Menu Description: "Biscuit-flavored pancakes layered with your favorite fruit compote and crowned with creamy whipped topping. Choose from blueberry, strawberry or country apple."

Since these fruit-covered pancakes are made with the same ingredients that go into biscuits, you won't need any eggs. The batter is like runny biscuit dough, and, when cooked on a hot griddle or in a skillet, you get dense pancakes that have the same flavor as buttermilk biscuits. For real! The fruit compote is canned pie filling if you are making the blueberry or apple versions. Each can supplies enough fruit for the 3 servings made with this recipe. If it's strawberries you want on top of your pancakes, just thaw out a package of frozen whole or sliced strawberries in syrup. You can also use fresh sliced strawberries that have been mixed in the strawberry glaze that's often found in your market's produce section, usually over by the strawberries.

  • 1 1/3 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1/3 cup butter, melted
Toppings (Choose One)
  • 1 21-ounce can blueberry pie filling
  • 1 21-ounce can apple pie filling
  • 1 16-ounce package frozen strawberries in syrup, thawed
Garnish
  • Canned whipped cream
Do This

1. Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl.

2. Add the buttermilk and melted butter to the dry ingredients and mix with an electric mixer for about 30 seconds, or until smooth. Let the batter sit for 3 to 4 minutes before you use it.

3. While the batter sits, preheat a griddle or non-stick pan to medium/low heat. Wipe the pan with a little vegetable oil or use non-stick cooking spray. When the batter has rested, give it a quick stir, then measure 1/2-cup portions onto the hot pan. Cook each pancake for 2 to 3 minutes per side or until golden brown.

4. Assemble each serving by spooning about 1/3 cup of the fruit of your choice over the top of one pancake. Place another pancake on top of that one and add another 1/3 cup of fruit. Apply a ring of whipped cream around the edge of the top pancake, and then add a dollop to the center.

Serves 3 (2 pancakes per serving).

    Red Lobster Cheddar Bay Biscuits

    Order an entree from America's largest seafood restaurant chain and you'll get a basket of some of the planet's tastiest garlic-cheese biscuits served up on the side. For many years, the Cheddar Bay Biscuits recipe has been the most-searched-for clone recipe on the Internet, according to Red Lobster. As a result, several versions are floating around, including one that was at one time printed right on the box of Bisquick baking mix.

    The problem with making biscuits using Bisquick is that if you follow the directions from the box you don't end up with a very fluffy or flakey finished product, since most of the fat in the recipe comes from the shortening that's included in the mix. On its own, room temperature shortening does a poor job creating the light, airy texture you want from good biscuits, and it contributes little in the way of flavor. So, we'll invite some cold butter along on the trip -- with grated Cheddar cheese and a little garlic powder. Now you'll be well on your way to delicious Cheddar Bay. Wherever that is.

    Hooters Buffalo Chicken Wings

    Menu Description: "Nearly world-famous. Often imitated, hardly ever duplicated."

    "Hooters is to chicken wings what McDonald's is to hamburgers," claims promotional material from the company. True, the six fun-loving Midwestern businessmen who started Hooters in Clearwater, Florida, on April Fool's Day in 1983 chose a classic recipe for chicken wings as their signature item. But while some might say it's the buffalo wings that are their favorite feature of the restaurant, others say it's the restaurant chain's trademark Hooters girls—waitresses casually attired in bright orange short-shorts and skin tight T-shirts.

    Today there are over 375 Hooters across the United States serving more than 200 tons of chicken wings every week. The original dish can be ordered in 10-, 20-, or 50-piece servings; or if you want to splurge, there's the "Gourmet Chicken Wing Dinner" featuring 20 wings and a bottle of Dom Perignon champagne, for only $125.     Wendy's Hot Chili Seasoning

    The little red packets of viscous hot sauce at the fast food giant have a cult following of rabid fans who will do whatever it takes to get their hands on large quantities. One such fan of the sauce commented online, "Are there any Wendy's employees or managers out there who will mail me an entire case of Hot Chili Seasoning? I swear this is not a joke. I love the stuff. I tip extra cash to Wendy's workers to get big handfuls of the stuff." Well, there's really no need to tip any Wendy's employees, because now you can make as much as you want in your own kitchen with my Wendy's Hot Chili Seasoning copycat recipe below. 

    The ingredients listed on the real Hot Chili Seasoning are water, corn syrup, salt, distilled vinegar, natural flavors, xanthan gum, and extractives of paprika. We'll use many of those same ingredients for our clone, but we'll substitute gelatin for the xanthan gum (a thickener) to get the slightly gooey consistency right. For the natural flavor and color we'll use cayenne pepper, cumin, paprika, and garlic powder, then filter the particles out with a fine wire-mesh strainer after they've contributed what the sauce needs.

    My recipe makes 5 ounces of sauce— just the right amount to fit nicely into a used hot sauce bottle—and costs just pennies to make.

    Buffalo Wild Wings Buffalo Wings and Sauces

    Menu Description: "Here they are in all their lip-smacking, award-winning glory: Buffalo, New York-style chicken wings spun in your favorite signature sauce."

