Menu Description: "Our version of the 150-year-old classic with Pisco and pineapple juice. Served on the rocks."

Pisco is a South American grape brandy produced in Peru and Chile, and both countries claim to have invented the original version of this cocktail which is made with pisco, simple syrup, lime juice, egg white and bitters. You could say it's South America's margarita. Cheesecake Factory, however, has added other juices, plus sweet-and-sour to the mix, and swapped out the egg white for Frothee (look for this drink-foaming ingredient at liquor stores and bar supply outlets). Shake up all the ingredients with flair until foamy and pour the drink into a wine glass or martini glass to serve.

Menu Description: "Our most popular dish! Shrimp and Chicken Sauteed with Onions, Peppers and Tomatoes in a Very Spicy Cajun Sauce. All on top of Fresh Fettuccine."

The Cheesecake Factory's founder, David Overton, says it was his unfamiliarity with the restaurant business that contributed to the company's success. In an interview with Nation's Restaurant News David says, "We did not know anything about running restaurants. We just knew that people valued fresh foods. In some ways our naivete helped us because we didn't know what you are not supposed to do."

I think we all know it helps to serve good food and that's an area in which the Cheesecake Factory excels. The pastas and salads top the list of big sellers, but it's the Cajun Jambalaya Pasta that holds the pole position, according to the menu description of this dish. Jambalaya is a spicy Creole dish that usually combines a variety of ingredients including tomatoes, onions, peppers, and some type of meat with rice. Rather than the traditional rice, the Cheesecake Factory has designed its version to include two types of fettuccine—an attractive mix of standard white noodles and spinach-flavored noodles.

This recipe makes 2 huge portions, like those served in the restaurant. It's probably enough food for a family of four.

It's like eating a key lime pie, except there's no crust, it looks like a martini, and you're drinking it. For the whipped cream in this recipe be sure to use the canned kind with a nozzle top. Estimate about a cup's worth into the shaker with everything else and shake it up real good.

This drink is named after the bartender who invented it over nine years ago: Mr. Jeff Wiley, of the Redondo Beach, California, Cheesecake Factory. He's still there inventing killer drinks, but none have been as successful as this cocktail, which is currently one of the top five best-selling drinks at the chain.

If you don't want to make lemonade from scratch and want something that tastes similar to the stuff used at the Factory, pick up Country Time lemonade. If you've got time to take the fresh-sqeezed route, check out  Hot Dog On A Stick Muscle Beach Lemonade or Minute Maid All Natural Lemonade.
