No need to waste expensive wine duplicating this incredibly refreshing cocktail from Applebee's. Sutter Home White Zinfandel, which runs around 5 bucks a bottle, is the brand of choice at the chain, but feel free to use any white zinfandel on the shelf, even if it's in a box. The wine will be diluted with peach schnapps and other ingredients, so no matter which wine you pick, you'll always get a delicious, thirst-quenching cocktail that's perfect for warm weather hang time.

- 1/2 cup Sutter Home White Zinfandel
- 1 1/2 ounces DeKuyper Peachtree Schnapps
- 2 ounces pineapple juice
- 1/2 cup Sierra Mist, 7-Up or Sprite soda
Garnish
- 2 red or green apple balls on a toothpick
- 1 orange wedge
- 1 lime wedge
- 1 maraschino cherry
1. Fill a 16-ounce glass or goblet with ice.
2. Add zinfandel, schnapps, and pineapple juice to the glass. Fill to the top with 7-Up or Sprite.
3. Use a melon baller to scoop two balls out of an apple. Pierce the balls on a toothpick, then add to the top of the drink along with a wedge of orange, lime, and a maraschino cherry. Serve with a straw.
Makes 1 drink.
Tidbits: Use sugar-free lemon-lime soda for a lower calorie version.

Red Lobster Cheddar Bay Biscuits
Read moreOrder an entree from America's largest seafood restaurant chain and you'll get a basket of some of the planet's tastiest garlic-cheese biscuits served up on the side. For many years, the Cheddar Bay Biscuits recipe has been the most-searched-for clone recipe on the Internet, according to Red Lobster. As a result, several versions are floating around, including one that was at one time printed right on the box of Bisquick baking mix.
The problem with making biscuits using Bisquick is that if you follow the directions from the box you don't end up with a very fluffy or flakey finished product, since most of the fat in the recipe comes from the shortening that's included in the mix. On its own, room temperature shortening does a poor job creating the light, airy texture you want from good biscuits, and it contributes little in the way of flavor. So, we'll invite some cold butter along on the trip -- with grated Cheddar cheese and a little garlic powder. Now you'll be well on your way to delicious Cheddar Bay. Qdoba 3-Cheese Queso
Read moreThere are many acceptable ways to formulate good queso, but to make this specific queso the Qdoba way, you must start with the correct ingredients—and most copycat recipes seem to miss the mark. A few recipes get one of the peppers and two of the cheeses right, but nearly every recipe out there is a big mess that I will now save you from.
Quesos can be made with various cheeses, including queso fresco, asadero, and Muenster, but this particular queso includes a cheese you probably didn’t expect: Swiss. That cheese is slow to melt, so we’ll shred it, along with the Jack. And you won't need to gum up the queso with flour or cornstarch by making a roux because the white American cheese in the mix contains either sodium citrate or sodium phosphate—additives that help the cheese melt smoothly and stay that way.
The authors of recipes that include tomatoes in this dish haven’t looked closely. Those are actually red bell peppers, which are roasted, peeled, and seeded along with the poblano and jalapeños before being diced and added to the cheese sauce. The sauce cooks on low heat, without bubbling, ensuring it remains smooth and creamy.
When it’s done, your queso may appear thin in the pan, but it will thicken as it cools to a perfect consistency for dipping tortilla chips or as a topping for tacos and burrito bowls.

Texas Roadhouse Rolls & Cinnamon Butter
Read moreI never thought dinner rolls were something I could get excited about until I got my hand into the breadbasket at Texas Roadhouse. The rolls are fresh out of the oven and they hit the table when you do, so there’s no waiting to tear into a magnificently gooey sweet roll topped with soft cinnamon butter. The first bite you take will make you think of a fresh cinnamon roll, and then you can’t stop eating it. And when the first roll’s gone, you are powerless to resist grabbing for just one more. But it’s never just one more. It’s two or three more, plus a few extra to take home for tomorrow.
Discovering the secret to making rolls at home that taste as good as Texas Roadhouse Rolls involved making numerous batches of dough, each one sweeter than the last (sweetened with sugar, not honey—I checked), until a very sticky batch, proofed for 2 hours, produced exactly what I was looking for. You can make the dough with a stand mixer or a handheld one, the only difference being that you must knead the dough by hand without a stand mixer. When working with the dough add a little bit of flour at a time to keep it from sticking, and just know that the dough will be less sticky and more workable after the first rise.
Roll the dough out and measure it as specified here, and after a final proofing and a quick bake—plus a generous brushing of butter on the tops—you will produce dinner rolls that look and taste just like the best rolls I’ve had at any famous American dinner chain.

