Rainforest Cafe Rumble In The Jungle Turkey Pita

No two Rainforest Cafés are the same. While they all include plant-covered walls and ceilings, waterfalls, starry skies, and live birds, you will find many unique features in each of the restaurants. The Las Vegas store includes an aquarium archway under which you must walk to enter the restaurant, and the original store in the Mall of America features a talking banyan tree spouting ecological messages twice a minute.

The turkey pita sandwich has been on the menu since the first restaurant opened in 1994, and our clone is a great way to use up your leftover Thanksgiving turkey and cranberry sauce. You can use full-fat Caesar dressing for this hack, just like the restaurant uses, and still keep the fat reasonably low. But if you use a tasty lower-fat substitute, you can knock those fat grams down even further.

Cranberry Relish
  • 1 16-ounce can whole berry cranberry relish
  • 1/2 cup orange juice
  • 1/4 cup raisins
  • 1/4 cup gold raisins
Sandwich
  • 10 large leaves romaine lettuce, chopped (5 to 6 cups)
  • 1/4 cup Caesar dressing
  • 4 large pita breads
  • 2 Roma tomatoes, sliced (16 slices)
  • 1 cooked turkey breast, (about 12 ounces) chilled and chopped into bite size pieces
  • 1/2 cup French's French fried onions
Do This

1. Prepare the cranberry relish, if you plan to use it, by combining all of the ingredients in a medium saucepan over medium/high heat. Bring the mixture to a boil, then reduce heat and simmer for 5 to 7 minutes. Remove the mixture from the heat, and cool. Pour the mixture into a covered container and chill until cold.

2. Toss the lettuce with the Caesar dressing, in a large bowl.

3. Wrap the pitas in a moist towel and heat in the microwave on high for about 1 minute or until all of the pitas are hot.

4. To make a sandwich, fill the pita with about 1/4 the romaine lettuce.

5. Arrange four of the Roma tomato slices along one side of the pita.

6. Spoon 3 ounces (about 3/4 cup) of the turkey over the lettuce and tomato slices, then sprinkle 2 tablespoon of fried onions on top. Serve with cranberry relish on the side, if desired. Repeat for the remaining sandwiches.

Makes 4 sandwiches.

    California Pizza Kitchen (CPK) California Club Pizza

    Menu Description: "Applewood smoked bacon, grilled chicken and Mozzarella cheese, hearth baked, then topped with Roma tomatoes, chilled chopped lettuce tossed in mayonnaise and fresh sliced avocados."

    There's no better way to clone the great pizzas from this creative chain than to start with dough made from scratch. Since the best way to re-create commercial-style pizza dough at home is to use the same slow-rising technique the pros use, you're going to have to plan ahead at least 24 hours. This is the length of time it will take for the gluten in the flour to work its magic while resting comfortably in your refrigerator. And, if you've got the patience, 48 hours is even better. 

    Once the dough is ready to go, you should bake your pizzas—my CPK California Club Pizza recipe makes two—on a pre-heated pizza stone in your oven. If you don't already have one, you can find one of the round or rectangular stones in just about any housewares store. This cooking method is the absolute best way to produce an evenly baked finished product with a texture and taste that mirrors the amazing pies CPK whips out of rocket-hot brick pizza ovens.

    On the Border Guacamole Live!

    Menu Description: "Made fresh to order, with ripe avocados and choice of tomatoes, jalapeños, cilantro, red onions and fresh lime juice. Enough to share."

    This 160-unit casual Mexican chain makes a nice table side guacamole that you can easily duplicate for your amigos. This is the basic formula, but you can freely adjust it to suit the tastes of your crew. It's also easy to double it (or more) for a bigger fiesta, if that's the plan. My On The Border Guacamole Live! copycat recipe is much better when slightly chilled. So, put the avocados into the fridge for an hour or two before you open them up.

    El Pollo Loco BBQ Black Beans

    If you like traditional BBQ beans, you've got to love El Pollo Loco's sweet-and-spicy variation with black beans. The light smokiness in this clone comes from bacon fat, then cayenne pepper and green chiles give the beans a Southwestern flavor that's perfect on burritos or as a delicious side. 

    The prep for my El Pollo Loco BBQ black beans recipe is a breezer, since you conveniently combine two 15-ounce cans of black beans with the other secret ingredients in a saucepan and just let it simmer for an hour or so. When the beans are soft and the mixture is thick, on with the eating.

