    The burger wars are on. Burger King stepped up first with this competitor of the Big Mac. Yes, it has two all-beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame seed bun—although everything's arranged a big differently, and there's no middle bun. The beef patties are also bigger than those found on a Big Mac. The other big difference? The Big King weighs in with 12 grams more fat than Mickey D's signature product, for a grand total of 43 grams. Here's a clone that re-creates the "secret" burger spread from scratch and includes super-lean ground beef. Add it all up and you've got a gram-zapping clone that comes in at around one-third the fat of the real thing.

    This young chain of Mexican-style chicken outlets has had much success with its formula since the first store opened in the U.S. in 1980. Your order of chicken comes straight off of an open-flame grill, where it has been slowly roasting for around 45 minutes. The chicken is grilled whole, butterfly-style, and before it’s boxed up for carry-out, cooks take a sharp hatchet to it in dramatic fashion. A couple of whacks and you’re on your way with several pieces of very tasty and tender double-marinated chicken. 

    For this recipe, instead of butter-flying the whole chicken, we will prepare precut pieces. Then, to save on fat grams, as soon as it’s cooked, we’ll remove the skin. At the restaurant you’re served flour or corn tortillas to wrap around the chicken that you strip from the bone.

    Here's a clone for a sandwich that America's number-two burger chain introduced in 1990, and soon after the launch was selling over a million a day. This was the same year that Burger King switched from animal fat to vegetable oil to cook the fried items. But, even though the BK Broiler includes flame-broiled chicken, rather than fried, it still comes with 29 grams. A big part of that comes from the mayonnaise. So, by replacing the regular mayonnaise with fat-free mayo and by not adding any additional fats, we can produce a sandwich that will taste like a BK Broiler, yet have less than one-quarter of the fat and fewer calories.

    It’s Dairy Queen’s most successful product ever. Over 175 million Blizzards were sold in the year following the product’s debut in 1985. The new creation was such a sales phenomenon that other fast food chains created their own soft-serve ice cream treats with mixed in chunks of cookies and candies and fruit. McDonald’s McFlurry is one popular example. Today there are over a dozen varieties of Blizzards to choose from at Dairy Queen. 

    The biggest challenge when making Blizzard replicas at home is keeping the ice cream from getting soft when the other ingredients are stirred in. To solve that problem, we’ll use a special technique inspired by marble slab ice cream stores. Servers mix your choice of chunky ingredients with your choice of ice cream on a slab of frozen stone. This method keeps the ice cream cold and firm while mixing, until it’s served to a drooling you.

    To incorporate this technique at home you need to put a glass or ceramic bowl in the freezer for at least 30 minutes (while you’re at it you may also want to freeze the glass you’re going to serve the thing in). An hour or more is even better. We mix our ingredients in the icy bowl, while the ice cream stays frosty cold. Just be sure to use plain vanilla ice cream (not French vanilla), if you have a choice.

    At one time the ice cream in this popular dessert was actually fried. A scoop of ice cream was rolled in breading, then refrozen. Just before serving, the ice cream would be flash-fried in oil for a few seconds, and then served immediately, still frozen in the middle. Considering that the nonfried version served at the restaurant chain still has around 34 grams of fat per serving, we can assume the fried version would weigh in with even more.

    Now we're going to take those grams down even further—by an amazing 80 percent! We'll do that by using fat-free ice cream and fat-free flour tortillas. We'll also cut way down on the fat by spraying the tortillas with a light coating of cooking spray and then baking them, rather than using the traditional frying method. Use a light touch on that whipped cream can, and you've got a very low-fat dessert that just has to be experienced.