Applebee's Strawberry Cheesecake Dessert Shooter

BJ's Restaurant and Brewhouse Parmesan Crusted Chicken Breast

My Parmesan Crusted Chicken Breast copycat recipe lays out a great way to prepare that 4-pack of chicken breasts you dropped into your shopping cart. While you're at the market, head down the aisle where the Asian foods are parked and pick up some Japanese breadcrumbs, also called "panko" breadcrumbs. Combining these coarse breadcrumbs with shredded Parmesan cheese makes a crispy breading for the chicken that doesn't even need a sauce to taste good. Still, the lemony Chardonnay butter sauce used at the restaurant is cloned here too, so you'll have the complete flavor experience. Chili's Chicken Crispers and Honey Mustard Dressing

When biting into Chili's delicious trademarked Chicken Crispers, I detect the distinct flavor of MSG, or monosodium glutamate. Although there is no English word for it, the Japanese call this flavor "umami", and it delivers a taste sensation that is different from bitter, salty, sweet, or sour flavors. This "fifth flavor" is created naturally by glutamic acid, an amino acid, and it can be found in mushrooms, ripe tomatoes, fish and dairy products. But rather than adding something like Accent flavor enhancer—which is pure MSG—to this recipe, I thought of another approach.For my Chili's Chicken Crispers copycat recipe, I decided to bring canned chicken broth into the mix. Most chicken broths, including Swanson brand, contain autolyzed yeast extract. These yeast enzymes release flavor-enhancing compounds that work just like MSG, amplifying flavors in much the same way. Plus, the chicken broth is made with other goodies such as carrot, onion, and celery that will contribute to a tasty, crunchy coating. As for the frying, Chili's has recently switched to a shortening that contains no trans fat. So, if you want the best clone of Chili's Chicken Crispers, use shortening, but find the kind that has no trans fat. Crisco now makes a version, and so does Smart Balance. Shortening produces a superior clone, and it will release less "fry smell" into your house. You can also use vegetable or canola oil.

Perfume salesman Alan Stillman was a single guy in New York City in 1965, looking for a way to meet women who lived in his neighborhood. He figured out a way to get their attention: buy a broken-down beer joint in the area, jazz it up, and call it "The T.G.I.F." to attract the career crowd. Within a week, police had barricaded the area to control crowds flocking to Alan's new restaurant. The restaurant made $1 million in its first year—a lot of dough back then. Red Lobster Bacon-Wrapped Stuffed Shrimp

For my Red Lobster bacon-wrapped shrimp recipe below, you'll need to find some large shrimp, and a wooden skewer or toothpicks. Cook the bacon about halfway to done before you begin. Mix up clones of Red Lobster's top secret seasoning and cilantro-ranch dipping sauce, and you're minutes away from a great appetizer or party finger food dish.

Taco Bell Meximelt
Read moreIn 2024, Taco Bell brought back five iconic menu items as part of the chain’s new “Decades” menu: the Tostada from the 1960s, the Green Sauce Burrito from the 1970s, the Meximelt from the 1980s, the Gordita Supreme from the 1990s, and the Caramel Apple Empanada from the 2000s.
The Meximelt generated the most excitement in my circles, so I jumped at the chance to hop into a culinary time machine and recreate this long-lost classic. It’s a small flour tortilla filled with the chain’s seasoned beef, a melted combination of three cheeses, and fresh pico de gallo. If it weren’t called a Meximelt, you’d call it a soft taco. And you’d love it either way.
I tackled my Taco Bell Meximelt copycat recipe by first duping the mild pico de gallo with a simple combination of tomatoes, onion, cilantro, lime juice, and salt. And I made sure to dice the tomato and onion super small to match the real thing. Next, I copied the seasoned beef using my previously hacked recipe for the chain’s Chalupa Supreme and determined the ratios for a three-cheese blend of shredded cheddar, Jack, and mozzarella.
I piled everything on a warm 6-inch flour tortilla, took a big bite, and let my mouth take me on a tasty trip back to the era of MTV, yuppies, Blockbuster, and Rubik’s Cubes.