    Since Buffalo, New York was too far away, Jim Disbrow and Scott Lowery satisfied their overwhelming craving in 1981 by opening a spicy chicken wing restaurant close to home in Kent, Ohio. With signature sauces and a festive atmosphere, the chain has now evolved from a college campus sports bar with wings to a family restaurant with over 300 units. 

    While frying chicken wings is no real secret—simply drop them in hot shortening for about 10 minutes—the delicious spicy sauces are what make the wings special. There are 12 varieties of sauce available to coat your crispy chicken parts at the chain, and I'm presenting clones for the more traditional flavors. These sauces are very thick, almost like dressing or dip, so we'll use an emulsifying technique that will ensure a creamy final product where the oil won't separate from the other ingredients. 

    In my Buffalo Wild Wings copycat recipe below you'll find the cooking and coating technique for the wings, followed by copycat recipes for the most popular sauces: Spicy Garlic, Medium and Hot. The sauce recipes might look the same at first, but each has slight variations to make your sauce hotter or milder by adjusting the level of cayenne pepper. You can find Frank's pepper sauce by the other hot sauces in your market. If you can't find that brand, you can also use Crystal Louisiana hot sauce.

    IHOP Country Omelette

    Sure, IHOP is famous for pancakes, but the joint makes a pretty killer omelette when put to the task. What makes this three-egg creation so cool is the top secret folding method. For all of IHOP's omelettes, the beaten eggs are mixed with the appropriate chunky ingredients, and the whole thing is poured out thin on a giant griddle. When the eggs have firmed up, two sides are folded over, the filling is positioned, and the omelette is rolled over once, twice, three times, so it ends up looking like a burrito, sort of. Now with this IHOP Country Omelette copycat recipe, we can execute the same egg origami at home with a 12-inch electric skillet, or a 12-inch stovetop griddle pan.     Olive Garden Lasagna Classico

    Crafting an Olive Garden’s signature Lasagna Classico recipe became the perfect opportunity to create a beautiful multi-layered lasagna hack recipe that uses up the whole box of lasagna noodles and fills the baking pan all the way to the top. This Top Secret Recipe makes a lasagna that tips the scale at nearly 10 pounds and will feed hungry mouths for days, with every delicious layer copied directly from the carefully dissected Olive Garden original.

    I found a few credible bits of intel in a video of an Olive Garden chef demonstrating what he claims is the real formula on a midday news show, but the recipe was abbreviated for TV and the chef left out some crucial information. One ingredient he conspicuously left out of the recipe is the secret layer of Cheddar cheese located near the middle of the stack. I wasn’t expecting to find Cheddar in lasagna, but when I carefully separated the layers from several servings of the original dish, there was the golden melted cheesy goodness in every slice.

    This clone recipe will make enough for 8 big portions, but if you make slightly smaller slices this is easily enough food to fill twelve lasagna-loving bellies. If you like lasagna, you're going to love this version.

    KFC Grilled Chicken

    It took chefs several years to develop what would eventually become KFC's most clucked about new product launch in the chain's 57-year history. With between 70 to 180 calories and four to nine grams of fat, depending on the piece, the new un-fried chicken is being called "KFC's second secret recipe," and "a defining moment in our brand's storied history" in a company press release. The secret recipe for the new grilled chicken is now stored on an encrypted computer flash drive next to the Colonel's handwritten original fried chicken recipe in an electronic safe at KFC company headquarters. Oprah Winfrey featured the chicken on her talk show and gave away so many coupons for free grilled chicken meals that some customers waited in lines for over an hour and half, and several stores ran out and had to offer rain checks. Company spokesperson Laurie Schalow told the Associated Press that KFC has never seen such a huge response to any promotion. "It's unprecedented in our more than 50 years," she said. "It beats anything we've ever done."

    When I heard about all the commotion over this new secret recipe, I immediately locked myself up in the underground lab with a 12-piece bucket of the new grilled chicken, plus a sample I obtained of the proprietary seasoning blend, and got right to work. After days of nibbling through what amounts to a small flock of hens, I'm happy to bring you this amazing cloned version of this fast food phenomenon so that you can now reproduce it in your own kitchen. 

    Find the smallest chicken you can for my KFC grilled chicken copycat recipe, since KFC uses young hens. Or better yet save some dough by finding a small whole chicken and cut it up yourself. The secret preparation process requires that you marinate (brine) your chicken for a couple of hours in a salt and MSG solution. This will make the chicken moist all the way through and give it great flavor. After the chicken has brined, it's brushed with liquid smoke-flavored oil that will not only make the seasoning stick to the chicken, but will also ensure that the chicken doesn't stick to the pan. The liquid smoke in the oil gives the chicken a smoky flavor as if it had been cooked on an open flame barbecue grill.

    The grilled chicken at KFC is probably cooked on ribbed metal plates in specially designed convection ovens to get those grill marks. I duplicated that process using an oven-safe grill pan, searing the chicken first on the stove top to add the grill marks, then cooking the chicken through in the oven. If you don't have a grill pan or a grill plate, you can just sear the chicken in any large oven safe sauté pan. If you have a convection function on your oven, you should definitely use it, but the recipe will still work in a standard oven with the temperature set just a little bit higher. After baking the chicken for 20 minutes on each side, you're ready to dive into your own 8-piece bucket of delicious indoor grilled chicken that's as tasty as the fried stuff, but without all the fat.

