    You may not know that the delicious "pizzas" you get from the world's largest Mexican food chain have 36 grams of fat. If you like Taco Bell's Mexican Pizza as much as I do, you'll be happy to know that you can make a home version with only 10 grams of fat, and fewer calories, too.

    The secret fat savings come from baking, rather than frying, the flour tortillas. You'll also say "adios" to much of the fat by using reduced-fat Cheddar and Jack cheeses. I picked reduced-fat for these, because the fat-free stuff does not melt well when the pizza is baked.

    The Hooters chain continues its rapid expansion across the globe into 39 states and seven countries, including Taiwan, Aruba, Singapore, and Australia. In those 200 or so restaurants, this appetizer has become very popular since it was first introduced in 1995, as a variation on the Buffalo Chicken Wings recipe. Since this shrimp is fried, as are the chicken wings, we must resort to some tricks that will help bring the fat down. We'll bake the shrimp, rather than fry it, and prepare the sauce with a fat-free spread that adds flavor.

    The secret to cloning the Colonel's famous gravy at home is to first darken the chicken broth with a roux. Roux is a mixture of flour and oil that is cooked in a saucepan over low heat until it's browned, but not burned. This magical mixture not only colors the gravy for us, but also thickens it. The small amount of oil used here and no addition of drippings will give you gravy that tastes as good as the stuff from the world-famous chicken chain, but with significantly less fat.

    And when you're done with the gravy, you can easily make mashed potatoes that taste just like KFC's with the popular Potato Buds instant potatoes. And fat-free butter-flavored spread adds butter flavor without fat. You're going to love this one.

    In 1992, to meet the needs of its expanding cutomer base, El Pollo Loco added several different burrio selections to its menu. The burrito combinations were designed to be assembled with several prepared products the chain had been serving from the start. Here are TSR low-fat versions of four of the most popular burritos. The fat savings are significant, since the beans and rice are now fat-free, and the recipes use fat-free tortillas and fat-free shredded cheddar cheese.     As the seasons change so does the menu, at this popular 1064-unit casual restaurant chain. You'll find this item in the "Low-Fat and Fabulous" column during the summer months where it's been a favorite since 1997. As with any salad, the waistline violator is the traditionally fat-filled dressing that's drizzled in gobs over the top of very healthy greens. A tablespoon of dressing is usually around 10-12 grams of fat each. So if we can just figure out a cool way to make the dressing fat-free, we're well on our way to making huge salad—four of them to be exact—with only 12 grams of fat on the entire plate. Most of those grams come from the chicken breast, while the crunchy chow mein noodles pick up the rest. Just be sure to plan ahead when you make this one. The chicken should marinate for a few hours if you want it to taste like the original. Get ready for some big, meal-size salads.

    Hope your crew is hungry, because this recipe makes four Mexican Pizzas like those served at the Bell: seasoned ground beef and refried beans are sandwiched between two crispy flour tortillas, topped with melted cheddar cheese, salsa, diced tomato and chopped green onion. Slice it like a pizza and serve it with a smile. Prepare to blow your diners away with this one if they're at all familiar with the real thing.

    Sure, there's a little Kahlua in there, but this famous Applebee's drink is more dessert than cocktail, really. And the presentation will make you look like a pro because you spiral the chocolate syrup around the inside of the glass before adding the drink. This Applebee's mudslide copycat recipe looks cool and its easy to do...even after you've had a couple. Grab a straw and prepare to crave another when this one's gone. No wonder this drink also comes in a larger size.

    Menu Description: "Stir-fried with garlic."

    This is a standard side dish at the country's biggest Chinese dinner chain, and it'll take you just a couple minutes to duplicate at home as a good veggie side for any meal, Chinese or otherwise. It's especially good when you're pressed to slam together a last minute vegetable for tonight's dinner. You can use a wok for this, but I always just use a medium-size saute pan. The trick is to saute the snap peas quickly over high heat, tossing often, until they're hot, yet still crispy and bright green. You get the garlic in right at the end, and then quickly pull the pan off the heat so the garlic doesn't scorch.

    When Glen Bell opened the first Taco Bell in 1962, he probably never envisioned that one day he would see his name on more than 10,000 locations serving his special brand of Americanized Mexican fast food. He probably also didn't expect there would one day be a clone recipe for a reduced-fat version of his popular menu item.

    You'll want to start this one several hours before, or even the day before you plan to eat it, so that the chicken can properly marinate.