Chickie’s & Pete’s Famous Crabfries
Read moreWaiting for a plane in Philadelphia isn’t so bad if your gate is near the airport location of this 20-unit crab house and sports bar chain where weather delay frustrations melt away over a cold beer, a Philly cheesesteak, and a bucket of Chickie’s & Pete’s Famous Crabfries.
Crabfries, despite the name, do not have any crab on them. When the first Chickie’s & Pete’s opened its doors in Philadelphia, Pennsylvania in 1977, the restaurant served crab only in the summer. While brainstorming off-season uses for the seafood seasoning, founder Pete Ciarrocchi sprinkled some over crinkle-cut fries, served them with a side of secret cheese dipping sauce, and the most popular dish at his crab house was born.
The beauty of this Chickie’s & Pete’s Crabfries recipe is its simplicity since you’ll need to prepare only two things, and they’re both easy: the secret crab seasoning and the secret cheese sauce. Since the chain’s cheese sauce is also used on their cheesesteak sandwiches, I surmised that a combination of the two easy-melting cheeses most commonly used on Philly cheesesteaks—white American and Cheez Whiz—would make a sauce with the taste and color of the restaurant version. This smooth sauce goes great with the fries, and it also puts the "Philly" into your next homemade cheesesteak.
Once your cheese sauce is done and your seasoning is mixed, cook up a bag of crinkle-cut fries following the directions on the package, toss them with the seasoning, and serve immediately with the warm cheese sauce on the side.

Panda Express Chow Mein
Read moreI’m sure it’s frustrating to be standing in line at Panda Express and they run out of chow mein when it’s your turn. For me, though, that scenario is a blessing, and it’s how this dish was hacked. From the line, I watched a cook whip up a new batch of chow mein in the giant wok in the clearly visible kitchen and took plenty of mental notes. The dish was done in just a few minutes, and before I knew it, I was out the door with a hot serving of fresh chow mein and great intel to help hack a perfect clone.
Like the real Panda Express Chow Mein, the beauty of my re-creation lies in its simplicity. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also known as Chinese stir fry noodles), which are easy to find and inexpensive, along with dark soy sauce for its deep caramel color. If you don’t have a wok to prepare your faux Panda, a large skillet with sloped sides for tossing will work nicely.

Applebee's Chicken Wonton Tacos
Read moreMenu Description: “A deliciously different way to taco. Tangy grilled chicken, sweet Asian chile sauce and dumpling sauce stuffed into crispy wonton shells and topped with a crunchy slaw and cilantro mix.”
Re-creating Applebee's Chicken Wonton Tacos requires cloning four parts, none of which are difficult: grilled chicken, coleslaw, secret dumpling sauce, and the crispy wonton shell that holds everything together. For the chicken, we simply need to grill a couple of thighs and chop them up. Then, we’ll use bottled sweet chili sauce—usually found in your grocery store where Asian foods are parked—to punch up the flavor.
The coleslaw is easy to prepare with a dressing that includes only five ingredients, and it’s best after it has had some time to sit and marinate. You can slice the cabbage yourself, but using a coleslaw kit that combines sliced cabbage and shredded carrots can save a lot of time. Simply measure out four cups of the cabbage blend and mix it with the minced cilantro and dressing.
Crispy wonton taco shells are not usually found in stores, so we’ll make our own using wonton wrappers and a skillet of hot oil. When the oil is hot, add a wonton wrapper and use tongs to fold it diagonally while it fries until crispy on both sides. It takes less than a minute to fry each wonton taco shell, and take it from me, you’ll get better at this as you go. Just be sure to leave plenty of room in the shell for all the delicious fillings.

