    I've been searching for the chain restaurant with the best recipe for roasted artichokes, and I think I've found it. With roasted garlic mayonnaise and a delicious tomato relish on the side, Claim Jumper takes the prize.

    My Claim Jumper Fire-Roasted Artichoke recipe below is for just one artichoke, but feel free to add another if more than a couple hungry mouths are waiting. Just be sure to double up on the tomato relish.

    Claim Jumper Garlic Cheese Bread

    Claim Jumper restaurants may only be found in the West, but the chain can claim national recognition for its delicious garlic cheese bread and toast. That's because you can find boxed loaves of the stuff ready for baking in the frozen food section of your well-stocked local supermarket. 

    Making homemade Claim Jumper Garlic Cheese Bread is so simple, though, that it doesn't take much longer to make the cheesy goodness from scratch, and you save a few shekels to boot. Plus, it's nice to use fresh bread—your choice of either Texas toast or your favorite French loaf. The restaurant serves the Texas toast version, and the supermarket version is a French loaf. 

    For my Claim Jumper Garlic Cheese Bread copycat recipe, all you have to do is mix together a few basic ingredients, spread it generously on the bread of your choice, and pop it in the oven.

    Claim Jumper Meatloaf

    Menu Description: "Our own special recipe made with fresh ground chuck, pork, mild onions, green peppers and more. Served with mashed potatoes, brown gravy and garlic toast."

    Here's a great meatloaf recipe to add to your dinnertime repertoire. This luscious loaf combines ground chuck with ground pork along with bread crumbs, green onion, garlic, carrot and green pepper for one of the best classic American meatloaves. Use a perforated nesting meatloaf pan if you've got one so that the fat drains out into the pan below. If you don't have one of those, a regular loaf pan will still work fine. But use a large one, my Claim Jumper meatloaf recipe makes a pretty big loaf.

    Claim Jumper Spicy Thai Coleslaw

    Menu Description: "Mixed greens, carrots, zucchini, green onions, peanuts. Tossed in a sweet and spicy dressing."

    If you like the sweet, sour, and spicy flavor combinations of Thai food, you'll love Claim Jumper's tasty twist on coleslaw. Just find yourself a medium-size head of Napa cabbage and a few other special ingredients, and you're on your way to a perfect side dish for grilled grub, sandwiches, or as a quick solo snack. The menu mentions cappellini but we'll substitute with soba noodles that can be found in the supermarket aisle with other Asian foods (the rice vinegar and chili paste will be over there too). If you can't find soba noodles, the thicker chow mien noodles will also work. The mixed baby greens can often be found in ready-to-serve-plastic bags in the produce section. But the real secret to my Claim Jumper coleslaw recipe is patience. The flavors of coleslaw improve after several hours in the chill box, and letting it sit overnight is even better.

    Claim Jumper Mai Tai

    This cocktail requires a homemade mai tai mix which should tell you from the start that it's going to be good. Of course you can go the lazy route and use a pre-made mixer, like the one made by Mr. & Mrs. T. But I've got to say, there's nothing like the smooth, fruity taste that comes from the homemade fresh stuff. If you want to serve your guests a masterful mai tai, take the time to really make it rock.

    This top-seller is a versatile side dish alternative to mashed potatoes, but also stands well on its own as an appetizer. With cilantro, green onion, and three different cheeses in there, the flavor is the bomb. When you add a crispy breading and some herbed ranch salsa drizzled over the top, it's clear why this is the most popular appetizer on the huge Claim Jumper menu. Try dropping a pinch or two of cayenne pepper into the herbed ranch salsa for an extra spicy boost.
