    These Einstein Bros. schmear recipes are very easy to make, and if you would like yours to firm up more after mixing in the ingredients, just pop the finished spread (in a microwave-safe bowl) for a minute or two, stir, cover, and chill completely. Use these spreads with bagels of your choice.

    The menu at Chili’s has inspired many clone recipes here over the years including FajitasBaby Back RibsSalsaChili QuesoSouthwestern EggrollsChicken CrispersBoneless Wings and more, but it wasn’t until recently that I got the chance to work on a hack for the chain’s award-winning original chili. About time.

    The chili served at Chili’s is a Texas-style con carne recipe, which traditionally means no beans and no tomato. You won’t find any beans in this recipe or chunks of tomato, but their chili does have a tomato base to boost flavor, so I’m adding that into the mix by including one 6-ounce can of tomato paste. As it turns out, that small can is just the right amount.

    The preparation technique is simple: brown the beef, drain off the fat, then add some of the fat back to the empty pan to sauté the onions and peppers in. When those are done, you add the beef back to the pan along with the remaining ingredients and simmer for 1½ hours. That will be just long enough to braise the beef and tenderize it, and to thicken the chili to a perfect consistency.

    When the chili’s done, top it with a Cheddar/pepper jack blend, and some crispy tortilla bits. Then pass out the spoons.

    Menu Description: "Lightly fried Brussels sprouts tossed in Big Poppa Smokers Desert Gold seasoning with sweet sriracha crema."

    Brussels sprouts are exploding on chain restaurant menus in recent years, and the best I've tasted are served as starters. The cruciferous wonders are usually roasted or fried, then dressed with a sauce meant to override the sprouts' inherent bitterness. And when they’re done right, those Brussels sprouts will be the most memorable dish at the table.

    BJ’s preparation technique of choice for Brussels sprouts is to fry them, then sprinkle them with a lemony seasoning blend by Big Poppa Smokers just before they get drizzled with sweet sriracha crema. For the seasoning, there’s no need to buy the real thing since I’ve come up with an easy hack. And the sriracha crema copycat couldn’t be simpler, with just four ingredients.

    This recipe makes a share plate appetizer-size serving for 2 to 4 people, but you'll have enough seasoning and sauce here for a bigger serving (such as side dish) if you just add more sprouts.  

    Now, how about a bowl of famous chili or a Pizookie from Bj's Brewhouse?

    The ridiculously popular crispy chicken sandwich at Popeyes comes with your choice of regular mayonnaise or kicked-up with spicy mayonnaise. Fortunately, I was able to hack the sandwich before it sold out just a couple weeks after its debut (get the recipe here), but that recipe includes just the plain mayonnaise. Recently I had the chance to hack the secret spicy mayonnaise, and I’m glad I did. Popeyes chicken sandwich with regular mayonnaise is seriously good, but with spicy mayonnaise that sandwich is great.

    You can use this sauce on a variety of sandwiches and burgers, or as a dip for chicken fingers, nuggets, and fried shrimp.

    To celebrate the 50th anniversary of the famous green mint-flavored Shamrock Shake first served in 1970, McDonald’s created this new minty McFlurry, with crumbled Oreo cookies mixed in. If you’re a Shamrock Shake fan, you’ll go nuts over this new twist. You may never again crave a regular Shamrock Shake.

    This dessert-in-a-cup is thicker than the traditional Shamrock shake since it’s made with soft-serve vanilla ice cream rather than milkshake mix. To simulate the thicker drink at home you mix the ice cream with milk, Shamrock syrup (made with the recipe below), and Oreo crumbs in a frozen glass or ceramic bowl. The cold bowl keeps the ingredients thick until you spoon everything into a glass.

    The secret syrup recipe here makes around 8 tablespoons of green mint syrup, which will be enough to make 4 minty McFlurry clones.

    The Cheesecake Factory’s latest decadent dessert goes extreme with America’s favorite cookie. You’ll find Oreos in the middle of the cheesecake, in the cookie mousse layer, pressed onto the edge, sprinkled on the whipped cream, and even up on top where an Oreo wafer crowns each slice. In fact, I've designed this copycat Cheesecake Factory Oreo cheesecake recipe to use every Oreo in a standard size package—all 36 of them!

    This beautiful cheesecake starts with a chocolate cake layer, topped with a layer of chocolate buttercream icing, followed by a no-bake cheesecake layer, Oreo cookie mousse, and more chocolate icing. It’s a chocolate lover’s—and Oreo lover’s—dream, and, not surprisingly, one of The Cheesecake Factory’s best sellers.

    When creating your own version of this dessert masterpiece at home, be sure to use a 10-inch springform pan. This is a big cheesecake, you'll get 12 large slices out of it. The restaurant charges around 56 bucks for a whole cheesecake this big, but thankfully a homemade version will cost you much less than that.