    BJ's Restaurant and Brewhouse Parmesan Crusted Chicken Breast

    Menu Description: "Our marinated chicken breast coated with Parmesan cheese and crunchy panko breadcrumbs, lightly pounded and pan fried to a golden brown. Served with white cheddar mashed potatoes and steamed broccoli and topped with a lemon Chardonnay butter sauce, sun-dried tomatoes, fresh basil and Parmesan cheese."

    My Parmesan Crusted Chicken Breast copycat recipe lays out a great way to prepare that 4-pack of chicken breasts you dropped into your shopping cart. While you're at the market, head down the aisle where the Asian foods are parked and pick up some Japanese breadcrumbs, also called "panko" breadcrumbs. Combining these coarse breadcrumbs with shredded Parmesan cheese makes a crispy breading for the chicken that doesn't even need a sauce to taste good. Still, the lemony Chardonnay butter sauce used at the restaurant is cloned here too, so you'll have the complete flavor experience. You'll want to plan ahead a bit for this dish since the chicken fillets will need to marinate in the brine solution for 2 to 3 hours.

    BJ's Restaurant and Brewhouse Famous Pizookie

    Menu Description: "A freshly baked, hot out-of-the oven, rich and delicious cookie topped with 2 scoops of vanilla bean ice cream and served in its own deep dish. Your choice of chocolate chunk, white chocolate macadamia nut, peanut butter or oatmeal raisin walnut."

    Visit one of the 83 BJ's restaurants located in the West and Southwest and you'll likely find many giddy diners digging down into one of these deep-dish cookie desserts. Even though the restaurant is known for great Chicago-style deep-dish pizzas and a fantastic selection of custom-brewed beers, it's the Pizookie at the end of the meal that gets the most drools. There are four varieties to choose from on the menu, so I'm giving you the BJ's Pizookie recipe for all four below. Each formula makes enough dough for one giant cookie, and the Pizookie recipe is so easy that you could make more than one with just a little extra effort. You might think that the cooking temperature of 475 degrees is extreme for a cookie, but since BJ's is a pizza joint, these puppies get cooked in cranked-up pizza ovens, and it works great. Not only will you have your cookie done in only 5 to 7 minutes, but also it'll be nice and brown on top, and slightly gooey in the center—all good things for a cookie, right? The restaurants uses 6-inch deep-dish pizza pans, but you can bake your clones in any cake pan or pie pan with a bottom that is 6 to 7 inches across.

    Cinnabon Cinnamon Rolls

    In early 1985, restaurateur Rich Komen felt there was a specialty niche in convenience-food service just waiting to be filled.     Cracker Barrel Hash Brown Casserole

    In the late sixties, Dan Evins was a Shell Oil "jobber" looking for a new way to market gasoline. He wanted to create a special place that would arouse curiosity, and would pull travelers off the highways. In 1969 he opened the first Cracker Barrel just off Interstate 40 in Lebanon, Tennessee, offering gas, country-style food, and a selection of antiques for sale. Today there are over 529 stores in 41 states, with each restaurant still designed as a country rest stop and gift store. In fact, those stores which carry an average of 4,500 different items apiece have made Cracker Barrel the largest retailer of American-made finished crafts in the United States.

    Those who know Cracker Barrel love the restaurant for its delicious home-style breakfasts and this casserole, made with hash brown-sliced potatoes, Colby cheese, milk, beef broth, and spices.     McDonald's French Fries

    They're the world's most famous French fries, responsible for one-third of all U.S. French fry sales, and many say they're the best. These fried spud strips are so popular that Burger King even changed its own recipe to better compete with the secret formula from Mickey D's. One-quarter of all meals served today in American restaurants come with fries; a fact that thrills restaurateurs since fries are the most profitable menu item in the food industry. 

    Proper preparation steps were developed by McDonald's to minimize in-store preparation time, while producing a fry that is soft on the inside and crispy on the outside. My McDonald's French Fries recipe requires a two-step frying process to replicate the same qualities: the fries are par-fried, frozen, then fried once more to crispy just before serving. Be sure to use a slicer to cut the fries for a consistent thickness (1/4-inch is perfect) and for a cooking result that will make them just like the real thing. As for the rumor that you must soak the fries in sugar water to help them turn golden brown, I also found that not to be necessary. If the potatoes have properly developed, they contain enough sugar on their own to make a good clone with great color.

    Taco Bell Enchirito (Improved)

    Since Taco Bell brought the Enchirito back from the dead a couple years ago the product's formula has changed a bit. With the exclusion of the sliced black olives on top, plus a few other minor changes, my Taco Bell Enchirito copycat recipe creates the "new" formulation of the chain's enchilada/burrito fusion product first introduced in the early 60s. The technique for preparation has also been improved from the recipe found in the first Top Secret Recipes book. So, until Taco Bell changes it again, this is the ultimate Enchirito recipe that makes enough for an entire family. With or without the olives.

    One of the side dishes that everyone seems to love is the fried rice. At Benihana this dish is prepared by chefs with precooked rice on open hibachi grills, and is ordered a la cart to complement any Benihana entrée, including Hibachi Steak and Chicken. I like when the rice is thrown onto the hot hibachi grill and seems to come alive as it sizzles and dances around like a bunch of little jumping beans. Okay, so I'm easily amused.

