    Lazy Dog Bacon Candy (Candied Bacon)

    Menu Description: “Bacon baked with brown sugar, crushed red pepper chili flakes, black pepper.”

    The technique of sugaring raw bacon and baking it until crispy is not complicated or secret, but there are numerous variations of this simple formula. I tried several methods to determine what works best and then customized the recipe to closely match the bacon candy on the appetizer menu at the 44-unit casual restaurant chain.

    Lazy Dog chefs know that good bacon candy should be more than sweet and salty, so they sprinkle in some black pepper and crushed red pepper flakes to perk up the party. Thick-cut bacon is best for your clone, and you’ll need a rack so air can move around the slices. If you line your baking sheet with foil, cleanup will be a cinch.

    Sprinkle your Lazy Dog Bacon Candy clone with fresh parsley and serve it upright in a cup, just like in the restaurant. It's an excellent appetizer or snack, and it also makes a great garnish in this hack for Lazy Dog Crispy Deviled Eggs

    Lazy Dog Crispy Deviled Eggs

    Menu Description: “Lightly fried, topped with smoked paprika + bacon candy.”

    Lazy Dog Crispy Deviled Eggs are hard-boiled egg whites breaded and fried until crispy. They are then filled with the creamy yolk mixture, sprinkled with smoked paprika, and topped with the best thing that ever topped a deviled egg: bacon candy! 

    We'll start with a some good ways to hard-cook the eggs, resulting in beautifully yellow yolks without a grey tint. The bright yellow yolks are later removed and flavored, then spooned back into the crispy breaded whites.

    I'm also including my hack for cloning two slices of the chain's great brown sugar candied bacon.