    California Pizza Kitchen (CPK) Sedona White Corn Tortilla Soup Low-Fat

    When you get a steaming bowl of great tortilla soup plopped down in front of you, it's tough to stop slurping until you hit bottom. California Pizza Kitchen has just such a soup, but the oil and fried tortilla chips jack up the fat. Never fear. You can use my CPK Sedona White Corn Tortilla Soup recipe below to make a soup that tastes just as good as the original without most of the oil and fat. Fat-free chicken broth stands in well for the regular stuff, and baked corn tortilla chips give the soup its traditional taste and texture. You'll want to use a hand blender for this one, if you've got one. If not, a regular blender or food processor will work fine to purée the soup so that it has the smooth consistency of the original CPK tortilla soup, but with only a miniscule two grams of fat per serving.

    California Pizza Kitchen Original BBQ Chicken Pizza

    Menu Description: "Introduced in our first restaurant in 1985. With barbecued chicken, sliced red onion, cilantro, and smoked Gouda cheese."

    In 1985, attorneys Larry Flax and Rick Rosenfield traded in their private practice, which included defending mob bosses and union officials, for a specialty pizza chain. These two "amateur chefs" say they were influenced by Wolfgang Puck, whose Spago restaurant in Los Angeles was the first to create pizza with unusual toppings. Now they have developed a niche somewhere between gourmet food and traditional Italian-style pizzas, creating what one magazine described as "designer pizza at off-the-rack prices." In addition to the pastas, soups, and salads, California Pizza Kitchen offers dozens of unique pizza creations that reflect the current trends in dining. When Cajun food was in style, the Cajun chicken pizza was a top seller; today that item has been replaced with Southwestern and Thai pizza varieties. As the menu explains, the Barbecued Chicken Pizza was one of the first pizzas served at California Pizza Kitchen. Decades later it remains one of the top-selling pizza creations.

    You can use this CPK BBQ chicken pizza recipe to make your pizza with pre-made or packaged dough, but I highly recommend taking the time to make the dough yourself. You'll find that it's well worth the little bit of extra work.

    Margaritaville Crab, Shrimp and Mushroom Dip

    Menu Description: "Our signature appetizer...jumbo lump blue crab meat, gulf shrimp and mushrooms, simmered in a Cajun cream sauce and served with toasted garlic bread. We make it here so you know it's good!"

    This dips rocks, and I'm not the only one who thinks so. According to the Margaritaville menu, it's the theme chain's signature appetizer. And what's not to like: delicious blue crab, little bay shrimp and sliced mushrooms are all swimming in a Cajun-style cream sauce, topped with melted Cheddar and Jack cheeses, and broiled until the cheese melts...yum. Serve up your clone with slices of freshly toasted buttery garlic bread and you've got a great party snack. The restaurant version is a tiny little serving that's barely enough for two, so I've supersized this clone recipe to make enough dip to satisfy The Brady Bunch.

    IHOP Banana-Nut Pancakes

    IHOP claims to sell over 400,000 pancakes each day. That's a lot of pancakes. So many, in fact, if all of those flapjacks were served up on one plate, it would make a giant stack taller than the Sears Tower in Chicago. And much tastier.

    Use my IHOP Banana-Nut pancake recipe below to copy one of the most popular stacks at the chain. I've included a recipe for the banana-flavored syrup, but you can use any flavor syrup, including maple, on these dudes. 

    Update 2/8/17: Rather than combining all of the ingredients together in step #2, use two bowls. Combine the flour, baking powder, baking soda, and salt in one bowl. In the other bowl combine the buttermilk, egg, oil, sugar, and banana flavoring with an electric mixer on medium speed. Combine the dry ingredients with the wet ingredients, mix until smooth, and move on to step #3.

    Houston's Chicago-Style Spinach Dip

    These days, just about every casual dining chain has its version of this appetizer: spinach and artichoke hearts mixed with cheese and spices, served up hot with chips or crackers for dipping. Making the rounds over the years, I've tried many of them, and most formulas are nearly identical. That is, except for this one. Houston's makes their spinach dip special by using a blend of sour cream, Monterey Jack cheese and Parmegiano Reggiano; the ultimate Parmesan cheese. Parmegiano Reggiano is born in Italy and is usually aged nearly twice as long as other, more common Parmesan cheeses. That ingredient makes the big difference in this dip. So hunt down some of this special Parm at your well-stocked market or gourmet store, and you'll find out why Houston's spinach dip has been one of the most requested recipe clones here at TSR.

    Popeyes Red Beans and Rice

    I first created the clone for this Cajun-style recipe back in 1994 for the second TSR book, More Top Secret Recipes, but I've never been overjoyed with the results. After convincing a Popeyes manager to show me the ingredients written on the box of red bean mixture, I determined the only way to create an accurate Popeyes Red Beans and Rice recipe is to include an important ingredient omitted from the first version: pork fat. Emeril Lagasse—a Cajun food master—says, "pork fat rules," and it does. 