    My Benihana Japanese fried rice copycat recipe will go well with just about any Japanese entrée, and can be partially prepared ahead of time and kept in the refrigerator until the rest of the meal is close to done.

    Panda Express Blazing Bourbon Chicken

    In collaboration with the YouTube talk show Hot Ones, Panda Express released its spiciest dish yet, which includes a new sauce made with the treacherous Apollo chili pepper. The Apollo pepper was created by famous chili breeder Ed Currie, who also cultivated the Carolina Reaper, once rated as the world’s hottest chili pepper. Measuring around 3 million Scoville units, the Apollo pepper is 1.4 times hotter than the Carolina Reaper.

    For my Panda Express Blazing Bourbon Chicken copycat recipe, I knew it would be unreasonable to expect you to buy Hot Ones’ The Last Dab Apollo Hot Sauce, the "secret" heat source in the real thing. A bottle of that sauce costs around 30 bucks, and you would only need one drop, so my first order of business was to find a much cheaper substitute.

    I landed on a ghost pepper sauce, which, at 1 million Scoville units, is one-third as hot as the Apollo. When ghost pepper is blended with other ingredients in a sauce, such as in Melinda’s Ghost Pepper Sauce (which I used for my clone), it's diluted, it's tasty, and it's not at all overwhelming.

    That ghost pepper sauce, plus garlic, ginger, soy sauce, brown sugar, and just a touch of bourbon, will give you the perfect sauce to toss with onion, bell pepper, and crispy chicken for a delicious and fiery—but not too fiery—home hack of this tasty limited-time-only entrée.

    Cheesecake Factory Steak Diane

    Fans of Cheesecake Factory’s Steak Diane don’t seem to care that the dish isn’t a traditional take on the classic dish. The restaurant chain’s version is indeed served with mushrooms and medallions of beef tenderloin just like the old-school recipe, but you won’t find any Dijon mustard, Worcestershire sauce, cognac, or cream that one would expect in a true Steak Diane. Instead, the chain douses steak with the same Madeira sauce served with its Chicken Madeira entrée, and it's delicious.

    I hacked the chain’s Chicken Madeira many years ago in Top Secret Restaurant Recipes 2 but was happy for the chance to go back and improve the great sauce. After some fiddling, I came up with an improved formula that calls for less wine and uses a more thorough reduction to intensify the flavors. When shopping for ingredients for my Cheesecake Factory Steak Diane copycat recipe, it's okay to pick the least expensive Madeira wine on the shelf. Just know that Madeira wines have different characteristics, so your final flavor may slightly vary from the restaurant version.

    For your tenderloins, start with thick steaks, since you’ll be slicing the portions in half through the middle, making them thinner. You’ll need 7 to 8 small steak portions to be sliced in half for 14 to 16 medallions.

    Cheesecake Factory Chicken Piccata

    Menu Description: “Sautéed chicken breast with lemon sauce, mushrooms, and capers. Served with angel hair pasta.”

    A great chicken piccata doesn’t have to be complicated, and this fantastic take on the lemony dish from the Cheesecake Factory is a perfect example.

    Since the sauce is the key to the great taste of this entrée, I made sure to get a sample on the side for later analysis when I requested my to-go order from the restaurant. While waiting, I asked the server what was in the sauce and she listed some obvious ingredients—lemon, wine, butter, cream—and then she mentioned garlic and shallots. When I got home, I rinsed the sauce through a mesh strainer to discover how much garlic and shallot were in the sauce, but there was no physical evidence of either solid ingredient left behind in the strainer.

    I made a batch of the sauce without garlic and shallot, and it tasted flat. So on the next batch, I added the garlic and shallot back in, then strained out the solid ingredients after they contributed their goodness to the sauce. The result was noticeably better.

    After adding mushrooms and capers to the new lemon sauce, I spooned it over sautéed chicken cutlets and was rewarded with a fantastic homemade version of this amazing dish, which you can now copy at home using my Cheesecake Factory Chicken Piccata recipe below.

    McDonald's Chicken McNuggets

    When dippable tempura-battered chicken chunks made their debut at select McDonald’s restaurants in 1981, America couldn’t get enough…literally. Supply chain issues prevented the burger chain from meeting high demand in all markets for many months, and it wasn’t until two years after the McNuggets were first introduced that they were finally available at every McDonald’s in the country.

    The famous finger food was invented by McDonald’s first executive chef, Rene Arend, who discovered that reconstituted chicken blended with flavor enhancers, enrobed with tempura batter, and deep-fried until golden brown, made a simple, portable snack. The chicken was formed into four “B” shapes designed for dipping—the bell, the bow-tie, the ball, and the boot—and served along with child-friendly dipping sauces such as ranch and barbecue, so the breakout finger food product became a huge winner with kids.

    To make a home version that looks and tastes like McNuggets I dissected a real one and discovered that the chicken in the middle is coated twice: once with dry, seasoned breading, and then once more with wet batter before frying. The chicken in McNuggets is puréed not ground, and the best way to prepare it is with a food processor. “Ground” chicken in grocery stores is often puréed, then pushed through a die to look more appealing in the package, similar to how ground beef is presented. For my Chicken McNugget recipe below, it's best to use a home food processor, but if you don’t have one, ground chicken from your butcher will work.