Maggiano's Beef Tenderloin Medallions
Read moreFor many years this entrée has been a top menu choice at Maggiano's, the 54-unit Italian chain from Brinker, the same company that operates Chili’s Grill & Bar. The $30 restaurant dish consists of three 2½-ounce tenderloin steaks, swimming in a fantastic balsamic cream sauce with sliced portabello mushrooms—but a home version is only six easy steps away, and it won't hit you in the wallet as hard as the pricey original.
Cracking this dish required a perfect hack of the balsamic cream sauce, and that came quickly after obtaining some very reliable information from my incredibly helpful server/informant at a Las Vegas Maggiano’s. Let’s call him Skippy.
According to Skippy, the balsamic cream sauce is as simple as mixing a sweet balsamic glaze with the chain’s creamy Alfredo sauce. So, I first got a sample of Maggiano’s Alfredo sauce and figured out how to replicate it. Once that was done, I measured increments of balsamic glaze into the Alfredo sauce until the color and flavor matched the original. The rest of the recipe was easy.
My recipe will make two servings and includes preparation for the tenderloins and sauce. If you’d like to complete the dish the way it’s served at the restaurant (as in the photo), add some garlic mashed potatoes on the side, using my hack for Olive Garden Garlic Mashed Potatoes.

Outback Steakhouse Baked Potato Soup

It’s not called baked potato soup because the potatoes in it are baked. It’s called baked potato soup because it’s topped with shredded cheese, bacon, and green onion, and it tastes like a loaded baked potato. Other hacky hacks for this recipe miss that point and add over an hour to the preparation process by preheating an oven and baking the potatoes, all while hungry stomachs are growling on the sidelines. My version skips that part by adding the raw potatoes directly into the pot with the other ingredients, where they cook in 20 minutes, and the soup is ready to eat in less time than other recipes take just to get the potatoes done.
Also, other clones add way too much flour to thicken the soup—¾ cup! Sure, flour is good at thickening, but it doesn’t add any flavor, so I found a better way. For my Outback Baked Potato Soup copycat recipe, I ended up using just a little flour to make the roux, then later thickening the soup mostly with dehydrated potato flakes, which are used to make quick mashed potatoes. The flakes not only do a great job of thickening the soup, but they also add more delicious potato flavor to the pot, just like the original soup.
Top your finished soup with shredded cheese, crumbled bacon, and green onion, and every spoonful will taste like a fully decked-out baked potato.

KFC (Kentucky Fried Chicken) Nashville Hot Chicken
Read moreIt was only a matter of time before the spicy fried chicken made famous in Nashville, Tennessee at shops like Prince's Hot Chicken Shack and Hattie B's would find its way into the mainstream. A dish this good is never contained forever, and KFC became the first fast food chain to give the recipe national exposure. A test run of the new spicy chicken in Pittsburgh was the most successful product test in KFC's recent history.
The original dish from Nashville is made with crispy fried chicken that's doused with a top-secret spicy chili sauce and served on sliced white bread with dill pickles on top. KFC's version is served with just pickles, no bread (a biscuit on the side instead), and is made by soaking the chain's Extra Crispy Fried Chicken with the oily chili sauce from a squirt bottle. Since there isn't any water in the sauce, just oil, the chicken stays crispy, regardless of how much sauce is applied.
For my KFC Nashville Hot Chicken copycat recipe, you first need to prepare the chicken, either using my KFC Extra Crispy Chicken recipe included below, or by baking or frying some of the pre-breaded chicken pieces you can find frozen in just about every grocery store. While the chicken is brining, make the sauce and pour it into a squirt bottle or spouted measuring cup. Apply it to your chicken when it's done (shake it or stir it first!), then top it with dill pickle slices.

Joe's Crab Shack Crab Nachos

If you're a nacho freak like me, you gotta love the unique crab nachos at Joe's Crab Shack. The restaurant chain creates this number one appetizer pick by slathering tortilla chips with their awesome crab dip and Jack cheese, and popping everything under the broiler. Once the cheese is melted and gooey, the nachos are topped with sliced lettuce, drizzled with the great avocado-lime dressing, and topped with pico de gallo and black bean corn relish. I've got clones here for the crab dip and the dressing, plus I'm including re-creations of the black bean corn relish and pico de gallo to finish off your homemade pile of nacho greatness. If you don't feel like making the pico from scratch, you can usually find a good premade version in your local market. This clone creates a bigger serving than the one from the restaurant chain, and there's nothing wrong with that.

