McDonald's enlisted Destiny's Child, Venus Williams, and Bob Greene (Oprah's trainer) to kick off its balanced lifestyles campaign in the spring of 2005, starting with this salad and the tagline "Get a fruit buzz." Most of the recipe is no big secret: two kinds of sliced apples, red seedless grapes, and low-fat vanilla yogurt. If there is a secret ingredient it's the candied walnuts which we can clone from scratch using honey, peanut oil, sugar and vanilla. Use my McDonald's Fruit and Walnut Salad recipe below to get a fruit buzz at home.

Get This

Candied Walnuts
  • 1 teaspoon peanut oil
  • 1 teaspoon honey
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 3/4 cup coarsely chopped walnuts

  • 2 small Granny Smith apples, cored and cut into 16 slices each
  • 2 small Gala apples, cored and cut into 16 slices each
  • 40 red seedless grapes
  • 3/4 cup Dannon low-fat vanilla yogurt
Do This

1. Make the candied walnuts by combining the peanut oil, honey, sugar, vanilla, and salt in a medium saute pan over medium heat in the order listed. When the mixture begins to bubble, add the chopped walnuts and stir constantly until the sugar begins to smoke and/or caramelize. Immediately turn off the heat and keep stirring the nuts so that they do not burn. After a minute of stirring off the heat, pour the nuts out onto a plate. Toss the nuts as they cool so they don't stick together.

2. When the nuts have cooled, build each salad by mixing 8 slices of Granny Smith apple, 8 slices of Gala apple, 10 grapes, 3 tablespoons of yogurt, and 3 tablespoons of candied walnuts. Stir and serve. 

Makes 4 servings.

This is great. If you want to keep the apples from turning brown soak them in unsweeten pineapple juice you have left from your canned pineapple. I'm sure everyone eats canned pineapple. Now you have something to do with the left over juice.

Excellent! I made this in a big bowl instead of individual & used a little more yogurt. The walnuts are perfect but really watch them as they can burn fast!!

    Chili's Salsa

    My super simple Chili's salsa recipe can be made in a pinch with a can of diced tomatoes, some canned jalapeños, fresh lime juice, onion, spices, and a food processor or blender. Plus, you can easily double the recipe by sending in a larger 28-ounce can of diced tomatoes, and simply doubling up on all the other ingredients.     Outback Steakhouse Honey Wheat Bushman Bread

    Along with your meal at this huge national steakhouse chain, comes a freshly baked loaf of dark, sweet bread, served on its own cutting board with soft whipped butter. One distinctive feature of the bread is its color. How does the bread get so dark? Even though my Outback Honey Wheat Bushman bread recipe includes molasses and cocoa, these ingredients alone will not give the bread its dark chocolate brown color. Commercially produced breads that are this dark—such as pumpernickel or dark bran muffins–often contain caramel color, an ingredient used to darken foods. Since your local supermarket will not likely have this mostly commercial ingredient, we'll create the brown coloring from a mixture of three easy-to-find food colorings—red, yellow and blue. If you decide to leave the color out, just add an additional 1 tablespoon of warm water to the recipe. If you have a bread machine, you can use it for kneading the bread (you'll find the order in which to add the ingredients to your machine in "Tidbits"). Then, to finish the bread, divide and roll the dough in cornmeal, and bake.

    Starbucks Mocha Coconut Frappuccino

    This discontinued Starbucks delight is like a cold Mounds bar in a cup—too bad this ultra-delicious iced coffee drink was nixed from the menu. Good thing we have a clone.

    For my Starbucks Mocha Coconut Frappuccino recipe below, you'll need to find shredded coconut in the baking aisle and toast 1/2 cup of it. You'll use most of the toasted coconut in the blender, but save a little for the garnish when the drinks are done.

    Claim Jumper Cheese Potatocakes

    This top-seller is a versatile side dish alternative to mashed potatoes, but also stands well on its own as an appetizer. With cilantro, green onion, and three different cheeses in there, the flavor is the bomb. When you add a crispy breading and some herbed ranch salsa drizzled over the top, it's clear why this is the most popular appetizer on the huge Claim Jumper menu. Try dropping a pinch or two of cayenne pepper into the herbed ranch salsa for an extra spicy boost.

    Lone Star Steakhouse Baked Sweet Potato

    Sweet potatoes are not related to the more common russet potatoes and are often confused with yams in the grocery store and on menus (the yam is actually starchier and less flavorful). Just be sure you're buying sweet potatoes when you get to the produce section—even the produce stockers get mixed up. Bake these up, and when you spoon on some butter and sprinkle cinnamon/sugar over the top, you've got a treat that tastes more like dessert than a side dish.