    We could get the delicious smoky fat from rendering smoked ham hocks, but that takes too long. The easiest way is to cook 4 or 5 pieces of bacon, save the cooked bacon for another recipe (or eat it!), then use 1/4 cup of the fat for my Popeyes Red Beans and rice recipe below. As for the beans, find red beans (they're smaller than kidney beans) in two 15-ounce cans. If you're having trouble tracking down red beans, red kidney beans will be a fine substitute.

    DoubleTree Hotel Chocolate Chip Cookies

    When you check in at one of more than 250 hotels run by this U.S. chain, you are handed a bag from a warming oven that contains two soft and delicious chocolate chip cookies. This is a tradition that began in the early 80s using a recipe from a small bakery in Atlanta. All the cookies are baked fresh every day on the hotel premises. The chain claims to give out about 29,000 cookies every day. 

    Raves for the cookies from customers convinced the hotel chain to start selling tins of the cookies online. But if you've got an insatiable chocolate chip cookie urge that can't wait for a package to be delivered, you'll want to try my DoubleTree Hotel Chocolate Chip cookie copycat recipe below. Just be sure to get the cookies out of the oven when they are barely turning brown so that they are soft and chewy in the middle when cool.

    Benihana Japanese Fried Rice

    The talented chefs at Benihana cook food on hibachi grills with flair and charisma, treating the preparation like a tiny stage show. They juggle salt and pepper shakers, trim food with lightning speed, and flip the shrimp and mushrooms perfectly onto serving plates or into their tall chef's hat.

    One of the side dishes that everyone seems to love is the fried rice. At Benihana this dish is prepared by chefs with precooked rice on open hibachi grills, and is ordered a la cart to complement any Benihana entrée, including Hibachi Steak and Chicken. I like when the rice is thrown onto the hot hibachi grill and seems to come alive as it sizzles and dances around like a bunch of little jumping beans. Okay, so I'm easily amused.

    My Benihana Japanese fried rice copycat recipe will go well with just about any Japanese entrée, and can be partially prepared ahead of time and kept in the refrigerator until the rest of the meal is close to done.

    California Pizza Kitchen Thai Chicken Pizza

    Menu Description: "With pieces of chicken marinated in a spicy peanut-ginger and sesame sauce, green onions, bean sprouts, julienne carrots, cilantro and roasted peanuts."

    After the first California Pizza Kitchen opened in Beverly Hills in 1985 success came quickly: there are currently 78 restaurants in 18 states. In 1992, huge food conglomerate PepsiCo paid over $70 million for a 70 percent share of the company-just eight years after Larry and Rick started the company. As for those two, well, they pocketed $18 million apiece, or around 70 times their initial investment in 1985.

    Thai Chicken Pizza is one of the oldest varieties of pizza still on the menu, and remains a favorite. If you prefer, you can use a store-bought package dough or dough mix, but I recommend using my CPK Thai Chicken Pizza recipe below and making the crust yourself. If you decide to do that, make it one day ahead of time so that it can rise slowly in the refrigerator.

    Baja Fresh Salsa Baja

    You won't find freezers, can openers, or microwave ovens at this national Mexican food chain. Since 1990 Baja Fresh has been serving up great food, made fresh with each order. As you're waiting for your food to come out, that's when you hit up the salsa bar, where you'll find several varieties of delicious fresh salsa, from hot to mild, ready to be spooned into little tubs that you can take to your table or to your car. One of the most popular selections is called Salsa Baja—its medium spiciness, smoky flavor, and deep black color make the salsa unique and mysterious. That is, until now, since I've got a Top Secret formula for you right here. But the recipe wasn't as easy to create as I first thought. I figured the tomatoes would have to be extremely blackened over a hot grill, but I wasn't sure how to get them dark enough to turn the salsa black without the tomatoes getting all mushy and falling apart on the barbecue.

    So, I went back to Baja Fresh before they opened to peer through the window to see if I could catch some hot salsa production action. I waited and waited. After several hours, as the lunch rush was beginning to wind down and no fresh salsa was in the pipeline, it was time for extreme measures to get things moving. I went in and ordered 30 tubs of Salsa Baja to go, and that did it. I ended up with a big bag filled with 2 gallons of salsa (thankfully they poured those 8-ounce portions into bigger bowls), and the restaurant went immediately into "salsa red alert" to replenished the now-dwindling salsa reserve. It was perfect. As I was grabbing my bag of salsa, a dude come out from the kitchen with a huge box of tomatoes and placed them all on the grill. I ordered a giant Diet Pepsi and parked myself at a close table to watch the process. That's when I discovered the secret. For super-charred tomatoes, they start with firm, chilled tomatoes, that aren't too big or too ripe. I also found out that the tomatoes must start roasting on the grill with the stem-side down.