Olive Garden Breadsticks
Read moreAnyone who loves Olive Garden is probably also a big fan of the bottomless basket of warm, garlicky breadsticks served before each meal at the huge Italian casual chain. My guess is that the breadsticks are proofed, and then sent to each restaurant where they are baked until golden brown, brushed with butter and sprinkled with garlic salt. Getting the bread just right for a great Olive Garden breadstick hack was tricky—I tried several different amounts of yeast in all-purpose flour, but then settled on bread flour to give these breadsticks the same chewy bite as the originals. The two-stage rising process is also a crucial step in this much requested Olive Garden breadstick copycat recipe.

Applebee's Key Lime Pie Dessert Shooter

While working on this recipe, I couldn't help thinking of Steve Martin and Bernadette Peters in The Jerk enjoying "the best pizza in a cup ever." Applebee's has taken a slice of key lime pie out of the pie pan and put it into a 6-ounce rocks glass. The key lime filling for this clone is thickened on your stove top, and the topping is made by combining key lime juice and sweetened sour cream.
Try to find key limes for my Applebee's Key Lime Dessert Shooter copycat recipe, although any lime juice will work in a pinch if key limes or bottled key lime juice is hard to track down. Chill the filling for a few hours in your fridge before building these 4 servings with graham cracker crumbs on the bottom, and whipped cream on top. It's really good stuff. Probably the best key lime pie in a cup ever.

Gordon Biersch Warm Apple Bread Pudding

I've been searching for the restaurant chain with the best bread pudding recipe, and I think I've found it here at Gordon Biersch. This small, yet growing, microbrewery chain serves great beer, awesome pizza, and a bread pudding that is downright amazing. It could be described as what would materialize out the other side if Jeff Goldblum threw an apple pie, some bread pudding and a cinnamon roll into his teleportation machine from "The Fly," and everything came out the other side combined into a single awesome dessert. The sautéed apples laid into the middle of the bread pudding make other bread puddings I eat now seem like they're missing something. And the homemade caramel sauce, with just a little brown sugar thrown into our clone version, adds a sticky bun flavor you'll have dreams about. No matter how big your dinner feast was, everyone will still somehow find room for this.The original at the restaurant is baked in a deep pan, and the pudding is sliced and served on its side, so for my Gordon Biersch Warm Apple Bread Pudding copycat recipe, you'll want to use the biggest loaf pan you can find. I used a 3-inch deep 10x5-inch loaf pan, and it was full. If your pan is smaller, you may have to leave a bit out. The pudding will swell up out of the pan as it cooks, but it will shrink back down as it cools. Fun to watch. You may want to make this the day before so that the bread pudding can set up in the fridge. When you are ready to serve, nuke a serving for 1 minute until warm, then add the sauce and ice cream and a handful of pecans. It appears the restaurant chain uses egg bread in the pudding, but Texas Toast thick-sliced white bread may be easier to find, and it works just as well.

Max & Erma's Tortilla Soup
Read moreAfter years of fielding requests to clone the delicious signature soup from this 100-unit chain, I was finally able to secure a couple carry-out samples from Max & Erma's at the Cleveland airport while I was there on a biz trip. Wrapped in a bundle of napkins and tucked into a carry-on bag, my samples arrived home in Vegas still warm and ready for analysis.
For my Max & Erma's Tortilla Soup recipe, you'll need some white and dark fillets of chicken and a half pound hunk of cheese to shred. It's all that Cheddar cheese that makes this tortilla soup so good. And you'll definitely want to shred your own, since the pre-shredded stuff—while also more expensive—just doesn't melt as well in the chicken broth as cheese that's been shredded just before it goes into the pot.
Update 2/8/17: This recipe may work better if you first make a sauce with the cheese before adding it to the soup. After step #2, combine 2 tablespoons of butter with 2 tablespoons of flour in a medium saucepan. Whisk in 1 cup of milk until thickened, about 3 minutes. Remove it from the heat and stir in the cheese until it's melted. Keep the cheese sauce warm over low heat until you need it. Reduce the cornstarch to 1 tablespoon and dissolve it into the chicken broth in a large saucepan. Add the chicken, sautéed vegetables, and remaining ingredients for the soup (except the cheese sauce) and bring the mixture to a boil, then reduce the heat and simmer 10 minutes. Stir in the cheese sauce and simmer the soup for another 10 minutes while you bounce to step #4.