    If I had to identify a secret ingredient in this hack it would be Knorr chicken bouillon powder. It contains many of the same ingredients found in real Chicken McNuggets, so once you get that crucial flavoring component, you’re well on your way to an amazing knockoff of an iconic American food.

    IHOP Swedish Crepes

    Menu Description: “Four delicate crepes topped with sweet-tart lingonberries and lingonberry butter.”

    Good crepes should be soft in the middle, crispy around the edges, buttery, custardy, a bit sweet, and slightly salty, and there are many ways to achieve all this. But to make crepes like those served at IHOP, the formula needs to be specific.

    Over two days I made dozens of crepes with minor adjustments to all seven ingredients until I finally settled on the version here that best mirrors the look and taste of the delicious IHOP Swedish Crepes. You'll get ten tasty crepes using a 10-inch non-stick skillet, and the recipe is very easy.

    P.F. Chang's Crispy Honey Chicken

    I'm not sure why it took me so long to clone this dish, considering that it was my daughter's favorite thing to eat at P.F. Chang's when she was a kid. I recently tackled it and created a spot-on copy of the chain's signature sweet-and-sour honey sauce, and in the process found some new intel that improved on my earlier version of the chain's crispy chicken which I had already hacked for a different P.F. Chang's recipe. The dish came together beautifully on the plate, and it cleared the final taste test by earning an enthusiastic thumbs-up from my now-grown little girl.

    Since P.F. Chang’s sells a version of this dish in the freezer aisle of my local grocery store, I was able to improve my chicken batter formula by extracting some good info from the ingredients listed on the product box. Based on this new information, I added more cornstarch to the batter along with corn flour and egg whites for a much better, crispier coating.

    The sauce in my P.F. Chang's Crispy Honey Chicken copycat recipe is sweetened with honey and sugar, soured by wine and rice vinegar, and thickened with cornstarch and gelatin powder to create a flavorful finishing glaze that sticks to the crispy chicken like the real thing. In the restaurant, the chicken is served over a bed of fried maifun rice sticks so I’ve included prep notes for that in the Tidbits, but you may prefer to forego that step and serve the chicken over or alongside cooked white or brown rice.

    Panda Express Chow Mein

    I got lucky on the day I picked up a box of chow mein from this huge Chinese chain because they had just run out. This meant that I could watch from the sidelines as they whipped up a fresh batch in a giant wok over a high flame in the completely visible kitchen, and I was able to take plenty of mental notes. The whole dish took just a few minutes for the enthusiastic chef to prepare, and before I knew it I was out the door with a huge box of hot chow mein ready for hacking. 

    Just like the real Panda Express Chow Mein, the beauty in this re-creation is its simplicity. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also called Chinese stir fry noodles) which are easy to find and cheap, and dark soy sauce to get that great caramel color. And if you don’t have a wok for this, a large skillet with sloped sides for tossing will work just fine.

    Chick-fil-A Zesty Apple Cider Vinaigrette

    The country’s largest chicken chain offers some of the best choices for salad dressings you’ll find at any fast food restaurant. But good luck sweet-talking your order-taker into floating you a few extra packets of this great fruity vinaigrette to use on your home salads—they are under strict orders to be stingy. And that could be why you’re here.

    Apple cider vinegar, pineapple juice, honey, lemon juice, and lime juice are just a few of the secret ingredients that make this dressing so great. Another secret you'll find here is xanthan gum, a natural thickener often used as an emulsifier to hold salad dressing together so that it doesn’t need shaking. You can find xanthan online or at Whole Foods, and you won't need much.

    Starbucks Sugar Plum Cheese Danish

    Sweetened cream cheese and spiced plum jam are nestled in the center of this flakey seasonal pastry from the famous coffeehouse chain, and you can make a home copy of Starbucks Sugar Plum Danish using these delicious secrets.   

    As with croissants, the dough is rolled and folded several times with a block of butter in the middle to create dozens of flakey layers. I found that this yeast dough tastes better and is easier to work with if the process is spread out over three days, but you can complete a perfectly fine batch of these in just one day if you want to bang it out.

    The dough made here will fit perfectly into the six cups of a jumbo-size muffin pan to make Danishes that are not as wide and a bit taller than the real ones, but they’ll still taste the same. Get plum jam for the filling, add a few spices to it for seasonal flair, and spoon it over the sweetened cheese. After an hour of proofing, bake your Danishes in a hot oven until they’re golden brown.

    Chipotle Carne Asada

    Chipotle’s popular limited offering is a good example of how straightforward and flavorful carne asada can be. It’s not overly mysterious since Chipotle is transparent about the ingredients used for the restaurant's entire menu—53 ingredients in all—but identifying those is only the beginning of the process. There was still plenty of work to do in establishing ratios and settling on an ideal preparation method.

    Carne asada is almost always made with flank steak or skirt steak. A server at Chipotle told me they use skirt steak, which is surprising since that is the tougher of the two cuts. Perhaps she was wrong about that? Flank steak also has a better flavor than skirt steak, so I'm recommending flank here. Just be sure not to marinate it for more than 2 days or the acid in the marinade may toughen your steak and you certainly don't want that.