    Menu Description: “Slow-simmered meat sauce with tender braised beef and Italian sausage, tossed with ruffled pappardelle pasta and a touch of alfredo sauce—just like Nonna’s recipe.”

    It’s a mistake to assume that a recipe posted to a restaurant chain’s website is the real recipe for the food served there. I’ve found this to be the case with many Olive Garden recipes, and this one is no exception. A widely circulated recipe that claims to duplicate the chain’s classic Bolognese actually originated on Olive Garden’s own website, and if you make that recipe you’ll be disappointed when the final product doesn’t even come close to the real deal. I won’t get into all the specifics of the things wrong with that recipe (too much wine, save some of that for drinking!), but at first glance it’s easy to see that a few important ingredients found in traditional Bolognese sauces are conspicuously missing from that recipe, including milk, basil, lemon, and nutmeg.

    I incorporated all those missing ingredients into this new hack recipe, tweaked a few other things, and then tested several methods of braising the beef so that it comes out perfectly tender: covered, uncovered, and a combo. The technique I settled on was cooking the sauce covered for 2 hours, then uncovered for 1 additional hour so that the sauce reduces, and the beef transforms into a fork-flakable flavor bomb. Yes, it comes from Olive Garden, but this Bolognese is better than any I’ve had at restaurants that charge twice as much, like Rao’s where the meat is ground, not braised, and they hit you up for $30.  

    As a side note, Olive Garden’s menu says the dish comes with ruffled pappardelle pasta, but it’s actually mafaldine, a narrower noodle with curly edges (shown in the top right corner of the photo). Pappardelle, which is the traditional pasta to serve with Bolognese, is very wide noodle with straight edges, and it’s more familiar than mafaldine, so perhaps that’s why the menu fudges this fact. In the end, it doesn’t really matter which pasta you choose. Just know that a wide noodle works best. Even fettuccine is good here.

    When I first hacked this recipe back in 1997 for the book, Top Secret Restaurant Recipes, Hooters wings looked different than they do today. The chain used to leave the pointy end of the wing attached to the middle piece, or “flat,” which, frankly, is unnecessary because there is very little meat on the tip segment. Today the chain serves wings like everyone else, drumettes and flats, completely separated, and delivered by waitresses in the same bright orange shorts as when the chain started in 1983.

    One thing that wasn't available to me back then was the opportunity to examine the chain’s packaging for the lists of ingredients on signature items like sauces and breading. Today, since they sell these items as retail products, I can take advantage of labelling laws which require ingredients to be clearly listed, and see what really goes into these recipes. Using that new information I’ve made a few small tweaks to improve this recipe from over 20 years ago, including two versions of the kickass wing sauce—medium and hot—for your wing-devouring pleasure.

    Other hacks that claim to duplicate the fabulous flavor of this popular soup do not make good clones, yet the long grain and wild rice mix that many of these recipes call for is a great way to get just the right amount of rice in a perfect blend. Just be sure not to use the flavor packet that comes with those rice kits, or you won’t get a good clone. Toss out that blend (or use it elsewhere, see Tidbits) and follow the recipe described below for the best solution to a spot-on soup hack.

    Thanks to Panera Bread's policy of completely transparent ingredients, I discovered a surprising ingredient or two (wow, cabbage!), and was able to craft the best clone you’ll find for this top secret signature soup.

    Wendy’s claims it took three years to develop the hit chicken sandwich that’s built on a croissant roll and slathered with the chain’s secret maple glaze. Now you can re-create the sandwich at home (four of them, actually), with copycat ingredients, and I’ve got some shortcuts here to help make it quick and easy.

    For the chicken, find frozen chicken breasts or large tenderloins with a homestyle breading. Tyson’s Southern Style Breast Tenderloins work great if you pick out the biggest pieces from the bag. The breading on this chicken is similar to what you get at Wendy’s.

    Rather than making croissants from scratch, which is a time-consuming task, we’ll use Pillsbury dough from a tube. Pillsbury’s “Crescents” are not true croissants, even though they look and taste similar to croissants. Real croissant dough rises with yeast and would blow out a Pillsbury paper tube in a day or two, even if chilled. For that reason, Pillsbury uses baking powder in products that usually call for yeast, such as cinnamon rolls and croissants. Baking powder is a chemical leavening agent activated by heat, and it will remain stable in the refrigerated section of your supermarket, safely inside the paper tubes until you bake it.

    Instead of cooking the rolls as directed on the package, we'll roll the dough using the technique below, form it in a 3½-inch ring mold, and bake it. This will make perfect croissant buns which we can slice and toast for our sandwich. If you don’t have a 3½-inch ring mold you can use a ring from a canning jar or a biscuit cutter. If the diameter is less than 3½ inches, just form the dough using the smaller mold, then remove the mold and press down on the dough until it is 3½ inches across.