Carrabba's Chicken Marsala

To create my Carrabba's Chicken Marsala recipe, I ordered the dish to go, with the sauce on the side, so that I could separately analyze each component. After some trial and error in the underground lab, I found that re-creating the secret sauce from scratch is easy enough with a couple small cans of sliced mushrooms, a bit of prosciutto, some Marsala wine, shallots, garlic and a few other good things.Cooking the chicken requires a very hot grill. The restaurant chain grills chicken breasts over a blazing real wood fire, so crank your grill up high enough to get the flames nipping at your cluckers (not a euphemism). If your grill has a lid, keep it open, so you can watch for nasty flare-ups.

Popeyes Buttermilk Biscuits
Read moreIn 2007 America's number one Cajun-style restaurant celebrated its 35th birthday with 1,583 stores worldwide. But Popeyes didn't start out with the name that most people associate with a certain spinach-eating cartoon character. When Al Copeland opened his first Southern-fried chicken stand in New Orleans in 1972, it was called Chicken On The Run. The name was later changed to Popeyes after Gene Hackman's character in the movie The French Connection.
In addition to great spicy fried chicken, Popeyes serves up wonderful Southern-style buttermilk biscuits that we can now easily duplicate to serve with a variety of home cooked meals. The secret is to cut cold butter into the mix with a pastry knife so that the biscuits turn out flaky and tender, just like the originals.

You could also use the crabmeat that comes in 6-ounce cans found at practically every supermarket—you'll need two of them. Just be sure to get the kind that includes leg meat, and don't forget to drain off the liquid before you toss it in.

Many of the copycat Auntie Anne's soft pretzel recipes passed around the Web require bread flour, and some use honey as a sweetener. But by studying the Auntie Anne's home pretzel-making kit in my secret underground laboratory, I've created a better Auntie Anne's copycat recipe with a superior way to re-create the delicious mall treats at home. For the best quality dough, you just need all-purpose flour. And powdered sugar works great to perfectly sweeten the dough. Kozy Shack Rice Pudding
Read moreIt was in the 1960s that deliveryman Vinnie Gruppuso got hooked on the pudding being made at one of the delis in Brooklyn where he delivered bread. Vinnie struck up a deal with that deli—called Cozy Shack—to sell the pudding to other customers on his route, and the product soon outsold his other delivery items. Eventually Vinnie scrapped up enough money to purchase the deli's pudding operation, he changed the "C" in the name to a "K," and today Kozy Shack is the number one manufacturer of rice pudding in North America.
As with the original secret formula, six basic ingredients are all that go into my Kozy Shack Rice Pudding copycat recipe. But you'll also need a cooking thermometer and a large pot with at least a 10-inch diameter. A pot this wide helps the mixture to reduce faster. Keep your eye on the temperature and be sure to stir the pudding often. When the mixture begins to thicken, pop the pudding into your fridge for several hours where it will continue to thicken to the creamy consistency of the real thing as it cools.

Heinz Premium Chili Sauce
Read moreThe name of this tomato-based sauce belies its taste. There's not even a hint of spiciness here that someone might associate with "chili." Instead, you get a sweet and sour sauce that's got more tang than ketchup, and more chunks. And what are those chunks? According to the label, they're dehydrated onions, so that's exactly what I used in my Heinz Chili Sauce recipe below. Be sure to get the kind that say dried "minced" onions, because dried "chopped" onions are too big. The recipe is a simple one since you just combine everything in a saucepan and simmer until done. And if you cruise down to the Tidbits at the bottom of this recipe, I'll show you a super-easy way to turn this saucy clone into a beautiful carbon copy of Heinz Seafood Cocktail Sauce.

