    Margaritaville Volcano Nachos

    Menu Description: “Topped with chili, cheese, guacamole, sour cream, jalapenos, tomato and scallions.”

    This giant pile of nachos lives up to its name, and these are by far the best nachos I have ever had at any casual chain. The secret is in the stacking of the ingredients. You start with a layer of yellow corn tortilla chips and then spoon on some creamy, slightly spicy nacho cheese. I found that Tostitos makes the perfect cheese for this: Tostitos Salsa Con Queso. More chips go on top, then more cheese, then more chips followed by chili and a shredded cheese blend. 

    For my Margaritaville Volcano Nachos recipe, you can use premade chili that can be found in the deli section of your grocery store, where the soups are sold. After the nachos are baked and the cheese is melted, diced tomato, green onion, sour cream, guacamole and jalapeño slices are added on top, and the party can now erupt.

    Margaritaville Jerk Salmon

    Menu Description: “From Boston Bay, the birthplace of Jamaican Jerk. Salmon rubbed with our signature Jerk spices and seared in a skillet, finished with Jerk BBQ sauce and a side of mango chutney.”

    Perk up your next salmon feast with the sweet-and-spicy flavors of Margaritaville’s jerk seasoning. After duplicating the secret jerk rub, add a little bit of it to either Cattlemen’s Golden Honey barbecue sauce or KC Masterpiece Honey barbecue sauce for the perfect after-baking baste. The chain’s delicious mango chutney is also cloned here so that you get the true Margaritaville Jerk Salmon experience. If you can, make the chutney a couple hours ahead—it seems to get tastier over time. Serve my copycat Margaritaville Jerk salmon with some rice and your favorite steamed veggies.

    Margaritaville Key Lime Pie

    Menu Description: "A true taste of the tropics. National award-winning recipe."

    Many of the key lime pie recipes circulating, including the recipe found on bottles of key lime juice, have a glaring error: they don't make enough filling to fit properly into a standard 9-inch graham crust pie shell. That's probably because those recipes are designed around one 14-ounce can of sweetened condensed milk. But if we're going to make a beautifully thick key lime pie like the one served at Jimmy Buffett's Margaritaville restaurants, we need to use something like 1 1/2 cans of sweetened condensed milk, or more accurately, two cups of the stuff. 

    My Margaritaville Key Lime pie copycat recipe is a simple one, that's for sure, with only four ingredients including the pie shell. But don't stop there. I'm also including an easy way to make mango sauce by reducing a couple cans of Kern's mango juice. And there's a raspberry sauce recipe here that's made easily with frozen raspberries. These two sauces are used to jazz up the plate at the restaurant and are certainly optional for your clone version, even though I've made this recipe as easy as, um, you know.

    Margaritaville Jamaica Mistaica Wings

    Menu Description: "Come back to Jamaica! Our wings tossed in habanero-honey wing sauce with cucumber sticks and house-made mango ranch dipping sauce."

    Chicken wings. Everyone loves the flavorful non-functioning chicken parts. When they're good, they're real good. And these Jamaica Mistaica wings from Jimmy Buffet's chain of island-themed restaurants are some of the best. The preparation is no big secret: Fry the wings, add the sauce. It's that habanero honey sauce recipe that makes these so good. Add to that an easy-to-make mango ranch dipping sauce, and you're off on a non-stop cruise to chicken wing paradise. Margaritaville serves 10 wings at the restaurant, but these top secret sauces will be enough for 30 Jamaica Mistaica wings.

    Margaritaville Island Cocktails

    Bring the islands to you with clones of two trademarked cocktails from Jimmy Buffett's successful theme chain. Incommunicado, which is a tasty variation on a Long Island iced tea, includes five types of liquor plus a few fruit juices. Havanas and Bananas is a blended drink similar to a pina colada, but with the addition of Bailey's Irish Cream and creme de banana. I've listed the brand names for the alcohols as specified on the restaurant menu, but the recipe works just as well with any brands you prefer.

    Margaritaville Crab, Shrimp and Mushroom Dip

    Menu Description: "Our signature appetizer...jumbo lump blue crab meat, gulf shrimp and mushrooms, simmered in a Cajun cream sauce and served with toasted garlic bread. We make it here so you know it's good!"

    This dips rocks, and I'm not the only one who thinks so. According to the Margaritaville menu, it's the theme chain's signature appetizer. And what's not to like: delicious blue crab, little bay shrimp and sliced mushrooms are all swimming in a Cajun-style cream sauce, topped with melted Cheddar and Jack cheeses, and broiled until the cheese melts...yum. Serve up your clone with slices of freshly toasted buttery garlic bread and you've got a great party snack. The restaurant version is a tiny little serving that's barely enough for two, so I've supersized this clone recipe to make enough dip to satisfy The Brady Bunch.