    Olive Garden Lemon Cream Cake

    Menu Description: "Delicate white cake and lemon cream filling with a vanilla crumb topping."

    To make this clone easy, I've designed the recipe with white cake mix. I picked Betty Crocker brand, but any white cake mix you find will do. Just know that each brand (Duncan Hines, Pillsbury, etc.) requires slightly different measurements of additional ingredients (oil, eggs). Follow the directions on the box for mixing the batter, then pour it into 2 greased 9-inch cake pans and bake until done. The filling recipe is a no-brainer and the crumb topping is quick. When your Olive Garden lemon cream cake recipe is assembled, stick it in the fridge for a few hours, and soon you'll be ready to serve 12 slices of the hacked signature dessert.

    Olive Garden Bruschetta

    Menu Description: "A traditional topping of roma tomatoes, fresh basil and extra-virgin olive oil. Served with freshly toasted ciabatta bread."

    Olive Garden's recently redesigned bruschetta recipe improves on the Italian chain's previous version. The tomato salad includes a little sun-dried tomato and balsamic vinegar, and it is now served in a separate dish rather than on the bread. Now the bread doesn't get soggy. The tomatoes are finely diced before mixing with the other ingredients, and the ciabatta bread is sprinkled with a little grated Parmesan cheese before it's toasted. For my Olive Garden Bruschetta recipe below, try to find a nice, chewy loaf of Italian bread. Get the best bread in the store. The better your bread, the better your bruschetta.

    Applebee's White Chocolate and Walnut Blondie

    Menu Description: "Dare to indulge with a white chocolate and walnut blondie under a scoop of ice cream and chopped walnuts. Served warm and topped at your table with a rich, sizzling maple butter sauce."

    For Applebee's regulars, this dessert is a hands-down favorite. In a hot skillet comes a delicious slice of white chocolate and walnut cake—it's similar to a brownie in texture topped with a scoop of ice cream and warm maple butter sauce bubbling as it hits the pan. Commence with the salivating. 

    Use my Applebee's White Chocolate and Walnut Blondie recipe to recreate this pile of pleasure at home. You start by making the cake from scratch. For the white chocolate, get a couple of 4-ounce bars or one 8-ounce bar and chop it into chunks. White chocolate chunks work best in my Applebee's blondie copycat recipe, but you can certainly use white chocolate chips in a pinch. While the blondie cake is baking, whip up the sauce—it will be fluffy at first. When you're ready to serve the dessert, zap the sauce in the microwave until it's hot and creamy. Arrange the decadence in a hot skillet and serve it sizzling to happy, drooling mouths.

    Lawry's Taco Spices and Seasonings

    This is my clone recipe for the stuff you buy in 1-ounce packets to create, as the package says, "a fun-filled Mexican fiesta in minutes." Ah, so true. In fact, thanks to Lawry's, my last Mexican fiesta was filled with so much fun that I had to take a siesta. And I promise you just as much fun with my Lawry's Taco Spices and Seasonings recipe below. Maybe even a tad more. Just mix the ingredients together in a small bowl, then add it to 1 pound of browned ground beef along with some water and let it simmer. Before you know it, you'll be up to your nostrils in good old-fashioned, taco-making fun.

    El Pollo Loco Flame-Broiled Chicken

    El Pollo Loco, or "The Crazy Chicken," has been growing like mad since it crossed over the border into the United States from Mexico. Francisco Ochoa unknowingly started a food phenomenon internacional in 1975 when he took a family recipe for chicken marinade and opened a small roadside restaurante in Gusave, Mexico. He soon had 90 stores in 20 cities throughout Mexico. The first El Pollo Loco in the United States opened in Los Angeles in December 1980 and was an immediate success. It was only three years later that Ochoa got the attention of bigwigs at Dennys, Inc., who offered him $11.3 million for his U.S. operations. Ochoa took the deal, and El Pollo Loco grew from 17 to more than 200 outlets over the following decade.

    Applebee's Tijuana Philly Steak Sandwich

    Menu Description: "Lean shaved Philly steak folded into a grilled tortilla roll with Monterey Jack and Cheddar, sauteed mushrooms, onions, tomatoes, bacon and jalapenos."

    With the acquisition of 13 Rio Bravo cantinas in 1994, Applebee's made its move into the competitive "Mexican casual dining sector." Perhaps it's the company's interest in Mexican food that inspired this Philadelphia-Tijuana hybrid sandwich. The steak, cheese, mushrooms, and onions give the sandwich a Philly taste, while the tomatoes, bacon, jalapenos, and the tortilla take you across the border.

    I really like this newer addition to the menu, probably because I'm a big cheesesteak fan who also loves Mexican food. As you can see from this dish, Applebee's has a knack for breathing new life into old sandwich concepts. I hope you'll find this one worth a try.