Olive Garden Lemon Cream Cake

To make this clone easy, I've designed the recipe with white cake mix. I picked Betty Crocker brand, but any white cake mix you find will do. Just know that each brand (Duncan Hines, Pillsbury, etc.) requires slightly different measurements of additional ingredients (oil, eggs). Follow the directions on the box for mixing the batter, then pour it into 2 greased 9-inch cake pans and bake until done.The filling recipe is a no-brainer and the crumb topping is quick. When your Olive Garden lemon cream cake recipe is assembled, stick it in the fridge for a few hours, and soon you'll be ready to serve 12 slices of homemade Olive Garden Lemon Cream Cake.

Roadhouse Grill Baby Back Ribs

I ordered the ribs naked (without sauce) so that I could see if there was any detectable rub added before cooking, and I didn't find anything other than salt and a lot of coarse black pepper. So that's the way I designed my Roadhouse Grill Baby Back Ribs copycat recipe, and it works.

P.F. Chang's Chang's Spare Ribs

One of the most popular eats on P. F. Chang's appetizer menu is the Chinese spare ribs that arrive slathered with Asian-style barbecue sauce. The Asian flavor comes from the addition of sweet hoisin sauce to a fairly rudimentary barbecue sauce formula. Chang's menu says these ribs are spare ribs, although they appear to be much smaller, more like baby backs. You can certainly use either for my P.F. Chang's Spare Ribs recipe below. Just be sure to trim the ribs first, since the restaurant version is lean, clean ribs with no extra meat or fat hanging off. TThere are several ways to cook pork ribs—P. F. Chang's boils theirs first, then fries them. After that, the ribs are tossed with the sauce in the wok and served piping hot. A serving of these ribs at the restaurant is 6 individual ribs, but since a full rack is as many as 12 ribs, this recipe will make twice what you get in a serving at the bustling bistro chain.

P.F. Chang's Shrimp Dumplings

P.F. Chang's serves scrumptious shrimp dumplings. Mounds of shrimp and other yummy ingredients are wrapped in wonton wrappers and steamed. You can also order them pan-fried, which makes the bottom of each little package a nice crispy brown. The dumplings are served with a soy-based dipping sauce that can be cloned by combining six ingredients in a saucepan. You don't have to be concerned about the size of the shrimp you buy for my P.F. Chang's Shrimp Dumplings copycat recipe, since you're going to purée the shrimp in a food processor. Cheesecake Factory Chicken Madeira

What makes this Cheesecake Factory's "most popular chicken dish" is the sweet madeira wine reduction sauce spooned over the top. Man, I could slurp that stuff straight from a glass. It's that good. And—get this—it's easy. Even though the real stuff appears to include veal stock, we can concoct a great knockoff using canned beef stock.Get sliced mozzarella cheese from your deli section and be sure to pound the chicken breasts very thin using plastic wrap to cover each one before you get medieval on it. Also, in typical Cheesecake Factory style, their entrée is huge, including two chicken fillets and a giant pile of mashed potatoes on the side. My Cheesecake Factory Chicken Madeira recipe makes a total of four chicken fillets, which divides into two servings if you're at the restaurant. At home though, this is probably the perfect amount for a tribe of four.

Popeyes Red Beans and Rice
Read moreI first created the clone for this Cajun-style recipe back in 1994 for the second TSR book, More Top Secret Recipes, but I've never been overjoyed with the results. After convincing a Popeyes manager to show me the ingredients written on the box of red bean mixture, I determined the only way to create an accurate Popeyes Red Beans and Rice recipe is to include an important ingredient omitted from the first version: pork fat. Emeril Lagasse—a Cajun food master—says, "pork fat rules," and it does.
We could get the delicious smoky fat from rendering smoked ham hocks, but that takes too long. The easiest way is to cook 4 or 5 pieces of bacon, save the cooked bacon for another recipe (or eat it!), then use 1/4 cup of the fat for my Popeyes Red Beans and rice recipe below. As for the beans, find red beans (they're smaller than kidney beans) in two 15-ounce cans. If you're having trouble tracking down red beans, red kidney beans will be a fine substitute.
