    Fans of this dish say the best part is the pina colada dipping sauce. And it's true. That sauce is so good you could eat it with a spoon. But the coconut shrimp is pretty awesome too, just on its own. Red Lobster's secret formula includes Captain Morgan's Parrot Bay rum, which sweetens the batter and adds a great coconut flavor (plus you can whip up a nice cocktail with it while you're cooking). Panko breadcrumbs—which give a nice crunch to the shrimp—can be found in the aisle of your market where all the Asian foods are parked. This secret recipe makes two times the size of a serving you get at the Lobster, so there should be enough for everyone. The real thing comes with salsa on the side in addition to the pina colada sauce, but you may not even want to include it.

Red Lobster lets you chose your favorite fish from the menu, then prepares it on the grill with a basting of tangy citrus and ginger teriyaki glaze. The delicious pineapple-mango salsa is the perfect finishing touch. Once you've got your favorite fresh fish from the market, you just need to prepare the sauce and salsa, and light the tiki torches.

    The low-carb craze is influencing menus of America's restaurant chains, but no chain has embraced the trend as enthusiastically as Ruby Tuesday. Nation's Restaurant News awarded the chain "Best Healthy Choice Menu Selection for 2004," based on more than 30 new low-carb dishes added to the menu, including low-carb cheesecake, burgers in high-fiber tortilla wraps, and other low-carb stand-ins such as Creamy Mashed Cauliflower. This most talked-about of the new selections is a side dish stunt double for mashed potatoes, with a carb count coming in at a measly 9 net carbs per 3/4-cup serving, according to the menu. Spices and cream are added to steamed and pureed cauliflower to give this dish the taste, texture and appearance of America's favorite side. Serve this up with any entree that goes well with mashed potatoes, and you'll never miss the spuds.

    The T.G.I. Friday's chain engineered a system-wide rejuvenation by upgrading the look of the restaurants and replacing many old menu items with new, creative dishes including several Atkins-approved low-carb selections. Though not low-carb (because of the potatoes) this new menu addition is still a healthy entree choice, and the presentation is cool with the dish coming to your table in a sizzling iron skillet just like fajitas. This clone re-creates that same sizzling presentation in a large serving for two. If you want to serve more, add another 8 to 10 shrimp to the recipe—there are plenty of peppers and other stuff in there so the recipe will still work. Pop an oven-safe skillet into the oven as the potatoes are baking. This way, when the dish is ready to serve, you transfer it to this blazing hot pan just before bringing it to the table. Ah, listen to that sizzle. Since this pan will be heating up in a very hot oven, be sure not to use a skillet with a plastic handle that could melt. A large cast-iron skillet is the best choice, if you've got one. If you don't have an oven-safe pan, you can always heat up your skillet on the stovetop.

It's one of the groovy appetizers on the Red Lobster menu, and now you can re-create it at your crib. Find some large shrimp, a wooden skewer or toothpicks, and cook the bacon about halfway to done before you begin. If you like those tender, cheesy garlic biscuits that come with every meal at Red Lobster—and you like crab—then you'll definitely like this.

    Menu Description: "Broiled and served with sweet ginger soy, baby corn and spinach."

    Grab a couple half-pound sea bass fillets (not too thick), whip up a simple marinade and you're on your way to cloning one of the most beloved dishes at America's fastest growing Chinese bistro chain. The marinade is made with only six ingredients so you'll have that done in no time. If you can't find oolong tea, you can use green tea. Loose tea is best, but if you can only find bags, that's okay. One teabag contains 1 teaspoon of tea, so you'll just need half of a teabag for this recipe (in fact, the recipe still works even without the tea). You will need to plan ahead for this P.F. Chang's oolong marinated sea bass recipe, however, since the fish must marinate for 5 to 7 hours. Once the fish is marinated, fire up the oven to bake it, then finish it off under the broiler. Saute some spinach, garlic, and tiny corn for an optional bed that makes the dish indistinguishable from the real thing.

    Everyone hip on Subway's sandwiches knows the key to cloning the flavor of many of the chain's top-sellers is in hacking the secret sauces. For example, Subway's Sweet Onion Chicken Teriyaki Sandwich is pretty bland without the Sweet Onion Sauce. And one of Subway's newest creations, the Chipotle Southwest Cheese Steak, is just a cheese steak sandwich without the Chipotle Southwest Sauce. Now, with Subway's Chipotle Southwest Sauce recipe, you can recreate the slightly sweet, mildly sour, and a little bit smoky sauce at home to take any of your home sandwich creations on a trip to the spicy Southwest. But you don't have to stop at sandwiches. This sauce also makes an amazing dressing for a zesty Southwestern-style salad. You'll need to pick up some ground chipotle chile in the spice section of your market. McCormick makes good stuff.

    Panera Bread's Baked Spinach and Artichoke Egg Souffle reminds me of a breakfast Hot Pocket, if a Hot Pocket tasted really good. With eggs, cheese, spinach, and artichoke hearts baked into a buttery crust, this super-cool presentation will earn you big bonus points from your crew in the a.m. And the best part about this copycat Panera spinach souffle recipe is you won't stress out over making the dough from scratch since you use premade Pillsbury Crescent Dough that comes in a tube. Just be sure when you unroll the dough that you don't separate it into triangles. Instead, pinch the dough together along the diagonal perforations to make four squares. After the dough is rolled out, line four buttered ramekins with each square, fill each ramekin with the secret egg mixture, and bake.