    After you grill it, slice the meat across the grain and use it in burritos, tacos, bowls, or as a Southwest-style salad topper.

    Panda Express Fried Rice

    A popular staple of any Chinese chain is fried rice, so it better be good, and the version served at Panda Express most certainly is. Here's my easy Panda Express Fried Rice recipe for when you need a stress-free, low-cost side for your entrées. But I do suggest that you cook the white rice several hours or even a day or two before you plan to make the finished dish. I found that the cooked rice called for in this recipe works best when it's cold. 

    As for a shortcut, bagged frozen peas and carrots will save you from the hassle of petite-dicing carrots since the carrots in those bags are the perfect size to produce an identical clone. And they're already cooked.

    Taco Bell Breakfast Crunchwrap

    When Taco Bell introduced breakfast to America in 2014, the company had high hopes for its new Waffle Taco: a waffle shaped like a taco, filled with scrambled eggs and sausage, and served with a side of syrup. But the Waffle Taco had less-than-stellar sales and the product was eventually yanked off the breakfast menu.

    But another clever morning item, the Breakfast Crunchwrap, continues to sell well at the Mexican food chain. This hexagonal grill-pressed wrap is a variation of the Crunchwrap Supreme, made by wrapping a large flour tortilla around a crispy corn tortilla, meat, cheese, sour cream, lettuce, and tomato (i hacked it in TSR Step-by-Step). When it was introduced in 2005, the Crunchwrap Supreme was Taco Bell’s most successful new product launch.

    The Breakfast Crunchwrap looks exactly like a Crunchwrap Supreme from the outside—albeit slightly smaller—but the inside has been swapped out for morning food. The flour tortilla is wrapped around a crispy hash brown patty that’s been slathered with creamy jalapeño sauce and topped with cheese, eggs, and bacon (or sausage). The flour tortilla is folded over six times to make a pinwheel wrap, then the wrap is pressed on a flat grill until golden brown on both sides.

    Starbucks Egg White and Roasted Red Pepper Sous Vide Egg Bites

    The same slow-cooking technique is used to copy this yolk-less companion to the Bacon & Gruyere Sous Vide Egg Bites, but instead of bacon, the Starbucks Egg White and Roasted Red Pepper Sous Vide Egg Bites come with roasted red pepper, green onion, and spinach.

    Because there is no yolk, a little rice flour is used to help hold everything together. I suspect Starbucks chose rice flour to keep the product gluten-free, even though most people really don’t mind a little gluten, and gluten does a much better job of binding. I include the rice flour here but you can substitute with all-purpose wheat flour if gluten isn't a concern, and if you don’t feel like buying a whole bag of rice flour just to use 2 teaspoons out of it.  

    To get the same smooth texture in your egg bites as Starbucks, be sure to blend the mixture until no bits of cheese can be felt when you rub some between your fingers. My Starbucks Sous Vide Egg Bites recipe tastes best with full-fat cottage cheese, but you can still use low-fat cottage cheese if you feel like trimming some of the fat.

    Starbucks Bacon and Gruyere Sous Vide Egg Bites

    In January of 2017, Starbucks perfected slow-cooked sous vide–style egg snacks that can be prepped and served quickly by the baristas at any location. To speed up service, Starbucks makes the egg pucks ahead of time, then freezes and ships them to the coffee stores where they are defrosted and reheated in blazing-hot convection ovens.

    Sous vide refers to the method of cooking food sealed in bags or jars at a low, consistent temperature for a long time. This technique creates food that’s softer in texture and less dried out than food cooked with other, faster methods. Cooks who use sous vide will often vacuum pack their food in bags and use special machines to regulate temperature. But you won’t need an expensive machine like that for my Starbucks Bacon and Gruyère Sous Vide Egg Bites recipe—just some 8-ounce canning jars and a blender.

    The secret to duplicating the smooth texture starts with blending the cheeses very well until no lumps remain. Rub some of the cheese mixture between your fingers to make sure it’s smooth before you pour it into the jars. It’s also important to monitor the temperature of the water. Try to keep it between 170 and 180 degrees F so that your eggs are neither too tough nor too soft. It’s best to use a cooking thermometer for this, but if you don’t have one, the right temperature is just below where you see tiny bubbles rising to the surface. Also, if you hear the jars jiggling in the water, that’s their way of telling you the water is a bit too hot.

    Hostess Powdered Donettes

    At the 2018 Salvation Army National Doughnut Day World Doughnut Eating Contest, held every June 1st, competitive eater Joey Chestnut consumed 257 Hostess powdered Donettes in six minutes to take home the top prize. There was a big smile on Joey's powdered-sugar-and-crumb-coated face that day as he raised a trophy to celebrate another glorious gastronomic feat.  

    If you had to guess who makes the top-selling doughnuts in America, you’d probably say Dunkin’ Donuts or Krispy Kreme, but you’d be wrong. According to Hostess, Donettes are the country’s most popular doughnuts—you rarely find a supermarket, corner market, or convenience store without at least a few packages on the shelf. Hostess Donettes come in several flavors, including chocolate, crumb, and strawberry, but the one most people turn to, and the one I grew up on (they were called “Gems” back then), is coated with a thick layer of powdered sugar.    

