    Fleming's Prime Steakhouse Fleming's Au Gratin Potatoes (and Bonefish Grill)

    Menu Description: “Our house specialty with cream, jalapenos and cheddar cheese.”

    These slightly spicy au gratin potatoes are cooked at a low heat several hours in advance of the dinner house’s evening opening. When an order for the signature side comes into the kitchen a generous serving of the potatoes is portioned out, topped with grated sharp cheddar cheese, and baked again at a high temperature until browned. The real trick to this Fleming's potato au gratin recipe is to slice the potatoes very thin—1/16 of an inch to be exact—and the only way to do that is with a slicer, such as a mandoline. The rest of the prep involves making a basic béchamel sauce using cream, and then carefully layering the sauce and sliced potatoes in the baking dish. The potatoes are baked for 2 hours and then chilled in the restaurant, so this can be a great make-ahead dish for entertaining. You can also serve the potatoes immediately by topping them with cheese, cranking up the oven, and heading straight into the second baking step.

    Update 10/17/23: Recently, I set out to snag a sample of the au gratin potatoes from Bonefish Grill to clone it, but discovered that the dish had been taken off the menu. However, the friendly wait staff informed me that the au gratin potatoes at Fleming's and Bonefish Grill are the same recipe, created by the parent company that owns both chains. So, this recipe is a hack for the great side served at each of the restaurants.

    Fleming's Prime Steakhouse Chipotle Cheddar Macaroni and Cheese

    I've never met a macaroni & cheese I didn't like. But there are a few restaurants that push this common side dish to a higher level. I've had mac & cheese made with three or four cheeses, and some that come drizzled with truffle oil. I've had mac & cheese with green pepper in it, and onion, and parsley, and bacon—it all works for me. But at Fleming's Prime Steakhouse, it's about the chipotle. The smoky jalapeño flavor sets this one apart from others, and makes this one of the top side dishes at the upscale steakhouse chain.

    For my Fleming's Chipotle Cheddar Macaroni and Cheese recipe below, you'll start with a cheese sauce made with smoked cheddar. There's some minced jalapeño and green onion in there, plus a little ground chipotle pepper. A nice finishing touch comes from the breadcrumb topping that's made with Japanese breadcrumbs, or panko, which is flavored with more ground chipotle. The pasta shape used at Fleming's is called cellentani, which looks like long corkscrews. You could also use cavatappi pasta which are shorter corkscrews, or just go for the traditional elbow macaroni which can found pretty much anywhere.

    Flemings Prime Steakhouse Wicked Cajun Barbecue Shrimp

    Before diving into a juicy steak, many diners start their meal with this dish, the number one appetizer at Fleming's Prime Steakhouse and Wine Bar. This small Cajun-style scampi appetizer requires four large shrimp, just as in the original dish, but you can bump that up to 6 shrimp for a slightly bigger serving.
