    Lazy Dog Bacon Candy (Candied Bacon)

    Menu Description: “Bacon baked with brown sugar, crushed red pepper chili flakes, black pepper.”

    The technique of sugaring raw bacon and baking it until crispy is neither complicated nor a secret, but this simple formula has numerous variations. I tried several methods of sugaring bacon to determine what works best. Then, I customized the recipe to closely match the bacon candy on the appetizer menu at the 48-unit casual restaurant chain.

    Lazy Dog chefs know that the best bacon candy is more than just sweet and salty, so they sprinkle in some black pepper and crushed red pepper flakes to perk up the party. Thick-cut bacon will be ideal for your clone, and you’ll need a rack to allow air to circulate around the slices. You might also want to line your baking sheet with foil for easy cleanup of the greasy aftermath.

    After it comes out of the oven, sprinkle your homemade Lazy Dog Bacon Candy with fresh parsley and serve it upright in a cup, just like in the restaurant. It's an excellent appetizer or snack, and it also makes a great garnish in this hack for Lazy Dog Crispy Deviled Eggs

    Lazy Dog Crispy Deviled Eggs

    Menu Description: “Lightly fried, topped with smoked paprika + bacon candy.”

    Lazy Dog Crispy Deviled Eggs are hard-cooked egg whites, breaded and fried until crispy, filled with a creamy yolk mixture, sprinkled with smoked paprika, and topped with the best thing that ever topped a deviled egg: bacon candy! 

    We'll begin with a couple of good methods for hard-cooking eggs that produce beautifully yellow yolks without any gray tint. After cooking, the yolks are removed and mashed, then flavored and spooned back into the crispy, breaded whites.

    I'm also including my hack for cloning two slices of the chain's great brown sugar candied bacon.