    Making the donuts at home is not hard, once you know the secrets. Use my Hostess Powdered Donettes copycat recipe below to make a stiff cake dough, punch out 2-inch rounds with a biscuit cutter, pierce the dough with a straw or chopstick to make a hole, then fry the doughnuts for 2 minutes until golden brown. After you roll them in powdered sugar, you'll have around 20 fresh, home-cloned miniature Donettes that will make you feel like a kid again.

    And—just doing a little math here—it would take Joey Chestnut all of about 14 seconds to eat that entire plate of doughnuts you just made.

    Olive Garden Stuffed Chicken Marsala

    Menu Description: “Creamy marsala wine sauce with mushrooms over grilled chicken breasts, stuffed with Italian cheeses and sundried tomatoes. Served with garlic mashed potatoes.”

    My Olive Garden Stuffed Chicken Marsala copycat recipe includes a marsala sauce that even marsala sauce haters will like. My wife is one of those haters, but when she tried this sauce, her eyes lit up, and she begged for more. That’s great, now I won’t have to eat alone.

    Not only is Olive Garden's delicious marsala sauce hacked here (and it’s easy to make), you’ll also get the copycat recipe for the chain's awesome Italian cheese stuffing that goes between the two pan-cooked chicken fillets. Build it, sauce it, serve it. The presentation is awesome, and the flavor will soothe your soul.

    Olive Garden Garlic Mashed Potatoes

    Garlic mashed potatoes are a great side for many entrées, especially when the mashed potatoes are as creamy and flavorful as those at Olive Garden. In our hack, the cloves of peeled garlic are boiled with the potatoes. When the potatoes get passed through a potato ricer (or mashed) the softened garlic cloves go along for the ride and get mashed up too. This way, you’re guaranteed to get the perfect amount of flavorful garlic in every bite.

    I settled on cream as the dairy here in my Olive Garden Mashed Potatoes copycat recipe after my attempts using milk and half-and-half resulted in thin and runny potatoes. I found that cream adds the perfect thickness and smooth richness to the mashers, and it made the closest duplicate to the original potatoes.

    Bush's Country Style Baked Beans

    In the Bush’s Beans commercials, Duke, the family golden retriever, wants to sell the secret family recipe, but the Bush family always stops him. The dog is based on the Bush family’s real-life golden retriever, and the campaign, which began in 1995, made Bush’s the big dog of the canned baked beans market practically overnight. Their confidential baked beans formula is considered one of the top 10 biggest recipe secrets in the U.S.

    Bush Brothers & Company had been canning a variety of fruits and vegetables for over 60 years when, in 1969, the company created canned baked beans using a cherished recipe from a family matriarch. Sales jumped from 10 thousand cases in the first year to over 100 thousand cases in 1970. And just one year later sales hit a million cases. Today Bush’s makes over 80 percent of the canned baked beans sold in the U.S., and the secret family recipe remains a top food secret, despite Duke’s attempts. A replica of the original recipe book—without the original recipe in it (drat!)—is on display at the company's visitor center in Chestnut Hill, Tennessee.

    I chose to hack the “Country Style” version of Bush’s Beans because I don’t think the Original flavor has enough, uh, flavor. Country Style is similar to Original, but richer, with more brown sugar. My Bush's Country Style baked beans copycat recipe starts by soaking dry small white beans in a brine overnight. The salt in the water helps to soften the skins, but don’t soak them for more than 14 hours or the skins may begin to fall off. You can skip this step if you've got a fancy Instant Pot using my directions below. 

    My first versions tasted great but lacked the deep brown color of the real Bush’s beans, which include caramel coloring—an ingredient that can be hard to find on its own. I eventually discovered that the “browning” sauce, Kitchen Bouquet, will add the dark caramel color needed to our home version of the beans so that they’ll look just like the real thing.

    Sabra Classic Hummus

    Every brand of hummus I've tried over the years has been just so-so in taste and texture, until I discovered Sabra. Now this ultra-smooth hummus—which has been rated number one in a blind taste test—is the only hummus in my fridge, unless I've made this clone. Hummus is an awesome snack as a dip for vegetables or pita chips, since it's rich in protein, soluble fiber, potassium, and Vitamin E. The secret to duplicating Sabra's smooth and creamy quality is to let your food processor work the stuff over for a solid 10 minutes. Also, when getting your Sabra hummus ingredients ready, don't use all of the liquid from the can of garbanzo beans or the hummus will end up too runny. Strain off the liquid first, then measure only 1/2 cup back into the food processor. Sabra uses canola and/or soybean oil, but you may think olive oil tastes better. Look for a jar of sesame tahini in the aisle where all the international foods are parked, and while you're there find the citric acid, which may also go by the name "sour salt." The clone below will not have the proper acidic bite without this secret ingredient, and citric acid also works as a preservative to help the leftover hummus stay fresh and tasty.

    Applebee's Strawberry Cheesecake Dessert Shooter

    Menu Description: "Classic cheesecake, graham cracker crumbs, strawberry sauce and whipped cream make this one to savor."

