have a dozen servings of cheesy hash brown potatoes that are easy to finish off by baking them a second time until crispy. These Einstein Bros. Twice Baked Hash Browns are great served with breakfast, or for dinner as your starchy side alongside beef, chicken, lamb, and many other savory entrées.

Carl's Jr. Fried Zucchini
Read moreFor decades, Carl’s Jr. has effectively cornered the market on fried zucchini at major fast food chains by serving a great crispy breaded version that’s flavorful all the way through. Now you can make zucchini that tastes just as good, as long as you know the secret step that other fried zucchini recipes miss. It makes all the difference.
The secret is a brine. I found that this fried zucchini tastes best when it takes a salted water bath before breading. In 60 minutes, the salt in the brine is absorbed by the zucchini, spreading good flavor all the way through. After the brine, the zucchini is rinsed, coated twice with flour and once with seasoned breadcrumbs, and fried to a beautiful golden brown.
I’m giving you a couple choices here. You can make the recipe all the way through and serve it immediately, or if you want to serve it later, you can par-fry the zucchini and freeze it for several days. After that, when an occasion arises, a couple of minutes is all it takes to finish off the dish and serve it. My Carl's Jr. Fried Zucchini copycat recipe makes enough for a small gathering, but you can easily cut it in half for a more intimate hang.