    Making cheesecake like this means you don't need to crank up your oven and run it for the hour or more that traditional cheesecake recipes require. Since the cheesecake filling is layered into a small glass, you make it ahead of time on your stovetop, which substantially shortens cooking and cooling times. When the filling is chilled, it's spooned into 6-ounce glasses on top of graham cracker crumbs, then thawed sliced strawberries in syrup are spooned on top. After finishing off each dessert with a pile of whipped cream, you get to pass out some spoons, sit back, and enjoy a roomful of "mmmm" and "aww" at your copycat Applebee's Strawberry Cheesecake Dessert Shooter.

    Olive Garden Steak Gorgonzola Alfredo

    Menu Description: "Grilled beef medallions drizzled with balsamic glaze, served over fettuccine tossed with spinach and gorgonzola-alfredo sauce."

    This menu item builds on Olive Garden's great Alfredo sauce recipe with the addition of Gorgonzola cheese. The tangy cheese sauce works well with the sweet-and-sour balsamic reduction drizzled over the beef medallions. 

    You'll want to track down three 6-ounce sirloin steaks or whatever cut you prefer and slice each of them into four 1 1/2-ounce fillets. Get pounding with a kitchen mallet and make those steaks about 1/2-inch thick, and they will grill up to the same size as the medallions on the original dish. Between the pounding and the meat tenderizer in the beef seasoning, you will turn even the cheapest cut of beef into a tender morsel. Build your dish as described below, and you will have re-created the taste and presentation of the original rich, tasty, fulfilling dish.

    Chili's Quesadilla Explosion Salad

    Menu Description: "Fajita-marinated chicken, corn relish, mixed cheese, cilantro, diced tomato and crispy tortilla strips. Garnished with a chipotle-ranch drizzle and cheese quesadilla wedges. Served with our citrus-balsamic dressing."

    I'm a happy camper on a Saturday afternoon when diving into one of these big salads, served up with a Presidente Margarita to help relieve my hangover from a Friday night hoo-ha. For the last several years, this has been the go-to salad when you're dining at Chili's. The chicken marinade is delicious, the corn relish is a great touch, and the citrus-balsamic vinaigrette totally rocks. And where else can you get a salad that includes slices of cheese quesadilla on the side? I love it.     Applebee's Tomato Basil Soup

    Menu Description: "A tasty twist on a family favorite. Red, ripe tomatoes slowly simmered in a rich cream sauce and seasoned with basil and select herbs."

    My easy copycat recipe requires two large cans of crushed tomatoes. Your homemade soup will still have the impressive taste and texture of gourmet tomato bisque, requiring fresh tomatoes and more work. 

    You may notice that the large amount of basil used here contributes an overwhelming flavor and aroma when first added, but as the soup simmers, the herb mellows to create the perfect clone of the original. And there's no need to make croutons from scratch for the garnish when you can buy lightly seasoned packaged croutons in just about any market.

    Pepperidge Farm Soft Baked Snickerdoodle Cookies

    The easiest recipes often make the best food, and this simple clone reproduces one of my favorites. The cinnamon-and-sugar-topped snickerdoodles from Pepperidge Farm's line of soft cookies taste really good and are a perfect chewy consistency—eating just one an exercise in futility. The steps here are pure Baking 101, but don't wander too far from the kitchen when the cookies go in the oven so that they don't overbake. You want to yank the cookies out of the oven when they are just slightly browned and still soft. After they cool, store the cookies in an airtight container to keep them soft and chewy.     Bonefish Grill Bang Bang Shrimp

    Menu Description: "Tender, crispy wild gulf shrimp tossed in a creamy, spicy sauce."

    Bonefish Grill proudly refers to this appetizer as the "house specialty." And why not, it's an attractive dish with bang-up flavor, especially if you like your food on the spicy side. The heat in my Bonefish Grill Bang Bang Shrimp copycat recipe comes from the secret sauce blend that's flavored with chili garlic sauce, also known as sambal. You can find this bright red sauce where the Asian foods are in your market—and while you're there, pick up some rice vinegar. 

    Once the sauce is made, you coat the shrimp in a simple seasoned breading, fry them to a nice golden brown, toss them gently in the sauce, and then serve them up on a bed of mixed greens to hungry folks who, hopefully, have a cool drink nearby to mellow the sting.

    T.G.I. Friday's Tuscan Portobello Melt

    Menu Description: "Sliced Portobello mushrooms between layers of Provolone & Monterey Jack cheeses, roasted onions and tomatoes on grilled, buttery bread."

    Contestants on the November 1, 2006 episode of Top Chef on Bravo were challenged to take a childhood favorite dish and update it with a twist. Friday's Senior Executive Chef Stephen Bulgarelli sat at the judges table and endured a bizarre wonderland mushroom plate, a sloppy cheese steak sandwich, and an over-salted surf and turf tragedy. Finally, it was the delicious variation on a grilled cheese sandwich created by Betty Fraser that took the top spot. As a reward, Betty's sandwich was added to over 500 Friday's menus across the country, and now we have a Top Secret clone to easily recreate the tasty winner at home. Friday's modified Betty's recipe to make it easier to prepare in the quick-service environment of the restaurant, and that's the version I've cloned for you in this recipe.
